Zucchini Breakfast Casserole (Firinda Kahvaltilik Kabak)

2 zucchinis, grated
3-4 eggs
2 slices of bread, torn into pieces
1 tomato, diced
1/4 cup milk
1 cup cheddar/mozzarella cheese, shredded
½ cup parmesan cheese (optional)
1 tbsp fresh basil, chopped
1 tbsp salt to taste

Preheat the oven to 400 F (200 C). Take grated zucchini into a Pyrex dish and salt. Place the bread pieces all over. In a bowl, whisk egg and milk then, stir in basil and cheddar/mozzarella. Pour this mixture over zucchini and bread pieces. Mix them all up.
Finally, place tomatoes on the surface and sprinkle grated Parmesan all over if desired. Bake for about 30-45 minutes till it gets light brown.
Serve warm.

Firini onceden 200 C (400 F)’ye isitin. Borcam bir tepsiye rendelenmis kabagi alin ve tuzlayin. Uzerine ekmek parcalarini serpistirin. Bir kasede sut, yumurta, kasar peyniri ve feslegeni karistirin. Borcamdaki kabaklarin uzerine dokun ve hepsini harmanlayin.
Son olarak domatesleri esit olarak uzerine yerlestirin. Istege bagli olarak Parmesan peyniri serpistirerek firina verin.
Yaklasik 30-45 dakika, uzeri hafifce kizarana dek pisirin.
Sicak servis yapin.

Carrot Soup (Havuc Corbasi)

2 big carrots, finely grated
1-2 cloves of garlic, grated
3 tbsp canola oil
1 tsp flour
2/3 cup orzo/vermicelli
6-7 cup water
2 tbsp yogurt
1 egg
1 tbsp salt to taste

Saute carrot in canola oil over medium heat for 2-3 minutes. Then, stir in garlic and flour. Saute for a while and then add water and stir well to dissolve flour inside.
Once it gets bubbling stir in orzo/vermicelli and salt. Lower the heat. Close the lid half way and simmer till the orzo/vermicelli is cooked.
Meanwhile, in a small bowl beat the egg and yogurt. Laddle the soup into the yogurt mixture slowly and stir. Then, pour the yogurt mixture into the soup slowly and stir well to make it even. Serve Carrot Soup warm or hot.

Kaynamaya baslayinca tel/arpa sehriyeyi ve tuzu ilave edin. Atesin altini kisin ve sehriyeler pisene dek pisirin.
Bu arada bir kasede yumurta ve yogurdu guzelce cirpin. Corbadan bir miktar alip yavas yavas bu karisimin icine dokerek karistirin. Sonra yogurt karisimini yavas yavas ve karistirarak corbaya dokun.
Havuc Corbasi’ni sicak servis yapin.

Chicken Liver Saute (Tavuk Cigeri Sote)

1lb chicken liver, washed and drained
1 small onion, chopped
1 green pepper, chopped
1 tomato, diced
2 tbsp canola oil
¼ tsp black pepper
½ tsp salt to taste

Cut chicken liver into bite sizes and take into a pan. Over medium heat, cook them till they absorb their own juice. Then add salt and canola oil. Cook for a couple of minutes stirring occasionally. Stir in onion and sauté till onions get translucent.
After that, stir in pepper and cook for 1-2 minutes. Add tomato and cook for 5-6 minutes stirring occasionally. Sprinkle some black pepper and turn the heat off.

Karabiber serpin ve atesi kapatin.

Potato Mousaka (Patates Musakka)

6 potatoes, cut into round slices
½ lb ground beef
2 onions, chopped
2 tbsp canola oil
2 tomatoes, sliced round
1 tomato, diced
3 green peppers, chopped or whole
1 tsp salt to taste
½ tsp black pepper
¼ tsp cumin

Sauce:
1 cup hot water
1 tbsp tomato paste
1 tbsp canola oil
½ tsp salt to taste

Lightly fry the potato slices and take them into a large Pyrex dish. Cover the bottom with potatoes and sprinkle some salt. Then set aside the rest of the fried potatoes.
Meanwhile, cook ground beef over medium heat in a skillet. Once it absorbs its own juice stir in oil and onions. Saute for 3-4 minutes. Add 1 diced tomato and salt. Cook for a couple of minutes, add the spices and turn the heat off.
Spread half of the ground beef mixture over the potatoes and place the remaining potato slices over (see the picture). Spread the rest of the mixture all over evenly. Place the tomato slices and peppers on top.
Mix the sauce ingredients in a small bowl and pour all over the Mousaka. Bake it in a preheated 350F (180C) oven for about 35-40 minutes.
Serve Potato Mousaka warm.

Patatesleri kizgin yagda hafifce kizartin ve genis bir borcam tepsinin dibine dizin. Uzerlerine tuz serpin. Kalan kizarmis patates dilimlerini kenara ayirin.
Bu sirada bir tavada kiymayi suyunu cekene dek orta ateste pisirin. Sivi yagi ve sogani ilave edin. 3-4 dakika soteleyin. Tuz ve 1 tane dogranmis domatesi ilave edin. Bir kac dakika daha pisirin ve baharatlari ilave ettikten sonra atesten alin.
Firin tepsisindeki patateslerin uzerine kiyma karisiminin yarisini yayin. Uzerine, kalan patatesleri yayin ve kiyma karisiminin diger yarisini esit olarak dagitin (resime bakiniz). Uzerine domates ve biberleri yerlestirin.
Bir kasede sos malzemelerini guzelce karistirin ve sosu tepsinin uzerinde gezdirin.
Onceden isitilmis 180C (350F) firinda yaklasik 35-40 dakika kadar pisirin.
Patates Musakka’yi sicak servis yapin.

Mixed Vegetables with Olive Oil (Zeytinyagli Turlu)

2 potatoes, cut into cubes
1 eggplant, cut into cubes
1 zucchini, cut into cubes
1 onion, chopped
2-3 cloves of garlic, sliced thin
1 green/red pepper, chopped
1 large tomato, diced
¼ cup olive oil
1 cup hot water
1 tbsp salt to taste
¼ tsp black pepper

Saute onions in olive oil over medium heat. Then stir in garlic and sauté for a while. Then stir in pepper and cook for 2 minutes. Add potatoes, eggplant and zucchini respectively. While adding each vegetable, cook each of them for about 2 minutes stirring occasionally. Stir in salt, black pepper and hot water. Then spread the tomato all over.
Close the lid and cook over low-medium heat till potatoes are soft (for about 20-30 minutes).

Tuz, karabiber ve sicak suyu ilave ettikten sonra uzerine domatesi esit olarak dagitin. Kapagini kapatin.
Kisik ateste patatesler yumusayana dek yaklasik 20-30 dakika pisirin.

Cucumber Salad with Yogurt (Yogurtlu Salatalik)

2 big cucumbers (~1/2 lb), sliced diagonally thin
1 cup plain yogurt
½ tsp dried mint/1 tsp fresh dill
2 green onions, chopped (optional)
1/3 cup walnut
1 tbsp lemon juice
1-2 cloves of garlic, pressed
½ tsp salt to taste

In a bowl; mix yogurt, salt, green onions, mint/dill and garlic. Take cucumber slices in a salad plate and drizzle with lemon juice. Then, pour the yogurt mixture over and garnish with walnuts. Serve Cucumber Salad with Yogurt beside any kind of meat, chicken and vegetable dish.

Baked Tomato Chicken (Firinda Domatesli Tavuk)

2 lb chicken, cut into pieces
2-3 potatoes, sliced round
1-2 carrots, sliced round
1-2 pepper, cut into rings
2 tomatoes, sliced round
1 tsp tomato paste
¼ cup oil
1 tsp salt to taste
¼ tsp cumin, black pepper

Take potatoes and carrots into a Pyrex or oven tray. Sprinkle the half of the salt and drizzle half of the oil. Combine them all and cover the base of the tray with them. Mix tomato paste with the remaining salt and oil. Cover the chicken pieces with this mixture, sprinkle some cumin or black pepper if you like.
Then, arrange them over potatoes, place the pepper and tomato slices over. Preheat the oven to 400F (200C) and bake until chicken is cooked, for about 50-60 minutes. Serve Baked Tomato Chicken warm.

Spinach and Mushroom Salad (Mantarli Ispanak Salatasi)

½ lb baby spinach, washed and drained
4-5 mini portabella/button mushrooms, sliced
1 small yellow onion, sliced diagonally/in strips
½ cup canned corn
3 tbsp olive oil
½ lemon’s juice
½ tsp salt to taste

Use spinach leaves whole or tear into pieces with your hands. In a wide salad bowl, place spinach, mushroom, corn and onion. Sprinkle lemon juice, olive oil and salt. Toss them all
Serve immediately.

Ispanaklarin suyu suzulunce, ister butun olarak isterseniz elinizle parcalayip salata kasesine alin. Sonra, misir, mantar ve sogani ilave edin. Limon suyu, zeytinyagi ve tuzu serpin. Guzelce harmanlayin. Bekletmeden servis yapin.

Zucchini-Potato Fritters (Kabak-Patates Mucveri)

1 zucchini, grated
2 potatoes, grated
1 large onion, grated/finely chopped
2 eggs
¼ cup flour
½ tsp black pepper
1 tsp salt to taste
½ cup canola oil for frying
Ripe tomato slices and basil for top

Combine all the ingredients in a bowl, but eggs and oil. Then stir in beaten eggs and get ready for frying (eggs make the mixture juicy). If your mixture gets juicy, drain the excess water.In a wide skillet, sizzle oil and drop 2 table spoon of mixture into it. Then press gently to flatten and give a pate shape. Fry both sides till they get golden brown over high medium heat. Place fried Zucchini-Potato Fritters over a paper towel to get rid of the excess oil.Serve Zucchini-Potato Fritters cold or warm with tomato and basil on top.

Eger karisiminiz sulandiysa, fazla suyunu suzun.Genis bir kizartma tavasinda yagi kizdirin ve iki yemek kasigi mucver malzemesi alip kizgin yaga koyun, hafifce uzerine bastirarak duzlestirin ve kofte seklini verin. Mucverlerin her iki tarafi da kizarana dek orta ateste kizartin. Kizarttiklarinizi kagit havlu uzerine koyarak fazla yagini alin.Kabak-Patates Mucverini sicak ya da soguk olarak uzerinde feslegen ve domates ile servis yapin.

Herb Battered Bread (Baharatli Ekmek)

1 package active dry yeast (~7gr)
3 cups flour/bread flour
1 tbsp sugar
1 tsp salt to taste
2 tbsp margarine/butter, at room temperature
2 tbsp fresh parsley, chopped
½ tsp dried rosemary
¼ tsp dried thyme
1¼ cup lukewarm water

Glaze:
1 egg
1 tbsp milk
Sesame and nigella seeds

Add yeast and sugar into lukewarm water. Leave for 5 minutes; stir to dissolve. Mix flour and the rest of the ingredients in a large bowl. Make a well in center and pour in dissolved yeast. Knead and the dough will be sticky. Turn dough out onto lightly floured surface. Knead dough until smooth and elastic, about 8-10 minutes.
Put dough in a clean bowl and cover with a towel or cloth. Let rise for 1-2 hours in a warm place. Punch down and grease two 8 x 4 x 2 1/2 inch loaf pans. Divide the dough in two equal pieces and shape dough into a long loaf (see the picture). You will have two loaves of bread. Place shaped dough in greased loaf pan. Cover with towel/cloth. Leave for a rest until dough is 1 inch above the top of pan, about 1 hour(see the picture). Brush top of loaf with egg glaze and sprinkle sesame and nigella seeds. Bake in preheated 400F (200 C) oven for 40-45 minutes until golden. After taking the bread out of the oven cover it with a towel/cloth to keep it soft and warm.Serve warm and enjoy Herb Battered Bread with butter or cream cheese.

P.S: Do not use metal container when kneading or resting the dough. Metal spoils the texture of dough.

Cukura cozunen maya karisimini dokun. Hepsini karistirip yapiskan bir hamur elde edin. Hamuru unlanmis bir yuzeye alin ve puruzsuz ve elastik bir hamur elde edene dek yaklasik 8-10 dakika yogurun. Hamuru temiz bir kaseye alin ve uzerini temiz bir havlu/bez ile ortun. Bir-iki saat boyunca kabarmasi icin ilik bir ortamda bekletin. Daha sonra havasini cikarmak icin nazikce bastirin.20x10x6 cm’lik iki tane dikdortgen kalibi yaglayin. Hamuru iki esit parcaya bolun ve her ikisine de uzun bir ekmek sekli verin (resime bakiniz). Yaglanmis kaliba yerlestirin ve uzerini havlu/bez ile ortun. Hamur kalibin uzerinden yaklasik 2 ½ cm kadar yukselene dek, yaklasik 1 saat bekletin (resime bakiniz). Uzerine yumurtali sut karisimini surun ve susamla corek otu serpin. Onceden isitilmis 200 C (400 F) firinda 40-45 dakika uzeri kizarana dek pisirin. Ekmegin yumusak ve sicak kalmasi icin; firindan cikarinca, uzerini havlu/bez ile ortun.
Baharatli Ekmek sicacikken, tereyagi ve krem peynir ile tadini cikarin.
