Eggplant & Tofu Topped Pasta (Patlican & Soya Peynirli Makarna)

1 lb any type of pasta, cooked
3 Tbsp canola oil
½ lb firm tofu, drained, cut into cubes
2 garlic cloves, minced
1 lb eggplant, peeled and cut into big cubes
1 red or green bell pepper, chopped
1/3 cup soy sauce
1 Tsp sugar
¼ cup fresh basil leaves, chopped
1 tsp salt to taste

Heat canola oil in a large nonstick frying pan over high heat, add tofu, and gently cook, turning tofu occasionally, until browned slightly, about 5 minutes. Use a slotted spoon to transfer tofu to a plate.
Add garlic to the same pan and cook. Stir in eggplant and bell pepper and cook until softened, stirring occasionally, 8 to 10 minutes. Add soy sauce, sugar, and salt to taste. Cook until heated through, another 2 minutes. Return tofu to pan and gently stir to coat. Remove from heat and stir in basil leaves.
Serve over pasta or rice if desired.

Looks real helthy to me.

I don't know if I told you, but lost my blog somewhere in cyberspace and I cannot get it back. I lost 14 months and all my followers. I am building another and I figure I will be back in a month's time and will let you know when it is all done.

I will continue to be a follower of your blog in the meantime.

Where do you find tofu in Turkey? I'm living in Kuşadası, and I've never seen in.

Doris,

I am not really sure, but you may find tofu in big supermarkets, such as: Kipa, Migros, Carrefour, or in International stores.

Hi. Eggplant is an entirely new vegetable for me. That's why Im not sure how to properly cook it. Some people say it's poisonous when eating raw but what about when it's half-cooked , when I mix eat with tomato sauce because I dont like it very soft, but is half cooked safe to be eaten? greetings, nat

Hi Nat,

Eggplants and some other vegetables such as tomatoes, peppers, and potatoes contain an alkaloid called solanine, which in very large doses (400 mg of solanine) can be poisonous. Those type of vegetables contain from 2 to 13mg of solanine and eggplants contain 11mg at the most. So you would have to eat 36 raw eggplants to cause any harm.
So, raw eggplants are not poisonous.
Hope this helps.
