Cheese Stuffed Jalapenos (Peynirli Jalapeno Biber Dolmasi)

12 jalapeno peppers
2 cloves of garlic, minced
½ cup cream cheese
¼ tsp cumin
¼ tsp paprika
1 tsp salt to taste
¼ cup jack cheese, shredded

Preheat the oven to 375F (190C). Either slice the jalapenos in half lengthwise or slice off the top one-third (lengthwise) of each jalapeno to make a boat shape out of each pepper. (The halved jalapenos will be twice as many stuffed peppers, but you can put more filling into the boat-shaped peppers). If you choose to make the boats, you can mince the tops and add them to the filling if you want some extra heat, or save them for another recipe. Scrape out all the seeds and ribs from each jalapeno with a spoon.
Mix together all the filling ingredients and pack the filling into the jalapenos. Arrange the peppers on a baking sheet and bake for 20-30 minutes, or until the cheese is bubbly and lightly browned, and the peppers are cooked. Serve warm.

Firini 190C (375F)’ye isitin. Jalapenolari isterseniz boyuna ikiye kesin, ya da sap kismindan 1/3 unu boyuna keserek kayak seklini verin. (Yariya kestiginiz biberlerden iki kati peynirli biber cikarken, kayak seklindekiler de daha fazla peynirli ic alacaktir). Eger kayak seklini tercih ederseniz, kestiginiz kucuk parcalari minik mink dograyarak peynirli ice karistirarak biraz daha aci elde edebilir ya da daha sonra kullanmak uzere saklayabilirsiniz. Jalapenolarin icindeki butun cekirdek ve dammar kisimlarini  bir kasik yardimiyla kaziyarak temizleyin.
Butun diger ic malzemeyi karistirin ve biberlerin icine doldurun. Peynirli jalapenolari yagli kagit serdiginiz firin tepsisine yerlestirin ve yaklasik 20-30 dakika, ya da uzerleri hafif pembelesip biberler pisene dek pisirin. Sicak veya ilik servis yapin.

Crab Casserole with Cheese (Peynirli Yengec Guveci)

1 lb crab meat/imitation crab
½ cup cream cheese
4-5 Tbsp mayonnaise
½ lemon’s juice
1 Tbsp Worcestershire sauce (optional)
1 tsp salt to taste
¼ tsp black pepper
½ cup grated cheddar cheese

Soften cream cheese to room temperature. Mix ingredients in a big bowl, in the order listed. Then, add 1/4 cup of the grated cheese to the mixture. Transfer the mixture over a greased Pyrex dish. Sprinkle the remaining 1/4 cup on top. Bake at 350F (180C) for 45-50 minutes.
Serve with crackers if desired.

Krem peyniri oda sicakliginda yumusak olmalidir. Malzemeleri listedeki siraya gore buyuk bir kasede karistirin. Sonra, ¼ su bardagi rendelenmis kasar/cedar peynirini ilave edin. Karisimi yaglanmis bir borcam tepsiye aktarin. Geriye kalan rendelenmis peyniri uzerine serpin. Onceden isitilmis 180C (350F) firinda yaklasik 45-50 dakika pisirin.
Arzu ederseniz kraker ile servis yapin.

Strawberry Cream Freeze (Cilekli Parfe)

2 cups whipped cream (light)
1 package (~250 gr) cream cheese (light)
2 cups fresh strawberries, sliced/divided
½ cup sugar
10 tea biscuits/Nilla wafers, coarsely broken (optional)

Beat cream cheese, sugar and whipped cream in a large bowl with a mixer until creamy. Stir in strawberries and wafers/biscuits.
Spread stretch film over the cups and pour the cream into the film covered cups. Cover the tops and freeze for about 6-8 hours or until firm. Remove desert from the freezer and turn upside down the cups over small desert plates. Serve after 15 minutes before melting. You can top with remaining strawberries and basil/mint leaves.

Krem peynir, seker ve krem santiyi mikser ile buyuk bir kapta cirpin. Krema seklinde butun malzemeler butunlestikten sonra cilek ve biskuvileri (istege bagli) ilave edin. Kasikla karistirin.
Parfe ya da herhangi kucuk kaselerin icine strec film yayin ve parfeyi icine dokerek uzerini duzlestirin. Uzerlerini strec film ile kapatin ve buzlukta yaklasik 6-8 saat ya da sertlesene dek bekletin.
Servid yapmadan 15 dakika once parfeleri buzluktan cikarin. Kaplarini ters cevirerek parfeleri tatli tabaklarina yerlestirin. Geri kalan cilek dilimleri ve taze nane yapraklari ile susleyerek erimeden servis yapin.

Creamy Spinach&Mushroom Pasta (Kremali Ispanak&Mantarli Makarna)

300 gr any kind of pasta
2 tbsp olive oil
250 gr white mushrooms, sliced
6 tbsp cream cheese
1 cup frozen/fresh spinach leaves
1 ¼ cups vegetable or chicken stock
1 tbsp lemon juice
1 tsp dried oregano
Salt and pepper to taste

Cook pasta according to the instructions on the package. Drain and reserve ¾ cup of the cooking liquid.
Heat oil in a skillet, add mushroom, stir frequently and cook for 8 minutes. Stir in oregano, stock and lemon juice. Cook for 10-12 minutes until the sauce is reduced by half.
Stir in cream cheese, spinach. Cook over medium low heat for 3-5 minutes. Add reserved liquid, and cooked pasta. Stir well, season with salt and pepper.
Serve warm.

1 tatli kasigi kuru mercankosk
Tuz ve karabiber

Makarnayi paketin uzerindeki pisirme onerisen gore pisirin ve suzun. Makarna suyundan ¾ su bardagini daha sonra kullanmak uzere bir kenara ayirin.
Zeytinyagini tavada isitin, mantarlari ilave edin ve sik sik karistirarak yaklasik 8 dakika pisirin. Mercankosk, sebze/tavuk suyu ve limon suyunu ilave edin. Sosun miktari yariya kadar azalana dek 10-12 dakika pisirin.
Krem peynir ve ispanagi ilave edin. Kisik ateste 3-5 dakika kadar pisirin. Onceden ayirdiginiz makarna suyunu ve pismis makarnayi ilave edin. Guzelce karistirin ve tuz, karabiber serperek sicak servis yapin.

Tiramisu

1 ½ package lady finger cookies
½ cup sugar
1 cup Nescafe, hot
2 eggs
200gr/ ½ lb cream cheese
300 gr whipped cream
1 tbsp cocoa for garnish

In a big bowl, whisk eggs and sugar with a mixer till it gets foamy. Add cream cheese, whipped cream and mix for additional 15 minutes. Cover and leave it in the refrigerator for about 1 hour. Meanwhile, make 1 cup of coffee, dissolving ½-1 tbsp of instant Nescafe in 1 cup of hot water. If desired add some sugar in.
Dip lady fingers into the coffee and arrange them side by side over a Pyrex dish. Take the cream mixture out of the fridge and spread half of it over the lady fingers. Then dip the rest of the lady fingers in the coffee and arrange them over. Spread the remaining cream mixture all over evenly. Cover and store the Tiramisu in the refrigerator for about 2 hours. Before serving, cover the surface with cocoa using a small strainer.

Yumurta ve sekeri iyice kopurene dek cirpin. Sonra labne/krem peynir ve krem santiyi ilave edip 15 dakika boyunca cirpmaya devam edin. Karisimi buzdolabina koyun ve yaklasik 1 saat kadar bekletin.
Bu sirada 1 su bardagi sicak suda yaklasik ½-1 yemek kasigi neskafeyi eritin. Arzu ederseniz seker ilave edebilirsiniz.
Kedi dili biskuvilerini kahveye batirip borcam tepsinin dibine yanyana dizin. Dolaptan cikardiginiz kremanin yarisini biskuvilerin uzerine dokun ve esit olarak yayin. Geriye kalan biskuvileri yine kahveye batirip kremanin uzerine dizin. Kalan kremayi dokun ve esit olarak dagitin. Uzerini kapatarak buzdolabinda yaklasik 2 saat bekletin. Servis yapmadan once cay suzgeci ya da kucuk bir elek yardimiyla kakaoyu Tiramisunun uzerine serpistirin.

Cheese Lasagna (Peynirli Lazanya)

12 pieces lasagna noodles
2 cups ricotta cheese
2 cups cheddar/mozzarella, shredded
½ cup Parmesan Cheese, grated (optional)
4 cups spaghetti/Italian/tomato sauce
2 eggs, beaten
1/3 cup hot water
1 tsp salt to taste
Basil/thyme/black pepper (optional)

Preheat oven to 350 F (180 C). Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 10-12 minutes or until al dente; drain.
In a bowl combine egg, ricotta and other cheese and seasonings (optional). Spoon ½ cup of the sauce in the bottom of a 9x13 baking dish. Place a layer of 3 cooked noodles over the sauce, and spread one third of cheese mixture on top, cover with 3 noodles. Repeat twice with 1 ½ cup sauce, cheese mixture and noodles. Finish with the remaining sauce and cheese mixture. Pour 1/3 cup hot water.
Cover with foil and bake for 30 minutes. Then remove foil and bake for 20 minutes more. Let stand for 5-10 minutes before serving.

Firini onceden 180 C (350 F)’ye isitin. Lazanyalari buyuk bir tencerede hafif tuzlu suda 10-12 dakika yumusayana dek haslayin. Suzun.
Bir kasede, yumurta, peynir cesitleri ve baharatlari (istege bagli) karistirin. Yarim su bardagi sosu 23x33 cm buyuklugundeki firin tepsisinin dibine yayin. 3 tane lazanyayi uzerine koyun ve peynirli karisimin 1/3’unu uzerine yayin. Uzerine 3 tane lazanya yerlestirin. Bu islemi; 1 ½ sos, peynir karisimi ve lazanya olarak 2 defa tekrarlayin. En uzerine kalan peyniri yayin ve sosu dokun. 1/3 su bardagi sicak suyu tepsinin kenarindan dibine dogru dokun.
Uzerini aluminyum folyo ila kaplayin ve yaklasik 30 dakika pisirin. Sonra folyoyu kaldirin ve 20 dakika daha uzeri acik olarak pisirin. Firindan cikardiktan sonra 5-10 dakika bekletin ve sonra servis yapin.

Scrambled Eggs with Tomato ( Yumurtali Domates)

1 cup crushed tomato
3 eggs, beaten
1 tsp flour
½ cup milk
½ tsp salt to taste
1-2 pairs of beef franks, sliced (optional)
2 tbsp butter
1/2 cup cheese, shredded (preferably mozzarella)

In a pan, melt the butter and stir in flour. Cook 1-2 minutes over low heat. Then stir in beef frank slices and cook for a while. Add tomatoes and cook 2-3 minutes over low heat.
Stir in milk and salt. When it comes to a boil, add eggs and cheese. Cook on low heat stirring constantly, till the eggs are cooked.
Serve warm with some shredded cheese on top.

Sut ve tuzu ilave edin. Sutlu domates karisimi kaynamaya baslayinca cirpilmis yumurta ve peyniri ilave edin ve kisik ateste yumurta pisene dek karistirarak pisirin.
Uzerine rendelenmis kasar peyniri serperek, sicak servis yapin.

Cheese Omelet (Peynirli Omlet)

3-4 eggs
½ cup milk
1 cup feta cheese/crumbling cheese/mozzarella, shredded
2 tbsp butter
¼ tsp salt to taste
Black pepper (optional)

In a bowl beat eggs and stir in the rest of the ingredients, but the butter.
Then, melt butter in a skillet over medium heat and pour the egg mixture. Cook both sides of the cheese omelet till the eggs are cooked (4-5 minutes).
Serve warm with bologna slices.

Broccoli Cheese Soup (Peynirli Brokoli Corbasi)

2 cups chicken stock
2 cups milk
½ cup flour
1 head broccoli (5-6 cups), chopped
3-4 tbsp butter
¼ tsp black pepper
2/3 tbsp salt to taste
300 gr processed cheese/mozzarella, shredded
2 cups cheddar cheese, in cubes or shredded

Melt the butter in a large pot over medium heat, and mix in the flour. Reduce heat to low, and cook, stirring constantly, about 2 minutes. Mix in the chicken stock and milk. Season with salt and pepper. Bring to a boil, reduce heat to low, and simmer about 10 minutes.
In another pot broil broccoli florets in lightly salted water. Cook 3-4 minutes, or until just tender. Remove from heat, drain, and set aside.
Gradually mix the processed cheese/mozzarella and cheddar cheese into the large pot until melted. Mix in the broccoli. Continue cooking about 5 minutes.
Serve Broccoli Cheese Soup warm.

1 bas brokoli, dogranmis
3-4 yemek kasigi tereyag
½ cay kasigi karabiber
2/3 yemek kasigi tuz
300 gr beyaz peynir/kasar peyniri, rendelenmis
2 su bardagi Cheddar peyniri/kasar peyniri, rendelenmis

Buyuk bir tencerede tereyagini eritin ve orta ateste unu kavurun (2 dakika). Sonra tavuk suyunu ve sutu ilave edin. Surekli karistirarak unun sivi icinde esit olarak dagilmasini saglayin. Tuz ve karabiberi ilave edin. Kaynayinca hafif atese alin ve yaklasik 20 dakika kadar pisirin.
Bu sirada baska bir tencere az tuzlu suda brokoliyi yumusayana dek haslayin (yaklasik 3-4 dakika). Suyunu suzun ve biraz sogumasini bekleyin.
Peynirlerin hepsini corba karisimina ilave edin ve karistirarak erimesini saglayin. Sonra haslanmis brokoliyi ilave edin. Hafif ateste yaklasik 5 dakika daha pisirin.
Peynirli Brokoli Corbasi’ni sicak servis yapin.

Stuffed Mushrooms (Mantar Dolmasi)

1 lb (~450 gr) button mushrooms
½ cup mozzarella/cheddar, shredded
2-3 tbsp cream cheese (optional)
¼ tsp salt to taste
A pinch of black pepper
A pinch of basil (optional)
1 tbsp olive oil

Clean mushrooms with a damp paper towel or brush. If mushrooms contact with water so long, they will absorb water like a sponge.
Discard the stalks of mushrooms and chop them finely. Saute them with olive oil over low heat, for about 2-3 minutes. Then stir in black pepper, salt and basil. Mix with cream cheese (optional) and shredded cheese.
With a teaspoon, put this mixture into the mushrooms and press firmly (see the picture). Preheat the oven to 350F (180C) and bake the stuffed mushrooms for about 18-20 minutes.

Mantarlari nemli bir kagit havlu ile ya da nemli bir firca ile temizleyin. Mantar su ile uzun sure temas ederse, sunger gibi suyu cekecektir.
Mantarlarin saplarini cikarin ve kucuk kucuk dograyarak zetinyagi ile 2-3 dakika kavurun. Sonra karabiber, feslegen ve tuzu ilave edip, karistirin. Sonra krem peynir (istege bagli) ve rendelenmis kasari ilave edip karistirin.
Bu karisimi mantarlarin icine doldurarak hafifce bastirin (resime bakiniz). Onceden 180C (350F) ye isitilmis firinda yaklasik 18-20 dakika pisirin.

Bread Rolls with Cheese (Lorlu Ekmek)-Tutmanik

25-30 gr fresh active yeast/7 gr instant yeast
2 cups lukewarm water
1 tbsp salt
1 tsp sugar
1 egg (white goes inside, yolk for egg wash)
¼ cup oil
6 cups of flour, heaping
2 tbsp yogurt for egg wash
1 cup crumbled feta cheese or Mexican Crumbling Cheese
2 tbsp butter/oil
1 tbsp nigella seeds

Place the lukewarm water, sugar and the yeast into a bowl. Stir well to dissolve the sugar and the yeast.
Add the salt, egg white, ¼ cup oil and flour, knead for 5-8 minutes, till dough becomes elastic. Place a plastic wrap on the dough (see the picture) and let it rest for 2 hours in a warm place, till it rises up to double its volume (see the picture).
Place dough on the counter and punch to release air. Then sprinkle some flour on the counter and try to flatten the dough with a dough roller, in 1/10 inch thickness.
Brush the surface of dough with 2 tbsp butter/oil. Spread the crumbled cheese over the dough (see the picture). Then roll it up tightly an cut the roll into 2 inches wide pieces (see the picture in walnut bread), and close the cut ends by sticking and press gently on stuck sides (see the picture). Then place them into the baking tray with baking paper. Leave it for 1-2 hours to rise.
Preheat the oven to 400F (200C). Mix the egg yolk and yogurt in a bowl and brush the surface of the Bread Rolls with Cheese with this egg wash and sprinkle nigella seeds on top. Bake for 12-15 minutes, then switch to 350 F (180 C) and bake for 8-10 minutes till they turn to golden brown.
After taking those out of the oven cover them with a clean cloth or towel to keep them soft. Serve warm.

P.S: Do not use metal container when kneading or resting the dough. Metal spoils the texture of dough.

Ilik suyu ve mayayi bir kaseye alin, icine sekeri ilave edin ve sekerle maya cozunene kadar iyice karistirin.Sonra, yumurta beyazini, ¼ su bardagi sivi yagi, unu ve tuzu ilave ederek, 5-8 dakika hamur elastik olana dek yogurun. Uzerine seffaf film ortun (resime bakiniz) ve sicak bir ortamda, hamur iki kati kadar kabarana dek, yaklasik 2 saat, bekleyin (resime bakiniz).
Hamuru tezgain uzerine alin ve havasini indirmek icin uzerinden bastirin ve tezgahi unlayip oklava ile hamuru ½ cm kalinliginda acin. Uzerini tereyagi ya da sivi yag ile yaglayin ve uzerine kiriklanmis peyniri yayin (resime bakiniz). Sonra sikica rulo yapin ve ruloyu 5-6 cm genisliginde parcalara kesin (cevizli ekmekteki resime bakiniz). Sonra kesik yerlerini birlestirip yapistirin (resime bakiniz) ve hafifce bastirip, uzerinde yagli kagit olan tepsiye aralikli olarak dizin. Rulolari iki kati buyuyene kadar yaklasik 1-2 saat bekletin.
Firini onceden 200C (400F) ye isitin ve yogurt ile yumurta sarisini karistirip, rulolarin uzerine firca ile surun. Corek otu serpin ve 12-15 dakika pisirip, sicakligi 180C (350F) ye dusurun ve 8-10 dakika daha uzerleri kizarana dek pisirin.
Firindan cikarinca, tepsinin uzerini temiz bir mutfak bezi ya da havlu ile ortup hava almasini engelleyin. Boylece Peynirli Ekmek Rulolariniz yumusacik olacaklar.
Sicak servis yapin.

Tiramisu Bowl (Tiramisu Kasesi)

8 0z (~230 gr) Cream Cheese, softened
3 cups cold milk
2 pkg (3.4 oz each) vanilla/banana instant pudding
8 oz (~230 gr) Whipped Topping, thawed
48 nilla wafers
½ cup brewed strong coffee, cooled
2 square semi-sweet chocolate, grated
1 cup fresh, banana/ strawberry/raspberry

Beat cream cheese with a mixer till creamy. Then beat in milk and pudding mixes.Stir in 2 cups cool whip.

In a glass 2-1/2 qt bowl, line the wafers and drizzle with half of the coffee. Top with half of the pudding mixture and half of the chocolate on top. Then repeat the layers. On top, garnish with the remaining cool whip and fruits you like. Sprinkle the rest of chocolate and refrigerate for about 2 hours.

2 paket instant muzlu/vanilyali puding ya da 1 paket normal puding
230 gr krem santi
48 tane nilla biskuvi ya da herhangi baska yuvarlak biskuvi
½ su bardagi kahve, sogutulmus
2 kare az sekerli cikolata, rendelenmis
1 su bardagi, muz/cilek/bogurtlen/ahududu

Mikser ile krem peyniri krema haline getirin ve sut ile hazir pudingi ilave edin. Eger toz puding kullanacaksaniz 3 su bardagi sut ile pudingi pisirin ve sogutun sonra ilave edin. Son olarak 2 su bardagi krem santi ilave edin ve karistirin.
1 ½ -2 lt lik bir dar uzun bir kasenin kenarlarina biskuvileri dizin ve uzerlerine kahvenin yarisini serpin. Puding karisiminin yarisini uzerine dokun ve uzerine cikolatanin yarisini serpin. Sonra ayni islemi tekrar yapip iki tabaka olusturun. Uzerine kalan cikolatayi serpin ve istediginiz meyve cesidiyle susleyin. Son olarak geri kalan krem santiyle susleyin ve buzdolabinda 2 saat kadar bekletin.

NOT: Eger kullandiginiz kase cok derin degilse sadece bir tabaka yapabilirsiniz. Ayni islemi kucuk kaseler kullanarak da yapabilirsiniz.
