Carrot Soup with Milk (Sutlu Havuc Corbasi)

2 medium carrots, shredded
3 tbsp vegetable oil
3 tbsp flour
2 cups milk
1 tsp paprika
3 cups water
1 tbsp salt to taste
For garnish fresh parsley/dill, chopped

Place vegetable oil and shredded carrot in a pot. Saute over medium heat for about 4-5 minutes. Stir in flour and paprika. Saute for additional 2-3 minutes.
Add water first and then milk. Stir well to dissolve flour particles. Bring to a boil. Then reduce heat to low, close the lid and simmer for about 15 minutes.
Mix the soup with a blender till it gets smooth. Then stir in salt and cook for an additional 5 minutes. Garnish with parsley/dill before serving.

Borek with Seltzer (Maden Suyu/Sodali Borek)

1 lb (454 gr) Phyllo Pastry / 3-4 yufka
3 L (13*9*2”) Pyrex casserole dish
1 egg
¼ tsp salt
½ cup milk
1/3 cup oil
1½ cup Seltzer (mineral water)
1 tsp sesame seeds (optional)
1 tsp nigella seeds (optional)

Filling for Borek with cheese :
100-150 gr crumbled feta cheese or Mexican crumbling cheese
½ cup parsley or dill chopped (optional)
2-3 tbsp yogurt (optional)

Take the ingredients in a bowl or plate and mix them.


In a bowl; place the egg, oil, Seltzer and milk. Mix them with a whisk. You will use this mixture between each layer of the pastry and for the top of the borek.After greasing the Pyrex dish, place two or three layers of pastry/1 yufka on the bottom and let it go out over the sides of the dish. Spread 3 tbsp of the mixture all over and place some of the filling you are using and spread it evenly. Take the other 2-3 sheets of pastry/1 yufka and wrinkle them up in order to fit to the dish (see the picture). Continue layering in the same way; first the liquid mixture and then the filling.When you place the last pastry sheets/yufka, fold the sides of the bottom sheet over the borek.
Cut the borek into desired size squares. Sprinkle with nigella and sesame seeds. Pour the remaining liquid mixture on top of the borek evenly.Preheat the oven to 350 F(180 C) and bake for about 30-45 minutes, until it turns lightly brown.
Serve warm.

Malzemeleri bir kaseye koyup karistirin.


Bir kasede sut, yumurta, maden suyu ve sivi yagini karistirin. Bu karisimi her 2-3 tane pastri arasina/her yufka arasinda ve boregin ustu icin kullanacaksiniz.Tepsiyi yagladiktan sonra, 2-3 tane pastriyi/1 yufkayi tepsinin dibine kenarlari tepsinin disarisina cikacak sekilde yayin. 3 yemek kasigi sut karisimindan yayin ve kullandiginiz icten bir miktar alip esit sekilde yayin. Diger 2-3 pastriyi/ 1 yufkayi burusturarak tepsinin boyutlarina gore yerlestirin ve yine sutlu karisim ve icten koyarak elinizdeki pastri/yufka bitene dek bu islemi tekrarlayin (resime bakiniz).Son pastri/yufkayi koyunca en alttaki yufkayi tepsinin icine dogru kivirip boregin uzerini ortun.

Baked Whole Chicken with Vegetables (Firinda Sebzeli Butun Tavuk)

1 whole chicken
1-2 potatoes, chopped 1 carrot, sliced round
1 cup green beans
1 onion, cut into 8 pieces
1 cup broccoli florets
½ cup baby corns
½ tsp salt (for vegetables)
1 tsp salt (for chicken)
1 tsp paprika
1-2 tbsp canola oil

Spread salt all over the vegetables and mix them all. Set aside. You might take the chicken’s skin off if you wish. Spread salt all over the chicken and with your hands. Then, mix the canola oil with paprika and rub all over the chicken. Place it in a Pyrex dish. Fill the remaining spaces with the vegetables.Preheat the oven to 400 F (200C) and bake for about 60-80minutes until it is golden brown.

Tavugu borcam ya da firin tepsisine yerlestirin. Yan taraflarinda kalan bosluklari sebzeler ile doldurun.Onceden isitilmis 200 C (400 F) firinda, tavugun uzeri kizarana dek 60-80 dakika pisirin.

Salmon with Sesames (Susamli Somon Baligi)

1 lb salmon fillets
2 tbsp soy sauce
2 tbsp balsamic vinegar
2 tbsp green onions, chopped
2 tbsp brown sugar
1-2 cloves of garlic, minced
1 ½ tsp ground ginger
1 tsp crushed red pepper flakes (optional)
1 tbsp sesame seeds, heaping
½ tsp salt to taste

Rinse salmon fillets under cold water and pat dry with paper towels. Sprinkle with salt and rub with your hands. Then, mix all the ingredients, but sesames in a bowl. Dip the fillets in this mixture or pour the mixture all over the fillets evenly. Preferably marinade in the fridge for about 1-2 hours.
Place aluminum foil over a Pyrex dish and place salmon fillets. Sprinkle with sesames and cover with aluminum foil. Seal well through the edges. Bake in 375 F (190 C) oven for 30 minutes and take the aluminum cover and broil for minutes or till it gets lightly brown.

Filetolari bu karisima batirip her yerini bulayin ya da karisimi filetolarin uzerinde esit olarak gezdirin. Tercihen buzdolabinda 1-2 saat bekletin.
Bir borcam tepsinin dibine aluminyum folyo yayin ve uzerine filetolari dizin. Uzerlerine susam serpin ve aluminyum folyo ile uzerini kapatip kenarlarindan hava girmeyecek sekilde sikica kapatin. Onceden isitilmis 190 C (375 F) firinda yaklasik 30 dakika pisirin. Sonra uzerindeki aluminyum folyoyu alin ve ustten kizartma ayarinda yaklasik 5-7 dakika ya da uzeri kizarana dek pisirin.

Spinach Cake (Ispanakli Kek)

2 eggs
1 ½ cup sugar
2 cups flour
½ cup canola oil
½ or 1 cup spinach, pureed
1 package/1 tsp baking powder
1 package/1 tsp vanilla
2 tbsp lemon juice (optional)
250-300 gr whipped cream

Puree spinach in a food processor and put aside. In a wide bowl, mix sugar and eggs with a mixer till it gets foamy. Add lemon juice, canola oil and spinach. Then, add baking powder, vanilla and flour. Mix for 3-4 minutes till obtaining a smooth mixture. Then pour it into greased Pyrex (~3L).
Bake in a preheated 375 F (190C) oven for about 30-40 minutes. Check if it’s done inserting a toothpick into the cake. It is done, if it comes out clean.
Let it cool down and then take out of the Pyrex. Cut off the sides off about ½ inch wide and powder them in the food processor. Set aside. Place the cake over a serving plate; spread whipped cream on top evenly. Then, sift the powdered cake on top of the cream. Slice it up and serve.

Limon suyu, sivi yag ve ispanagi ilave edin. Karistirmaya devam edin. Son olarak kabartma tozu, vanilya ve unu ekleyin. Yaklasik 3-4 dakika boyunca cirpin. Yaglanmis olan borcam (3L) ya da firin tepsisine dokun.
Onceden isitilmis 190C (375 F) firinda yaklasik 30-40 dakika pisirin. Kontrol etmek icin bir kurdani kekik icine batirin. Eger kurdan temiz cikarsa kekiniz pismistir.
Keki bir kenarda sogumaya birakin. Sonra Tepsiden cikarin ve kenarlarindan 1-1½ cm kalinliginda parcalar kesin. Bu parcalari mutfak robotu/rondoda mumkun oldugu kadar kucultup pudra haline getirin. Keki servis tabagina alin ve uzerine krem sartiyi esit sekilde surun. Ustune pudra haline getirdiginiz kek parcaciklarini bir suzgec/elek yardimiyla serpistirin.
Istediginiz sekilde dilimleyin ve servis yapin.

Browned Couscous (Kavrulmus Kuskus)

1 lb couscous
5-6 cups hot water
3-4 tbsp margarine/butter/oil
1 tbsp salt to taste

Place butter/margarine/oil and couscous in a pot/saucepan and sauté over low-medium heat till they get lightly browned. Then, add hot water carefully and salt to taste. Bring to a boil and close the lid. Simmer in low heat till the couscous absorbs all the water.
Serve warm.

Sweet Pea Soup (Bezelye Corbasi)

2-3 cups sweet peas, frozen/fresh
1 onion, chopped
3-4 cloves garlic, chopped
2 tbsp butter
3 cups water/chicken broth
1 Tbsp parsley
1 Tbsp lemon juice
1 tsp mint
1 cup milk
1 tsp salt to taste
lemon wedges

Take butter into a pot and stir in onion and garlic. Saute over medium heat and stir in sweet peas. Cook for about 2-3 minutes and add chicken stock/water (hot). Also, add parsley, mint and salt. Cook for about 20 minutes till sweet peas are soft.
Blend the soup throughly with a blender. Then, add  the milk, lemon juice and cook for an additional 5 minutes.
Drizzle lemon juice and serve Sweet Pea Soup warm/hot.

Turkey Stew with Potatoes (Patatesli Hindi Yahnisi)

½ lb turkey breast/thigh, in chunks
1 onion, chopped
1 big potato, cubed
1 tsp tomato paste
2 tbsp canola oil
½ tsp paprika
½ tsp summer savory
1 tbsp salt to taste
2 cups hot water

Saute turkey chunks with canola oil over medium heat (approximately 10 minutes). Once turkey changes color, stir in onions and sauté for 3 minutes. Add tomato paste and stir in potatoes. Saute for 3-4 more minutes.
Stir in paprika, salt and water. Bring to a boil. Then, close the lid and reduce the heat. Simmer over low heat, till turkey and potatoes are cooked (for about 20-30 minutes). Stir in summer savory 5-10 minutes before turning the heat off.
Serve warm.

Hindi ve patatesler yumusayip pisene dek pisirin (yaklasik 20-30 dakika). Ocagin altini kapatmadan 5-10 dakika once zateri ilave edin ve guzelce karistirin.

Mediterranean Cod (Akdeniz Usulu Morina Baligi)

4 (200 gr) fresh cod fillets
3 tbsp olive oil
¼ red onion, thinly sliced (optional)
1 cup cherry tomatoes, cut in half
¼ cup black and/or green olives, sliced (optional)
1 tsp dried basil, crushed
Pinch dried thyme, crushed
1 tsp salt to taste
Black pepper to taste

Rinse fish and pat dry with paper towels. Season with salt and pepper. In a large skillet heat 3 tbsp of olive oil over medium-high heat. Add fish and (if desired) onion.
Cook for about 5 minutes, turning once. Top fish with tomatoes, olives, basil and, thyme. Reduce heat, cover and cook for 8-10 minutes more or until fish flakes easily with a fork.
Serve warm.

Gul Borek (Rose Borek)

1 lb (454 gr) Phyllo Pastry / 4-5 yufka
3 L (13*9*2”) Pyrex casserole dish
2 eggs
2/3 cup milk
1/3 or ½ cup oil
Salt to taste
1 tsp sesame seeds
1 tsp nigella seeds (optional)

Click for the filling ingredients you can use.

In a bowl, place the eggs, oil and milk. Mix them with a whisk. Take 1 cup of this mixture and set aside to use later for the top.
If using Turkish yufka, place all the yufka sheets on top of each other. Cut them in four by obtaining equal triangle like pieces. Then, put 2 tbsp of milk mixture on every piece and spread with the back of spoon or use a brush to spread all over. Place 2 tbsp of the filling on the wide edge and spread evenly through the edge. Flap the wide edge inside and roll it up till the end (make sure not to roll too tight). Then, again roll this long piece forming a spiral shape (see the picture). Repeat the same procedure for each of the yufka piece.

If using Phyllo Pastry, use two piece of pastry sheets at the same time to form a rose borek (two sheets aproximately have the same thickness as one yufka sheet). Place the filling on the wide edge of the rectangle sheet and then roll it up till the other end. Give the spiral shape and use the same procedure as you’ve used for the yufka.
Place the rose shape boreks side by side in a greased Pyrex dish (do not leave any room in between). Pour the remaining liquid mixture on top of the borek evenly and sprinkle with nigella and sesame seeds.Preheat the oven to 350 F(180 C) and bake for about 30-45 minutes, until it turns golden brown. Serve warm.

Sonra, her parcanin genis kismina kullandiginiz ic malzemeden 2 yemek kasigi kadar malzemeyi esit sekilde dagitin. Genis kismi ice dogru kivirin ve uc kismina kadar cok siki olmayacak sekilde dolayin. Elde ettiginiz uzun parcayi bir ucundan tutarak sarmal seklinde etrafinda dolayin (resime bakiniz). Her yufka parcasi icin ayni islemi uygulayin.
Eger fillo pastri kullaniyorsaniz; iki kat pastriyi ayni anda kullanin (pastriler ince oldugu icin iki kat pastry yufka kalinligina denk gelir). Dikdortgen seklindeki parcanin genis kismina ic malzemeyi ayni sekilde dagitip, rulo seklinde sararak gul seklini verin. Yufka icin yapilan ayni islemi uygulayin.

Apple Filled Sweet Buns (Elmali Top Pare)

2 eggs
250 gr butter/margarine (2 sticks) at room temperature
2 tbsp yogurt
5 cups all purpose flour
½ cup sugar
1 tsp/1 package baking powder
2 tsp/2 package vanilla
½ cup coconut, finely shredded

For Filling:
3-4 apple, peeled and shredded
¼ cup sugar
½ cup hazelnuts/walnuts, crushed (optional)
1 tbsp cinnamon

Syrup:
1½ cup water
1 ½-2 cups sugar
1 tsp lemon juice

First prepare the syrup, because you will use pour cooled syrup over the hot cookies. In a saucepan, place sugar and water. Bring to a boil and simmer for 3-4 minutes. Stir in lemon juice and turn the heat off. Let it cool.
Place all the filling ingredients, but the nuts and cinnamon a saucepan/pot. Cook over low-medium heat, till the mixture gets brownish and thickens (for about 10-12 minutes). Then, stir in nuts and cinnamon. Set aside to cool.
In a large bowl, mix sugar, melted margarine/butter, eggs and yogurt using a mixer. Slowly add flour, baking powder and vanilla and knead with your hands till the dough gets soft and non sticky as cookie dough. Cover and leave the dough aside for 15 minutes.
Grab walnut size dough pieces and flatten them with a rolling pin or just use your palms for flattening. Place ½-1 tbsp filling in the middle and close it up, giving a ball shape. Then, place it on a greased oven tray upside down (closing side will be touching the tray). Bake them in a preheated 375 F (190 C) oven till they get lightly pink. Do not over bake. Immediately pour the cooled syrup all over the cookies. Or dip them in syrup. Do not leave them in syrup more than 10 minutes, otherwise they will be crumbly. Finally dip and roll the sweet buns in shredded coconut, making sure the tops are covered with coconut.
Then place them a serving plate. You can store them in fridge as long as they are sealed well.
This recipe makes approximately 20 pieces.

Ilk once; surubu hazirlayin, cunku sicak kurabiyelerin uzerine sogumus surubu dokecegiz. Kucuk bir tencereye seker ve suyu alin. Yaklasik 3-4 dakika kaynatin ve altini kapatip limon suyunu ilave edin. Sogumasi icin bir kenara ayirin.
Ic malzemeyi hazirlamak icin, rendelenmis elma ve sekeri bir tencereye alin. Orta ateste elmalar karisim suyunu cekip, kahverengimsi bir renk alana dek, yaklasik 10-12 dakika pisirin. Sonra, findik/ceviz ve tarcini karistirin ve bir muddet sogumaya birakin.
Genis bir kapta seker, eritilmis margarin/tereyagi, yumurta ve yogurdu mikser ile cirpin. Yavasca unu ilave ederek elinizle yogurmaya baslayin. Kabartma tozu ve vanilyayi ilave edin ve yapismayan, kulak memesi yumusakliginda bir hamur elde edin. Uzerini ortun ve yaklasik 15 dakika dinlendirin.
Ceviz buyuklugunde parcalar koparin ve hamuru merdane ya da elinizle acarak mumkun oldugunca inceltin. Ortasina ½-1 yemek kasigi ic malzeme koyun ve buzerek kapatin. Kapattiginiz kisim altta kalacak sekilde yaglanmis firin tepsisine aralikli olarak dizin.
Onceden isitilmis 190 C (375 F) firinda hafif pembelesene dek pisirin (Kahverengi olmasina izin vermeyin).

Firindan cikarir cikarmaz soguyan surubu uzerlerine dokun ya da top pareleri suruba daldirin. Surubun icinde alt ust ederek surubu iyice emmesini saglayin, ama 10 dakikadan fazla surubun icinde birakmayin. Aksi takdirde top pareler dagilir ve sekilleri bozulur. Son olarak, elmali top pareleri hindistan cevizinin icinde yuvarlayin ve iyice bulanmasi saglayin. Sonra, servis tabagina alin ve servis yapin. Isterseniz, elmali top pareleri kapali olarak buzdolabinda saklayabilirsiniz.

Tomato Soup with Potatoes (Patatesli Domates Corbasi)

1 onion, chopped
2 medium/1 cup tomatoes, petite diced
2 medium potatoes, petite diced
2/3 cup vermicelli/orzo
2 tbsp canola/olive oil
1 tbsp salt to taste
8 cups hot water
1 chicken bouillon (optional)
2 tbsp yogurt
1 egg
Black pepper

Saute onions with canola/olive oil in a pot for 2-3 minutes. Stir in tomatoes and continue sautéing over medium heat for a while. Add hot water, salt and chicken bouillon (if using). Once it starts bubbling, stir in potatoes and simmer over low-medium heat for about 10-15 minutes.
Stir in vermicelli/orzo. Cook for about 8-10 more minutes till the vermicelli/orzo and potatoes are cooked. Turn the heat off.
For the sauce, beat the egg and yogurt in a bowl. Take a ladle of soup and slowly stir in the sauce to reduce the heat difference between the soup and sauce. Then, slowly stir the sauce into soup. Sprinkle black pepper and serve warm.

Bir tencereye kanola/zeytinyagini ve sogani alin. Orta ateste 2-3 dakika kavurun. Domatesi ilave edin ve bir sure daha kavurmaya devam edin. Sicak su, tuz ve kullaniyorsaniz bulyonu ekleyin. Kaynamaya baslayinca patatesleri ilave edin. Kisik ateste yaklasik 10-15 dakika pisirin.
Sonra, sehriyeyi ilave edin ve karistirin. Sehriye ve patatesler pisene dek yaklasik 10 dakika boyunca pisirin. Altini kapatin.
Corbanin terbiyesi icin bir kasede yumurta ve yogurdu mumkun oldugu kadar iyi cirpin. Bir kepce ile sicak corbadan alin ve yavasca cirpmis oldugunuz terbiye sosunun icine karistirin. Boylece terbiye sosu ve corbanin arasindaki sicaklik farkini azaltmis olursunuz. Son olarak terbiye sosunu yavas yavas karistirarak corbaya ilave edin. Karabiber serpin ve sicak servis yapin.

Ali Nazik

2 medium eggplants
1-2 green pepper (optional)
150 gr ground beef
1+1 tbsp canola oil
½ cup garlic yogurt
½ tsp black pepper
1-2 tbsp fresh parsley, chopped (optional)
1 tsp salt to taste

Make holes in the eggplants with a fork to make them roast better. Roast them and peppers in the oven or over the grill till they get soft. Let them cool. Remove the skins of both eggplants and peppers. Chop them finely; add half of the salt (1/2 tsp) and sauté with one tbsp of canola oil for about 3-4 minutes. Transfer to a serving plate. If desired, mix the eggplants with half of the garlic yogurt.
Cook ground beef with one tbsp of canola oil and stir in black pepper and the remaining salt. Place cooked ground meat over the eggplants and the garlic yogurt on top. You can garnish with parsley. Also if desired place 2 tbsp of butter in a small frying pan and melt over low-medium heat. Once it starts spitting turn the heat off and stir in ½ tsp paprika. Pour all over the dish.

Patlicanlarin uzerine bicak ucuyla delikler acin ve firinda ya da izgarada yumusayana dek kozleyin. Yesil biberleri de kozleyin. Soguduktan sonra biber ve patlicanlarin kabuklarini soyun ve kucuk kucuk dograyin. Bir tavada bir yemek kasigi kanola yagi ile patlican ve biberleri tuzun yarisini (1/2 tatli kasigi) ilave ederek, 3-4 dakika kavurun. Servis tabagina alin. Isterseniz sarimsakli yogurdun yarisini patlican ile karistirabilirsiniz.
Bir yemek kasigi kanola yaginda kiymayi karabiber ile kavurun ve geri kalan tuzu ilave edin. Sonra kiymayi patlicanlarin uzerine dokun ve en uzerine sarimsakli yogurdu dokun.
Uzerini maydanoz ile susleyebilirsiniz. Arzuya gore uzerine kirmizi biberli kizdirilmis tereyagi dokulebilir.

Sauteed Chicken (Tavuk Sote)

1 lb boneless chicken breast or thighs, in chunks
1 tomato, diced or 2/3 cup crushed tomatoes
1-2 banana peppers, chopped
1 onion, chopped
2 tbsp canola oil
¼ tsp black pepper
¼ tsp cumin (optional)
¼ cup hot water (optional)
1 tsp salt to taste

In a saucepan or in a stainless steel pot, place the chopped chicken and close the lid properly. Cook till the water evaporates (10-18 min) at low heat, stirring occasionally.When all the water evaporates, add the oil, salt and onions. Sauté for 2-3 minutes over low-medium heat. Then, stir in the pepper and tomatoes. If desired add ¼ cup of hot water. Cook for 6-8 minutes on low heat.Finally add the spices.
Serve it warm. This dish goes well with yogurt or ayran.

NOTE: If you add the salt at the beginning the chicken may be hard to chew.

Chick peas with Beef (Etli Nohut Yemegi)

1 lb beef, in chunks
1 onion, chopped
1+1 tbsp canola oil
2 cups chick peas, cooked/canned
3-4 cups water
1 tbsp salt to taste
1 ½ tbsp tomato paste

Soak the chick peas in water at least for 5-6 hours. Drain and cook with 3-4 cups of water till they get soft. Drain and leave aside. If using canned chick peas, just drain.
In a big pot, sauté meat chunks with 1 tbsp of canola oil. Stir in 4 cups of water and simmer over medium heat till meats are tender (approximately 18-20 minutes). Once meat gets softer add salt.
Meanwhile, sauté onions with 1 tbsp canola oil and stir in tomato paste. Cook for a few minutes.
Add sautéed onions and cooked chick peas to the pot which you cooked the meat inside. Cook them all for an additional 5-7 minutes.

Nohutlari bir gece onceden ya da 5-6 saat boyunca suda bekletin. Sonra suyunu suzun ve 3-4 bardak suda yumusayana dek pisirin. Pisen nohutlarin suyunu suzun ve bir kernara ayirin. Nohut konservesi kullaniyorsaniz, konservenin suyunu suzun.
Once etleri 1 yemek kasigi kanola yagi ile buyukce bir tencere kavurun. Sonra 4 su bardagi suyu ilave edin ve kisik ateste etler yumusayana dek pisirin (yaklasik 18-20 dakika). Etler yumusamaya baslayinca tuzu ilave edin.
Bu sirada 1 yemek kasigi kanola yaginda sogani kavurun ve sonra salcayi ilave edip bir kac dakika daha kavurun.
Sonra etlerin oldugu tencereye kavurdugunuz salca sogan ve pismis nohutlari ilave edin. Yaklasik 5-7 dakika daha pisirin.

Red Cabbage Salad (Kirmizi Lahana Salatasi)

½ head/2-3 cups red cabbage, chopped finely
1 big carrot, grated
2-3 tbsp feta cheese, crumbled
2 tbsp olive oil
1 tsp vinegar
1 tsp salt to taste
Fresh mint leaves for garnish

Mix all the ingredients, but feta cheese in a bowl. Then transfer to a salad plate and strew crumbled feta cheese on top. Garnish with mint leaves.
Red Cabbage Salad goes with any kind of dish.

Tarhana Soup (Tarhana Corbasi)

3 tbsp tarhana
2 tbsp crushed/grated tomatoes
2 tbsp butter
3-4 cups chicken broth/water+bouillon
1 tsp salt to taste
Croutons/feta cheese for garnish

Place the tarhana and 1/2 cup of water in a bowl. Leave it alone for 1-2 hours for tarhana to dissolve a bit stirring occasionally. In a pot, take butter and tomatoes. Saute over medium heat. Then, add in the rest of the ingredients. Cook over low-medium heat stirring constantly. Adjust consistency of the soup as you like by adding more water if you prefer.You can serve Tarhana Soup with crumbled feta cheese or croutons on top.

Broccoli Casserole (Brokoli Guveci)

1 lb broccoli, chopped
1 can/cup cream of mushroom soup
1 onion, chopped
2 tbsp canola oil
1 cup cheddar cheese, shredded
¼ cup butter, melted
½ tsp black pepper
½ cup bread/cracker crumbs
1 tsp salt to taste

First cook the broccoli for 5-6 minutes in salty water. Saute onions with canola oil over medium heat. Drain cooked broccoli and stir them in. Saute for 4-5 minutes.
Transfer them into a Pyrex dish and add cream of mushroom soup, cheddar cheese and black pepper. Mix them all. Drizzle melted butter over bread/cracker crumbs and strew them all over the casserole.
Bake in the preheated 350 F (180 C) oven for 30 minutes or till the surface gets lightly brown.

Brokoliyi borcam/firin tepsisine bosaltin. Uzerine mantar corbasi, cedar peyniri ve karabiberi ilave edin. Hepsini guzelce karistirin. Tereyagini kiriklanmis ekmek/krakerlerin uzerinde gezdirin ve tepsinin uzerine esit olarak serpistirin.
Onceden isitilmis 180 C (350 F) firinda uzeri kizarana dek yaklasik 30 dakika pisirin.

Chicken Patties (Tavuk Koftesi)

1 lb ground chicken
1 cup bread crumbs
1 onion, grated
1 egg
1/3 cup parsley, chopped
½ tsp black pepper
½ tsp paprika
1 tsp curry
1 tsp salt to taste
1/3 cup canola oil for frying

Mix all the ingredients but the canola oil in a big bowl. Then continue mixing with your hands for 3-4 minutes to make sure all the ingredients get together.
Grab egg size or any size you like pieces, and using your palms round them to make patties. Sizzle canola oil in a frying pan and fry both sides of Chicken Patties over medium heat.
Serve Chicken Patties warm.

Pasta with Basil Pesto (Feslegenli Pesto Soslu Makarna)

1 lb any kind of pasta
~1 lt chicken stock/ chicken bouillon
1 tbsp salt to taste
½-2/3 cup Basil Pesto

Cook pasta according to the instructions on the package with one table spoon of salt. Use chicken stock instead of water or use a chicken bouillon. Drain and combine with Basil Pesto. If desired serve out the plates first and then just spread the basil pesto on top.
Serve Pasta with Basil Pesto warm.

Easy Pogaca (Kolay Pogaca)

1 egg (yolk separated)
100 gr butter/margarine, softened
½ cup canola oil
½ cup yogurt
½-1 tsp baking powder
1 tsp salt to taste
2 ½-3 cups flour
1 tbsp nigella seeds for top

Filling:
½ cup ricotta/Mexican crumbling/feta cheese, crumbled
2 tbsp fresh parsley/dill, chopped finely (optional)

Place all of the dough ingredients in a wide and deep bowl. Mix them all and knead with your hands till the dough gets elastic, non sticky and smooth. In a small plate, mix the filling ingredients. Grab egg size or bigger dough pieces and flatten with your palms. Place one tea spoonful of filling in the middle and close it up like a half moon shape. Stick the edges pressing with your fingers.
Place the pogacas over a greased oven tray and glaze with egg yolk. Sprinkle with nigella seeds and bake at preheated 350 F (180 C) oven till they get light brown.

Genis ve derince bir kaba butun hamur malzemelerini alin. Elastik ve kulak memesi yumusakliginda, puruzsuz bir hamur elde edene dek yogurun. Bir tabakta ic malzemesini karistirin.
Hamurdan yumurta ya da daha buyuk parcalar koparin elinizle acarak yuvarlak sekil verin. Ortasina bir tatli kasigi ic malzeme koyun ve ay seklinde kapatin ve kenarlarini yapistirin.
Pogcalari yaglanmis firin tepsisine aralikli olarak dizin ve uzerlerine ayirmis oldugunuz yumurta sarisini surun. Corek otu serpin ve onceden isitilmis 180C (350F) firinda uzerleri kizarana dek pisirin.

Samsa Dessert (Samsa Milfoy Tatlisi)

½ lb puff phyllo pastry sheets
200 gr hazelnut/walnut, crushed
3 tbsp sugar
2 tsp cinnamon
1 egg

Syrup:
2 cups sugar
2- 2½ cup water
1 tsp lemon juice

First, place the syrup ingredients in a pot and bring to a boil. Then, boil for 5-8 minutes. Let it cool thoroughly.
In a bowl; mix egg white, sugar, hazelnuts and cinnamon. Flatten puff pastry sheets with a roller. Then, place some hazelnut mixture in the middle and close up the ends on top of each other. Flip inversely and cut into square pieces (see the picture).
Arrange them over a greased oven tray and glaze with egg yolk. Then, make strips over each one with a fork. Bake in the preheated 400 F (200 C) oven till they get lightly brown. Pour the cooled syrup all over the hot Samsa Dessert after taking out of the oven. Wait at least 30 minutes for the dessert to absorb the syrup.

Bir kasede findik, seker, yumurta aki ve tarcini karistirin. Milfoy hamurlarini merdane ile iyice acin. Ortalarina findik harcindan koyarak kenarlarini ust uste kapatin. Ters cevirin ve kare seklinde yaridan kesin (resime bakiniz).
Yaglanmis firin tepsisine aralikli olarak dizin. Uzerlerine yumurta sarisi surun ve catal ile cizikler yapin. Onceden isitilmis 200 C (400 F) firinda uzerleri kizarana dek pisirin. Firindan cikarinca, sicak tatlinin uzerine soguk surubu dokun. En az 30 dakika boyunca tatlinin surubu cekmesini bekleyin.

Uzbek Pilaf (Ozbek Pilavi)

2 cups rice, washed and drained
½ lb beef, in chunks
2-3 tbsp canola oil
3 big carrots, julienne cut
1 onion, chopped
3 cups beef stock
1 tbsp salt to taste
¼ tsp cumin
¼ tsp black pepper

Cook beef chunks in 3-4 cups of water. Once they are about to get soft add 1 tsp of salt and continue cooking over medium heat (for about 20 minutes). Drain and leave aside the beef broth for using later.
In a large saucepan, take canola oil and onions. Saute over medium heat and stir in julienne cut carrots. Saute for more 2-3 minutes. Stir in cooked beef chunks, rice and spices. Cook for about 3-4 minutes.
Add 3 cups of beef stock, you leave aside before. Stir in the remaining salt and once it gets bubbling, close the lid. Cook over low heat till rice is cooked and absorbs all the water (for about 30 minutes).
Once it is cooked, rest for at least 15 minutes without opening the lid. Stir well before serving and serve Uzbek Pilaf warm.

Bir tencereye kusbasi dogranmis etleri alin ve 3-4 su bardagi suda pisirin. Etler yumusamaya baslayinca 1 tatli kasigi tuz ilave edin ve kisik ateste pisirmeye devam edin (yaklasik 20 dakika). Etin suyunu daha sonra kullanmak uzere ayirin.
Diger bir tencerede sogani kanola yagi ile orta ateste kavurun. Sonra julyen (kibrit copu seklinde) kesilmis havuclari ilave edip, 2-3 dakika daha kavurmaya devam edin. Pirinc, et ve baharatlarida ilave edip 3-4 dakika kavurun.
Ayirmis oldugunuz et suyundan 3 su bardagi et suyu ve geri kalan tuzu ilave edin. Hepsini guzelce karistirin ve kaynamaya baslayinca altini kisin. Kapagi kapali olarak pirincler pisip suyunu tamamen cekene dek pisirin (yaklasik 30 dakika).
Pistikten sonra en az 15 dakika boyunca kapagi kapali olarak dinlendirin. Servis yapmadan once guzelce karistirin ve sicak servis yapin.

Fried Eggplants (Patlican Kizartmasi)

2 big eggplants
½-1 cup canola oil for frying
½-1 tsp salt to taste
Garlic yogurt
Basil sprigs for garnish

Peel eggplants totally or in strips. Cut them in 4 lengthwise and then cut into one inch wide pieces. If the eggplants are thin, just cut in half lengthwise or cut round. Sprinkle salt all over and leave them aside for 15 minutes. Salt will take out the bitter taste of eggplant and it will also prevent eggplants absorbing too much oil while frying. Tap dry them with a paper towel.
Sizzle canola oil in a frying pan and fry both sides of eggplants evenly. Take them over a paper towel.
Serve Fried Eggplants plain or with garlic yogurt on top. Garnish with basil sprigs if desired.

Uzerlerine tuz serpin ve yaklasik 15 dakika bekletin. Tuz patlicanin acisini cikaracak ve kizartirken fazla yag icmesini onleyecektir.
Sonra kagit havlu ile patlicanlarin suyunu alin.
Kizartma tavasinda kanola yagini kizdirin. Patlicanlarin her tarafi guzelce kizarana dek kizartin ve kagit havlu uzerine alin.
Servi tabagina aldiginiz patlicanlari sade ya da sarimsakli yogurt ile servis yapin. Uzerini taze feslegen yapraklari ile susleyebilirsiniz.

Tiramisu

1 ½ package lady finger cookies
½ cup sugar
1 cup Nescafe, hot
2 eggs
200gr/ ½ lb cream cheese
300 gr whipped cream
1 tbsp cocoa for garnish

In a big bowl, whisk eggs and sugar with a mixer till it gets foamy. Add cream cheese, whipped cream and mix for additional 15 minutes. Cover and leave it in the refrigerator for about 1 hour. Meanwhile, make 1 cup of coffee, dissolving ½-1 tbsp of instant Nescafe in 1 cup of hot water. If desired add some sugar in.
Dip lady fingers into the coffee and arrange them side by side over a Pyrex dish. Take the cream mixture out of the fridge and spread half of it over the lady fingers. Then dip the rest of the lady fingers in the coffee and arrange them over. Spread the remaining cream mixture all over evenly. Cover and store the Tiramisu in the refrigerator for about 2 hours. Before serving, cover the surface with cocoa using a small strainer.

Kedi dili biskuvilerini kahveye batirip borcam tepsinin dibine yanyana dizin. Dolaptan cikardiginiz kremanin yarisini biskuvilerin uzerine dokun ve esit olarak yayin. Geriye kalan biskuvileri yine kahveye batirip kremanin uzerine dizin. Kalan kremayi dokun ve esit olarak dagitin. Uzerini kapatarak buzdolabinda yaklasik 2 saat bekletin. Servis yapmadan once cay suzgeci ya da kucuk bir elek yardimiyla kakaoyu Tiramisunun uzerine serpistirin.

Green Lentil Soup (Yesil Mercimek Corbasi)

1 cup green (French) lentil
1 large onion, chopped
2 tbsp olive oil
2 carrots, sliced round
2 cloves garlic, sliced thin
1 cup tomatoes, diced
3-4 cups hot water+ meat bouillon (meat stock)
1 tbsp salt to taste
¼ tsp black pepper
1 tsp summer savory (optional)

Soak green (French) lentils in water for 4-5 hours. Then drain.
In a pot, take olive oil and onions. Saute over medium heat and stir in carrots and garlic. Saute for 8-10 minutes. And then, stir in green lentils and cook for a while. Add hot water+bouillon (meat stock), tomatoes and salt.
Simmer over low-medium heat with the lid closed, till the lentils get soft (for about 30-40 minutes). Turn the heat off and add black pepper and summer savory.
Serve Green Lentil Soup warm or hot.

Mercimek pisene dek yaklasik 30-40 dakika kisik ateste kapagi kapali olarak pisirin. Altini kapatin, karabiber ve zater otunu ilave edin karistirin.
Yesil Mercimek Corbasini sicak servis yapin.

Zucchini Salad with Yogurt (Yogurtlu Kabak Salatasi)

1 lb zucchini
1-1 ½ cup plain yogurt
2-3 gloves garlic, minced or grated
1/3-1/2 cup crushed walnuts (optional)
1-2 tbsp olive oil
½ tsp salt to taste

Wash zucchini and grate without peeling. Then, take olive oil into a skillet and add in grated zucchini. Saute over medium heat till they get soft (for about 8-10 minutes). Turn the heat off and set aside for cooling.
Meanwhile, take yogurt, garlic and salt into a bowl. Mix and add zucchini. Mix them all and transfer to a serving plate. Strew walnuts all over or if desired mix walnuts inside.
Zucchini Salad with Yogurt is good to go with any type of meat, chicken orvegetable dish.

Kirma Borek (Shirred Borek)

5-6 Turkish Phyllo Dough (yufka)
250-300 gr feta/Mexican crumbling cheese, crumbled
1 cup yogurt
1-2 eggs
2/3-1/2 cup canola/olive oil

Open and spread a yufka over the counter. Cut it in half and apply some feta/crumbling cheese all over evenly. Then shirr each yufka piece from two interactively ends and bring into the middle. Cut it into 4 inch pieces and transfer them into a greased oven tray side by side (see the picture). Do the same procedure for the other yufkas.
In a bowl, beat the eggs, yogurt and canola/olive oil. Pour this mixture evenly all over the borek. Bake in the preheated 350F (180 C) oven, till the surface turns light brown (for about 40-50 minutes.)
Serve Kirma Borek warm at breakfast, brunch, lunch and etc.

Yufkayi butun olarak tezgaha yayin ve ortadan ikiye kesin. Kiriklanmis peynirden bir miktar alin ve yufkalarin her yerine esit olarak serpin. Sonra yanlardan ortada birlesecek sekilde buzun. Enlemesine yaklasik 10 cm’lik parcalar halinde kesin ve yaglanmis tepsiye yanyana dizin (resime bakiniz). Ayni islemi diger yufkalar icinde uygulayin. Bir kapta yumurta, yogurt ve kanola/zeytinyagini cirpin. Bu karisimi boregin her yerine yetecek sekilde esit olarak gezdirin. 180 C (350F)’lik firinda uzeri kizarana dek pisirin (yaklasik 40-50 dakika).

Turkish Style Baked Salmon (Turk Usulu Firinda Somon)

1 lb salmon fillets
2-3 tbsp olive oil
2 plum tomatoes, diced
1/3 cup sweet peas
½ red onion, diced
1 tsp fresh basil, chopped
3 black olives, sliced
1/3 cup feta cheese, crumbled
1 tbsp lemon juice
½ tsp black pepper
1 tsp salt to taste

Rub salmon fillets with salt. Place aluminum foil over a baking/Pyrex dish and arrange the salmon fillets. Brush them with olive oil and lemon juice. Sprinkle some black pepper. If you have time, marinade in the fridge for at least one hour.
Strew crumbled feta, sweet peas, onions, tomatoes, olives and basil all over. Seal with aluminum foil. Preheat the oven to 375 F (190C) and bake for 35-40 minutes till the salmon fillets are soft. If desired, surface can be opened and broiled for 3-4 minutes.

Somon baliklarini elinizle yedirerek tuzlayin. Firin/borcam tepsisini aluminyum folyo ile kaplayin. Baliklari yerlestirin ve uzerlerine limon suyu zeytinyagi karisimini surun. Karabiber serpin ve eger zamaniniz varsa en az bir saat buzdolabinda bekletin.
Sonra, uzerine ufalanmis beyaz peynir, sogan, domates, zetin ve feslegen serpistirin. Uzerini aluminyum folyo ile kapatin. Onceden isitilmis 190 C (375 F) firinda yaklasik 35-40 dakika pisirin. Arzuya gore uzerinin kizarmasi icin, son 3-4 dakika aluminyumu kaldirip ustten kizartma uygulayabilirsiniz.

Zucchini Breakfast Casserole (Firinda Kahvaltilik Kabak)

2 zucchinis, grated
3-4 eggs
2 slices of bread, torn into pieces
1 tomato, diced
1/4 cup milk
1 cup cheddar/mozzarella cheese, shredded
½ cup parmesan cheese (optional)
1 tbsp fresh basil, chopped
1 tbsp salt to taste

Preheat the oven to 400 F (200 C). Take grated zucchini into a Pyrex dish and salt. Place the bread pieces all over. In a bowl, whisk egg and milk then, stir in basil and cheddar/mozzarella. Pour this mixture over zucchini and bread pieces. Mix them all up.
Finally, place tomatoes on the surface and sprinkle grated Parmesan all over if desired. Bake for about 30-45 minutes till it gets light brown.
Serve warm.

Son olarak domatesleri esit olarak uzerine yerlestirin. Istege bagli olarak Parmesan peyniri serpistirerek firina verin.
Yaklasik 30-45 dakika, uzeri hafifce kizarana dek pisirin.
Sicak servis yapin.

Carrot Soup (Havuc Corbasi)

2 big carrots, finely grated
1-2 cloves of garlic, grated
3 tbsp canola oil
1 tsp flour
2/3 cup orzo/vermicelli
6-7 cup water
2 tbsp yogurt
1 egg
1 tbsp salt to taste

Saute carrot in canola oil over medium heat for 2-3 minutes. Then, stir in garlic and flour. Saute for a while and then add water and stir well to dissolve flour inside.
Once it gets bubbling stir in orzo/vermicelli and salt. Lower the heat. Close the lid half way and simmer till the orzo/vermicelli is cooked.
Meanwhile, in a small bowl beat the egg and yogurt. Laddle the soup into the yogurt mixture slowly and stir. Then, pour the yogurt mixture into the soup slowly and stir well to make it even. Serve Carrot Soup warm or hot.

Chicken Liver Saute (Tavuk Cigeri Sote)

1lb chicken liver, washed and drained
1 small onion, chopped
1 green pepper, chopped
1 tomato, diced
2 tbsp canola oil
¼ tsp black pepper
½ tsp salt to taste

Cut chicken liver into bite sizes and take into a pan. Over medium heat, cook them till they absorb their own juice. Then add salt and canola oil. Cook for a couple of minutes stirring occasionally. Stir in onion and sauté till onions get translucent.
After that, stir in pepper and cook for 1-2 minutes. Add tomato and cook for 5-6 minutes stirring occasionally. Sprinkle some black pepper and turn the heat off.

Potato Mousaka (Patates Musakka)

6 potatoes, cut into round slices
½ lb ground beef
2 onions, chopped
2 tbsp canola oil
2 tomatoes, sliced round
1 tomato, diced
3 green peppers, chopped or whole
1 tsp salt to taste
½ tsp black pepper
¼ tsp cumin

Sauce:
1 cup hot water
1 tbsp tomato paste
1 tbsp canola oil
½ tsp salt to taste

Lightly fry the potato slices and take them into a large Pyrex dish. Cover the bottom with potatoes and sprinkle some salt. Then set aside the rest of the fried potatoes.
Meanwhile, cook ground beef over medium heat in a skillet. Once it absorbs its own juice stir in oil and onions. Saute for 3-4 minutes. Add 1 diced tomato and salt. Cook for a couple of minutes, add the spices and turn the heat off.
Spread half of the ground beef mixture over the potatoes and place the remaining potato slices over (see the picture). Spread the rest of the mixture all over evenly. Place the tomato slices and peppers on top.
Mix the sauce ingredients in a small bowl and pour all over the Mousaka. Bake it in a preheated 350F (180C) oven for about 35-40 minutes.
Serve Potato Mousaka warm.

Bu sirada bir tavada kiymayi suyunu cekene dek orta ateste pisirin. Sivi yagi ve sogani ilave edin. 3-4 dakika soteleyin. Tuz ve 1 tane dogranmis domatesi ilave edin. Bir kac dakika daha pisirin ve baharatlari ilave ettikten sonra atesten alin.
Firin tepsisindeki patateslerin uzerine kiyma karisiminin yarisini yayin. Uzerine, kalan patatesleri yayin ve kiyma karisiminin diger yarisini esit olarak dagitin (resime bakiniz). Uzerine domates ve biberleri yerlestirin.
Bir kasede sos malzemelerini guzelce karistirin ve sosu tepsinin uzerinde gezdirin.

Mixed Vegetables with Olive Oil (Zeytinyagli Turlu)

2 potatoes, cut into cubes
1 eggplant, cut into cubes
1 zucchini, cut into cubes
1 onion, chopped
2-3 cloves of garlic, sliced thin
1 green/red pepper, chopped
1 large tomato, diced
¼ cup olive oil
1 cup hot water
1 tbsp salt to taste
¼ tsp black pepper

Saute onions in olive oil over medium heat. Then stir in garlic and sauté for a while. Then stir in pepper and cook for 2 minutes. Add potatoes, eggplant and zucchini respectively. While adding each vegetable, cook each of them for about 2 minutes stirring occasionally. Stir in salt, black pepper and hot water. Then spread the tomato all over.
Close the lid and cook over low-medium heat till potatoes are soft (for about 20-30 minutes).

Cucumber Salad with Yogurt (Yogurtlu Salatalik)

2 big cucumbers (~1/2 lb), sliced diagonally thin
1 cup plain yogurt
½ tsp dried mint/1 tsp fresh dill
2 green onions, chopped (optional)
1/3 cup walnut
1 tbsp lemon juice
1-2 cloves of garlic, pressed
½ tsp salt to taste

In a bowl; mix yogurt, salt, green onions, mint/dill and garlic. Take cucumber slices in a salad plate and drizzle with lemon juice. Then, pour the yogurt mixture over and garnish with walnuts. Serve Cucumber Salad with Yogurt beside any kind of meat, chicken and vegetable dish.

Baked Tomato Chicken (Firinda Domatesli Tavuk)

2 lb chicken, cut into pieces
2-3 potatoes, sliced round
1-2 carrots, sliced round
1-2 pepper, cut into rings
2 tomatoes, sliced round
1 tsp tomato paste
¼ cup oil
1 tsp salt to taste
¼ tsp cumin, black pepper

Take potatoes and carrots into a Pyrex or oven tray. Sprinkle the half of the salt and drizzle half of the oil. Combine them all and cover the base of the tray with them. Mix tomato paste with the remaining salt and oil. Cover the chicken pieces with this mixture, sprinkle some cumin or black pepper if you like.
Then, arrange them over potatoes, place the pepper and tomato slices over. Preheat the oven to 400F (200C) and bake until chicken is cooked, for about 50-60 minutes. Serve Baked Tomato Chicken warm.

2 domates, dilimlenmis
1 tatli kasigi domates salcasi
½ cay bardagi sivi yag
1 yemek kasigi tuz
½ cay kasigi kimyon, karabiber

Patates ve havuclari genis bir borcam ya da firin tepsisine alin, tuz ve sivi yagin yarisini serpin. Guzelce harmanlayin ve tepsinin dibine yayin. Geri kalan tuz ve sivi yag ile domates salcasini karistirin. Tavuk parcalarini bu karisima bulayin. Isterseniz kimyon veya karabiber serpebilirsiniz.
Sonra, tavuk parcalarini patateslerin uzerine yerlestirin. Son olarak, biberleri ve domates dilimlerini yerlestirin. Onceden isitilmis 200C (400F ) firinda tavuklar pisene dek yaklasik 50-60 dakika kadar pisirin. Firinda Domatesli Tavugu sicak servis yapin.
