Balkan Leek Saute (Balkan Pirasa Sote)

2 pairs of fresh leek, washed and cut in small chunks
½ tbsp tomato paste or 1 tomato, diced or 3 tbsp tomato in a can
2 tbsp butter or 2-3 tbsp oil (canola/ sunflower/vegetable/corn/olive)
1 tsp salt
¼ cup hot water

Place the small chunks of leek and butter/oil in a large skillet or in a medium size pot. Saute leek over medium heat till the color changes and they decrease in volume. Then add tomatoes or tomato paste and salt. Pour the hot water and stir well. Cover the lid and cook for 10-12 minutes over low heat.
Yogurt or ayran is good to go with Balkan Leek Sauté.

2 tane pirasa, yikanmis ve kucuk dogranmis
½ yemek kasigi salca/1 dogranmis domates /3 yemek kasigi konserve domates
2 yemek kasigi tereyag/ 2-3 yemek kasigi sivi yag
1 tatli kasigi tuz
½ su bardagi sicak su

Tereyagi/siviyag ve pirasalari bir tava ya da tencereye koyun. Orta ateste pirasalar renk degistirip, hacimce azalana dek kavurun. Sonra domates ya da domates salcasini ve tuzu ilave edin. Uzerine sicak suyu dokup, karisitirin. Kapagi kapali olarak dusuk ateste 10-12 dakika pisirin.
Balkan Pirasa Soteyi ayran ve yogurt ile servis yapabilirsiniz.
