Shallow Fried Chicken Liver (Tavuk Cigeri Kavurmasi)

1 lb chicken liver, washed and drained
1 onion, chopped (optional)
2-3 tbsp canola oil
¼ tsp cumin
¼ tsp paprika
¼ tsp black pepper
½ tsp salt to taste
1/3 cup fresh parsley, chopped (optional)

Chop the livers in bite sizes (preferably in 3 pieces). In a wide skillet, sauté onions with oil (optional). Then, stir in chicken livers and shallow fry them over medium heat stirring occasionally. When the livers give their juice out, turn the heat low and cook till all the juice evaporates (for about 6-8 minutes).
Add salt and cook for a few minutes, then add the rest of the spices and turn the heat off. Transfer them into a serving plate and sprinkle with chopped parsley, if desired.

2-3 yemek kasigi sivi yag
½ cay kasigi kimyon
½ cay kasigi kirmizi toz biber
½ cay kasigi karabiber
1 cay kasigi tuz
1/3 su bardagi maydanoz, dogranmis (istege bagli)

Cigerleri lokma buyuklugunde dograyin (tercihen 3’e bolun). Genis bir tavada once sivi yag ile soganlari kavurun (istege bagli). Sonra dogranmis cigerleri ilave edin ara sira karistirarak orta ateste kavurun. Cigerler suyunu disa verince hafife alin ve suyunu cekene dek pisirin (6-8 dakika).
Suyunu cekmeye yakin tuzunu ilave edin. Bir kac dakika daha cevirin ve baharatlarini ilave edip ocaktan alin. Servis tabagina koyun ve uzerine maydanoz serperek (istege bagli) servis yapin.
