Wet Cake (Islak Kek)

3 eggs
2 cups sugar
1 cup oil/8 tbsp butter (130gr)
1½ cup milk
4 tbsp cocoa
2 cups flour
1 tsp baking powder
1 tsp vanilla extract /1 package vanilla
Coconut flakes or crushed nuts for garnish

In a large bowl, beat eggs and sugar, till they become foamy. Then beat in oil or melted margarine, cocoa, milk and vanilla.
Then put aside 1 cup from this mixture to use it later. Mix in flour and baking powder to the remaining mixture.
Preheat the oven to 350F (180 C).Grease the baking tray and pour the cake mixture evenly. Bake for 25-30 minutes. To check whether the cake is ready, insert a toothpick in the center and pull it out, if it comes out clean, your cake is ready.
Slice the cake and pour the mixture (you put aside before) evenly. Let it cool and garnish with coconut flakes or crushed nuts before serving.

Bu karisimdan 1 su bardagi alip, daha sonra kekin uzerine dokmek icin ayirin. Kalan karisima un ve kabartma tozunu ilave edin ve guzelce karistirin. Yaglamis oldugunuz firin tepsisine dokun ve onceden isitilmis 180 C (350 F) firinda 25-30 dakika kadar pisirin.Kekin orta kismina kurdan batirarak, pisip pismedigini kontrol edebilirsiniz. Eger kurdan temiz olarak cikarsa kekiniz pismistir.
Firindan cikardiginiz keki dilimleyin ve uzerine onceden ayirmis oldugunuz karisimi esit olarak dokun. Soguduktan sonra uzerini hindistan cevizi ya da ceviz/findik/badem ile susleyerek servis yapabilirsiniz.

Shish Kebab (Sis Kebap)

1 lb boneless beef or lamb
1 tsp salt
1-2 cloves of garlic, minced
2 tbsp olive oil
½ tsp cumin
½ tsp paprika
1tbsp lemon juice
Green/yellow/red pepper, cut in big chunks
2-3 medium onions, cut into 4
Any kind of vegetables you like
Wooden/ metal skewers

In a bowl, combine salt, garlic, olive oil, cumin, paprika and lemon juice. Cut the meat uniformly sized 1 to 2 inch cubes for quick and even cooking.
Then add the meat into marinade sauce and mix them all. Leave for marinating at least 1 hour, preferably one night in the fridge.
Drain the meat and discard the marinade sauce, do not use it again.
Put the meat and vegetables on skewers. If you are using wooden skewers, leave them in water for 30 minutes, to prevent them catching fire over the grill.
Cook Shish Kebabs on the grill, electric grill or you can bake them in the oven at 400F (200C) till all sides are golden brown and tender.

Bir kasede, tuz, sarimsak, zeytinyagi, kimyon, kirmizi toz biber ve limon suyunu karistirin. Etleri 3-4 cm lik kupler seklinde dograyin.
Marine sosuna etleri ilave edin ve guzelce karistirip, en az 1 saat, tercihen bir gece buzdolabinda bekletin.
Pisireceginiz zaman marine sosunu suzun ve atin, geri kalan sosu tekrar kullanmayin.
Eti ve sebzeleri sislere dizin. Eger tahta sis kullaniyorsaniz, sisleri en az 30 dakika suda bekletin. Tahta suyu cekip, mangal esnasinda alev almayacaktir.
Sis kebablari mangalda, elektrikli izgarada ya da firinda 200 C (400 F)de her taraflari kizarana dek pisirin.

Texas Steak (Teksas Usulu Biftek)

1 lb steak (preferably sirloin or rib)
2 tbsp yogurt
2 tbsp olive oil
½ tsp cumin
1 tsp salt
1 tbsp lemon juice
½-1 tsp thyme

1 tbsp soy sauce (optional)

Combine all the ingredients, but the steak. Then, rub the steak with this marinade sauce. Place the steak into the remaining sauce and leave at least 1 hour, preferably one night in the fridge.
Then, you can cook the steak over grill, electric grill or in a skillet over medium heat, till the both sides are golden brown.
You can serve steak with mashed potatoes, pilaf, fried potatoes or vegetables.

Eggplant Stew with Tomatoes (Domatesli Patlican)

2 eggplants, washed and peeled
2 tomatoes, diced / 1 ½ cups diced tomato in a can
1 big onion, chopped
1 tsp tomato paste (optional)
1 green pepper, chopped
3 tbsp olive oil
1 tsp salt
¼ tsp black pepper
1/2 tsp basil (optional)
½ cup hot water

Cut the eggplants in cubes and place into a bowl covered with water. Leave for 15-20 minutes. Then rinse and drain.
In a pot, sauté onions with olive oil. Then stir in tomato paste (optional) and peppers. Saute them over medium heat and then stir in eggplants. Saute for 3-4 minutes. Finally add salt, hot water, basil and tomatoes. Do not stir, just leave tomatoes on top and cover the lid. Cook for 20-25 minutes over low heat till eggplants are tender.
Sprinkle black pepper on top and stir.
Serve Eggplant Stew with Tomatoes warm or cool, with yogurt or cacik as you like.

Patlicanlari kup kup dograyin ve ici su dolu bir kapta 15-20 dakika bekletin. Sonra durulayin ve suyunu suzun.
Tencereye zeytinyagi ve soganlari koyup, pembelesene dek kavurun. Domates salcasini ve biberleri ilave edin (istege bagli). Orta ateste biraz kavurduktan sonra patlicanlari ilave edin ve 3-4 dakika kavurun. Son olarak tuz, sicak su, feslegen ve domatesleri ilave edin. Karistirmadan oylece birakin, tencerenin kapagini kapatip kisik ateste 20-25 dakika patlicanlar yumusayana dek pisirin.
Pistikten sonra uzerine karabiber serpin ve Domatesli Patlicani karistirip sicak ya da soguk servis yapin. Yaninda yogurt ya da cacik ile servis edebilirsiniz.

Walnut Bread Rolls (Cevizli Ekmek)

25-30 gr fresh active yeast/7 gr instant yeast
2 cups lukewarm water
1 tbsp salt
1 tsp sugar
1 egg (white goes inside, yolk for egg wash)
¼ cup oil
6 cups of flour, heaping
1 cup crushed walnut/pecan
1 tsp allspice
2 tbsp yogurt (for egg wash)

Place the lukewarm water, sugar and the yeast into a bowl. Stir well to dissolve the sugar and the yeast.
Then, add salt, egg white, ¼ cup oil and flour, knead for 5-8 minutes, till dough becomes elastic. Place a plastic wrap on the dough (see the picture) and let it rest for 2 hours in a warm place, till it rises up to double its volume (see the picture).
Place dough on the counter and punch to release air. Then sprinkle some flour on the counter and try to flatten the dough in 1/10 inch thickness with a dough roller.
Sprinkle allspice and spread the crushed walnut over dough (see the picture). Then roll it up tightly (see the picture). Cut the roll into 2 inch wide pieces (see the picture), and press gently on cut sides. Then place them into the baking tray with baking paper. Leave it for 1-2 hours to rise.
Preheat the oven to 400F (200C). Mix the egg yolk and yogurt in a bowl and brush surface of the Walnut Bread Rolls with this egg wash. Bake for 12-15 minutes, then switch to 350 F (180 C) and bake for 8-10 minutes till they turn to golden brown.
After taking those out of the oven cover them with a clean cloth or towel to keep them soft. Serve warm.
This recipe makes 24-25 rolls.

Uzerine seffaf film ortun (resime bakiniz) ve sicak bir ortamda, hamur iki kati kadar kabarana dek, yaklasik 2 saat, bekleyin (resime bakiniz).
Hamuru tezgahin uzerine alin ve havasini indirmek icin uzerinden bastirin ve tezgahi unlayip oklava ile hamuru ½ cm kalinliginda acin. Uzerine yenibahar serpin ve kiriklanmis cevizleri yayin (resime bakiniz). Sonra sikica rulo yapin (resime bakiniz) ve ruloyu 4-5 cm genisliginda parcalara kesin (resime bakiniz). Sonra kesik yerlerinden hafifce bastirip, uzerinde yagli kagit olan tepsiye aralikli olarak dizin. Ekmek rulolari iki kati buyuyene kadar yaklasik 1-2 saat bekletin.
Firini onceden 200 C (400F) ye isitin ve yogurt ile yumurta sarisini karistirip, rulolarin uzerine firca ile surun. 12-15 dakika pisirip, sicakligi 180 C (350F) ye dusurun ve 8-10 dakika daha uzerleri kizarana dek pisirin.
Firindan cikarinca, tepsinin uzerini temiz bir mutfak bezi ya da havlu ile ortup hava almasini engeleyin. Boylece Peynirli Ekmek Rulolariniz yumusacik olacaklar.
Sicak servis yapin.

Add the salt, egg white, ¼ cup oil and flour, knead for 5-8 minutes, till dough becomes elastic. Place a plastic wrap on the dough (see the picture) and let it rest for 2 hours in a warm place, till it rises up to double its volume (see the picture).

Then place them into the baking tray with baking paper. Leave it for 1-2 hours to rise.
Preheat the oven to 400F (200C). Mix the egg yolk and yogurt in a bowl and brush the surface of the Bread Rolls with Cheese with this egg wash and sprinkle nigella seeds on top. Bake for 12-15 minutes, then switch to 350 F (180 C) and bake for 8-10 minutes till they turn to golden brown.

Tomato Sauce/Dip (Domates Sosu)

2 medium tomatoes, grated/3 tbsp tomato paste
2 tbsp extra virgin olive oil
½-1/3 cup water (if using tomato paste)
¼ tsp salt
½ tsp mint
¼ tsp basil

In a skillet, mix all the ingredients but mint and basil. Over low heat, cook 3-4 minutes for tomato paste, 10 minutes for grated tomatoes. Then stir in mint and basil.
You can use Tomato Dip for chips, over fried vegetables or pasta.

Broiled Sardines (Firinda Kizarmis Sardalya)

1 lb (~450gr) sardines
1 tbsp salt
3 tbsp olive oil
½ tsp paprika
½ tsp thyme
Juice of ½ lemon
1 clove garlic, minced

Cut the heads off and gut the sardines. Wash them under cold water and drain. If you like you can take the bones out and form sardine fillets. Then, mix all the ingredients with sardines in a bowl and leave them for marinating in the fridge at least 1 hour.
Preheat the oven at 400F (200C) and place sardines on a baking tray. I like the grill stripes on fish, so I placed a cooling rack on a tray and broiled sardines on it(Fats of sarnines will drop on the tray). Bake for 10 minutes and then switch to broil. Broil both sides for 5-7 minutes until they are golden brown.
Broiled sardines are good to go with arugula, radish, Turkish coleslaw, onion salad and lemon.

Sardalyalari kafalarini ve karinlarini keserek temizleyin ve soguk su ile guzelce yikayin.Isterseniz kilciklarini temizleyip, fileto olarak pisirebilirsiniz. Suyu suzuldukten sonra bir kasede butun malzemeler ile karistirin ve buzdolabinda en az 1 saat marine edin.
Firini onceden 200 C (400F) isitin ve baliklari firin tepsisine dizin. Ben baliklarin uzerinde izgara cizgilerini sevdigim icin, firin tepsisinin uzerine tel izgara koydum ve onun uzerinde baliklari pisirdim (Sardalyalarin yagi tepsiye damlayacaktir). Yaklasik 10 dakika pisirdikten sonra, ustten kizartmaya ayarlayin (broil) ve 5-7 dakika arasi damak zevkinize gore uzerleri kizarana dek kizartin, sonra baliklari ters cevirip tekrar 5-7 dakika boyunca ustten kizartin.
Firinda kizarmis sardalyalari yaninda, roka, turp, sogan salatasi ya da beyaz lahana salatasi ve limon ile servis yapabilirsiniz.

Tiramisu Bowl (Tiramisu Kasesi)

8 0z (~230 gr) Cream Cheese, softened
3 cups cold milk
2 pkg (3.4 oz each) vanilla/banana instant pudding
8 oz (~230 gr) Whipped Topping, thawed
48 nilla wafers
½ cup brewed strong coffee, cooled
2 square semi-sweet chocolate, grated
1 cup fresh, banana/ strawberry/raspberry

Beat cream cheese with a mixer till creamy. Then beat in milk and pudding mixes.Stir in 2 cups cool whip.

In a glass 2-1/2 qt bowl, line the wafers and drizzle with half of the coffee. Top with half of the pudding mixture and half of the chocolate on top. Then repeat the layers. On top, garnish with the remaining cool whip and fruits you like. Sprinkle the rest of chocolate and refrigerate for about 2 hours.

P.S: If your glass is not deep enough to make 2 layers, just make a single layer and garnish top. You can also arrange it into small bowls.

Mikser ile krem peyniri krema haline getirin ve sut ile hazir pudingi ilave edin. Eger toz puding kullanacaksaniz 3 su bardagi sut ile pudingi pisirin ve sogutun sonra ilave edin. Son olarak 2 su bardagi krem santi ilave edin ve karistirin.
1 ½ -2 lt lik bir dar uzun bir kasenin kenarlarina biskuvileri dizin ve uzerlerine kahvenin yarisini serpin. Puding karisiminin yarisini uzerine dokun ve uzerine cikolatanin yarisini serpin. Sonra ayni islemi tekrar yapip iki tabaka olusturun. Uzerine kalan cikolatayi serpin ve istediginiz meyve cesidiyle susleyin. Son olarak geri kalan krem santiyle susleyin ve buzdolabinda 2 saat kadar bekletin.

NOT: Eger kullandiginiz kase cok derin degilse sadece bir tabaka yapabilirsiniz. Ayni islemi kucuk kaseler kullanarak da yapabilirsiniz.

Balkan Leek Saute (Balkan Pirasa Sote)

2 pairs of fresh leek, washed and cut in small chunks
½ tbsp tomato paste or 1 tomato, diced or 3 tbsp tomato in a can
2 tbsp butter or 2-3 tbsp oil (canola/ sunflower/vegetable/corn/olive)
1 tsp salt
¼ cup hot water

Place the small chunks of leek and butter/oil in a large skillet or in a medium size pot. Saute leek over medium heat till the color changes and they decrease in volume. Then add tomatoes or tomato paste and salt. Pour the hot water and stir well. Cover the lid and cook for 10-12 minutes over low heat.
Yogurt or ayran is good to go with Balkan Leek Sauté.

Balkan Pirasa Soteyi ayran ve yogurt ile servis yapabilirsiniz.

Inegol’s Traditional Meatball (Inegol Kofte)

1 lb lean ground beef
¼ cup bread crumbs
1 big onion, shredded
½ tsp cumin
¼ tsp black pepper
1 tsp baking soda
1 clove garlic, minced (optional)
2-3 stems parsley, finely chopped (optional)
1 tsp salt

Mix all the ingredients in a bowl. And knead for 3-4 minutes to form a stiff mixture. Cover it and leave in the fridge for the night. Then, the next day make finger shape meatballs.
Shallow fry them in a skillet or grill. Make sure that all sides turn to a golden brown color.

2-3 dal maydanoz, ince kiyilmis (istege bagli)
1 tatli kasigi tuz

Butun malzemeleri bir kasede karistirin ve elinizle 3-4 dakika yogurun. Kiymanin sikilastigini goreceksiniz. Kiymayi agzi kapali olarak bir gece boyunca buzdolabinda bekletin. Ertesi gun, kiymadan uzun, parmak sekilli kofteler yapin.

Tavada az yagda her tarafini guzelce kizartin. Mangal ya da izgarada da pisirebilirsiniz.

Chocolate Chip Cookie (Cikolatali Kurabiye)

3/2 cup sugar
1 cup butter/margarine, softened
2 ¼ cups all-purpose flour
1 cup chopped pecans (optional)
1tsp vanilla extract
1 tsp baking soda
2 eggs, beaten
3/4 tsp salt
2 cups semisweet chocolate chips

Preheat oven to 375F (190C) degrees. Mix sugar, butter, vanilla and eggs in a large bowl by hand. Stir in flour, baking soda, and salt. The dough will be very stiff. Then stir in chocolate chips and pecans (optional).
Drop dough by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheet. Bake 8 to 10 minutes or until light brown. The centers will be soft. Let them cool. Remove Chocolate Chip Cookies from cookie sheet and serve.

1 tatli kasigi karbonat
2 su bardagi yari tatli cikolata parcacigi
1 su bardagi pekan cevizi/ceviz/findik, ufalanmis (istege bagli)
Firini onceden 190C (375F) a isitin. Seker, tereyagi, vanilya ve yumurtalari genis bir kasede tahta kasik ile karistirin. Un, karbonat ve tuzu ilave ederek karistirmaya devam edin. Cok koyu kivamli bir hamur elde edeceksiniz. Sonra cikolata parcaciklarini ve pekan cevizi/ceviz/findigi (istege bagli) ilave edip, karistirin.
Hamurdan bir yemek kasigi dolusu alin ve yagli kagit serilmis tepsiye yaklasik 4 cm araliklarla yerlestirin. 8-10 dakika ya da uzerleri hafif pembelesene dek pisirin. Orta kisimlari yumusak olacaktir. Cikolatali Kurabiyelerin tamamen sogumasini bekleyin ve servis yapin.

Leek with Olive Oil (Zeytinyagli Pirasa)

1 bunch of leek, washed and cut into chunks
2 carrots, sliced in circular shapes
1 onion, chopped
1 tsp tomato paste (optional)
½ cup rice, washed and drained
1 ½ cup hot water
3 tbsp olive oil
1 tbsp salt
½ tsp sugar

Place olive oil and onions in a pot and sauté them till the onions turn light brown. Then add tomato paste (optional), sliced carrots and chopped leeks. Cook them over medium heat for 3-4 minutes, stirring occasionally. Stir in rice and sauté for 1-2 minutes, and then add hot water, salt and sugar. Cook till rice becomes soft, for about 30-40 minutes over low heat.
Let Leeks with Olive Oil cool in the pot. Then place into a serving plate. Drizzle some lemon juice and olive oil (optional) on top.

Zeytinyagi ve sogani tencereye alin ve soganlar pembelesene dek kavurun. Sonra, salcayi (istege bagli), dogranmis havuclari ve pirasayi ilave edin. Ara sira karistirarak 3-4 dakika orta ateste kavurun. Ardindan pirinci ilave edip, 1-2 dakika daha kavurun ve sicak suyu ilave edin. Tuz ve sekeri de ilave edip karistirin. Hafif ateste pirincler pisene dek yaklasik 30-40 dakika pisirin.
Zeytinyagli pirasayi tencerede ilik olana dek bekletin, servis yaparken uzerine biraz zeytinyagi ve limon suyu dokebilirsiniz.
