Shallow Fried Beef Liver ( Dana Cigeri Kavurmasi)

1 lb (450-500 gr) beef liver, cut into bite size/sliced into strips
1 tsp salt to taste
½ tsp paprika
¼ tsp cumin
½ cup flour
1/3 cup oil for frying
Sprinkle salt, paprika and cumin over the liver and then mix. In a wide plate place the flour and dip the livers into the flour. Shake the excess flour.
Over high heat, sizzle the oil in a skillet and fry the livers for 4-5 minutes, till they are cooked. Place the cooked liver on a paper towel to get rid of the excess oil. Finally, place the shallow fried beef liver in a serving plate and serve warm.
Pilaf and fried potatoes are good to go with Shallow Fried Beef Liver.

Yuksek ateste kizdirdiginiz yagda 4-5 dakika kizartin. Kagit havlu koydugunuz bir tabaga kizarmis cigerleri koyup, fazla yagin suzulmesini saglayin. Son olarak; servis tabagina alip, sicak servis yapin.
Dana Cigeri Kavurmasini pilav ve patates kizartmasi ile servis yapabilirsiniz.

Skillet Beef&Potatoes (Etli Patates Tava)

3 potatoes, peeled and chopped
1/3 cup water
1 lb beef strips
2 gloves of garlic, minced
1 onion, chopped
2 tbsp olive oil
1 tsp rosemary
½ tsp black pepper
1 tsp salt to taste

Place potatoes, ¼ tsp salt and water in a wide bowl and cook in microwave covered for 10 minutes. Then drain.
You can also boil the potatoes, instead of using microwave. But it will take much longer.
In a skillet, stir fry beef strips over low-medium heat till their juice evaporates. And then stir in onions and 1 tbsp of olive oil. Add the remaining salt, black pepper and cook till the onions and meat become soft.
In another skillet, stir fry the potatoes with the remaining olive oil. Finally, transfer the potatoes into other skillet and sprinkle rosemary. Combine all and serve warm.

Mikrodalgada yapacaginiz ayni islemi patatesleri haslayarak da yapabilirsiniz. Sadece biraz daha uzun surer.
Genis bir tavada dana etini suyunu cekene dek kisik ateste kavurun. Suyunu cekince sogani ve 1 yemek kasigi zeytinyagini ilave edin. Geri kalan tuzu, karabiberi ilave edin ve soganlar yumusayip, etler pisene dek kavurun.
Baska bir tavada, geri kalan zeytinyagi ile patatesleri hafif kizarana dek kavurun.
Son olarak patatesleri diger tavaya ilave edin, biberiyeyi serpin ve harmanlayin.
Sicak servis yapin.

Steak Fajita

½ lb beef strips
1 onion, sliced circularly
1-2 green peppers, chopped in bite sizes

Marinade:
1 tbsp olive oil
1-2 cloves of garlic, minced
½ tsp salt to taste
¼ tsp cumin
¼ tsp black pepper

Mix all the marinade ingredients and rub the beef strips with it. Then leave the beef strips in marinade and keep in the fridge for about 3-5 hours.
Then in a skillet cook the marinated beef strips over low-medium heat. When their water evaporated, stir in onions and peppers. Sautee for 3-4 minutes, till they become soft. You can sprinkle some salt over.
Steak Fajitas are good to go with Tortillas or Pita Bread.

Marine sosu:
1 yemek kasigi zeytinyagi
1-2 dis sarimsak, dovulmus/rendelenmis
1 cay kasigi tuz
½ cay kasigi karabiber
½ cay kasigi kimyon

Butun marine malzemelerini bir kasede karistirin ve et parcalarini bu malzemeye bulayip elinizle ovarak etlere yedirin. Etleri marine malzemesine yatirip buzdolabinda yaklasik 3-5 saat bekletin.
Sonra, genis bir tavada etleri orta ateste suyunu cekip yumusayana dek pisirin. Sogan ve biberleri ilave edip. Karistirarak 3-4 dakika boyunca hepsi pisene dek pisirin. Isterseniz uzerine tuz ilave edin.
Tortilla ya da pide ekmegi ile servis yapabilirsiniz.

Cabbage with Ground Meat (Kapuska)

½ head of white cabbage, chopped
150-200 gr ground meat
1 onion, chopped
1 tsp tomato paste
1 tomato, diced
2 tbsp oil
1- 1½ cup hot water
Red pepper flakes

In a pot, sauté the ground meat and oil, till the color of the meat changes to brown. Then stir in onion and sauté for 2-3 minutes over medium heat. Stir in tomato paste and tomatoes.
Add chopped cabbage and stir occasionally till the volume of cabbage decreases and changes in color. And then, stir in hot water and salt. Make sure the water does not cover the cabbage (adjust the water amount as you like).
Simmer over low heat for about 18-20 minutes till the cabbage is cooked.
Serve Cabbage with Ground Meat with some red pepper flakes on top.

Bir tencerede kiyma ile sivi yagi orta ateste kavurun. Kiymanin rengi kahverengiye donunce sogani ilave edin ve 2-3 dakika daha kavurun. Sonra domates salcasi ve domatesleri ilave edin, biraz cevirin.
Dogranmis lahanayi ilave edin ve ara sira karistirarak kavurun. Lahanin hacmi azalip, rengi degisince tuz ve sicak suyu ilave edin. (Su oranini isteginize gore ayarlayin, ama su lahananin uzerine cikmasa iyi olur).
Dusuk ateste yaklasik 18-20 dakika boyunca, lahana pisene dek pisirin.
Kapuskayi uzerine kirmizi pul biber serperek servis yapabilirsiniz.

White Beans with Meat (Etli Kuru Fasulye)

White Beans with Meat is a very traditional and common dish in Turkey, especially when it is served with pilaf and pickles. Turkish people just love this dish.

2 cups white/butter beans
½ lb beef/lamb meat, chopped
2 onions, chopped
2 tbsp oil
1 tbsp tomato paste
1 dried red pepper/green pepper, chopped
½ tsp baking soda (optional)
¼ tsp chili red pepper flakes (optional)
1 tbsp salt to taste
1 cup hot water

Wash white beans, place them in a pot and cover with water (approximately 1 inch above the beans). Leave them in water overnight or for at least 12 hours. The next day, cook them with the same water till beans get soft over low heat. You could add baking soda to have softer beans quicker. When they are soft, add ½ tbsp of salt.
In another pot, sauté chopped meat with oil till they are brown. Then add onions and sauté for 2-3 minutes over medium heat. Stir in peppers and tomato paste. Add one cup of hot water and the remaining salt, and then simmer till the meat is soft. Transfer the cooked white beans into the pot. Simmer for 10 minutes over low heat.
Serve White Beans with Meat, with pilaf or over pilaf. Also cacik and pickled vegetables are good to go with this recipe.

P.S: You can also use 2 cans of white beans and skip the instructions given in the first paragraph, but it may not be as delicious as the one with dried beans.

Kuru fasulye Turkiye’ nin geleneksel yemeklerinden biridir. Ozellikle pilav ve tursu ile servis yapildiginda genelde butun Turklerin sevdigi bir yemektir.

2 su bardagi kuru fasulye
250 gr dana/koyun eti, dogranmis
2 sogan, dogranmis
2 yemek kasigi sivi yag
1 yemek kasigi domates salcasi
1 kurutulmus kirmizi biber/yesil biber, dogranmis
1 cay kasigi karbonat (istege bagli)
½ cay kasigi kirmizi pul biber (istege bagli)
1 yemek kasigi tuz
1 su bardagi sicak su

Aksamdan kuru fasulyeyi yikayin ve bir tencereye koyup uzerini 2-3 parmak kaplayacak kadar su ile doldurun. En az 12 saat bekletin. Sonra ayni su ile kuru fasulyeler yumusayana dek pisirin. Isterseniz 1 cay kasigi karbonat ilave edip fasulyelerin daha kisa surede yumusamasini saglayabilirsiniz. Pismeye yakin ½ yemek kasigi tuz ilave edin.
Diger bir tencerede once etleri yag ile kavurun ve sogani ilave edin. Sonra salcayi ve biberleri ilave edip kavurun. Bir bardak sicak su ve geri kalan tuzu ilave edin ve etler yumusayana dek pisirin. Sonra pisirdiginiz kuru fasulyeleri etlerin bulundugu tencereye ilave edin ve hafif ateste 10 dakika kadar pisirin.
Etli Kuru Fasulyeyi pilav ile ya da pilav ustu servis yapin. Yaninda cacik ya da tursu ile guzel olur.

Ground Beef Etouffee (Kiymali Bulamac)

This emulsion is one of my favorite practical recipes, which reminds me of my childhood and takes me to 1980s.

¼ lb ground beef
1 small onion, chopped (optional)
1-2 tbsp oil
2 tbsp flour
1 1/2-2 cups water
1 tsp salt to taste
½ tsp paprika
¼ tsp cumin
Dried mint/thyme for garnish

In a large skillet place oil and ground meat. Over medium heat cook till the meat turns brown, then stir in onions and sauté. Stir in flour and sauté for 2-3 minutes. If the flour does not dissolve into the oil, add some more oil.
Stir in paprika, salt, cumin and mix. Then add water and stirring continuously, make a smooth emulsion. Simmer the etouffee until becomes thick, for about 2-4 minutes.
You can sprinkle some dried mint or thyme on top.

½ cay kasigi kimyon
Uzeri icin kuru nane/kekik

Bir tavada once sivi yag ile kiymayi guzelce kavurun, sogan kullanacaksaniz soganlari da ilave edip soganlar pembelesene dek orta ateste kavurun. Unu ilave edin ve 2-3 dakika daha un ile kavurmaya devam edin. Eger un yagin icinde dagilmazsa biraz daha yag ilave edin.
Kirmizi toz biber, tuz ve kimyonu ilave edip, karistirdiktan sonra suyu koyun. Surekli karistirarak unun su icinde puruzsuz bir sekilde dagilmasini saglayin. Bulamac kaynamaya baslayinca hafif ateste koyulasana dek, yaklasik 2-4 dakika pisirin.
Uzerine nane ya da kekik serperek servis yapabilirsiniz.

Roasted Beef Tail (Firinda Dana Kuyrugu)

1 lb (~450 gr) beef or ox tail
1 cup rice, washed and drained
1-2 potatoes, peeled and sliced circularly
2 cups hot water
1 tbsp salt to taste
¼ tsp black pepper

Boil beef/ox tails in a pot with ½ tbsp of salt till they become soft and tender. Place rice and potato slices in a Pyrex dish and sprinkle the rest of salt evenly. Arrange the boiled ox/beef tails on rice and add 2 cups of hot water or the water you boil the tails.
Preheat the oven to 400 F (200 C) and cook till the rice absorbs all the water and tails turn to golden brown (40-50 minutes). Sprinkle some black pepper on top and serve warm.

½ yemek kasigi tuz ile dana kuyruklarini bir tencerede yumusayana dek haslayin. Borcam ya da firin tepsisine pirinci koyun ve patatesleri araliklarla yerlestirin. Geri kalan tuzu esit olarak serpin ve haslanmis dana kuyruklarini pirincin uzerine yerlestirin. 2 su bardagi sicak su ya da kuyruklari hasladiginiz sudan ilave edin.
Onceden isittiginiz 200 C (400F) firinda etler kizarip, pirincler suyunu cekene dek yaklasik 40-50 dakika pisirin. Firindan cikarinca uzerine karabiber serpin ve sicak servis yapin.

Okra Stew with Ground Meat (Kiymali Bamya)

1 lb (~450 gr) whole or cut okra, fresh/frozen
¼ lb ground meat
1 tbsp oil
1 medium onion, chopped
1 tsp tomato paste
1 tomato, diced/ crushed (3 tbsp)
1 tsp salt to taste
½ tsp lemon juice
A pinch of sugar
¾ cup hot water
½ tsp black pepper

In a pot, cook ground meat with oil till the meat changes its color. Then stir in onions and sauté for a couple of minutes. Then stir in tomato paste and tomatoes, sauté for 2 minutes.
Stir in okras and cook until they change in color, stirring occasionally.
Then add hot water, sugar, lemon juice and salt. Close the lid and cook over low heat till okras are soft and tender, about 30 minutes. Sprinkle black pepper and serve warm.

Bir tencerede sivi yag ve kiymayi bir kac dakika kavurun ve soganlari ilave ederek, renk degistirene dek kavurmaya devam edin. Sonra salca ve domatesi ilave edin. Biraz kavurduktan sonra bamyalari ilave edin ve renkleri degisene dek kavurun.
Son olarak sicak suyu, sekeri, limon suyunu ve tuzu ilave edip, kapagini kapatin ve kisik ateste bamyalar pisene dek, yaklasik 30 dakika pisirin. Uzerine karabiber ilave edip, servis yapin.

Shish Kebab (Sis Kebap)

1 lb boneless beef or lamb
1 tsp salt
1-2 cloves of garlic, minced
2 tbsp olive oil
½ tsp cumin
½ tsp paprika
1tbsp lemon juice
Green/yellow/red pepper, cut in big chunks
2-3 medium onions, cut into 4
Any kind of vegetables you like
Wooden/ metal skewers

In a bowl, combine salt, garlic, olive oil, cumin, paprika and lemon juice. Cut the meat uniformly sized 1 to 2 inch cubes for quick and even cooking.
Then add the meat into marinade sauce and mix them all. Leave for marinating at least 1 hour, preferably one night in the fridge.
Drain the meat and discard the marinade sauce, do not use it again.
Put the meat and vegetables on skewers. If you are using wooden skewers, leave them in water for 30 minutes, to prevent them catching fire over the grill.
Cook Shish Kebabs on the grill, electric grill or you can bake them in the oven at 400F (200C) till all sides are golden brown and tender.

Bir kasede, tuz, sarimsak, zeytinyagi, kimyon, kirmizi toz biber ve limon suyunu karistirin. Etleri 3-4 cm lik kupler seklinde dograyin.
Marine sosuna etleri ilave edin ve guzelce karistirip, en az 1 saat, tercihen bir gece buzdolabinda bekletin.
Pisireceginiz zaman marine sosunu suzun ve atin, geri kalan sosu tekrar kullanmayin.
Eti ve sebzeleri sislere dizin. Eger tahta sis kullaniyorsaniz, sisleri en az 30 dakika suda bekletin. Tahta suyu cekip, mangal esnasinda alev almayacaktir.
Sis kebablari mangalda, elektrikli izgarada ya da firinda 200 C (400 F)de her taraflari kizarana dek pisirin.

Texas Steak (Teksas Usulu Biftek)

1 lb steak (preferably sirloin or rib)
2 tbsp yogurt
2 tbsp olive oil
½ tsp cumin
1 tsp salt
1 tbsp lemon juice
½-1 tsp thyme
¼ tsp paprika
1 tbsp soy sauce (optional)

Combine all the ingredients, but the steak. Then, rub the steak with this marinade sauce. Place the steak into the remaining sauce and leave at least 1 hour, preferably one night in the fridge.
Then, you can cook the steak over grill, electric grill or in a skillet over medium heat, till the both sides are golden brown.
You can serve steak with mashed potatoes, pilaf, fried potatoes or vegetables.

Biftegi; patates puresi, patates kizartmasi, pilav ya da sebze ile servis edebilirsiniz.

Inegol’s Traditional Meatball (Inegol Kofte)

1 lb lean ground beef
¼ cup bread crumbs
1 big onion, shredded
½ tsp cumin
¼ tsp black pepper
1 tsp baking soda
1 clove garlic, minced (optional)
2-3 stems parsley, finely chopped (optional)
1 tsp salt

Mix all the ingredients in a bowl. And knead for 3-4 minutes to form a stiff mixture. Cover it and leave in the fridge for the night. Then, the next day make finger shape meatballs.
Shallow fry them in a skillet or grill. Make sure that all sides turn to a golden brown color.
You can serve Inegol’s Traditional Meatball with; pilaf, roasted peppers, French fries, kidney bean salad, tomato salad or onion salad and ayran.

1 buyuk sogan, rendelenmis

Butun malzemeleri bir kasede karistirin ve elinizle 3-4 dakika yogurun. Kiymanin sikilastigini goreceksiniz. Kiymayi agzi kapali olarak bir gece boyunca buzdolabinda bekletin. Ertesi gun, kiymadan uzun, parmak sekilli kofteler yapin.

Tavada az yagda her tarafini guzelce kizartin. Mangal ya da izgarada da pisirebilirsiniz.

Tortilla with Ground Beef (Kolay Lahmacun)

½ lb (250 gr) lean ground beef
1 big onion, finely chopped
½ cup tomatoes, crushed
1 tbsp tomato paste
2 tbsp dried parsley / ½ bunch fresh parsley
½ tsp cumin
½ tsp black pepper
¼ tsp chili pepper (optional)
1 ½ tsp salt
6 original flour tortillas

Mix all the other ingredients in a bowl. (You can leave the mixture in the fridge for 1-2 hours for ground meat to absorb the flavors of the spices). With a spatula spread a thin layer of the mixture evenly on the tortillas.
Preheat the oven to 375 F (190 C) and place 1-2 tortillas with ground beef on a tray and place it on the third rack from the top. Turn the oven to broil (grill) and broil for 2-3 minutes. Make sure not to burn the edges of tortillas. Place the broiled tortillas with ground beef in a large pot on top of each other and close the lid. So, they will stay warm and also soft.
The traditional serving style of the Tortillas with Ground Beef is: Squeeze some lemon and place some kebab salad and onion salad inside then, roll it up. Serve warm with ayran.

6 tane orjinal tortilla (lavas ekmegi)
Butun malzemeleri bir kasede karistirin. (Baharatlarin kiyma ile butunlesmesi icin 1-2 saat buzdolabinda bekletebilirsiniz). Tortillalarin uzerine spatula yardimi ile kiyma harcini ince tabaka halinde yayin.
Firini 190 C (375 F) ye isitin ve ustten ucuncu rafa firin tepsisine 1-2 lahmacun koyun ve ustten kizartma (broil) ayarinda 2-3 dakika kizartin. Kenarlarini yakmamaya dikkat edin. Hazir olan lahmacunlari bir tencereye ust uste koyarak tencerenin kapagini kapatin. Boylece lahmacunlar hem sicak kalacak, hem de yumusacik olacaklar.
Lahmacunun geleneksel servis sekli; icine limon sikilarak ve kebap salatasi ve sogan salatasi koyulup, rulo yapilarak ayran ile sunulur.

Mousaka with Bechamel Sauce (Besamel Soslu Musakka)


200 gr (~1/2 lb) ground beef, medium
4-5 medium potatoes, chopped in bite sizes
1 big onion, chopped
2 tbsp tomato, diced or crushed
½ tbsp tomato paste
1 tbsp salt
½ tsp paprika
¼ tsp cumin
¼ tsp black pepper
1 cup hot water
Béchamel Sauce:
3 cups milk
3 tbsp flour, heaping
8 tbsp (100-125 gr) butter /margarine
2 eggs, beaten
½ tsp salt

Place the ground beef in a large skillet and sauté over medium heat till its color changes (no need to add oil). Add onion and sauté for 2-3 minutes. Add tomatoes, tomato paste, salt and spices and mix. Finally, add potatoes and sauté for 5 minutes. Place the mixture into a Pyrex dish and add the hot water. Place the Pyrex dish into 400F (200 C) preheated oven and bake for 20-25 minutes (see the picture).
Béchamel Sauce:
Place the butter in a pot and melt. Add the flour and sauté over low heat till its color change to yellow. Then, add milk and stir continuously to make Béchamel sauce smooth and even. If flour particles don’t dissolve use a blender. Add the salt and cook for 3 minutes. Turn the heat off, add the eggs and stir.
Take the Pyrex dish off the oven. Pour the Béchamel sauce evenly on top of it. Place the Pyrex dish back to the oven and bake until the surface of Béchamel sauce is brown (about 20-25 minutes).

Genis bir tavada kiymayi orta ateste renk degistirene kadar kavurun (yag koymaya gerek yok). Sonra sogani ilave edin ve 2-3 dakika kavurun. Domates, salca, tuz ve baharatlari ilave edin ve karistirin. Son olarak patatesleri ilave edin ve 5 dakika kadar orta ateste kavurun. Hazirladiginiz karisimi borcama yada bir tepisiye aktarin ve 1 su bardagi sicak suyu ilave edin. 200C (400F) ye onceden isitilmis firina borcami koyun ve yaklasik 20-25 dakika pisirin (resime bakiniz).
Besamel Sosu
Bir tencereye margarini koyup eritin. Unu ilave edip kisik ateste sararana kadar kavurun. Sonra sutu ilave edin ve surekli karistirin. Eger un parcalari dagilmazsa blendir ile krema kivamina getirin. Tuzu da ilave edip kaynadikdan sonra kisik ateste 3 dakika pisirin. Pistikten sonra ocagi kapatip cirpilmis yumurtayi ilave edin ve guzelce karistirin.
Tepsiyi firindan cikarin ve hazirladiginiz besamel sosunu uzerine esit olarak yayin ve tekrar firina koyun. Sosun uzeri kizarana kadar pisirin (yaklasik 20-25 dakika).

Albanian Style Fried Liver (Arnavut Cigeri)

1 lb (450-500 gr) lamb liver, cut into bite size
1 tsp salt
1 tsp paprika
½ tsp chili pepper (optional)
2/3 cup flour
1/3 cup oil for frying

Sprinkle salt, paprika and chili pepper (optional) on the liver and then mix. In a wide plate place the flour and dip the livers into the flour.
Over high heat, sizzle the oil in a skillet and fry the livers for 4-5 minutes, till they are cooked. Place the cooked liver on a paper towel to get rid of the excess oil. Finally, place the Albanian style fried liver in a serving plate and serve warm.
Pilaf is good to go with Albanian style fried liver.

Dogranmis cigerlerin uzerine tuz ve biber serperek, harmanlayin. Sonra icine un koydugunuz tabagin icinde una bulayin.
Yuksek ateste kizdirdiginiz yagda 4-5 dakika kizartin. Kagit havlu koydugunuz bir tabaga kizarmis cigerleri koyup, fazla yagin suzulmesini saglayin. Son olarak; servis tabagina alip, sicak servis yapin.
Arnavut cigerini pilav ile servis yapabilirsiniz.

Stuffed Eggplants With Ground Beef (Karniyarik)

1 lb (450-500 gr) eggplant
1 cup oil for frying
1 onion, chopped
200 gr (~1/2 lb) ground beef, medium
1 green pepper, chopped
1 tomato, diced / 5 tbsp crushed or diced tomato
½ tsp salt
¼ tsp cumin
¼ tsp black pepper

Sauce:
3 tbsp crashed tomato / 1 ½ tbsp tomato paste
½ tsp sugar
¼ tsp salt
½ cup warm water

Wash and peel the eggplants. If they are slim, cut them in half in length. If they are chubby ,cut them into four slices lengthwise. Then place them in a bowl and add water to cover the slices. Leave them in water for 15-20 minutes for better taste. Then take the slices and dry with a cloth.
Place the oil in a skillet and turn heat to high. Fry both sides of eggplants till they become soft. Do not over fry. Place the fried eggplants into a Pyrex dish and sprinkle some salt on them. With a spatula or spoon, smash them lightly to make them softer.
Place ground beef to a skillet and without adding oil cook until it changes its color. Add the chopped onions and sauté them for 2-3 minutes over low-medium heat. Then add the chopped pepper, tomatoes and salt. Saute for 3-4 minutes and add spices. Spread this mixture on the fried eggplants.
For the sauce, place the warm water, sugar, salt and tomato paste/ crushed tomatoes in a bowl. Mix them and pour onto the eggplants in Pyrex dish.
Preheat the oven to 375 -400 F (190-200 C) and bake for 18-20 minutes.
Serve Stuffed Eggplants with Ground Beef warm. Also you can serve it with yogurt, ayran , cacik and pilaf.

Patlicanlari yikayip, kabukalrini soyun. Eger patlicanlar ince uzun ise boyuna ikiye bolun, tombul ise boyuna 3-4 esit dilim elde etmeye calisin. Daha lezzetli patlicanlar elde etmek icin; patlicanlari su dolu bir kapta 15-20 dakika bekletin. Sonra bir bez ile kurulayin.
Bir kizartma tavasinda yuksek ateste yagi kizdirin ve patlicanlar yumusayana dek kizartin. Cok fazla kizartmayin, sekilleri bozulur. Kizarttiginiz patlicanlari borcam tepsinize alin ve uzerlerine tuz serpin. Bir spatula ya da kasik yardimiyla, piserken daha yumusak olmalari icin hafifce ezin.
Patlicanlari kizarttiginiz tavaya kiymayi koyun ve renk degistirene dek cevirin. Yag koymayin. Ardindan soganlari ilave edip, orta ateste 2-3 dakika kavurun. Sonra biberleri, tuzu ve domatesi ilave edip, 3-4 dakika sote edin. Baharatlari ilave edin ve karistirin. Bu karisimi, kizarmis patlicanlarin her birini dolduracak sekilde uzelerlerine yayin.
Sosunu hazirlamak icin, ilik suyu, domates puresi/ salcasini, seker ve tuzu bir kasede karistirip tepsiye dokun.
Onceden 190-200 C (375-400 F) isittiginiz firinda, 18-20 dakika boyunca pisirin.
Karniyarigi sicak servis yapin. Ayrica yaninda yogurt , ayran ya da cacik ve pilaf ile servis yapabilirsiniz.

Eggplant with Ground Beef (Patlican Musakka/Oturtma)

2 eggplants, peeled and cut into ½ inch thick slices
1 big onion, chopped
½ lb (200 gr) ground beef
2 tomatoes, diced / 1 cup tomato in a can/ 1 tbsp tomato paste
1 cup oil for frying the eggplant
1 green pepper, chopped
1 tsp salt
½ tsp cumin
½ tsp black pepper
2 cloves of garlic, sliced thin (optional)
½ cup hot or warm water

Peel the whole eggplant or you can peel striped. Slice them in ½ inch wide and then place them in a bowl and cover the eggplants with water. Let them stand for 30 minutes in water. Then, drain the eggplants and wipe with a piece of cloth. In a large skillet place the oil and fry the eggplants until they change in color. Do not over fry for not to damage the pieces. Place the fried eggplant pieces in a Pyrex dish and sprinkle salt on them.
You can use the same skillet or a smaller one. Place the ground beef and 1 tbsp oil and cook until the meat changes in color. Then add the chopped onions and sauté for 1-2 minutes. Add the chopped peppers, garlic (optional) tomatoes or tomato paste and ½ tbsp salt. Sauté for 5 minutes. Finally add the cumin and black pepper. Spread this mixture evenly on the fried eggplants and add the hot water.
Preheat the oven to 375 F (190 C) and cook for about 30 minutes.
You can serve this dish with pilaf and yogurt.

Patlicanlari yikayip, butun patlicanlari soyabilirsiniz ya da seritli sekilde de soyabilirsiniz. Yaklasik 1 ½ cm kalinliginda dilimleyin ve dilimlenmis patlicanlari buyuk bir kaseye koyup uzerine cikana dek su doldurun. Patlicanin acimsi tadinin suya gecmesi icin yaklasik 30 dakika suda bekletin.
Sonra patlicanlari suzup, kurulayin. Genis bir tavaya yagi koyup patlicanlari renk degistirene dek kizartin. Fazla kizartirsaniz, patlicanlarin sekli bozulur. Kizarmis patlicanlari borcam bir tepsiye alin ve uzerine tuz serpin.
Ayni tavada ya da baska birinde 1 yemek kasigi sivi yagi ve kiymayi renk degistirene dek kavurun. Sonra soganlari ilave edip 1-2 dakika sote edin. Biberleri, sarimsak, tuz ve domatesi/domates salcasi ilave edin. 5 dakika ksik ateste pisirin.Son olarak kimyon ve karabiberi ilave edin. Kiymali karisimi kizarmis patlicanlarin uzerine esit olarak yayin ve sicak suyu ilave edin.
Onceden isitilmis 190 C (375 ) firinda yaklasik 30 dakika pisirin.
Patlican musakka/oturtmayi pilav ve yogurt ile servis edebilirsiniz.

Chicken/Meat Casserole (Balkan Guveci)

1 big onion, chopped
1 cup rice, washed
2 chicken legs with the thighs or ½ lb (250 gr) beef/lamp cut in cubes
3 tbsp oil
1 tbsp salt to taste
3-4 bay leaves
2 cups hot water
½ tsp black pepper
2/3 tsp paprika

You can cut the drumsticks off and make two pieces from one leg. Also you can use it as a whole leg.
Place the chicken legs or meat cubes and oil in a large skillet and stir occasionally for 2-3 minutes, until the meat changes in color.
Add the chopped onions and sauté. Then stir in washed rice and continue stirring for 2-3 minutes. Add salt, black pepper and paprika.
Finally place this mixture to a casserole or Pyrex dish and add hot water. Stir the mixture well and place the bay leaves evenly in the mixture.
Preheat the oven to 400 F (200 C) Cook for about 30-40 min. until the surface turns brownish and rice is cooked.

2/3 tatli kasigi kirmizi toz biber

Butlari eklem yerinden kesip iki parcaya ayirabilirsiniz ya da butun olarak da pisirebilirsiniz. Tavuklari ya da et kullaniyorsaniz etleri yag ile birlikte bir tavaya alin ve orta ateste 2-3 dakika boyunca karistirin. Etler renk degistirince soganlari ilave edin ve 2-3 dakika daha karistirmaya devam edin.
Sonra yikanmis pirinci ilave edin ve 2-3 dakika karistirin. Tuz, kirmizi biber ve karabiber ekleyin. Son olarak bu karisimi borcam ya da normal bir tepsiye aktaralim ve uzerine sicak suyu ilave edelim.
Defne yapraklarini ister parcalayip. Ister butun olarak tepsiye esit araliklarla yerlestirin.
Onceden isitilmis 200 C (400 F) firinda yaklasik 30-40 dakika pisirin.

Beef Sauté (Dana Eti Sote)

1 lb (450 gr) beef, chopped in bite sizes
1 medium onion, cut in strips/round
1 small green pepper, chopped
3 tbsp smashed or diced tomatoes
1 tsp salt
2 tbsp oil
¼ tsp cumin
¼ tsp black pepper
¼ tsp thyme (optional)

In a Tefal pan or in a stainless steel pot place the chopped beef and close the lid properly. Cook till the water evaporates (40-50 min) at low heat.
When all the water evaporates, add the oil, salt and onions. Sauté for 2 minutes over low-medium heat. Then, add the pepper and tomatoes. Stir and cook for 6-8 minutes on low heat.
Finally add the cumin, black pepper and thyme.
NOTE: If you add the salt at the beginning the meat would be hard to chew.
Serve it warm. This dish goes well with yoghurt or ayran.

Tefal tavaya ya da celik tencereye dogranmis dana etini koyup kapagini guzelce kapatin.Dusuk ateste suyunu tamamen cekinceye dek pisirin (40-50 dakika)
Butun su buharlastigi zaman sivi yagi, tuzu ve soganlari ilave edin, 2 dakika boyunca orta ateste kavurun. Sonra biberleri ve domatesleri ilave edin. Karistirip, dusuk ateste 6-8 dakika pisirin.
Son olarak kimyonu, karabiberi ve kekigi ilave edin.
NOT: Eger tuzu baslangicta ilave ederseniz et sert olur.
Sicak servis yapin. Bu yemek yogurt ya da ayran ile guzel olur.
