Eggs Florentine (Florentin Usulu Yumurta)

2 English muffins, split and toasted
1 Tbsp softened unsalted butter
2 cups packed spinach leaves, chopped or whole
2 eggs
1 tsp vinegar

Hollandaise Sauce:
2 egg yolks
1 Tbsp fresh lemon juice
1 tsp water
Pinch of salt to taste
2 pinches of freshly ground pepper
6-8 Tbsp unsalted butter, melted


For the sauce, set over a pot of barely simmering water in a heatproof bowl, combine the egg yolks, lemon and water and whisk constantly until the mixture begins to thicken, then continue whisking for about 1 minute more. Remove the bowl from over the pan as soon as the mixture thickens. Add the salt and pepper. Blend the mixture with a stick blender while slowly pouring in the melted butter in a thin stream until incorporated, about 2 minutes. Cover and keep warm over very low heat until ready to serve. 

Lightly spread the cut side of each muffin with 1/2 tsp of the softened butter. Melt the remaining 1 tsp butter in a sauté pan over medium heat. Add the spinach and cook until slightly wilted, about 2-4 minutes. Keep them warm until served. Fill a deep pan with 1/2 inch water to poach the eggs, leave the pan over medium heat and bring to a simmer. Crack the eggs into the simmering water. Cover and cook until the whites are firm and the yolks are glazed over but still soft, about 3 minutes, or until done to your liking. Transfer the eggs to a warmed plate.

Top each muffin half with some of the spinach, an egg and generous amount of the sauce. Serve immediately.

Sos icin; isiya dayanikli icinde kaynar su olan buyuk bir kabin icine bir tencere ya da kap yerlestirin. Yumurta sarilari, su ve limon suyunu icine koyun ve surekli cirparak pisirin. Koyulasmaya baslayinca 1 dakika kadar daha pisirin. Kaynar sudan cikarin tuz ve karabiber ilave edin. El blendiri ile karisimi cirparak yavasca erimis tereyagini ekleyin (yaklasik 2 dakika). Uzerini kapatin ve hafif ateste bekletin.
Her muffinin kesik tarafini hafifce ½ tatli kasigi yumusak tereyagi ile yaglayin. Bir tatli kasigi tereyagini tavaya alin ve ispanaklari hafifce soteleyin (2-4 dakika). Servis edene dek hafif ateste bekletin. Derin bir tencereye yaklasik 1 ½ cm derinlikte olacak kadar su koyun ve sirkeyi ilave edin. Kaynayinca orta atese alin ve icine yavasca yumurtalari kirin. Kapagini kapatin ve yumurta aklari sertlesene dek ama sarilari hala rafadan oldugunda (yaklasik 3 dakika ya da arzuya gore) pisirin. Yavasca yumurtalari isitilmis bir tabaga alin.
Her muffin yarisina biraz ispanak, bir yumurta ve bolca hollandez sosu ilave edin ve hemen servis edin.

Spinach with Bulgur (Bulgurlu Ispanak)

1 lb spinach, fresh or frozen
1cup bulgur, washed and drained
1 onion, chopped
3 Tbsp olive oil
1 Tbsp tomato paste
1 ½-2 cup hot water
½ tsp crushed red pepper
1 tsp salt to taste

In a pot, sauté onions with olive oil over medium heat. Stir in tomato paste and sauté for 1-2 minutes. If you are using fresh spinach, wash, drain and then chop. If using frozen spinach, just add them into pot. Cook them over medium heat stirring occasionally until most of the water evaporates (5 minutes).
Stir in bulgur and add hot water, crushed red pepper and salt. Close the lid and cook over low heat for 20-30 minutes, until the bulgur is cooked.
You may serve it with yogurt on top or on side.

1 sogan, dogranmis
1 yemek kasigi salca
1 su bardagi bulgur, yikanmis ve suzulmus
3 yemek kasigi zeytinyagi
1 ½-2 su bardagi sicak su
1 cay kasigi kirmizi pul biber
1 tatli kasigi tuz

Sogani zeytinyagi ile orta ateste kavurun. Sonra salcayi ilave edin ve biraz daha cevirip, ispanaklari ilave edin. Eger taze ispanak kullaniyorsaniz once guzelce yikayin. Suyunu suzup dograyin. Dondurulmus ispanak kullaniyorsaniz direk tencereye ilave edin. Yaklasik 5 dakika orta ateste suyu azalana dek kavurun.
Yikanmis ve suyu suzulmus bulguru ilave edin. Sonra sicak suyu, kirmizi pul biber ve tuzu ilave edin. Kapagini kapatip kisik ateste yaklasik 20-30 dakika bulgur pisene dek pisirin.
Yaninda veya uzerinde yogurt ile servis yapabilirsiniz.

Cabbage with Spinach (Ispanakli Lahana)

1 head of cabbage, chopped
½ lb spinach, chopped
1 onion, chopped
2-3 Tbsp olive oil
4-5 cloves garlic, minced
1 tsp salt
¼ tsp cumin
¼ tsp black pepper
¼ tsp crushed chili pepper
1-2 Tbsp soy sauce
1 cup walnut, crushed

Take olive oil and onions in a pot and sauté over medium heat until onions are translucent. Add garlic and sauté for 1-2 minutes and then add chopped cabbage. Cook over medium heat for 3-4 minutes stirring occasionally. Then, stir in spinach and salt to taste. Cook over medium heat for a couple of minutes and then add soy sauce and spices. Close the lid and cook over low heat until the cabbage is cooked (for about 25-30 minutes).
Before serving top with walnuts.

Bir tencereye sogan ve zeytinyagini alin ve orta ateste sote edin. Sarimsaklari da ilave edin ve 1-2 dakika daha cevirdikten sonra, lahanayi ilave edin ve orta ateste 3-4 dakika sote edin. Ispanak ve tuzu ilave edin, bir kac dakika orta ateste cevirin. Soya sosu ve baharatlari da ilave edin ve kapagi kapali olarak kisik ateste lahana pisene dek pisirin (yaklasik 25-30 dakika).
Servisten once uzerine cevizleri ilave edin.

Zucchini and Spinach Soup (Ispanakli Kabak Corbasi)

3 Tbsp olive oil
2 cloves garlic, chopped
1 onion, roughly chopped
1 big potato, cut into cubes
3 zucchinis, chopped
4 cups hot water/vegetable stock
3-4 cups fresh spinach leaves
½-1 lemon’s juice
1 Tbsp salt
Yogurt, olive oil & mint for top

Saute onion and garlic with olive oil over medium heat for about 3-4 minutes. Stir in potatoes and zucchinis. Cook for about 3-4 minutes stirring occasionally. Add salt and hot water/vegetable stock. Simmer for about 15 minutes or until the potatoes get softer.
Add spinach and cook for 2-3 minutes. Then, blend it smooth with a hand blender. Add lemon juice and take to the serving plates. Pour a dollop of yogurt, drizzle some olive oil and add a pinch of mint if desired.
Serve hot/warm.

Ispanagi ilave edin ve 2-3 dakika sonra, blendir ile guzelce cirpin. Limon suyunu ilave edin. Karistirin ve servis tabaklarina alin. Uzerine cirpilmis yogurt, zeytinyagi ve nane koyarak sicak servis yapin.

Turkish Panini (Sucuklu-Sebzeli Tost)

1 long sandwich bread
4 slices of sujuk
½ cup spinach, washed
¼ onion, julienne cut
2-3 slices of Mozzarella/Swiss Cheese (any amount)
2-3 slices of tomato
1-2 Tbps olive oil
Salt to taste

Cut the sandwich bread in half and brush both inner sides with olive oil. Stuff with Mozzarella/ Swiss cheese, onion, tomatoes, sujuk and spinach. Sprinkle with salt to taste.
Heat the gridler/Panini maker up. Then, press gently the Panini until the cheese is melted or 2-3 minutes (do not press hard).
Serve hot.

Pan Seared Mahi Mahi (Tavada Lambuka Baligi)

1 lb mahi mahi fillets, skinned and boned
2-3 Tbsp butter
2 Tbsp Balsamic vinegar
2 gloves of garlic, finely diced
½ tsp salt to taste
¼ tsp black pepper
1 lb spinach, washed and chopped
½ medium onion, chopped

Take one Tbsp of butter and onions. Saute over medium heat and stir in spinach. Saute them for about 3-5 minutes.
Wash Mahi Mahi fillets under cold water and dry with paper towel. Sprinkle with salt and pepper. Rub with your hands. Sizzle the remaining butter in the frying pan and fry Mahi fillets pouring balsamic vinegar over. Once they are fried, turn upside down and sprinkle with garlic. Fry both sides.
Take sautéed spinach over the serving plates and place the fried Mahi Mahi on top. Serve hot/warm.

Tavaya bir yemek kasigi tereyagini ve soganlari alin ve soteleyin. Ispanagi ilave edin ve iyice sonup, renkleri koyulasana dek sote edin (3-5 dakika).
Lambuka baligini soguk su altinda yikayin ve kagit havlu ile kurulayin. Tuz ve karabiber serperek elinizle ovalayarak balik filetolarina yedirin. Geri kalan tereyagini kizartma tavasina alin ve filetolarin uzerine balsamic sirkeyi dokun orta ateste kizartin. Bir taraflari kizardiktan sonra diger tarafini cevirin ve uzerlerine sarimsaklari serpin. Her iki tarafini da guzelce kizartin.
Servis tabagina sotelenmis ispanagi alin ve uzerine kizarmis lambuka filetoyu yerlestirin. Sicak servis yapin.

Chicken Spinach Soup (Tavuklu Ispanak Corbasi)

1 onion, chopped
3 Tbsp olive oil
1 Tbsp flour, heaping
1 lb spinach, washed and chopped
1 chicken breast
1 tomato, diced
1 carrot, shredded
½ cup rice, washed and drained
2 cloves of garlic, finely chopped
1 lemon’s juice
1 Tbsp salt to taste
5 cups chicken broth

Boil chicken breast and let it cool. Then, cut into small cubes and set aside. Keep the chicken broth for the soup. Take olive oil into a pot and sauté onions over medium heat (for about 3 minutes). Stir in flour and sauté for additional 3 minutes. Add garlic and carrot, cook for a while. Finally, stir in spinach and tomato. Cook for about 5-6 minutes, stirring occasionally.
Add chicken and 5 cups of chicken broth. Bring to a boil. Stir in rice and salt to taste. Simmer over low-medium heat for about 10-12 minutes or until rice cooks.
Stir in the lemon juice before serving and serve hot or warm.

Tavuk gogsunu haslayin ve soguduktan sonra kucuk kucuk dograyin. Suyunu corbada kullanmak uzere ayirin. Tencereye zeytinyagi ve sogani alin. Orta ateste soganlar pembelesene dek kavurun (yaklasik 3 dakika). Unu ilave edin ve surekli karistirarak 3 dakika kadar daha kavurun. Havuc ve sarimsaklari ilave edip bir kac dakika cevirin. Ispanak ve domatesi de ilave ettikten sonra yakalsik 5-6 dakika kadar kavurun.
Dogradiginiz tavuklari ve 5 su bardagi tavuk suyunu ilave edin. Ocagin altini yukseltin ve kaynamasini bekleyin. Kaynayinca pirinc ve tuzu ilave edin . Kisik ateste pirincler pisene dek yaklasik 10-12 dakika pisirin.
Servis yapmadan once limon suyunu ilave edin, karistirin ve sicak servis yapin.

Creamy Spinach&Mushroom Pasta (Kremali Ispanak&Mantarli Makarna)

300 gr any kind of pasta
2 tbsp olive oil
250 gr white mushrooms, sliced
6 tbsp cream cheese
1 cup frozen/fresh spinach leaves
1 ¼ cups vegetable or chicken stock
1 tbsp lemon juice
1 tsp dried oregano
Salt and pepper to taste

Cook pasta according to the instructions on the package. Drain and reserve ¾ cup of the cooking liquid.
Heat oil in a skillet, add mushroom, stir frequently and cook for 8 minutes. Stir in oregano, stock and lemon juice. Cook for 10-12 minutes until the sauce is reduced by half.
Stir in cream cheese, spinach. Cook over medium low heat for 3-5 minutes. Add reserved liquid, and cooked pasta. Stir well, season with salt and pepper.
Serve warm.

250 gr beyaz mantar, dilimlenmis
6 yemek kasigi krem peynir
1 su bardagi donmus/taze ispanak yapragi

1 yemek kasigi limon suyu
1 tatli kasigi kuru mercankosk
Tuz ve karabiber

Makarnayi paketin uzerindeki pisirme onerisen gore pisirin ve suzun. Makarna suyundan ¾ su bardagini daha sonra kullanmak uzere bir kenara ayirin.
Zeytinyagini tavada isitin, mantarlari ilave edin ve sik sik karistirarak yaklasik 8 dakika pisirin. Mercankosk, sebze/tavuk suyu ve limon suyunu ilave edin. Sosun miktari yariya kadar azalana dek 10-12 dakika pisirin.
Krem peynir ve ispanagi ilave edin. Kisik ateste 3-5 dakika kadar pisirin. Onceden ayirdiginiz makarna suyunu ve pismis makarnayi ilave edin. Guzelce karistirin ve tuz, karabiber serperek sicak servis yapin.

Spinach Cake (Ispanakli Kek)

2 eggs
1 ½ cup sugar
2 cups flour
½ cup canola oil
½ or 1 cup spinach, pureed
1 package/1 tsp baking powder
1 package/1 tsp vanilla
2 tbsp lemon juice (optional)
250-300 gr whipped cream

Puree spinach in a food processor and put aside. In a wide bowl, mix sugar and eggs with a mixer till it gets foamy. Add lemon juice, canola oil and spinach. Then, add baking powder, vanilla and flour. Mix for 3-4 minutes till obtaining a smooth mixture. Then pour it into greased Pyrex (~3L).
Bake in a preheated 375 F (190C) oven for about 30-40 minutes. Check if it’s done inserting a toothpick into the cake. It is done, if it comes out clean.
Let it cool down and then take out of the Pyrex. Cut off the sides off about ½ inch wide and powder them in the food processor. Set aside. Place the cake over a serving plate; spread whipped cream on top evenly. Then, sift the powdered cake on top of the cream. Slice it up and serve.

Ispanagi mutfak robotu ya da rondoda pure haline getirin ve bir kenara ayirin. Genis bir kapta; seker ve yumurtayi mikser ile cirparak beyaz kopuk haline getirin. Limon suyu, sivi yag ve ispanagi ilave edin. Karistirmaya devam edin. Son olarak kabartma tozu, vanilya ve unu ekleyin. Yaklasik 3-4 dakika boyunca cirpin. Yaglanmis olan borcam (3L) ya da firin tepsisine dokun.
Onceden isitilmis 190C (375 F) firinda yaklasik 30-40 dakika pisirin. Kontrol etmek icin bir kurdani kekik icine batirin. Eger kurdan temiz cikarsa kekiniz pismistir.
Keki bir kenarda sogumaya birakin. Sonra Tepsiden cikarin ve kenarlarindan 1-1½ cm kalinliginda parcalar kesin. Bu parcalari mutfak robotu/rondoda mumkun oldugu kadar kucultup pudra haline getirin. Keki servis tabagina alin ve uzerine krem sartiyi esit sekilde surun. Ustune pudra haline getirdiginiz kek parcaciklarini bir suzgec/elek yardimiyla serpistirin.
Istediginiz sekilde dilimleyin ve servis yapin.

Spinach and Mushroom Salad (Mantarli Ispanak Salatasi)

½ lb baby spinach, washed and drained
4-5 mini portabella/button mushrooms, sliced
1 small yellow onion, sliced diagonally/in strips
½ cup canned corn
3 tbsp olive oil
½ lemon’s juice
½ tsp salt to taste

Use spinach leaves whole or tear into pieces with your hands. In a wide salad bowl, place spinach, mushroom, corn and onion. Sprinkle lemon juice, olive oil and salt. Toss them all
Serve immediately.

½ su bardagi konserve misir
1 kucuk sogan, halka halka/piyazlik dogranmis
½ limonun suyu

1 cay kasigi tuz

Ispanaklarin suyu suzulunce, ister butun olarak isterseniz elinizle parcalayip salata kasesine alin. Sonra, misir, mantar ve sogani ilave edin. Limon suyu, zeytinyagi ve tuzu serpin. Guzelce harmanlayin. Bekletmeden servis yapin.

Spinach Salad (Ispanak Salatasi)

½ lb baby spinach, washed and drained
½ cup canned corn
1/3 cup raisins
10 black olives, pitted (optional)
¼ cup cracked nuts (preferably walnuts)
¼ cup cheddar cheese, shredded
½ lemon’s juice
3 tbsp olive oil
1 tsp sumac
2 green onions, chopped (optional)
1 tsp salt to taste

Use spinach leaves whole or tear into pieces with your hands. Place into a wide salad bowl. Then, add raisins, corn, black olives and green onions. Sprinkle lemon juice, olive oil, sumac and salt. Toss them all.
Finally, add shredded cheddar and cracked nuts on top. Serve immediately.

Potato Spinach Casserole(Patates ve Ispanakli Kaserol)

2 tbsp butter
1 tbsp olive oil
1 cup fresh/frozen spinach
1 large onion, sliced thin
1 clove of garlic, minced
1 lb potatoes, boiled and peeled
1 egg
1/3 cup milk
½ tsp salt to taste
½ tsp black pepper
1 cup Swiss/Cheddar/Mozzarella Cheese, shredded

Puree boiled potatoes in a wide bowl. Add egg, milk, salt, black pepper and butter. Transfer into a Pyrex Dish.
Meanwhile, sauté onion with olive oil and stir in garlic. After a while add spinach and cook for 4-5 minutes over medium heat. Spread it over potato puree. Sprinkle cheese all over.
Bake at 400 F (200 C) oven, till the top gets lightly brown (for about 20-25 minutes). Serve warm.

½ kg patates, haslanmis ve soyulmus
1 yumurta
1/3 su bardagi sut
1 cay kasigi tuz
1 cay kasigi karabiber
1 su bardagi Isvicre/Ceddar/kasar peyniri, rendelenmis


Haslanmis patatesleri genis bir kasede blendir ile pure yapin. Sut, yumurta, tuz, karabiber ve tereyagini ilave edin. Borcam bir tepsinin dibine yayin.
Bir tavada sogani zeytinyaginda sote edin. Sonra sarimsagi ilave edip, biraz cevirin. Ispanagi icine karistirin. Orta ateste 4-5 dakika pisirin. Purenin uzerine yayin. En ustune peynir serpin ve 200 C (400 F) firinda uzeri hafifi kizarana dek 20-25 dakika pisirin.
Sicak servis yapin.

Spinach and Potato Frittata (Ispanak ve Patatesli Omlet)

2 tbsp olive oil
2 potatoes, chopped
1 cup torn fresh spinach
2 tbsp green onions, sliced
1 tsp garlic, minced
4 eggs
1/3 cup milk
½ cup Cheddar cheese, shredded
salt and pepper to taste

Heat olive oil in a medium size skillet over medium heat and place potatoes, cover, and cook about 10 minutes, until tender but firm. Mix in spinach, green onions, and garlic. Sprinkle with salt and pepper. Cook for 2 minutes, until spinach is wilted.
Beat together eggs and milk in a bowl. Pour into the skillet over the vegetables. Sprinkle with Cheddar cheese. Lower the heat, cover, and cook 5 to 7 minutes, or until eggs are firm.
Serve Spinach and Potato Frittata warm.

Orta buyuklukte bir tavada zeytinyagini orta ateste isitin ve patatesleri ilave edin. Kapagini kapatin ve yaklasik 10 dakika boyunca patatesler yumusayana dek pisirin. Ispanak, sarimsak ve yesil sogani ilave edin. Tuz ve karabiber serpin. Ispanak solana dek 2 dakika kadar pisirin.
Bir kasede sut ve yumurtayi cirpin ve tavadaki sebzelerin uzerine dokun. Uzerine Cheddar/kasar peyniri serpin. Atesi dusurun, kapagini kapatin ve yaklasik 5-7 dakika ya da yumurtalar pisene dek pisirin.
Sicak servis yapin.

Spinach with Yogurt (Ispanakli Yogurt)

1 lb spinach, frozen or fresh
2-3 cups yogurt
2-3 cloves of garlic, minced/finely chopped
2 tbsp olive oil
½ tsp salt to taste

If the spinach is fresh, wash and drain it. Then chop (if it is frozen use it directly). Cook the spinach in a wide pot or saucepan, till all its water evaporates. Then stir in olive oil and salt. Cook for 2-3 minutes and let it cool.
Finally, add garlic and yogurt. Mix them all and transfer to a serving plate. You may drizzle some olive oil on top.
Serve Spinach with Yogurt with any kind of meat and vegetable dishes.

Ispanak taze ise guzelce yikayin, suyunu suzun ve dograyin (dondurulmus ise direk kullanin). Genis bir tencere ya da tavaya ispanaklari koyun. Suyunu cekene dek orta ateste pisirin. Suyunu cekince zeytinyagi ve tuzu ilave edin. Yaklasik 2-3 dakika kavurun ve altini kapatin.
Ispanak soguyunca sarimsak ve yogurdu ilave edip karistirin.
Servis tabagina alin ve isterseniz uzerine zeytinyagi dokerek servis yapin.
Ispanakli Yogurdu her turlu et ve sebze yemeginin yaninda servis edebilirsiniz.

Spinach Turkey/Chicken (Ispanakli Hindi/Tavuk)

2 turkey/chicken breasts
1 lb spinach (also canned/frozen can be used)
1 onion, chopped
2 tbsp olive oil
1 cup mozzarella/cheddar cheese, shredded
1 tsp salt to taste
½ tsp black pepper
¼ tsp red pepper flakes
Bechamel Sauce:
2 cups milk
2 tbsp flour
4-5 tbsp butter
1 egg, beaten
½ tsp salt to taste

Boil turkey/chicken breasts in salty water. Let it cool and then cut it into small pieces. Grease a Pyrex or oven dish and place turkey/chicken over the bottom.
Meanwhile wash spinach, drain and chop (I’ve used canned spinach). In a skillet, sauté onions and spinach with olive oil. Add salt, black pepper and red pepper flakes. After that, spread it over the turkey.
In a pot, prepare the bechamel sauce (click for the béchamel sauce recipe). Stir in half of the shredded cheese. And then, pour it over the spinach. Sprinkle the remaining cheese on top and cook in a 400F (200 C) oven, till the surface turns to a light brown color (30-40 minutes).
Serve Spinach Turkey/Chicken warm.

Beshamel Sos:
2 su bardagi sut

Hindi/tavuk etini iyice haslayin. Firin tepsisini yaglayin. Eti ince ince kesin ya da didin ve tepsisinin dibine doseyin. Ispanaklarin yapraklarini ayiklayip, temizleyin (ben konserve ispanak kullandim) Sogani, 2 yemek kasigi zeytinyagi ile ispanagi kavurun. Tuz, karabiber ve pulbiberi ilave edin. Hindi/tavuklarin uzerine ispanagi yayin.
Son olarak ayri bir tencerede besamel sosunu hazirlayin (besamel sosu tarifi icin tiklayin). Rendelenmis kasar peynirinin yarisini sosa ekleyin. Ispanaklarin uzerine hazirladiginiz besamel sosu yayin. Uzerine artan kasar peynirini serpin. Onceden isitilmis 200 derecelik firinda uzeri iyice kizarana dek pisirin (30-40 dakika).
Ispanakli Hindi’yi sicak servis yapin.

Spinach with Rice (Pirincli Ispanak)

2lb spinach, fresh or frozen
1/2-2/3 cup rice, washed and drained
1 onion, chopped
3 Tbsp olive oil
1 Tbsp tomato paste
1 ½-2 cup hot water
1 tsp salt to taste

In a pot sauté onions with olive oil over medium heat. Stir in tomato paste and sauté for 1-2 minutes. If you are using fresh spinach, wash and drain them then, chop . If you are using frozen spinach, just add them into pot. Over medium heat stirring occasionally, cook them till most of the water evaporates (5 minutes).
Stir in rice and add hot water, salt (I use half bulgur and half rice, since it is more nutritious that way). Close the lid and cook over low heat for 20-30 minutes, till the rice is cooked.
You can serve Spinach with Rice, with yogurt on top. Also you can sprinkle some red pepper flakes on top.

½-2/3 su bardagi pirinc, yikanmis
3 yemek kasigi zeytinyagi
1 ½-2 su bardagi sicak su
1 tatli kasigi tuz

Sogani zeytinyagi ile orta ateste kavurun. Sonra salcayi ilave edin ve biraz daha cevirip, ispanaklari ilave edin. Eger taze ispanak kullaniyorsaniz once guzelce yikayin. Suyunu suzup dograyin. Dondurulmus ispanak kullaniyorsaniz direk tencereye ilave edin. Yaklasik 5 dakika orta ateste suyu azalana dek kavurun.
Yikanmis ve suyu suzulmus pirinci ilave edin (Daha besleyici oldugu icin ben yari bulgur yari pirinc kullaniyorum). Sonra sicak suyu ve tuzunu ilave edin. Kapagini kapatip kisik ateste yaklasik 20-30 dakika pirincler pisene dek pisirin.
Pirincli Ispanagi yaninda veya uzerinde yogurt ile servis yapabilirsiniz. Uzerine pul biber serpebilirsiniz.

Spinach Soup (Ispanak Corbasi)

Spinach Soup is a healthy and nutritious recipe from my mum.

350-400 gr spinach
1 small onion, chopped
3 Tbsp oil/butter
1 Tbsp flour, heaping
4-5 cups water/chicken stock
1 cup yogurt
1 egg, beaten
1 Tbsp salt to taste

In a pot, place onions and oil/butter. Saute them for 2-3 minutes and then add spinach. Saute over medium heat until the water in spinach evaporates. Then add flour and saute for a couple of minutes. Add water/chicken stock and salt. When it boils, simmer for about 10-15 minutes over low-medium heat. After that you can blend it with a blender for a smoother soup. I like the spinach pieces in the soup so I did not blend it.
Leave Spinach Soup to cool for 10-15 minutes. Then whisk the yogurt with egg and stir in slowly. If you stir in the mixture to hot soup, the texture of yogurt will spoil and this will affect the soup.

350-400 gr ispanak
1 kucuk sogan, dogranmis
3 yemek kasigi sivi yag/tereyagi
1 yemek kasigi un, tepeleme
4-5 su bardagi su/tavuk suyu
1 su bardagi yogurt
1 yumurta, cirpilmis
1 yemek kasigi tuz

Sogan ve sivi yag/tereyagi bir tencerede kavrulur ve soganlarin rengi pembelesmeye baslayinca ispanaklari ilave edin. Suyunu cekene dek orta ateste kavurulur. Suyunu cektikten sonra un ilave edin ve biraz kavrulduktan sonra su/tavuk suyu ve tuzu ilave edin. Kaynamaya baslayinca hafif ateste 15 dakika kadar pisirin. Sonra blendir ile cirparak puruzsuz bir corba elde edebilirsiniz. Ben Ispanak Corbasi'ni icindeki ispanak parcaciklari ile seviyorum, o yuzden blendir kullanmadim.
Corbayi 10-15 dakika sogumaya birakin. Yogurt ve yumurtayi guzelce cirpin ve azar azar karistirarak corbaya ilave edin. Sicak corbaya yogurt-yumurta karisimini birden dokerseniz; yogurt kesilir, boylece corbanin yapisi ve goruntusu bozulur.

Spinach Omelet (Ispanakli Omlet)

2 eggs, beaten
½ cup spinach in a can/ cooked spinach
1 small onion, chopped finely
2 tbsp butter
1/4 tsp black pepper
½ tsp salt

In a skillet, melt the butter and add the onions. Saute until their color change over medium heat. Then add the spinach, salt and sauté for 3 minutes. Spread the spinach evenly on the bottom of the skillet and add beaten eggs. Sprinkle black pepper and cook both sides of the Spinach Omelet, till the eggs are cooked.
Serve warm.

Turkish Borek

MAIN
1 lb (454 gr) Phyllo Pastry / 4-5 yufka
3 L (13*9*2”) Pyrex casserole dish
2 eggs
½ tsp salt
2/3 cup milk
1/3 or ½ cup oil
1 tsp sesame seeds
1 tsp nigella seeds (optional)

For this recipe you can use one of these fillings.

Feta cheese filling
200 gr crumbled feta cheese or Mexican crumbling cheese
½ bunch of parsley or dill chopped (optional)
4 tbsp yogurt (optional)
Put the ingredients in a bowl or plate and mix them.

Ground beef filling
200 gr ground beef (% 75 or %80)
1 onion, chopped
1 tomato, diced or 3 tbsp tomatoes, in a can or ½ tbsp tomato paste
½ tsp salt
½ tsp black pepper
½ tsp cumin
1 tbsp oil (canola/sunflower/vegetable/corn)
Place the oil and ground beef in a pan and cook until the meat changes in color. Then add the onions and sauté for 2-3 minutes over low-medium heat. Add the tomatoes or tomato paste and salt. Cook for 6-8 minutes over low heat and stir occasionally. Finally add black pepper and cumin.

Spinach filling 
1 pkg (300 gr) frozen chopped spinach or spinach in a can
1 onion, chopped
2 tbsp oil (canola/ sunflower/vegetable/corn/olive)
½ tsp salt
¼ tsp black pepper (optional)
If you are using frozen spinach do not thaw. On the other hand, if you are using canned spinach, drain it. For the fresh spinach, wash, drain and chop.
Place the oil and chopped onions in a pan and sauté for 2-3 minutes on low-medium heat. Add the spinach, salt and cook for 8-10 minutes with the lid closed but stirring occasionally. When it’s done, sprinkle black pepper (optional).

Potato filling
2 large or 3 medium potatoes, boiled and smashed
1 onion, chopped
1 tbsp tomato paste
2 tbsp oil (canola/ sunflower/vegetable/corn/olive)
½ tsp salt
¼ tsp black pepper (optional)
¼ tsp cumin (optional)
In a pot boil the potatoes and smash them. Meanwhile in a pan place the oil and onion, and sauté for 2-3 minutes on low-medium heat. Then add the tomato paste, salt and smashed potatoes. Cook for 5-6 minutes stirring occasionally. Finally sprinkle the black pepper and cumin (optional)
 
Leek filling
1 bunch of leek, washed and drained
1/2 cup crumbled feta cheese/ricotta cheese (optional)
3 tbsp oil
1 tsp salt
1/3 cup parsley, finely chopped (optional)
Cut the leeks lengthwise and chop thinly. Then place them in a skillet with oil and salt. Cook over medium heat till leek absorb all its juice. Add parsley (optional) and feta/ricotta cheese (optional) and mix them all.

Eggplant filling
2 eggplants, washed and peeled
1 onion, chopped
1/2 cup ground beef (optional)
3 tbsp oil
1/2 tsp salt
1/2 tsp paprika
In a skillet, saute onions, oil and ground beef (optional) over low heat. Chop eggplants finely and stir into the skillet. Add paprika and salt, then cook till eggplants are soft and tender (10-12 minutes).

Main Procedure
In a bowl place the eggs, oil and milk. Mix them with a whisk. You will use this mixture between every two or three layers of the pastry and on top of the borek.
After greasing the Pyrex dish, place two or three layers of pastry/ 1 yufka on the bottom and let it go over the sides of the dish. Spread 3 tbsp of the mixture on it and put some of the filling you are using and spread it evenly. Take the other 2-3 sheets of pastry and wrinkle them up in order to fit to the dish (see the picture). Continue layering in the same way; first the liquid mixture and then the filling.
When you place the last pastry sheets, fold the sides of the bottom sheets over. Pour the remaining liquid mixture on top of the borek and sprinkle nigella and sesame seeds.
Preheat the oven to 350 F(180 C) and cook for about 45 minutes, until it turns golden brown. Serve warm.

200 gr az yagli kiyma

Bir tavaya sivi yagi ve kiymayi koyup, kiyma renk degistirene dek kavurun. Sonra soganlari ilave edin ve 2-3 dakika orta ateste kavurun. Domatesi/ domates salcasini ve tuzu ilave edin.Kisik ateste 6-8 dakika boyunca ara sira karistirarak pisirin. Son olarak karabiber ve kimyonu ilave edin.

Ispanakli Ic
1 paket (300 gr) donmus ispanak/konserve ispanak/taze ispanak, dogranmis
1 sogan, dogranmis
2 yemek kasigi sivi yag
1cay kasigi tuz
½ cay kasigi karabiber (istege bagli)
Eger dondurulmus ispanak kullaniyorsaniz, cozundurmeden kullanin. Diger yandan eger konserve kullaniyorsaniz suyunu suzun. Taze ispanagi yikayip, dograyin.
Bir tavada yag ve soganlari 2-3 dakika orta ateste kavurun. Ispanagi ve tuzu ilave edin ve ara sira karistirirak, kapagi kapali olarak 8-10 dakika pisirin. Hazir oldugu zaman uzerine karabiber serpin (istege bagli).

Patatesli Ic
2-3 orta boy patates, haslanip ezilmis
1 sogan, dogranmis
1 yemek kasigi domates salcasi
2 yemek kasigi sivi yag
1 cay kasigi tuz
½ cay kasigi karabiber (istege bagli)
½ cay kasigi kimyon (istege bagli)
Bir tencerede patatesleri haslayip, ezin. Bu sirada bir tavada sivi yag ile soganlari orta ateste 2-3 dakika boyunca kavurun. Sonra salcayi, tuzu ve patatesleri ilave edin. Karistirarak 5-6 dakika pisirin. Son olarak isterseniz karabiber ve kimyon ilave edin.

Pirasali Ic
1-2 tane pirasa, yikanip suyu suzulmus
1/2 su bardagi kiriklanmis beyaz peynir (istege bagli)
3 yemek kasigi sivi yag
1 tatli kasigi tuz
1/3 su bardagi maydanoz, ince dogranmis (istege bagli)
Pirasalari uzunlamasina kesin ve ince ince dograyin. Sonra bir tavada sivi yag ve tuz ile birlikte, pirasalar suyunu cekene dek pisirin. Maydanoz ve beyaz peyniri ilave edin (istege bagli), hepsini karistirin.

Patlicanli Ic
2 patlican, yikanip soyulmus
1 sogan, dogranmis
1/2 su bardagi kiyma (istege bagli)
3 yemek kasigi sivi yag
1 cay kasigi tuz
1 cay kasigi kirmizi toz biber
Bir tavada yag ile sogan ve kiymayi (istege bagli) kavurun. Patlicanlari kucuk kucuk dograyin ve tavaya ilave edin. Tuz ve kirmizi biberi de ilave ettikten sonra; patlicanlar yumusayana dek kisik ateste pisirin (10-12 dakika).

Yapilisi
Bir kasede sut, yumurta ve sivi yagini karistirin. Bu karisimi her 2-3 tane pastry arasina/her yufka arasinda ve boregin ustu icin kullanacaksiniz.
Tepsiyi yagladiktan sonra, 2-3 tane pastriyi/1 yufkayi tepsinin dibine kenarlari tepsinin disarisina cikacak sekilde yayin. 3 yemek kasigi sut karisimindan yayin ve kullandiginiz icten bir miktar alip esit sekilde yayin. Diger 2-3 pastriyi/ 1 yufkayi burusturarak tepsinin boyutlarina gore yerlestirin ve yine sutlu karisim ve icten koyarak elinizdeki pastri/yufka bitene dek bu islemi tekrarlayin (resime bakiniz).
Son pastri/yufkayi koyunca, en alttaki yufkayi tepsinin icine dogru kivirip boregin uzerini ortun. Geriye kalan sut karisimini esit sekilde boregin uzerine dokun ve susam ile corek otu serpin.
Onceden isitilmis 180 C (350 F) firinda, uzeri kizarana dek, yaklasik 45 dakika pisirin. Sicak servis yapin.

Spinach with Eggs (Yumurtali Ispanak)

2-3 eggs
1 lb (500 gr) spinach or 1 can spinach
1 medium onion, sliced
1 tbsp olive oil
2 tbsp smashed tomato in a can or 1 tbsp tomato paste
½ tsp salt
A pinch of red pepper and black pepper ( optional)

Put the oil in a large skillet. Sauté the onion with oil and smashed tomatoes/ tomato paste for 2-3 minutes at low-medium heat. Then, add the spinach and salt, cook for 5-6 minutes by stirring occasionally. Finally, make holes for eggs in the middle of the spinach mixture. Break the eggs into these holes, sprinkle some salt. If you wish, you could sprinkle some red and black pepper on top. Close the lid of the skillet and cook until the egg whites are cooked.

Bir tutam kirmizi biber ve karabiber (optional)

Genis bir tavaya yagi ve soganlari koyup, orta ateste sogani kavurun.Domates salcasini/ puresini ilave edip 2-3 dakika sote edin. Sonra ispanagi ve tuzu ilave edip, ara sira karistirarak 5-6 dakika pisirin.
Son olarak ispanaklarin ortasinda yumurtalar icin cukurlar acin ve bu cukurlarin icine yumurtalari kirin. Yumurtalarin uzerine biraz tuz serpin. Eger arzu ederseniz uzerine karabiber ve kirmizi biber de ilave edebilirsiniz. Tavanin kapagini kapatin ve yumurta aklari pisene dek pisirin.
