Turkish Milk Pudding with Kadaifi (Kadayifli Muhallebi)

½ lb shredded dough (Kadaifi)
5-6 Tbsp sugar
4-5 Tbsp butter
1 ½ cups walnuts/pecans, largely crushed
½ lb whipped cream

Leave the kadaifi in the freezer for about 1-2 hours prior to use. Then, take it out and crack it into small pieces. Take it to a pot and add butter and sugar. Cook stirring constantly over medium heat until it gets pinkish. Stir in walnuts/pecans and turn the heat off. Let it cool.
Click for the recipe of Turkish Milk Pudding (Muhallebi). Let the Muhallebi cool and add whipped cream. Mix with a mixer until it gets smooth.
Take the half of the kadaifi mixture over a rectangular big Pyrex dish and spread the Muhallebi over. Finally spread the remaining kadaifi mixture over. Cut in square slices and serve.

Kadayifi 1-2 saat kadar derin dondurucuda bekletin. Dondurucudan alin ve kirarak kucuk parcalara bolun. Tencereye alin, tereyag ve sekeri ilave edin. Orta ateste surekli karistirarak rengi pembelesene dek kavurun. Cevizleri ilave edin. Ocaktan alin ve sogumasini bekleyin.
Muhallebinin yapilisi icin tiklayin. Muhallebi soguduktan sonra icine krem santiyi ekleyip mikserle karistirin.
Kadayifin yarisini buyuk dikdortgen borcama yayin. Uzerine muhallebiyi doseyin. Kalan kadayifi uzerine yayin.

Pumpkin Cookies (Balkabakli Kurabiye)

½ cup softened butter (1/2 stick)
1 cup sugar
½ cup pumpkin puree
1 egg
1 Tbsp vanilla
1 ½ cup flour
1 tsp baking soda
1 tsp cinnamon
A pinch of salt
A pinch of nutmeg (optional)
A pinch of ground cloves (optional)
A pinch of ground ginger (optional)
1/3 cup walnuts, chopped
1/3 cup raisins

Heat the oven to 350 F (180 C). Grease a baking tray or line with cookie sheets.
Using a mixer or your hands mix the butter with sugar until smooth. Once the mixture is light and fluffy beat in the eggs, then mix in the vanilla and pumpkin puree. In a large bowl, whisk together the flour, baking soda, salt, and the spices. Slowly beat the flour mixture into the batter and stir in the walnuts and raisins.
Scoop the cookie dough by heaping tablespoons onto the prepared cookie sheets or baking tray and bake for 15-20 minutes, or until the cookies are browned around the edges. Remove the cookies from the oven and let them cool.

1/3 su bardagi ceviz ici, ufalanmis
1/3 su bardagi kuru uzum

Firini 180 C (350 F)’a isitin. Firin tepsisini yaglayin veya yagli kagit kullanabilirsiniz.
Elinizi kullanarak ya da mikser yardimiyla once tereyagini seker ile guzelce karistirin. Yumurtayi ilave edin ve karistirmaya devam ederek balkabagi puresini ve vanilyayi ekleyin. Genis bir kasede, un, karbonat, tuz ve kullanacaginiz baharatlari karistirin. Un karisimini yavas yavas kurabiye karisimina yedirerek karistirin. Son olarak, ceviz ve kuru uzumleri ilave edin ve guzelce karistirin.
Birer yemek kasigi dolusu kurabiye hamurunu firin tepsisine araliklarla dizin. Yaklasik 15-20 dakika kadar ya da kurabiyelerin kenarlari kizarana dek pisirin. Firindan cikardiginiz kurabiyeleri soguduktan sonar ikram edebilirsiniz.

Gavurdagi Salad (Gavurdagi Salatasi)

4 tomatoes
1 medium onion
2-3 green/banana peppers
3 Tbsp fresh parsley
4 sprigs fresh mint
3 Tbsp olive oil
2 Tbsp pomegranate molasses
½ lemon’s juice
1 cup walnuts, coarsely crushed
1 tsp salt to taste
1 tsp chili pepper flakes (optional)
 
Chop all the vegetables finely. Take olive oil, pomegranate molasses, lemon juice and salt into a small bowl. Mix them well. Then, add the sauce to chopped vegetables and toss gently. Let the sauce to be absorbed for 5-10 minutes.
Add walnuts, toss gently and serve.

Butun sebze malzemelerini minik minik dograyin. Kucuk bir kasede zeytinyagi, nar eksisi, limon suyu ve tuzu karistirin. Dogranmis olan malzemelere ilave edin ve guzelce karistirin. Yaklasik 5-10 dakika sosun salata ile iyice butunlesmesi icin bekleyin.
Uzerine cevizi ilave edip karistirin ve servis yapin.

Sesame Paste (Tahini) & Walnut Cookies (Tahinli&Cevizli Kurabiye)

1 cup sesame paste (tahini)
1 cup sugar
1 cup walnuts, crushed/ground
3 cups all purpose flour
½ cup whole wheat flour
100 grams butter at room temperature
½ cup canola oil
1 tsp vanilla extract/powder
1 tsp baking powder (optional)
 
Take tahini (sesame paste), canola oil, butter and sugar in a mixing bowl. Mix them well and add walnuts, vanilla and baking powder (optional). Knead while adding flour slowly. Dough should be a little sticky, make sure it is not hard. Grab walnut size pieces and give them shape them in balls with your palms. Place them over a greased baking tray leaving some room in between. Bake them in a preheated 340F (175C) oven until they start getting cracks (for about 30 minutes). Take them out before they get pinkish/brownish. Let them cool and be careful while taking them from the tray, because they crumble easily.

Tahin, sivi yag, oda sicakligindaki tereyagi ve sekeri genis bir kapta karistirin. Cevizi, vanilya ve kabartma tozunu (istege bagli) ilave edin. Karistirarak unu azar azar ekleyerek yogurun. Hamurun kivami sert olmamali. Hafif ele yapisir gibi yumusak bir hamur elde edin. Hamurdan ceviz buyuklugunde parcalar alin ve elinizde yuvarlayarak yaglanmis firin tepsisine araliklarla dizin. Onceden isitilmis 175C (340F) firinda kurabiyeler catlamaya baslayincaya dek, yaklasik 30 dakika pisirin. Uzerleri kizarmadan firindan cikarin. Tepsiden alirken dikkatli olun cunku cok kolay dagiliyorlar.

Muhammara (Red Pepper Walnut Dip)

1-1 ½  cup roasted red peppers, drained
1/2 cup fresh bread crumbs
1/3 cup walnuts, finely chopped
2-3 cloves of garlic, minced
1 Tbsp fresh lemon juice
1 Tbsp pomegranate molasses
½-1 tsp ground cumin
½ tsp hot red pepper flakes (optional)
2-3 Tbsp extra virgin olive oil
½ tsp salt to taste

Blend all the ingredients but the olive oil in a food processor blend until mixture is smooth. You may also leave it a little chunky if you like it that way. Stir in oil gradually. Transfer muhammara to a serving bowl and if desired, garnish with fresh parsley/mint. Serve it with crudities, pita triangles or fresh bread. May be refrigerated for up to 24 hours.
Serve at room temperature.
Muhammara is also very good at breakfasts.

Bok Choy with Mushroom (Mantarli Cin Lahanasi)

½ lb bok choy
3 Tbsp olive oil
1 Tbsp soy sauce
½-1 red pepper, chopped
2-3 cloves garlic, minced
5-6 mushrooms, sliced
½ cup walnuts
½ tsp salt to taste

Chop the stalks and leaves of bok choy any size you wish. Take olive oil over a sauté pan and sauté peppers until they get soft. Then, add stalks of bok choy first, sauté for 3-4 minutes and add leaves, garlic, mushrooms, salt and soy sauce. Sauté for 2 more minutes. Toss with walnuts and serve.

Sonra, cin lahanasinin sap kisimlarini ilave edin ve 3-4 dakika soteleyin. Yaprak kisimlarini, sarimsak, mantar, tuz ve soya sosunu ilave edin. Yaklasik iki dakika daha sote edin. Atesten alin cevizi ilave edin ve harmanlayin.

Stuffed Kadaifi (Kadayif Dolmasi)

1 lb kadaifi
150 grams butter
1 cup walnuts/pecans, in chunks

For the Syrup:
3 cups water
2 ½ -3 cups sugar
1 tsp lemon juice

First mix sugar and water in a pot and boil the syrup for about 5 minutes. Stir in lemon juice and let it cool.
Melt butter and drizzle all over the kadaifi. Using your hands, try to mix the butter with kadaifi evenly. If the kadaifi pieces are too long, break them into smaller pieces with your hands. After tossing the kadaifi, take a small Turkish coffee cup and fill half of it with kadaifi and make a hole in the middle. Place about 1 tsp walnuts/pecans inside and fill the rest of the cup with more kadaifi. Gently press on top of the cup. Grease an oven tray and flip the cup upside down on the tray. Make sure to press on top of the kadaifi before flipping, otherwise the shape won’t come out well. Use the same procedure for all the kadaifi left.
Bake it at 350 F (180 C) preheated oven until they get light brown. Pour the cold syrup over the hot stuffed kadaifi right after taking out of oven. Let it absorb the syrup for at least 3-5 hours.

Surubu icin:
3 su bardagi seker
2 ½ -3 su bardagi seker
1 tatli kasigi limon suyu

Once surubu hazirlayin. Su ve sekeri karistirarak genis bir tencerede yaklasik 5 dakika kadar kaynatin. Icine limon suyunu ilave edin ve sogumaya birakin.
Tereyagini eritin ve tel kadayifin uzerinde gezdirin. Ellerinizi kullanarak, tereyagini kadayifin her yerine yedirmek sartiyla guzelce harmanlayin. Eger kadayifin telleri uzunsa, elinizle kopararak daha ufak parcalara ayirin.
Ufak bir kahve fincaninin yarisina kadar kadayiftan doldurun ve orta kismini cukurlastirin. Cukur kismina sigdirabildiginiz kadar ceviz koyun (yaklasik 1 tatli kasigi kadar). Bol cevizli olunca daha lezzetli oluyor. Sonra uzerine tekrar finacin agiz kismina kadar kadayif koyarak, ustten hafifce bastirin. Yaglanmis firin tepsisine fincani ters cevirin. Eger fincanin icindeki malzemeyi ustten hafifce bastirmazsaniz tepsiye ters cevirdiginizde sekli bozuk cikacaktir.
Butun kadayif malzemesini ayni sekilde yaparak sekil verin.
Onceden isitilmis 180 C (350 F) firinda uzeri kizarana dek pisirin.
Firindan cikan sicak kadayifin uzerine soguk serbeti dokun. Yaklasik 3-5 saat boyunca surubun emilmesini bekleyin.

European Cemen (Avrupa Usulu Cemen)

1 cup Lutenitsa
1-2 cloves of garlic, smashed (optional)
1-2 Tbsp Turkish white cheese/feta cheese, crumbled
1-2 Tbsp olive oil
1-2 Tbsp crushed walnut

Click for the Lutenitsa recipe. Mix all the ingredients with Lutenitsa. Serve with either warm bread or crackers. Cemen goes very well at breakfasts and brunches.

Honey and Nuts Snow White (Balli Cevizli Karbeyaz)

4-5 cups milk
1 cup sugar
3 tbsp flour
1 tbsp starch
1 tsp vanilla

For the crust:
1 cup oatmeal

For the top:
2 tbsp honey
½ cup walnuts, coarsely crushed
1 apple
2 tbsp sugar
½ tsp cinnamon

To prepare the filling, take milk, sugar, starch and flour into a pot. Cook over medium heat while whisking. Stir in vanilla right before turning the heat off. Set aside.
Meanwhile, peel the apple and chop into small cubes. Cook them in a saucepan with sugar until their color changes to pinkish.
Cover the bottom of a Pyrex dish or serving plate with the oatmeal. Pour the filling over and let it cool for a while. Place the cooked apples all over and drizzle with honey. Sprinkle with walnuts and cinnamon. Serve cold.

Elmayi soyun ve minik kupler seklinde dograyin. Toz sekerle birlikte tavada renkleri pembelesene dek pisirin.
Servis tabagi ya da borcam bir tepsinin dibine yulaf ezmesini iyice yayin. Uzerine hazirladiginiz kremayi dokun. Biraz soguduktan sonra, pisirdiginiz elmalari kremanin uzerine yayin ve uzerinde bal gezdirin. Ceviz ve tarcin serpistirdikten sonra soguk servis yapin.

Cucumber Salad with Yogurt (Yogurtlu Salatalik)

2 big cucumbers (~1/2 lb), sliced diagonally thin
1 cup plain yogurt
½ tsp dried mint/1 tsp fresh dill
2 green onions, chopped (optional)
1/3 cup walnut
1 tbsp lemon juice
1-2 cloves of garlic, pressed
½ tsp salt to taste

In a bowl; mix yogurt, salt, green onions, mint/dill and garlic. Take cucumber slices in a salad plate and drizzle with lemon juice. Then, pour the yogurt mixture over and garnish with walnuts. Serve Cucumber Salad with Yogurt beside any kind of meat, chicken and vegetable dish.

Tahini Cake with Sesame Coating (Susam Mantolu Tahinli Kek)

3 eggs
1 ½ cup sugar
1 cup canola oil
½ cup tahini
½ cup cold milk
1 tsp/1 package baking powder
2 cups flour

For the coating:
1 tsp soft margarine
½ cup sesame
2 tbsp walnut pieces

In a large bowl, mix the eggs and sugar with a mixer till it gets foamy (for about 5 minutes). Add canola oil and cold milk. Stir with a wooden spoon. Then, stir in flour and baking powder. Finally add tahini and stir well to dissolve all ingredients.
Meanwhile, apply soft margarine all over the cake pan with a brush or your fingers. Pour the sesame inside and try to coat inside the cake pan evenly (see the picture). And then, pour the cake mixture inside and sprinkle with walnuts on top.
Preheat the oven to 350 F (180 C) and bake for about 40-50 minutes till the cake turns golden brown.

Mantosu icin:
1 tatli kasigi yumusak margarin

2 yemek kasigi kirilmis ceviz

Genis bir kap icinde toz sekeri ve yumurtayi mikser ile yaklasik 5 dakika cirpin. Kopurup seker iyice eriyince, sivi yag ve soguk sutu ilave edin. Tahta kasikla karistirin. Uzerine un ve kabartma tozunu yavas yavas ilave edin ve kasikla karistirmaya devam edin. Son olarak tahini ilave edin ve guzelce karistirin.
Diger tarafta, oda sicakligindaki margarini kek kalibinin her tarafina firca ile ya da parmaklarinizla surun. Uzerine kavrulmamis susamlari dokun ve kalibi cevirerek her yerinin susamlanmasina ozen gosterin (resime bakiniz). Hazirladiginiz kek harcini kaliba dokun ve uzerine iri kirilmis cevizleri serpin.
Onceden isitilmis 180 C (350 F) firinda uzeri kizarana dek pisirin (yaklasik 40-50 dakika).

Asparagus with Walnuts (Cevizli Kuskonmaz)

½ lb asparagus, washed and cut into 1 inch pieces
½ cup crushed walnuts
2 tbsp butter
½ tsp salt
1 tbsp lemon juice
A pinch of black pepper

Boil asparagus for 2-3 minutes, then wash under cold water and drain.
In a skillet, melt the butter and roast walnuts for about 2-3 minutes over medium heat. Then stir in broiled asparagus and add salt. Stir fry asparagus for about 3-4 minutes.
Let asparagus cool, then sprinkle black pepper and drizzle lemon juice all over.
Asparagus with walnuts is ready to serve.

½ su bardagi ufalanmis ceviz

Bir tutam karabiber

Kuskonmazlari 2-3 dakika haslayin. Sonra soguk suyun altina tutun ve suzun.
Teflon bir tavada tereyagini eritip cevizleri 2-3 dakika orta ateste kavurun. Sonra haslanmis kuskonmazlari ve tuzu ilave edin. Ara sira karistirarak 3-4 dakika boyunca kavurun.
Biraz soguyunca uzerine limon suyu ve karabiber serperek servis yapin.

Carrot Cake (Havuclu Kek)

3 eggs
1 ½ cup sugar
1 cup oil/7 Tbsp melted butter or margarine
1 cup carrot, shredded
1 cup walnut/pecan, crushed
2 cups flour
1-2 tsp cinnamon
1 Tbsp orange/lemon zest
1 tsp baking powder

Beat eggs and sugar with a mixer till it becomes foamy (3 mins). Add oil/margarine and mix for a while. Then mix in shredded carrots, lemon/orange zest and crushed walnuts/pecans. Finally add flour, cinnamon and baking powder and mix for 3-4 minutes.
Preheat the oven to 350 F (180 C) and grease the cake pan and pour the cake mixture in.
Bake the Carrot Cake until it becomes golden brown, for 40-50 minutes. To check whether the cake is ready, insert a toothpick in the center and pull it out, if it comes out clean, your cake is done.

P.S: To remove the cake form the pan easily, cover its bottom with a wet cloth and allow to cool 10 to 15 minutes before removing.

Yumurta ve sekeri mikser ile kopuk haline gelene kadar cirpin (3 dakika). Sivi yagi ilave edip biraz daha karistirin. Sonra havuc, ceviz ve limon/portakal kabugunu ilave edin. Biraz daha karistirip, un, tarcin ve kabartma tozunu ekleyip 3-4 dakika daha karistirin.
Kek karisimini, yagladiginiz kek kalibina dokun ve onceden isitilmis 180 C (350 F) firinda uzeri kizarana dek yaklasik 40-50 dakika pisirin.
Bir kurdani kekin ortasina batirarak pisip pismedigini kontrol edebilirsiniz. Eger kurdan temiz cikarsa kekiniz hazir demektir.

Walnut Bread Rolls (Cevizli Ekmek)

25-30 gr fresh active yeast/7 gr instant yeast
2 cups lukewarm water
1 tbsp salt
1 tsp sugar
1 egg (white goes inside, yolk for egg wash)
¼ cup oil
6 cups of flour, heaping
1 cup crushed walnut/pecan
1 tsp allspice
2 tbsp yogurt (for egg wash)

Place the lukewarm water, sugar and the yeast into a bowl. Stir well to dissolve the sugar and the yeast.
Then, add salt, egg white, ¼ cup oil and flour, knead for 5-8 minutes, till dough becomes elastic. Place a plastic wrap on the dough (see the picture) and let it rest for 2 hours in a warm place, till it rises up to double its volume (see the picture).
Place dough on the counter and punch to release air. Then sprinkle some flour on the counter and try to flatten the dough in 1/10 inch thickness with a dough roller.
Sprinkle allspice and spread the crushed walnut over dough (see the picture). Then roll it up tightly (see the picture). Cut the roll into 2 inch wide pieces (see the picture), and press gently on cut sides. Then place them into the baking tray with baking paper. Leave it for 1-2 hours to rise.
Preheat the oven to 400F (200C). Mix the egg yolk and yogurt in a bowl and brush surface of the Walnut Bread Rolls with this egg wash. Bake for 12-15 minutes, then switch to 350 F (180 C) and bake for 8-10 minutes till they turn to golden brown.
After taking those out of the oven cover them with a clean cloth or towel to keep them soft. Serve warm.
This recipe makes 24-25 rolls.

P.S: Do not use metal container when kneading or resting the dough. Metal spoils the texture of dough.

1 yumurta (beyazi icine, sarisi uzerine)
½ cay bardagi sivi yag
6 su bardagi un, tepeleme
1 su bardagi kiriklanmis ceviz/ pekan cevizi
1 tatli kasigi yenibahar
2 yemek kasigi yogurt (uzeri icin)

Ilik suyu ve mayayi bir kaseye alin, icine sekeri ilave edin ve sekerle maya cozunene kadar iyice karistirin.Sonra, yumurta beyazini, ¼ su bardagi sivi yagi, unu ve tuzu ilave ederek, 5-8 dakika hamur elastik olana dek yogurun. Uzerine seffaf film ortun (resime bakiniz) ve sicak bir ortamda, hamur iki kati kadar kabarana dek, yaklasik 2 saat, bekleyin (resime bakiniz).
Hamuru tezgahin uzerine alin ve havasini indirmek icin uzerinden bastirin ve tezgahi unlayip oklava ile hamuru ½ cm kalinliginda acin. Uzerine yenibahar serpin ve kiriklanmis cevizleri yayin (resime bakiniz). Sonra sikica rulo yapin (resime bakiniz) ve ruloyu 4-5 cm genisliginda parcalara kesin (resime bakiniz). Sonra kesik yerlerinden hafifce bastirip, uzerinde yagli kagit olan tepsiye aralikli olarak dizin. Ekmek rulolari iki kati buyuyene kadar yaklasik 1-2 saat bekletin.
Firini onceden 200 C (400F) ye isitin ve yogurt ile yumurta sarisini karistirip, rulolarin uzerine firca ile surun. 12-15 dakika pisirip, sicakligi 180 C (350F) ye dusurun ve 8-10 dakika daha uzerleri kizarana dek pisirin.
Firindan cikarinca, tepsinin uzerini temiz bir mutfak bezi ya da havlu ile ortup hava almasini engeleyin. Boylece Peynirli Ekmek Rulolariniz yumusacik olacaklar.
Sicak servis yapin.
Bu tariften 25-26 tane Cevizli Ekmek oluyor.
