Victorian Milk Bread (Sutlu Ekmek)


2 tsp dry/instant yeast
1 tsp sugar
1 ½ cups luke warm milk
3 ¾ cups bread flour
1 ½ tsp salt to taste

Glaze:
1 egg
1 tbsp milk
Sesame seeds

Add yeast and sugar into 1/2 cup of milk in a bowl. Leave for 5 minutes; stir to dissolve. Mix flour and salt in large a bowl. Make a well in center and pour in dissolved yeast. Mix in flour. Stir in reserved milk to form a sticky dough. Turn dough out onto lightly floured surface. Knead dough until smooth and elastic, about 8-10 minutes.

Put dough in a clean bowl and cover with a towel or cloth. Let rise for 45-60 minutes in a warm place. Punch down, cover and let dough rise again until doubled in size about 45 minutes.
Grease an 8 x 4 x 2 1/2 inch loaf pan. Shape dough into a long loaf (see the picture).
Place shaped dough in greased loaf pan. Cover with towel/cloth. Leave for a rest until dough is 1 inch above the top of pan, about 1 hour.
Brush top of loaf with egg glaze and sprinkle sesame seeds. Bake in preheated 400F (200 C) oven for 40-45 minutes until golden. After taking the bread out of the oven cover it with a towel/cloth to keep it soft and warm.
Serve warm and enjoy Victorian Milk Bread with butter or cream cheese.

P.S: Do not use metal container when kneading or resting the dough. Metal spoils the texture of dough.

Bir kasede ½ su bardagi ilik sutu, seker ve mayayi karistirin. Mayanin cozunmesi icin 5 dakika bekletin. Genis bir kasede un ve tuzu karistirin, ortasina bir cukur acin. Cukura cozunen maya karisimini dokun. Un ile karistirip geri kalan ilik sutu ilave edin. Hamuru unlanmis bir yuzeye alin ve puruzsuz ve elastic bir hamur elde edene dek yaklasik 8-10 dakika yogurun.
Hamuru temiz bir kaseye alin ve uzerini temiz bir havlu/bez ile ortun. 45-60 dakika boyunca kabarmasi icin ilik bir ortamda bekletin.Daha sonra havasini cikarmak icin nazikce bastirin, ortun ve tekrar hacimce iki katina cikana kadar bekletin (yaklasik 45 dakika).
20x10x6 cm’lik bir dikdortgen kalibi yaglayin. Hamura uzun bir ekmek sekli verin (resime bakiniz). Yaglanmis kaliba yerlestirin ve uzerini havlu/bez ile ortun. Hamur kalibin uzerinden yaklasik 2 ½ cm kadar yukselene dek bekletin (yaklasik 1 saat).
Uzerine yumurtali sut karisimini surun ve susam serpin. Onceden isitilmis 200 C (400 F) firinda 40-45 dakika uzeri kizarana dek pisirin.
Ekmegin yumusak ve sicak kalmasi icin; firindan cikarinca, uzerini havlu/bez ile ortun.
Sutlu Ekmek sicacikken, tereyagi ve krem peynir ile tadini cikarin.

Turkish Milk Pudding with Kadaifi (Kadayifli Muhallebi)

½ lb shredded dough (Kadaifi)
5-6 Tbsp sugar
4-5 Tbsp butter
1 ½ cups walnuts/pecans, largely crushed
½ lb whipped cream

Leave the kadaifi in the freezer for about 1-2 hours prior to use. Then, take it out and crack it into small pieces. Take it to a pot and add butter and sugar. Cook stirring constantly over medium heat until it gets pinkish. Stir in walnuts/pecans and turn the heat off. Let it cool.
Click for the recipe of Turkish Milk Pudding (Muhallebi). Let the Muhallebi cool and add whipped cream. Mix with a mixer until it gets smooth.
Take the half of the kadaifi mixture over a rectangular big Pyrex dish and spread the Muhallebi over. Finally spread the remaining kadaifi mixture over. Cut in square slices and serve.

Kadayifi 1-2 saat kadar derin dondurucuda bekletin. Dondurucudan alin ve kirarak kucuk parcalara bolun. Tencereye alin, tereyag ve sekeri ilave edin. Orta ateste surekli karistirarak rengi pembelesene dek kavurun. Cevizleri ilave edin. Ocaktan alin ve sogumasini bekleyin.
Muhallebinin yapilisi icin tiklayin. Muhallebi soguduktan sonra icine krem santiyi ekleyip mikserle karistirin.
Kadayifin yarisini buyuk dikdortgen borcama yayin. Uzerine muhallebiyi doseyin. Kalan kadayifi uzerine yayin.

Mushroom Soup with Chicken (Tavuklu Mantar Corbasi)

½ chicken breast
2 cups milk
1 carrot, chopped
½ lb ( 4-5 ) button mushroom, sliced
½ stick butter (50-65 gr)
2 Tbsp flour, heaping
1 Tbsp salt (for soup)
1 tsp salt (for boiling chicken)
½ bunch of fresh dill, thinly chopped or 1 tsp of dried dill (optional)
2 Tbsp cooking oil

Boil the chicken breast with the chopped carrots until they are both soft and tender with adding 1 tsp salt. When it’s done, pour the remained water in a bowl for using it as the chicken stock in the soup.
After the cooked chicken breast cools a little, cut it into small pieces.
Meanwhile, in a skillet place the butter and sliced mushrooms. You can sprinkle a pinch of salt on them. Saute them on a low-medium heat, till they get soft and tender, for about 8-10 minutes.
In a large pot, add the oil and flour and stir continuously while cooking on low- medium heat, for about 2-3 minutes. When the flour and oil mixture starts to change in color, add milk, salt and the chicken stock when you set apart before. Stir well in order to obtain a smooth creamy soup.
Finally add the chicken pieces, carrots and cooked mushrooms into the soup. Then cook for about 8- 10 minutes stirring occasionally (optional). When it’s done sprinkle with dill on top before serving.
Serve it while still hot or warm.

Tavuk gogsunu havuclarla birlikte 2 cay kasigi tuz ilave ederek haslayin. Tavuk ve havuclar yumusayinca kalan suyu bir kaseye alip, corbada kullanmak icin ayirin.
Haslanmis tavuk biraz soguyunca, kup kup dograyin.
Bu sirada, tereyagini bir tavaya alin ve dogranmis mantarlari, bir tutam tuz ilave ederek kisik ateste, yumusayana dek, 8-10 dakika pisirin.
Buyuk bir tencereye, 1 yemek kasigi sivi yag ve unu koyup, dusuk ateste 2-3 dakika kavurun. Un-yag karisimi sararmaya basladigi zaman; sutu, tuzu ve tavugun haslama suyunu ilave edin. Puruzsuz bir corba elde etmek icin guzelce karistirin.
Son olarak ; tavuk parcaciklarini, havuclari ve mantarlari ilave edin. Ara sira karistirarak, 8-10 dakika kisik ateste pisirin. Corbaniz hazir oldugu zaman uzerine dereotunu ilave edin (istege bagli), karistirin ve servis yapin.

Dark Chocolate Pudding (Bitter Cikolatali Puding)

¾ cup sugar
3 Tbsp cornstarch
2 Tbsp unsweetened cocoa powder
3 cups half and half, light cream or milk
1 Tbsp butter
2 Tbsp vanilla
¼ tsp salt (optional)
4 oz bittersweet or semisweet chocolate, chopped

In a large saucepan combine sugar, cornstarch, and cocoa powder. Add half and half or milk. Cook and slowly stir over medium heat until thickened and bubbly. Cook and stir 2 minutes more.
Remove from heat and stir in butter, vanilla and salt (optional). Stir in chocolate until melted. Ladle into serving bowls. Cover surface with plastic wrap to avoid crusting on top (see the picture); chill up to 24 hours.
You may serve with whipped cream on top or sprinkle with additional cocoa powder.

120 gr yari-tatli ya da tatlandirilmamis pasta cikolatasi (%56 kakao), dogranmis
Orta boy bir tencerede seker, nisata ve kakaoyu karistirin. Krema ya da sutu ilave edin ve guzelce karistirin. Orta ateste yavasca karistirarak koyulasana ve kaynayana dek pisirin. Baloncuklar cikmaya baslayinca karistirmaya devam ederek 2 dakika kadar daha pisirin.
Atesten alin, tuz, vanilya ve tereyagini ilave edip karistirin. Sonra, parcalanmis cikolatalari ilave edin ve eriyene dek karistirin. Servis kaselerine doldurun, kabuki olusumunu engellemek icin uzerine hava gecirmeyecek sekilde plastik film ile kapatin (resime bakiniz). Yaklasik 24 saat boyunca buzdolabinda saklayin.
Uzerine krem santi ya da kakao koyarak servis yapabilirsiniz.

Pumpkin Pudding (Bal Kabakli Muhallebi)

2 cups milk
2 Tbsp flour
2 Tbsp starch
1 cup sugar
1 tsp vanilla
2 Tbsp butter
1 cup pumpkin puree
For the pumpkin puree, chop about 1 lb pumpkin and barely cover with water and add 1 Tbsp sugar. Cook until soft and drain. Puree with blender. Let it cool. Alternately, you may use canned pumpkin puree/filling.
Take milk, flour, starch and sugar in a pot and mix them all. Place over the stove and cook stirring gradually (preferably with mixer) over medium heat. Once it starts boiling, stir in butter, pumpkin puree and vanilla. Cook for about 2-3 minutes over low heat stirring gradually.
Pour into individual serving cups and let them cool either at room temperature or in the refrigerator.
Garnish generously with crushed walnuts.

Ocaktan alin ve servis kaselerine bosaltin. Ilimasini bekleyin ya da buzdolabinda sogutabilirsiniz.
Uzerine kiriklanmis ceviz koyarak servis yapin.

Peppers with Milk and Cheese (Lorlu-Sutlu Biber ) Rumeli-Trakya

2 lbs sweet banana peppers
3-4 lbs ricotta cheese (preferably fresh)
3-4 cups milk
Salt to taste
 
Bring the milk to boil and add some salt to ricotta if you like. Let the milk cool aside (it should be a little cooler than the milk for yogurt making, 33-37 C). Chop the peppers about 1 inch long and put them in 1L or any size you like glass jars. Make sure to fill half of the jars. Then, fill the ¾ of the jars with ricotta cheese, covering the peppers almost 1 inch. Once the milk gets to the right temperature (33-37 C), fill the jars with milk to the top. Close the lids tight and place the jars upside down over a blanket or any other thick cloth, just as you make yogurt. Wrap the blanket around the jars tightly and let them ferment for 2 days. You may check sometime to see if there are any spills. Take them to the refrigerator when they get as thick as yogurt, or maybe thicker.
Let them rest in the fridge for 10 days and then they are ready to eat. The longer they stay in the fridge the thicker and more acidic they become as in pickles. They will have a more sour and strong taste.

Sutu iyice kaynatin. Lor peynirinin tuz oranına gore arzu ettiginiz oranda tuz ilave edin. Sut bir kenarda sogumaya birakilir. (Yogurt mayalanacak sutten biraz daha ilik olmalidir). Biberleri 2-3 cm uzunlugunda dograyin ve 1 litrelik ya da kullandigiz herhangi bir boyuttaki kavanozun yarisina kadar doldurun. Kavanozdaki biberlerin uzerini bir-iki parmak gececek kadar (kavanozun 4’te 3u) lor peynirle doldurun. Sut, yogurt yapimi icin tercih edilen sicakliktan biraz daha ilik olunca, kavanozlarin agzina kadar doldurun. Kavanozlari sikica kapatin.Yogurt mayalar gibi, bir battaniye uzerine kavanozlari ters sekilde koyun ve etrafini battaniye ya da baska bir kalin ortuyle sikica sarin ve yaklasik 2 gun mayalamaya birakin. Arada kontrol ederek kavanozlarin sizinti yapmadigindan emin olun. Yogurt kivamindan daha sert bir kivama geldiklerinde kavanozlari buzdolabina alabilirsiniz.
Buzdolabinda 10 gun bekletttikten sonra tuketebilirsiniz. Buzdolabinda bekleme suresi arttikca kivami ve lezzeti artacak, ayni tursu gibi daha asidik, keskin ve eksimsi bir tad alacaklardir.

Panera's Broccoli Cheese Soup (Panera Brokoli Corbasi)

3 Tbsp butter
½ medium onion, chopped
¼ cup flour
2 cups milk
2 cups chicken stock
½ lb fresh broccoli, chopped
1 cup carrot, shredded
¼ tsp nutmeg
1-2 cups cheddar cheese, grated
 ½ cup corn starch
Salt and pepper

Sauté onion in butter over medium heat. Stir in flour and cook for 3-5 minutes. Stir constantly and add chicken stock and milk. Add broccoli and carrots. Simmer for 20-25 minutes. Add salt and pepper. Dissolve starch in water and add into the soup. Stir frequently until the soup thickens. If desired, can be puréed in a blender. Return to heat and add cheese. Stir in nutmeg.
Serve hot with bread.

Brokoli ve havuclari ilave edin. Yaklasik 20-25 dakika kisik ateste pisirin. Tuz ve karabiber ilave edin. Bir miktar su icinde nisastayi cozun ve corbaya yavasca ilave edin. Corba koyulasana kadar surekli karistirin. Arzu ederseniz blendir ile pure haline getirin. Ocaga alin ve cedar peynirini ilave edin. Son olarak muskati ilave edin ve ocaktan alin. Yaninda ekmek ile sicak servis edin.

Leek and Potato Soup (Patatesli Pirasa Corbasi)

2 leeks, cleaned and chopped
2 potatoes, chopped
2 carrots, chopped
½ cup celery, chopped
2 Tbsp flour
3 cups water
2- 2 ½ cups milk
1 chicken bouillon
1 Tbsp salt to taste
3 Tbsp butter
1 Tbsp fresh parsley, chopped
1 egg
2 Tbsp lemon juice

Melt the butter in a big pot and stir in flour. Over medium heat, sauté flour until changes color. Add carrots and sauté for about 2 minutes. Then, stir in potatoes and cook for 2 minutes stirring occasionally. Finally, add chopped leek, celery and parsley; sauté for 2-3 minutes. Add hot water, salt and chicken bouillon. Bring to a boil and cook over low heat covered until the vegetables are cooked or for about 20-25 minutes. Then, add milk and bring to a boil stirring occasionally. Lower the heat and simmer for about 5 minutes.
In a small bowl, whisk the egg and lemon juice. Let the soup rest for a while and then, add some soup into it stirring constantly. Add the egg mixture into the soup stirring rapidly.

Genis bir tencerede tereyagini eritin ve unu orta ateste sararana dek kavurun. Havuclari ilave edin ve yaklasik 2 dakika kadar kavurun. Patatesleri ilave edip kavurmaya devam edin. Son olarak, dogranmis pirasa, kereviz saplarini ve maydanozu ilave edin. Iki uc dakika kadar daha kavurun ve sicak suyu ilave edin. Tavuk bulyonu ve tuzu ekleyin. Kaynayinca atesi kisin ve sebzeler pisene dek yaklasik 20-25 dakika kapagi kapali olarak pisirin. Sonra, sutu ilave edip ara sira karistirarak yuksek ateste kaynamasini bekleyin. Kaynadiktan sonra kisik ateste 5 dakika kadar pisirin.
Kucuk bir kapta limon suyu ve yumurtayi guzelce cirpin. Corba biraz dinlendikten sonra, corbadan bir miktar alip cirpilmis yumurta karisimina yavas yavas yedirin. Sonra da yavas yavas corbanin icine dokerek hizlica karistirarak corbaya yedirin.

Rustic Broccoli Soup (Koy Usulu Brokoli Corbasi)

3 cups broccoli, cut in chunks
1 potato, cut in cubes
2 carrots, chopped
1 cup celery, chopped
3-4 Tbsp butter
2 Tbsp floor
2 cups milk
½ tsp black pepper to taste
1 Tbsp salt to taste
1 chicken bouillon (optional)

First place all the vegetables in a pot and cover with hot water (about 2-3 cups). Bring to a boil; add salt and boil for 8-10 minutes or until the vegetables are soft.
Meanwhile, melt the butter in a saucepan and stir in flour. Saute until the flour turns yellow. Slowly add milk, stirring constantly. Once thickens, stir it into the vegetable pot. If desired add chicken bouillon. Cook on low heat for about 5-7 minutes. Add black pepper. Serve either warm or hot.

Butun sebzeleri bir tencereye alin ve uzerini kaplayacak sekilde sui le doldurun (2-3 su bardagi). Kaynamaya baslayinca tuz ekleyin ve yaklasik 8-10 dakika kadar ya da sebzeler yumusayana dek kisik ateste pisirin.
Bu sirada bir tencereye tereyagini alin ve eritin. Unu ilave edin ve un sararana dek kavurun. Sonra, yavasca sutu ilave edin ve surekli karistirarak topaklanmasini engelleyin. Koyulasinca, atesten alin ve haslanmis sebzelerin uzerine karistirarak ilave edin. Arzuya gore tavuk bulyonu ilave edin. Dusuk ateste yaklasik 5-7 dakika pisirin. Karabiberi ilave edin. Sicak ya da ilik servis yapin.

Cauliflower Soup (Karnibahar Corbasi)

1 lb cauliflower, divided into florets
1 onion, chopped
1 potato, chopped
1 Tbsp flour
2 Tbsp olive oil
¼ tsp cumin
¼ tsp paprika
1 cup milk
3 cups water
Salt and pepper to taste

Sauté onions in olive oil for about 4-5 minutes. Stir in flour and sauté until flour turns yellow. Add potatoes and cauliflower. Cook for an additional 3-4 minutes. Add salt and spices and water. Bring to a boil. Finally, add milk and cook for about 15-20 minutes or until the potatoes get soft.
Use blender to smoothen the soup. Then, cook for an additional 5 minutes. Adjust the consistency with adding either water or milk.
Serve hot with fresh or dried mint on top.

Once, soganlari zeytinyaginda yaklasik 4-5 dakika kavurun. Unu ilave edin ve renk degistirene dek kavurmaya devam edin. Patates ve karnibaharlari ilave edin. 3-4 dakika daha kavurun. Tuz ve baharatlarini attiktan sonra suyu ilave edin. Kaynamaya baslayinca sutu ilave edin. Yaklasik 15-20 dakika ya da patatesler yumusayana dek pisirin.
Blendir yardimi ile corbayi puruzsuz bir hale getirin. Yaklasik 5 dakika kadar daha pisirin, kivamini ayarlamak icin sut veya su ilave edebilirsiniz.
Uzerinde taze ya da kuru nane sicak servis yapin.

Savoy Cabbage with Rice (Pirincli Kivircik Lahana)

1 savoy cabbage, chopped
1 onion, chopped
2 carrots, shredded
2/3 cup rice
2½ cup milk
2 Tbsp olive oil
1 Tbsp salt to taste

For garnish:
1 Tbsp butter
½ tsp paprika
A pinch of salt

Saute onion with olive oil in a pot. Stir in shredded carrots and sauté for additional 2-3 minutes. Add chopped savoy cabbage and cook for about 5 minutes until it shrinks. Add rice and salt. Give a stir. Finally, add milk and bring to a boil. Then, close the lid and simmer over low heat until rice and cabbage is cooked (for about 30-40 minutes).
For the garnish, melt and heat the butter in a small frying pan. Stir in paprika and salt. Turn the heat off.
Serve with the paprika-butter sauce drizzled on top.
