Turkey with White-Sour Sauce (Eksili-Beyaz Soslu Hindi)

2 turkey thighs

4 small potatoes

2 carrots, chopped round

1 egg

½ lemon’s juice

2-3 cloves of garlic, finely chopped

1 tbsp salt to taste

½ tsp black pepper to taste

4-5 cups water


Take water and turkey thighs in a big pot and bring to a boil over high heat. Then, close the lid halfway and simmer over low heat till turkey gets tender (about 20 minutes). Take the cooked turkey thighs over a plate and let them cool for a while.

Peel the potatoes and cut them in 4 or 6 lengthwise like apple slices. Add potatoes, carrots and garlic into the pot where you cooked turkey. Also add salt and cook for about 10 minutes. Turn the heat off.

Chop turkey thighs into small pieces and add into the pot. Cook for another 5 minutes and turn the heat off.

In a small bowl, beat the egg and lemon juice. Then, take a ladle from the pot and slowly stir into the sauce. Add the sauce slowly into the pot and stir well.

Sprinkle the black pepper and serve hot.

2-3 dis sarimsak, ince dogranmis

1 yemek kasigi tuz

1 cay kasigi karabiber

4-5 su bardagi su


Buyuk bir tencereye suyu ve hindi inciklerini alin. Yuksek ateste kaynamaya birakin. Kaynadiktan sonra, kapagi hafif aralik olarak kisik ateste hindiler pisene dek pisirin (yaklasik 20 dakika). Hindi incikleri bir tabaga alin ve sogumaya birakin.

Patatesleri soyun ve uzunlamasina 4 ya da 6 parcaya elma dilimi seklinde kesin. Yuvarlak kesilmis havuclarla birlikte patatesleri ve sarimsagi hindiyi pisirdiginiz suya atin.Tuzu ilave edin ve yaklasik 10 dakika kadar haslayin.

Hindi incikleri kucuk parcalara ayirin ve tencereye ilave edin. Yaklasik 5 dakika kadar daha pisirin ve ocagin altini kapatin.

Bir kasede limon suyu ve yumurtayi guzelce cirpin. Bir kepce yardimiyla yemegin suyundan alip yumurtali sosa yavasca ilave ederek karistirin ve corba ile sosun sicakligini yaklasik olarak esitlemeye calisin. Sonra, sosu yavasca corbaya karistirarak ilave edin. Uzerine karabiber serpin ve sicak servis yapin.

Turkey Stew with Potatoes (Patatesli Hindi Yahnisi)

½ lb turkey breast/thigh, in chunks
1 onion, chopped
1 big potato, cubed
1 tsp tomato paste
2 tbsp canola oil
½ tsp paprika
½ tsp summer savory
1 tbsp salt to taste
2 cups hot water

Saute turkey chunks with canola oil over medium heat (approximately 10 minutes). Once turkey changes color, stir in onions and sauté for 3 minutes. Add tomato paste and stir in potatoes. Saute for 3-4 more minutes.
Stir in paprika, salt and water. Bring to a boil. Then, close the lid and reduce the heat. Simmer over low heat, till turkey and potatoes are cooked (for about 20-30 minutes). Stir in summer savory 5-10 minutes before turning the heat off.
Serve warm.

1 sogan, dogranmis
1 buyuk boy patates, kup seklinde dogranmis
1 tatli kasigi domates salcasi
2 yemek kasigi kanola yagi
1 cay kasigi kirmizi toz biber
1 cay kasigi zater
1 yemek kasigi tuz
2 su bardagi sicak su

Hindi etini kanola yaginda orta ateste kavurun (yaklasik 10 dakika). Etin rengi degisince sogani ilave edin ve 3 dakika daha kavurun. Salcayi ilave edin ve karistirin. Patatesi de ilave edin ve 3-4 dakika daha kavurmaya devam edin. Kirmizi biber, tuz ve suyu ilave edin. Kaynamaya baslayinca kapagini kapatip hafife alin. Hindi ve patatesler yumusayip pisene dek pisirin (yaklasik 20-30 dakika). Ocagin altini kapatmadan 5-10 dakika once zateri ilave edin ve guzelce karistirin.
Sicak servis yapin.

Kebab with Bay Leaves (Defneli Kebap)

1 lb boneless chicken/turkey or beef, chopped
½ lb mushroom, washed and sliced in half
¼ cup olive oil
5-6 bay leaves
1 tbsp soy sauce
½-1 cup hot water
1 tbsp salt to taste
¼ tsp paprika
¼ tsp black pepper
¼ tsp cumin

In a pot, cook the meat/chicken/turkey chunks over medium heat till the juice is gone. I’ve used turkey, but you can use any kind of meat for this recipe. Then add bay leaves and spices. Wash or brush gently the mushrooms, make sure not to soak them in water. Cut them in half and add into the pot. Sauté for 2-3 minutes.
Add olive oil, soy sauce, salt and hot water. Close the lid and simmer over low-medium heat till the meat is soft (for about 15-20 minutes).
Serve Kebab with Bay Leaves warm.

500 gr kemiksiz tavuk/hindi eti ya da dana/koyun eti, dogranmis
250 gr mantar, yikanmis ve ikiye kesilmis
½ cay bardagi zeytinyagi
5-6 tane defne yapragi
1 yemek kasigi soya sosu
½ -1 su bardagi sicak su
1 yemek kasigi tuz
½ cay kasigi kirmizi toz biber
½ cay kasigi kimyon
½ cay kasigi karabiber

Bir tencerede et suyunu cekene dek orta ateste kavurun. Ben hindi eti kullandim, bu tarifte istediginiz cesit eti kullanabilirsiniz. Sonra defne yapraklarini ve baharatlari ilave edin. Mantarlari suyun altinda cok tutmadan yikayin veya hafifce fircalayin. Sonraya ikiye bolun ve tencereye ilave edin. 2-3 dakika kadar kavurun.
Sonra, zeytinyagi, soya sosu, tuz ve sicak suyu ilave edip, karistirin. Kapagini kapatin ve hafif ateste etler pisene dek pisirin (yaklasik 15-20 dakika).
Defneli Kebabi sicak servis yapin.

Spinach Turkey/Chicken (Ispanakli Hindi/Tavuk)

2 turkey/chicken breasts
1 lb spinach (also canned/frozen can be used)
1 onion, chopped
2 tbsp olive oil
1 cup mozzarella/cheddar cheese, shredded
1 tsp salt to taste
½ tsp black pepper
¼ tsp red pepper flakes
Bechamel Sauce:
2 cups milk
2 tbsp flour
4-5 tbsp butter
1 egg, beaten
½ tsp salt to taste

Boil turkey/chicken breasts in salty water. Let it cool and then cut it into small pieces. Grease a Pyrex or oven dish and place turkey/chicken over the bottom.
Meanwhile wash spinach, drain and chop (I’ve used canned spinach). In a skillet, sauté onions and spinach with olive oil. Add salt, black pepper and red pepper flakes. After that, spread it over the turkey.
In a pot, prepare the bechamel sauce (click for the béchamel sauce recipe). Stir in half of the shredded cheese. And then, pour it over the spinach. Sprinkle the remaining cheese on top and cook in a 400F (200 C) oven, till the surface turns to a light brown color (30-40 minutes).
Serve Spinach Turkey/Chicken warm.

2 adet hindi/tavuk gogsu
1 su bardagi rendelenmis kasar peyniri
½ kg ispanak (konserve/dondurulmus da olabilir)
1 adet sogan, dogranmis
2 yemek kasigi zeytinyagi
1 cay kasigi karabiber
½ cay kasigi pulbiber
1 tatli kasigi tuz
Beshamel Sos:
2 su bardagi sut
1 yumurta, cirpilmis
4-5 yemek kasigi tereyagi
1 cay kasigi tuz

Hindi/tavuk etini iyice haslayin. Firin tepsisini yaglayin. Eti ince ince kesin ya da didin ve tepsisinin dibine doseyin. Ispanaklarin yapraklarini ayiklayip, temizleyin (ben konserve ispanak kullandim) Sogani, 2 yemek kasigi zeytinyagi ile ispanagi kavurun. Tuz, karabiber ve pulbiberi ilave edin. Hindi/tavuklarin uzerine ispanagi yayin.
Son olarak ayri bir tencerede besamel sosunu hazirlayin (besamel sosu tarifi icin tiklayin). Rendelenmis kasar peynirinin yarisini sosa ekleyin. Ispanaklarin uzerine hazirladiginiz besamel sosu yayin. Uzerine artan kasar peynirini serpin. Onceden isitilmis 200 derecelik firinda uzeri iyice kizarana dek pisirin (30-40 dakika).
Ispanakli Hindi’yi sicak servis yapin.

Roasted Turkey (Firinda Kizarmis Hindi)

½ turkey (6-7lb)
3 tbsp oil/melted butter
1 tsp tomato paste (optional)
1/3 cup lemon juice
1 tbsp salt
1 tsp paprika
1 tsp thyme

Instead of cooking the whole turkey (if it is too big to eat soon) you can cut the turkey in half or small pieces and then follow the directions below.
The night or a day before you cook the turkey, sprinkle salt and lemon juice to all over the turkey and then rub with your hands. Then mix the rest of the ingredients in a bowl and use them to brush all over the turkey.
Leave the turkey in the fridge for at least 10-12 hours. This method will make turkey to absorb the flavor of spices and salt and result in a more delicious turkey.
Before placing the turkey in the oven, brush its surface with some oil to have a golden brown color. Preheat the oven to 400F (200 C) and bake for 30 minutes. Then turn the heat down to 350 F (180 C) and bake for about 2 hours. 30 minutes before taking it out, you can turn it over (Cooking time may vary according to the size of your turkey and turkey pieces).
When its surface turns to golden brown, insert a knife to make sure that it is fully cooked.

1 tatli kasigi kirmizi toz biber
1 tatli kasigi kekik

Butun hindiyi tam olarak ortadan ikiye bolerek yarim bir hindi elde edebilirsiniz ya da parcalara ayirarak da pisirebilirsiniz.
Once hindinin her tarafini tuzlayin ve sonra limon suyunu da ilave edip hindinin her yerini ovalayarak limon suyu ve tuzu yedirin. Geri kalan malzemeleri bir tabakta karistirin ve hindinin her yerine yayarak surun.
Bu sekilde hindiyi 10-12 saat boyunca buzdolabinda bekletin. Boylece baharat ve diger malzemelerin aromasi hindiye gececek ve daha lezzetli bir hindi pisirmis olacaksiniz.
Firina koymadan once isterseniz uzerine bir miktar yag surerek daha guzel kizarmasini saglayabilirsiniz.
Onceden isitilmis 200 C (400 F) firinda 30 dakika kadar pisirin. Sonra dereceyi 180 C (350 F) ye dusurun ve 2 saat kadar daha pisirin. Pismesine 30 dakika kala hindiyi ters cevirirseniz daha iyi piser.
Uzeri iyice kizarinca bicak ile pisip pismedigini kontrol edebilirsiniz.
