Spinach with Bulgur (Bulgurlu Ispanak)

1 lb spinach, fresh or frozen
1cup bulgur, washed and drained
1 onion, chopped
3 Tbsp olive oil
1 Tbsp tomato paste
1 ½-2 cup hot water
½ tsp crushed red pepper
1 tsp salt to taste

In a pot, sauté onions with olive oil over medium heat. Stir in tomato paste and sauté for 1-2 minutes. If you are using fresh spinach, wash, drain and then chop. If using frozen spinach, just add them into pot. Cook them over medium heat stirring occasionally until most of the water evaporates (5 minutes).
Stir in bulgur and add hot water, crushed red pepper and salt. Close the lid and cook over low heat for 20-30 minutes, until the bulgur is cooked.
You may serve it with yogurt on top or on side.

½ kg ispanak, taze veya dondurulmus
1 sogan, dogranmis
1 yemek kasigi salca
1 su bardagi bulgur, yikanmis ve suzulmus
3 yemek kasigi zeytinyagi
1 ½-2 su bardagi sicak su
1 cay kasigi kirmizi pul biber
1 tatli kasigi tuz

Sogani zeytinyagi ile orta ateste kavurun. Sonra salcayi ilave edin ve biraz daha cevirip, ispanaklari ilave edin. Eger taze ispanak kullaniyorsaniz once guzelce yikayin. Suyunu suzup dograyin. Dondurulmus ispanak kullaniyorsaniz direk tencereye ilave edin. Yaklasik 5 dakika orta ateste suyu azalana dek kavurun.
Yikanmis ve suyu suzulmus bulguru ilave edin. Sonra sicak suyu, kirmizi pul biber ve tuzu ilave edin. Kapagini kapatip kisik ateste yaklasik 20-30 dakika bulgur pisene dek pisirin.
Yaninda veya uzerinde yogurt ile servis yapabilirsiniz.

Cig Kofte

I'd like to thank to Tarik, the master of cig kofte, for this delicious recipe.

3-4 big onions
¼ cup lemon juice
1 lb lean ground beef
2 tomatoes
5-6 cloves garlic
¼ cup canola oil
2 lb fine bulgur (cracked wheat)
2-3 Tbsp salt
5-6 Tbsp isot (crushed hot pepper)
1-2 Tbsp cumin
750 gr red hot pepper paste/ tomato and pepper paste mix

Process the onions in food processor. Then, take it along with bulgur in a large mixing bowl. Rub the mixture in between your palms, to give bulgur a full onion flavor (about 10 minutes). Add pepper paste/ pepper and tomato mix paste, salt, isot and cumin. Keep rubbing all the ingredients in between your palms pressing hard. Then, add the ground beef and push the mixture through the bottom of the bowl strongly. Dip your hands in cold/ ice water occasionally to ease the process. Keep kneading for about 30 minutes and make sure the bulgur is softens enough.
Meanwhile, crush tomato and garlic in the food processor, and then add into the bulgur mixture. Add lemon juice and canola oil as well. Knead for a couple of minutes and grab walnut size pieces or bigger if desired. Place them right inside your palm and squeeze gently to give the right shape as seen in the picture.
Serve with lemon wedges and lettuce leaves.
This recipe yields to 120-130 pieces of cig kofte.

Bu harika cig kofte tarifi icin ustamiz Tarik'a tesekkur ediyorum.
3-4 buyuk sogan
¼ su bardagi limon suyu
½ kg yagsiz dana kiymasi
2 domates
5-6 dis sarimsak
¼ su bardagi kanola yagi
1 kg ince bulgur
2-3 yemek kasigi tuz
5-6 yemek kasigi isot
1-2 yemek kasigi kimyon
750 gr aci biber salcasi/ biber ve domates karisik

Sogani mutfak robotunda guzelce pure haline getirin. Bulgur ile sogani genis bir kaba alin ve iki avucununuzun arasina alip ovalayarak guzelce birbirlerine yedirin. (Yaklasik 10 dakika). Biber ya da karisik salca, tuz, isot ve kimyonu ilave edin. Bir sure daha iki avucunuzun arasinda doverek malzemeleri yedirin. Kiymayi da ilave ettikten sonra butun gucunuzu kullanarak elinizin tabaniyla kabin dibine iyice bastirarak yogurun. Arada elinizi buzlu su dolu bir kaba daldirip cikarin. Yaklasik yarim saat kadar yogurarak bulgurun yumusamasini saglayin.
Bu sirada domates ve sarimsaklari mutfak robotundan gecirin ve kiymaya ilave edin. Limon suyu ve kanola yagini da ekledikten sonra bir kac dakika daha yogurun.
Ceviz buyuklugunde ya da arzuye gore daha buyuk parcalar alin ve avunucuzun icinde sikarak cig kofte seklini verin.
Yaninda limon ve marul yapragi ile servis yapin.
Bu tariften yaklasik 120-130 cig kofte cikar.
Tarif 14-16 kisiliktir.

Ezogelin Soup (Ezogelin Corbasi)

2/3 cup red lentil, washed and drained
1/3 cup rice, washed and drained
1/3 cup extra fine bulgur, washed and drained
1 onion, chopped finely
3 tbsp flour
2 tbsp tomato paste
2 tbsp butter
4-5 tbsp canola oil
1 tbsp dried mint
1 tsp red pepper flakes
2 cups cold+6-7 cups warm water
1 tbsp salt to taste
Lemon wedges or lemon juice

Place red lentil, rice and bulgur in a large pot. Add 6-7 cups warm water. Bring to a boil over high heat. Then close the lid and cook over low heat, till all the grains are cooked (for about 20-30 minutes).
Meanwhile, put butter, canola oil and onions in a saucepan. Saute them over medium heat. Then add flour and sauté till it turns yellow. Stir in tomato paste, mint and red pepper flakes. Cook for 2 minutes and add 2 cups cold water. Stir well to dissolve the flour particles inside. And then, pour this mixture inside the pot and add salt. You can add more water to adjust the thickness as you desire. Once the soup boils, close the lid halfway and simmer over low heat for about 10 minutes.
Laddle Ezogelin Soup to serving plates and serve with lemon juice or lemon wedges.

Genis bir tencereye 6-7 su bardagi su ile mercimek, pirinc ve bulguru alin. Yuksek ateste kaynamaya birakin ve kapagini kapatip kisik ateste hepsi pisene dek yaklasik 20-30 dakika pisirin.
Bu sirada bir tava ya da kucuk bir tencerede tereyag, sivi yag ve soganlari soteleyin. Sonra, unu ilave edip sararana dek kisik ateste cevirin. Domates salcasi, nane ve pulbiberi ilave edin. Biraz daha cevirdikten sonra 2 su bardagi soguk suyu ilave edin ve guzelce karistirin. Un karisimi suyun icinde dagildiktan sonra, tencereye ilave edin ve guzelce karistirin. Tuzu ilave edin, arzu ettiginiz kivama gore su ilavesi yapabilirsiniz. Corba kaynamaya baslayinca kapagini yari aralik birakarak kisik ateste 10 dakika kadar pisirin.
Ezogelin Corbasi’ni servis tabaklarina alin ve uzerine limon sikarak veya limon dilimleri ile servis yapin.

Mercimek Koftesi (Lentil Pates)

½ cup red lentil, washed and drained
1 cup fine bulgur
2 ½ cups water
1 onion, chopped finely
2 tbsp tomato paste
¼ cup olive oil
½ tsp black pepper
1/3 tsp cumin
1 tsp salt to taste
¼ cup hot water
½ bunch fresh parsley, chopped finely
½ tsp dried mint/3-4 pairs of fresh mint, chopped finely
2 green onions, only green parts chopped finely
Lettuce leaves or arugula
Lemon wedges

Boil red lentil with 2 ½ cup of water. Make sure the lentils are soft but there is still some water in the bottom. Turn the heat of and stir in fine bulgur, close the lid. Leave for at least 10 minutes to make bulgur absorb all the water and expand.
Meanwhile, sauté onions with olive oil over medium heat. And then stir in tomato paste. Saute for 1-2 minutes and add salt and hot water. Transfer to the pot with bulgur and red lentils. Stir in spices, green onions and parsley. Mix them all. If it is cooled enough mix all with your hands and make pates like on the picture above. If the mixture sticks, wet your hands with water occasionally.
Serve Lentil Pates with lettuce leaves or arugula and lemon wedges. Also keep them in the fridge.

½ demet maydanoz, ince dogranmis
2 yesil sogan, sadece yesil kisimlari ince dogranmis
Marul/kivircik yapragi ya da roka
Limon dilimleri

2 ½ su bardagi suda kirmizi mercimegi icinde bir miktar su kalana dek pisirin. Mercimek yumusayip patlasin fakat, butun suyunu cekmesin. Sonra ince bulguru tencereye ilave edin, karistirip kapagini kapatin ve en az 10 dakika bulgurun sismesini bekleyin.
Bu arada bir tavada zeytinyagi ile soganlari orta ateste kavurun ve sonra domates salcasini ilave edin. Biraz daha kavurup tuz ve ½ cay bardagi sicak suyu ilave edin ve atesten alip tenceredeki bulgur-mercimek karisimina ilave edin. Uzerine baharatlari, yesil soganlari ve maydanozu ilave edin. Hepsini guzelce karistirin. Eger yeterince soguduysa elinizle yogurun ve fotograftaki gibi uzunca kofteler yapin. Eger malzeme elinize yapisirsa arada elinizi su ile islatarak yapismasini onleyebilirsiniz.
Mercimek koftesini marul/kivircik yapraklari ya da roka ile ve uzerine limon sikarak ikram edin ve buzdolabinda saklayin.

Bulgur Pilaf (Bulgur Pilavi)

1 cup bulgur wheat, whole grain large, washed and drained
1 onion, chopped
1 tomato, diced
1 tsp tomato paste (optional)
1 banana/green pepper, chopped
2 tbsp butter/oil
2 cups hot chicken stock/2 cups hot water and chicken bouillon
1 tsp salt to taste (1/2 tsp if using chicken bouillon)

In a medium saucepan, sauté butter/olive oil and onions for about 2-3 minutes over medium heat. Then stir in tomato paste and tomatoes, sauté for about 2 minutes. And then stir in peppers. After a while add bulgur and sauté for 2-3 minutes.
Add hot chicken stock/ hot water and chicken bouillon, and salt.Stir well and turn heat low when it boils. Close the lid and simmer till the bulgur absorbs all the water. Do not stir while cooking.Let it cool for a while with the lid on. Before serving, stir well with a wooden spoon. Then place to a serving plate and garnish with fresh parsley.

Orta boy bir tencerede tereyagi/sivi yag ile sogani orta ateste 2-3 dakika boyunca kavurun. Sonra domates salcasi ve domatesi ilave edin ve 2 dakika daha kavurup biberleir ila edin. Bir sure sonra bulguru ilave edin ve 2-3 dakika daha karistirarak kavurun.
Sicak tavuk suyu/sicak su ve tavuk bulyonu ve tuz ilave edin. Kaynamaya baslayinca kisik atese alin kapagini kapatip, suyunu tamamen cekene dek pisirin. Mumkunse pilav piserken karistirmayin.Pilavin kapagini acmadan biraz ilinmasini bekleyin ve tahta kasikla guzelce karistirip servis tabagina alin. Taze maydanoz ile susleyerek servis yapin.

Spinach with Rice (Pirincli Ispanak)

2lb spinach, fresh or frozen
1/2-2/3 cup rice, washed and drained
1 onion, chopped
3 Tbsp olive oil
1 Tbsp tomato paste
1 ½-2 cup hot water
1 tsp salt to taste

In a pot sauté onions with olive oil over medium heat. Stir in tomato paste and sauté for 1-2 minutes. If you are using fresh spinach, wash and drain them then, chop . If you are using frozen spinach, just add them into pot. Over medium heat stirring occasionally, cook them till most of the water evaporates (5 minutes).
Stir in rice and add hot water, salt (I use half bulgur and half rice, since it is more nutritious that way). Close the lid and cook over low heat for 20-30 minutes, till the rice is cooked.
You can serve Spinach with Rice, with yogurt on top. Also you can sprinkle some red pepper flakes on top.

Pirincli Ispanagi yaninda veya uzerinde yogurt ile servis yapabilirsiniz. Uzerine pul biber serpebilirsiniz.

Balkan Style Green Onion Casserole (Balkan Usulu Yesil Sogan Guveci)

3-4 green onions, washed and chopped
1 cup rice/ bulgur/ half and half
1 ½ cup hot water
1 cup milk
2 eggs
1 cup crumbled feta cheese/ Mexican crumbling cheese
3 tbsp oil
1 tbsp salt
¼ tsp baking soda
½ tsp paprika

Wash the rice or bulgur and leave it in a bowl covered with water for about 30 minutes. Then drain.
In a pot, sauté the onions with oil and stir in rice/bulgur. Then saute for 3-4 minutes over low heat. Add salt and hot water, close the lid and cook over low heat till the rice/bulgur absorbs all the water.
Beat eggs and milk in a bowl and stir in crumbled feta cheese/Mexican crumbling cheese and baking soda. Add this mixture to cooked rice/bulgur and mix them all. Transfer this mixture to a medium size Pyrex dish and sprinkle paprika on top.
Preheat the oven to 400F (200C) and bake till the surface turns to golden brown, for about 20 minutes.

1 su bardagi pirinc/bulgur/yari yariya
1 ½ su bardagi sicak su
1 su bardagi sut
2 yumurta,
1 su bardagi kiriklanmis beyaz peynir/lor
3 yemek kasigi sivi yag
1 yemek kasigi tuz
½ cay kasigi karbonat
1 cay kasigi kirmizi toz biber

Pirinc ya da bulguru yikayip 30 dakika kadar ilik su icinde bekletin. Sonra suyunu suzun.
Bir tencerede sivi yag ile soganlari kavurun ve pirinc/bulgur ilave edip 3-4 dakika kisik ateste kavurun. Sonra tuz ve sicak suyu ilave edin ve kapagini kapatip suyunu cekene dek kisik ateste pisirin.
Bir kasede yumurta ve sutu cirpin, icine karbonat ve kiriklanmis peynir ya da loru ilave edin. Bu karisimi pisirdiginiz pirinc/bulgur karisimina ilave edip guzelce karistirin. Elde ettiginiz karisimi orta buyuklukteki bir borcam tepsiye dokun ve uzerine kirmizi toz biber serpin. Onceden isittiginiz 200C (400F) firinda uzeri kizarana dek yaklasik 20 dakika pisirin.

Kisir (Taboule-Turkish Bulgur Wheat Salad)

1 ½ cups cracked wheat (fine bulgur)
1 onion, chopped
2 tbsp tomato paste
1/3 cup olive oil
1 ¾ cups boiling water
1 tomato, chopped finely
1 cucumber, chopped finely (optional)
½ bunch of fresh parsley/dill, chopped finely
2-3 leaves of lettuce, chopped finely
1-2 green onions, chopped
1/3 cup lemon juice
½ tsp cumin
1 tsp dried mint
1 tbsp salt to taste

In a large bowl place fine bulgur and add boiling water. Stir and leave bulgur for 5-10 minutes to absorb all the water. Make sure that bulgur is not wet. The size of bulgur should be doubled.
Meanwhile, place olive oil and onions in a skillet and sauté over medium heat. Then add tomato paste and salt, sauté for 1-2 minutes. Add this mixture to puffed up bulgur and combine them using your hands. Then add lemon juice, cumin and dried mint. Mix them all and let them cool.
Finally, add tomato, cucumber, green onions, lettuce, parsley /dill and mix them all.
You can serve Kisir with lettuce leaves. Kisir is also good to go with pickles or pickled chili peppers and Ayran.

Buyuk bir kaseye bulguru koyun ve uzerine kaynak suyu bosaltin. Karistirip, bulgurun butun suyu cekip pismesi icin 5-10 dakika bekleyin. Bulgurlarin islak olmamasina ve buyun suyu cekmis olmasina dikkat edin. Bulgur miktari suyu cekince iki katina cikacaktir.
Bu sirada zeytinyagi ve soganlari bir tavada orta ateste kavurun. Sonra domates salcasini ve tuzu ilave edip 1-2 dakika daha kavurun. Bu salcali sogan karisimini pismis bulgura ilave edin ve ellerinizi kullanarak salcali karisimi bulgura iyice yedirin. Sonra kimyon, nane ve limon suyunu ilave edip karistirin ve biraz sogumasini bekleyin.
Son olarak; domates, salatalik, marul/kivircik, dereotu/maydanoz ve yesil soganlari ilave edin ve hepsini karistirin.
Kisiri marul ya da kiviricik yapraklari ile servis yapabilirsiniz. Ayrica Kisir, salatalik yada aci biber tursusu ve Ayran ile guzel gider.

Balcan Style Cabbage (Balkan Lahana Asi)

½ medium cabbage, chopped
1 onion, chopped
½ cup whole grain bulgur
2 cups whole milk
1 tbsp salt
3 tbsp oil
Garnish:
3 tbsp butter
1 tsp red pepper
A pinch of salt

In a large pot, place the oil and chopped onions. Sauté for 4 minutes over low-medium heat. Then add the chopped cabbage. Cook for 5 minutes over high medium heat stirring occasionally.
Then add the milk and salt. When the bubbles come out on the surface, add the bulgur and stir. Over low heat, cook for about 25 minutes, till the bulgur is soft.
For garnish, place the butter in a small frying pan and melt over the low-medium heat. When it starts spitting, stir in the red pepper and salt. Pour on the cabbage.
It is a very healthy dish. Cabbage contains so much fiber and whole grain bulgur is very nutritious.

Bir tutam tuz

Buyuk bir tencereye sivi yagi ve dogranmis soganlari koyun. Dusuk ateste 4 dakika boyunca soganlari kavurun. Sonra dogranmis lahanayi ilave edin. Orta ateste ara sira karistirarak 5 dakika boyunca pisirin.
Sonra tuzu ve sutu ilave edin. Yuzeyde baloncuklar olusmaya baslayinca; bulguru ilave edin ve karistirin. Kisik ateste yaklasik 25 dakika boyunca, bulgur pisene dek pisirin.
Kucuk bir kizartma tavasinda tereyagini dusuk ateste eritin. Cizirdamaya baslayinca, kirmizi biberi ve tuzu karistirarak ilave edin. Lahana asinin uzerine dokun.
Lahana asi cok sagliklidir. Lahana lif acisindan cok zengindir ve bulgur besleyici bir gidadir.
