Cauliflower Au Gratin (Karnibahar Graten)

1 head cauliflower
1 tbsp salt to taste
1-2 tbsp vinegar
Bechamel sauce
1 cup mozzarella cheese, shredded
1 tbsp basil, finely shredded

Break cauliflower into florets. Boil in salty water adding also vinegar (for about 5-6 minutes). Drain and rinse under cold water. Set aside.
Meanwhile, prepare bechamel sauce. Click for ‘How to Prepare Bechamel Sauce'.
Preheat oven to 350-400 F (180-200 C). Place cooked cauliflower over a Pyrex dish and pour béchamel sauce over, evenly. Add fresh basil and grated Mozzarella cheese on top.
Bake for 30-40 minutes or until it gets light brown.
Serve warm.

1 yemek kasigi feslegen, ince dogranmis

Karnibahari parcalara ayirin. Sirke ve tuz ilave ettiginiz suda yaklasik 5-6 dakika haslayin. Suyunu suzun ve soguk sudan gecirin. Bir kenara ayirin.
Bu sirada besamel sosunu hazirlayin. Besamel sosun yapilisi icin tiklayin.
Firini 180-200 C (350-400 F)’ye ayarlayin. Borcam tepsiye haslanmis karnibaharlari yerlestirin ve uzerine besamel sosu yayin. Uzerine taze feslegenleri serpistirin ve son olarak rendelenmis kasar peynirini serpin.
Uzeri kizarana dek yaklasik 30-40 dakika kadar pisirin.
Sicak servis yapin.

Zucchini with Bechamel Sauce (Besamel Soslu Kabak)

3-4 zucchinis, washed
2 chicken breasts, cut into cubes
2 medium onions, chopped
2-3 cloves of garlic, thinly sliced
5 button or portabello mushrooms, sliced (optional)
1 cup+3 tbsp oil
1 tsp salt to taste
½ cup mozzarella, cheddar, shredded

Bechamel Sauce:
2 cups milk
2 tbsp flour
5-6 tbsp butter/margarine
1-2 eggs, beaten
½ tsp salt to taste
A pinch of black pepper (optional)

Cut zucchinis in two lengthwise and then cut them in ½ inch thick pieces. Sizzle 1 cup oil in a frying pan and fry both sides of zucchinis. Take the fried zucchinis over a large Pyrex dish and sprinkle some salt.
Take chicken breasts into a pot and add 3 tbsp of oil. Cook them over medium heat till they absorb their own juice. Then stir in onions and sauté for 3 minutes. Add the garlic in and cook for 1-2 minutes. If using mushrooms, stir in them and cook all of them for about 3-4 minutes over medium heat. After that, turn the heat off and transfer this mixture over the fried zucchinis evenly (see the picture).
Finally, prepare the bechamel sauce (click for the directions to make the bechamel sauce).
Pour the bechamel sauce all over and sprinkle with shredded mozzarella/cheddar. Bake at 400 F (200 C) oven till the surface turns light brown (for about 30-40 minutes).

Bir tutam karabiber (istege bagli)

Once kabaklari uzunlamasina ikiye bolun ve bir parmak kalinliginda dograyin. Bir su bardagi sivi yagda her iki taraflarini da kizartin. Kizarttiginiz kabaklari genis bir borcam tepsinin dibine yayin ve uzerine tuz serpin.
Bir tencereye dogranmis tavuk gogsunu ve 3 yemek kasigi sivi yagi alin. Orta ateste tavuklar suyunu cekene dek kavurun. Sonra, soganlari ilave edin. Yaklasik 3 dakika kadar kavurun ve sarimsaklari ilave edin. Eger mantarli yapiyorsaniz dilimlenmis mantarlari ve 1 tatli kasigi tuz ilave edin.Yaklasik 3-4 dakika hafif ateste hepsini kavurun. Atesten alin ve karisimi kabaklarin uzerine esit olarak dagitin (resime bakiniz).
Son asama olarak besamel sosu hazirlayin (besamel sosun yapilisi icin bakiniz).
Hazirladiginiz besamel sosu en uste esit olarak yayin. Uzerine rendelenmis kasarlari serpin. 200 C (400 F) firinda uzeri kizarana dek yaklasik 30-40 dakika pisirin.

Spinach Turkey/Chicken (Ispanakli Hindi/Tavuk)

2 turkey/chicken breasts
1 lb spinach (also canned/frozen can be used)
1 onion, chopped
2 tbsp olive oil
1 cup mozzarella/cheddar cheese, shredded
1 tsp salt to taste
½ tsp black pepper
¼ tsp red pepper flakes
Bechamel Sauce:
2 cups milk
2 tbsp flour
4-5 tbsp butter
1 egg, beaten
½ tsp salt to taste

Boil turkey/chicken breasts in salty water. Let it cool and then cut it into small pieces. Grease a Pyrex or oven dish and place turkey/chicken over the bottom.
Meanwhile wash spinach, drain and chop (I’ve used canned spinach). In a skillet, sauté onions and spinach with olive oil. Add salt, black pepper and red pepper flakes. After that, spread it over the turkey.
In a pot, prepare the bechamel sauce (click for the béchamel sauce recipe). Stir in half of the shredded cheese. And then, pour it over the spinach. Sprinkle the remaining cheese on top and cook in a 400F (200 C) oven, till the surface turns to a light brown color (30-40 minutes).
Serve Spinach Turkey/Chicken warm.

2 su bardagi sut
1 yumurta, cirpilmis
4-5 yemek kasigi tereyagi
1 cay kasigi tuz

Hindi/tavuk etini iyice haslayin. Firin tepsisini yaglayin. Eti ince ince kesin ya da didin ve tepsisinin dibine doseyin. Ispanaklarin yapraklarini ayiklayip, temizleyin (ben konserve ispanak kullandim) Sogani, 2 yemek kasigi zeytinyagi ile ispanagi kavurun. Tuz, karabiber ve pulbiberi ilave edin. Hindi/tavuklarin uzerine ispanagi yayin.
Son olarak ayri bir tencerede besamel sosunu hazirlayin (besamel sosu tarifi icin tiklayin). Rendelenmis kasar peynirinin yarisini sosa ekleyin. Ispanaklarin uzerine hazirladiginiz besamel sosu yayin. Uzerine artan kasar peynirini serpin. Onceden isitilmis 200 derecelik firinda uzeri iyice kizarana dek pisirin (30-40 dakika).
Ispanakli Hindi’yi sicak servis yapin.

Cauliflower with Bechamel Sauce (Beshamel Soslu Karnibahar)

1 bunch of cauliflower, separated into florets
2 carrots, peeled and chopped
2 potatoes, peeled and chopped
½ cup sweet peas (optional)
1 tsp salt to taste
A pinch of black pepper
1/3 cup mozzarella/cheddar cheese, shredded (optional)
Bechamel Sauce:
2 cups milk
2 tbsp flour
5-6 tbsp butter/margarine
1 egg, beaten
½ tsp salt to taste

Boil the vegetables in salty water till they are soft. Do not over boil them since we do not want them to be smashed. Then drain and transfer them to a Pyrex or baking dish.
Béchamel Sauce:
Place the butter in a pot and melt. Add the flour and sauté over low heat till its color change to yellow. Then, add milk and stir continuously to make Béchamel sauce smooth and even. If flour particles don’t dissolve use a blender. Add salt and cook for 3 minutes. Finally stir in the egg and sprinkle some black pepper if you like.
Pour the Béchamel sauce evenly on top of the vegetables and sprinkle cheese. Preheat the oven to 400F (200C) and bake until its surface turns to light golden brown (about 20-25 minutes).

1/3 su bardagi kasar peyniri, rendelenmis (istege bagli)
Beshamel Sos:
2 su bardagi sut
2 yemek kasigi un
5-6 yemek kasigi tereyag/margarin
1 yumurta, cirpilmis
1 cay kasigi tuz
Bir tutam karabiber

Sebzeleri tuz ile birlikte yumusayana dek haslayin. Fakat gereginden fazla haslarsaniz sekilleri bozulur ve dagilirlar. Suyunu suzun ve haslanmis sebzeleri firin tepsisine ya da borcam tepsiye alin.
Besamel Sos:
Bir tencerede margarini eritin ve unu ilave edip kisik ateste sararana kadar kavurun. Sonra sutu ve tuzu ilave ederek, surekli karistirin. Eger un parcalari dagilmazsa blendir ile krema kivamina getirin. Kisik ateste 3 dakika kadar pisirin. Son olarak, cirpilmis yumurtayi ilave edin ve guzelce karistirin. Isterseniz biraz karabiber serpebilirsiniz.
Hazirladiginiz besamel sosu sebzelerin uzerine esit olarak yayin ve rendelenmis kasar peynirini serpin. Onceden isitilmis 200C (400 F) firinda uzeri kizarana dek pisirin (yaklasik 20-25 dakika).

Mousaka with Bechamel Sauce (Besamel Soslu Musakka)


200 gr (~1/2 lb) ground beef, medium
4-5 medium potatoes, chopped in bite sizes
1 big onion, chopped
2 tbsp tomato, diced or crushed
½ tbsp tomato paste
1 tbsp salt
½ tsp paprika
¼ tsp cumin
¼ tsp black pepper
1 cup hot water
Béchamel Sauce:
3 cups milk
3 tbsp flour, heaping
8 tbsp (100-125 gr) butter /margarine
2 eggs, beaten
½ tsp salt

Place the ground beef in a large skillet and sauté over medium heat till its color changes (no need to add oil). Add onion and sauté for 2-3 minutes. Add tomatoes, tomato paste, salt and spices and mix. Finally, add potatoes and sauté for 5 minutes. Place the mixture into a Pyrex dish and add the hot water. Place the Pyrex dish into 400F (200 C) preheated oven and bake for 20-25 minutes (see the picture).
Béchamel Sauce:
Place the butter in a pot and melt. Add the flour and sauté over low heat till its color change to yellow. Then, add milk and stir continuously to make Béchamel sauce smooth and even. If flour particles don’t dissolve use a blender. Add the salt and cook for 3 minutes. Turn the heat off, add the eggs and stir.
Take the Pyrex dish off the oven. Pour the Béchamel sauce evenly on top of it. Place the Pyrex dish back to the oven and bake until the surface of Béchamel sauce is brown (about 20-25 minutes).

4-5 orta boy patates, kup seklinde dogranmis
1 buyuk sogan, dogranmis
2 yemek kasigi domates, dogranmis yada pure
1 yemek kasigi salca
1 yemek kasigi tuz
1 cay kasigi kirmizi toz biber
½ cay kasigi kimyon
½ cay kasigi karabiber
1 su bardagi sicak su
Besamel Sosu:
3 su bardagi sut
3 yemek kasigi tepeleme un
100-125 gr margarin/ tereyagi
2 yumurta, cirpilmis
1 cay kasigi tuz

Genis bir tavada kiymayi orta ateste renk degistirene kadar kavurun (yag koymaya gerek yok). Sonra sogani ilave edin ve 2-3 dakika kavurun. Domates, salca, tuz ve baharatlari ilave edin ve karistirin. Son olarak patatesleri ilave edin ve 5 dakika kadar orta ateste kavurun. Hazirladiginiz karisimi borcama yada bir tepisiye aktarin ve 1 su bardagi sicak suyu ilave edin. 200C (400F) ye onceden isitilmis firina borcami koyun ve yaklasik 20-25 dakika pisirin (resime bakiniz).
Besamel Sosu
Bir tencereye margarini koyup eritin. Unu ilave edip kisik ateste sararana kadar kavurun. Sonra sutu ilave edin ve surekli karistirin. Eger un parcalari dagilmazsa blendir ile krema kivamina getirin. Tuzu da ilave edip kaynadikdan sonra kisik ateste 3 dakika pisirin. Pistikten sonra ocagi kapatip cirpilmis yumurtayi ilave edin ve guzelce karistirin.
Tepsiyi firindan cikarin ve hazirladiginiz besamel sosunu uzerine esit olarak yayin ve tekrar firina koyun. Sosun uzeri kizarana kadar pisirin (yaklasik 20-25 dakika).

Bechamel Sauce (Besamel Sos)

1-2 eggs, beaten
½ tsp salt to taste

Place the butter in a pot and melt. Add the flour and sauté over low heat till its color change to yellow. Then, add milk and stir continuously to make Béchamel sauce smooth and even. If flour particles do not dissolve use a blender. Add salt and cook for 3 minutes. Finally stir in the egg and sprinkle some black pepper if you like.
You can adjust the amount of béchamel sauce according to the recipe you cook.
