Lentil-Rice Salad (Pirincli Yesil Mercimek Salatasi)

1 cup green lentils, cooked and drained
½ cup rice, cooked and cooled
1 large onion, juvenile cut
4 Tbsp olive oil
1 big carrot, grated
2-3 green onions, chopped
½ -1 cup fresh parsley, chopped
½ cup fresh mint, chopped
1 lemon’s juice
1 tsp salt to taste
1 tsp black pepper
½ cup corn (optional)

Cook rice and green lentils separately and let them cool. Meanwhile, take olive oil in a skillet and sauté onions for about 5 minutes over medium heat. Stir in grated carrots and sauté for additional 6-8 minutes. Let cool for a while.
Finally, combine sautéed onions and carrots with cooked green lentils and rice. Add all of the remaining ingredients and mix them all.

½ su bardagi pirinc, pisirilmis ve sogumus
1 sogan, ince dilimlenmis,
4 yemek kasigi zeytinyagi
1 buyuk boy havuc, rendelenmis
2-3 yesil sogan, dogranmis
½-1 su bardagi maydanoz, dogranmis
½ su bardagi taze nane, dogranmis
1 limonun suyu
1 tatli kasigi tuz
1 cay kasigi karabiber
½ su bardagi misir (istege bagli)

Pirinc ve yesil mercimegi ayri ayri pisirin ve sogumaya birakin. Bu sirada, zeytinyagini bir tavaya alin ve soganlari sote edin. Yaklasik 5 dakika sonra, rendelenmis havuclari ilave edin. Orta ateste 6-8 dakika kadar soteleyin. Sogumaya birakin.
Son olarak sotelediginiz sogan ve havucu, pismis pirinc ve yesil mercimegi genis bir kaba alin. Uzerine geri kalan butun malzemeleri de ilave ettikten sonra, hepsini guzelce harmanlayin.

Green Lentil Soup (Yesil Mercimek Corbasi)

1 cup green (French) lentil
1 large onion, chopped
2 tbsp olive oil
2 carrots, sliced round
2 cloves garlic, sliced thin
1 cup tomatoes, diced
3-4 cups hot water+ meat bouillon (meat stock)
1 tbsp salt to taste
¼ tsp black pepper
1 tsp summer savory (optional)

Soak green (French) lentils in water for 4-5 hours. Then drain.
In a pot, take olive oil and onions. Saute over medium heat and stir in carrots and garlic. Saute for 8-10 minutes. And then, stir in green lentils and cook for a while. Add hot water+bouillon (meat stock), tomatoes and salt.
Simmer over low-medium heat with the lid closed, till the lentils get soft (for about 30-40 minutes). Turn the heat off and add black pepper and summer savory.
Serve Green Lentil Soup warm or hot.

2 havuc, yuvarlak kesilmis
2 dis sarimsak, ince dogranmis
1 su bardagi domates, dogranmis
3-4 su bardagi sicak su+et bulyon (et suyu)
1 yemek kasigi tuz
½ cay kasigi karabiber
1 tatli kasigi zater (istege bagli)

Mercimegi onceden su icinde yaklasik 4-5 saat bekletin. Sonra suyunu suzun.
Bir tenceye sogan ve zeytinyagini alin, orta ateste sote edin. Havuc ve sarimsagi ilave edin yaklasik 8-10 dakika kavurun. Mercimegi ilave edin ve biraz cevirdikten sonra sicak suyu, domates ve tuzu ekleyin.
Mercimek pisene dek yaklasik 30-40 dakika kisik ateste kapagi kapali olarak pisirin. Altini kapatin, karabiber ve zater otunu ilave edin karistirin.
Yesil Mercimek Corbasini sicak servis yapin.

Green Lentil Dish (Yesil Mercimek Yemegi)

1 cup green lentil, soaked in water overnight, washed and drained
3 cups hot chicken stock/hot water and chicken bouillon
1 tomato, grated/ 2/3 cup crushed tomato
2-3 tbsp olive oil
½ cup orzo/vermicelli/angel hair (optional)
1 onion, chopped finely
1 tsp salt to taste
½ tsp cumin (optional)
2 cloves of garlic, sliced (optional)

Soak green lentils in water overnight to decrease the cooking time. Then, wash and drain. In a pot, sauté onions with olive oil over medium heat. Stir in green lentils and cook for 3 minutes.
Stir in tomatoes, garlic (optional) and hot chicken stock/water and chicken bouillon. Bring to a boil and add orzo/vermicelli/angel hair(optional) and salt. Cover the lid and simmer over low heat till the lentils are cooked (20-30 minutes). Sprinkle cumin before serving (optional).
Serve Green Lentil Dish with cacik.

3 su bardagi sicak tavuk suyu/ sicak su ve tavuk bulyonu
1 domates, rendelenmis
2-3 yemek kasigi zeytinyagi
1 cay bardagi tel/arpa sehriye (istege bagli)
1 sogan, kucuk dogranmis
1 tatli kasigi tuz
1 cay kasigi kimyon (istege bagli)
2 dis sarimsak, dilimlenmis (istege bagli)

Yesil mercimegin kolay pismesi icin aksamdan islatin ve yikayip suzun. Tencerede sogan ile zeytinyagini orta ateste sote edin. Sonra, yikanmis mercimekleri ilave edin ve 3 dakika kadar kavurun.
Domates, sarimsak (istege bagli) ve tavuk suyunu/su ve tavuk bulyonu ilave edin. Kaynamaya baslayinca tuz ve sehriyeleri(istege bagli) ilave edin. Kisik ateste kapagi kapali olarak yaklasik 20-30 dakika pisirin. Pismeye yakin kimyon serpin (istege bagli).
