French Onion Dip (Soganli Fransiz Sosu)

1 cup non fat sour cream (optional)
½ cup fat-free mayonnaise
½ cup yogurt
¼ cup green onion, finely chopped
1 tbsp onion, minced (optional)
¼ tsp dried minced onion
¼ tsp black pepper
½ tsp dried mint
¼ tsp salt to taste

Combine all the ingredients in a bowl and chill in the fridge for 1-2 hours.
Serve with any kind of chips.

Fried Perch Fillets (Kizarmis Levrek)

1 lb Perch Fillets
2 tbsp lemon juice
½ tsp black pepper
1 tsp salt to taste
1/3 cup canola oil for frying

Rub Perch Fillets with salt. Then sprinkle black pepper and lemon juice. Rub to make Perch absorb the flavor. Leave them in the fridge at least 30 minutes.
In a frying pan sizzle oil and shallow fry both sides of Perch Fillets till they turn to golden brown.
Serve warm with lemon edges.

Cig Borek

For the dough:
25-30 gr fresh active yeast/7 gr instant yeast
2 cups lukewarm water
1 tbsp salt
2 tbsp oil
1 tsp sugar
5-6 cups flour

For the filling:
200-250 gr (1/2 lb) lean ground meat
1 big onion, chopped finely/grated
1 tsp salt to taste
½ cup water
¼ tsp black pepper
¼ tsp cumin
¼ tsp paprika
½ cup canola oil for frying

Place the lukewarm water, sugar and the yeast into a bowl. Stir well to dissolve the sugar and the yeast.Then, add salt, oil and flour, knead for 8-10 minutes, till dough becomes elastic and non sticky. Place a plastic wrap or cloth over the dough (see the picture) and let it rest for 2 to 4 hours in a warm place, till it rises up to double its volume (see the picture).Place dough on the counter and punch to release air. Then sprinkle some flour on the counter and cut it into 16-18 pieces. Then with a roller pin flatten every piece about 7-8 inches in diameter.
Meanwhile mix all the filling ingredients in a bowl. And then divide the filling into 16-18(the number of dough pieces you’ve got, approximately 1-2 tbsp each). Then spread the filling over half side of flattened dough (see the picture). Fold the other half over and stick the ends, making pressure with your finger tips (see the picture). Also you can use pizza roller for cutting the edges. Do the same procedure to all dough pieces.
In a frying pan, sizzle oil and fry both sides of the boreks till they turn to golden brown. Place a paper towel over a pot and transfer the fried boreks into it and close the lid to keep them warm and soft.
You can serve Cig Borek with yogurt or ayran.

P.S: Do not use metal container when kneading or resting the dough. Metal spoils the texture of dough.

Ilik suyu ve mayayi bir kaseye alin, icine sekeri ilave edin ve sekerle maya cozunene kadar iyice karistirin.Sonra, sivi yagi, unu ve tuzu ilave ederek, 8-10 dakika hamur elastik olana dek yogurun. Uzerine seffaf film ya da ortu ortun (resime bakiniz) ve sicak bir ortamda, hamur iki kati kadar kabarana dek, yaklasik 2-4 saat, bekleyin (resime bakiniz). Hamuru tezgahin uzerine alin ve havasini indirmek icin uzerinden bastirin ve tezgahi unlayin hamuru 16-18 parcaya kesin ve her parcayi oklava ile ½ cm kalinliginda acin.
Bu sirada ic malzemelerin hepsini bir kasede karistirin ve 16-18’e bolun (hamur parcasi sayisina bolun, her biri yaklasik 1-2 yemek kasigi). Sonra ic malzemeyi actiginiz hamurun yarisina yayin (resime bakiniz) ve diger yarisini uzerine kapatip, kenarlarini parmak uclarinizla bastirarak yapistirin (resime bakiniz). Isterseniz kenarlarini birlestirip rulet ile kesebilirsiniz. Butun hamurlari bu sekilde hazirlayin.
Bir kizartma tavasinda sivi yagi kizdirin ve boreklerin her iki tarafi kizarana dek kizartin. Kizarttiginiz cig boreklerin sicak ve yumusak kalmasi icin bir tencerenin dibine kagit havlu koyarak borekleri onun uzerine koyun ve kapagini kapatin.
Cig Boregi yogurt ya da ayran ile servis yapabilirsiniz.

Crab Salad with Corn (Misirli Yengec Salatasi)

½ lb crab meat/imitation crab meat, chunk
½ cup mayonnaise
½-2/3 cup yogurt
¼ cup mustard (optional)
½ cup pickle slices, cut into small pieces
½ cup sweet corn
¼ tsp black pepper
¼ tsp salt to taste
¼ tsp thyme
2 pairs of fresh parsley, chopped (optional)

Mix all the ingredients but the drab meat in a bowl. Then stir in crab meat and combine all of them. Transfer into a salad plate and serve.

Bulgur Pilaf (Bulgur Pilavi)

1 cup bulgur wheat, whole grain large, washed and drained
1 onion, chopped
1 tomato, diced
1 tsp tomato paste (optional)
1 banana/green pepper, chopped
2 tbsp butter/oil
2 cups hot chicken stock/2 cups hot water and chicken bouillon
1 tsp salt to taste (1/2 tsp if using chicken bouillon)

In a medium saucepan, sauté butter/olive oil and onions for about 2-3 minutes over medium heat. Then stir in tomato paste and tomatoes, sauté for about 2 minutes. And then stir in peppers. After a while add bulgur and sauté for 2-3 minutes.
Add hot chicken stock/ hot water and chicken bouillon, and salt.Stir well and turn heat low when it boils. Close the lid and simmer till the bulgur absorbs all the water. Do not stir while cooking.Let it cool for a while with the lid on. Before serving, stir well with a wooden spoon. Then place to a serving plate and garnish with fresh parsley.

Orta boy bir tencerede tereyagi/sivi yag ile sogani orta ateste 2-3 dakika boyunca kavurun. Sonra domates salcasi ve domatesi ilave edin ve 2 dakika daha kavurup biberleir ila edin. Bir sure sonra bulguru ilave edin ve 2-3 dakika daha karistirarak kavurun.
Sicak tavuk suyu/sicak su ve tavuk bulyonu ve tuz ilave edin. Kaynamaya baslayinca kisik atese alin kapagini kapatip, suyunu tamamen cekene dek pisirin. Mumkunse pilav piserken karistirmayin.Pilavin kapagini acmadan biraz ilinmasini bekleyin ve tahta kasikla guzelce karistirip servis tabagina alin. Taze maydanoz ile susleyerek servis yapin.

Green Beans with Olive Oil (Zeytinyagli Yesil Fasulye)

1 lb green beans, fresh/frozen cut in 2-3
1 onion, chopped
1 tsp tomato paste
1 tomato, diced
3 tbsp olive oil
1 tsp salt to taste
½ tsp sugar
¼ tsp black pepper (optional)
½-1 cup hot water

In a pot, sauté onions with olive oil. Then add tomato paste and tomatoes, sauté over medium heat for 2-3 minutes. And then stir in green beans. If you use fresh green beans, wash them and drain. Cut them in French style or 1 inch pieces. If using frozen beans, just add them into the pot. Do not thaw them.
Cook the green beans for a couple of minutes and then stir in salt, sugar and hot water. Close the lid and simmer over low heat till the green beans are cooked.
Sprinkle some black pepper on top (optional), before serving.

Shrimp Fettucine with Pesto (Pesto Soslu Karidesli Makarna)

1 lb Fettucine
~1 lt chicken stock/ chicken bouillon
½ lb shrimp, cooked, peeled and deveined
½-1 cup Basil Pesto

Cook Fettucine according to the instructions on the package. But use chicken stock instead of water or use a chicken bouillon. Drain and stir in cooked shrimps and combine with Basil Pesto.
Serve Shrimp Fettucine with Pesto warm.

Basil Pesto (Feslegenli Pesto Sosu)

2-3 cloves of garlic, minced
2 cups fresh basil/1 tbsp dried basil
½ cup parmesan cheese, grated
1/3 cup pine nuts/walnuts (optional)
¼ tsp black pepper
4-5 tbsp extra virgin olive oil
1 tbsp lemon juice (optional)
A pinch of salt

Combine all the ingredients in a food processor. Form a puree like mixture. Then you can add some more olive oil if you like.
Basil Pesto is a very yummy Italian sauce which is good to go with any kind of pasta and macaroni.
You can store Basil Pesto sealed in the fridge for 3-4 days and also in the freezer up to 2-3 months.

Butun malzemeleri rondo/ mutfak robotunda iyice pure kivamina getirin. Isterseniz biraz daha zeytinyagi ilave edebilirsiniz.
Feslegenli Pesto sosu makarnalarin uzerine cok yakisan bir Italyan sosudur. Hazirladiginiz sosu agzi kapali olarak buzdolabinda 3-4 gun, buzlukta ise 2-3 ay boyunca muhafa edebilirsiniz.

Brownie

~200 gr (8 ounce) unsweetened chocolate
1 cup butter
4-5 eggs
3 cups sugar
1 tablespoon vanilla/1 pckg vanilla
1-1/2 cups flour
2 tbsp cocoa
1 teaspoon salt
1-1/2 cups chopped pecans or walnuts, toasted

Preheat oven to 375 F (190 C). Grease a 9 x 13 inch Pyrex/pan.
Melt chocolate and butter in a saucepan over low heat; set aside. With a mixer, beat eggs, sugar and vanilla at high speed for 8-10 minutes. Blend in chocolate mixture, flour, cocoa and salt until just mixed. Stir in the nuts. Pour into prepared Pyrex/pan.
Bake for 35-40 minutes (Do not over bake). Cool and frost if desired, but that is not necessary.

1- ½ su bardagi ufalanmis ceviz/pekan cevizi, hafif kavrulmus

Firini 190 C (375 F) dereceye isitin ve 23x32 cm lik borcam/firin tepsisini yaglayin.
Cikolata ve tereyagini bir tavada kisik ateste eritin ve kenara ayirin. Mikser ile yumurta, seker ve vanilyayi yuksek devirde 8-10 dakika boyunca karistirin. Sonra, cikolata karisimini, un, kakao ve tuzu ilave edin ve karistirin. Ceviz/pekan cevizi ilave edin. Yaglanmis tepsiye dokun.
35-40 dakika boyunca pisirin (fazla pisirmemeye dikkat edin). Sogutun ve isterseniz uzerine krema surun, fakat buna gerek kalmayacaktir.

Greek Salad (Yunan Salatasi)

2 ripe tomatoes, chopped bite sizes
1 cucumber, chopped in bite sizes
1 onion, sliced circularly (preferably red)
1banana/green pepper, sliced
2-3 pairs of fresh parsley, chopped (optional)
½ cup feta cheese, crumbled or diced
6-8 black olives/kalamata olives
3 tbsp extra virgin olive oil
1 tbsp vinegar
1 tsp salt to taste

Place the tomatoes, cucumber, parsley, pepper and onions in a salad plate. Drizzle vinegar and extra virgin olive oil and sprinkle salt. Then, toss with black/kalamata olives and feta cheese.
Greek Salad is good to go with any kind of meat and vegetable dish.

Yunan Salatasi her turlu et ve sebze yemeginin yanina yakisan bir yaz salatasidir.

Spinach Turkey/Chicken (Ispanakli Hindi/Tavuk)

2 turkey/chicken breasts
1 lb spinach (also canned/frozen can be used)
1 onion, chopped
2 tbsp olive oil
1 cup mozzarella/cheddar cheese, shredded
1 tsp salt to taste
½ tsp black pepper
¼ tsp red pepper flakes
Bechamel Sauce:
2 cups milk
2 tbsp flour
4-5 tbsp butter
1 egg, beaten
½ tsp salt to taste

Boil turkey/chicken breasts in salty water. Let it cool and then cut it into small pieces. Grease a Pyrex or oven dish and place turkey/chicken over the bottom.
Meanwhile wash spinach, drain and chop (I’ve used canned spinach). In a skillet, sauté onions and spinach with olive oil. Add salt, black pepper and red pepper flakes. After that, spread it over the turkey.
In a pot, prepare the bechamel sauce (click for the béchamel sauce recipe). Stir in half of the shredded cheese. And then, pour it over the spinach. Sprinkle the remaining cheese on top and cook in a 400F (200 C) oven, till the surface turns to a light brown color (30-40 minutes).
Serve Spinach Turkey/Chicken warm.

Beshamel Sos:
2 su bardagi sut
1 yumurta, cirpilmis
4-5 yemek kasigi tereyagi

Hindi/tavuk etini iyice haslayin. Firin tepsisini yaglayin. Eti ince ince kesin ya da didin ve tepsisinin dibine doseyin. Ispanaklarin yapraklarini ayiklayip, temizleyin (ben konserve ispanak kullandim) Sogani, 2 yemek kasigi zeytinyagi ile ispanagi kavurun. Tuz, karabiber ve pulbiberi ilave edin. Hindi/tavuklarin uzerine ispanagi yayin.
Son olarak ayri bir tencerede besamel sosunu hazirlayin (besamel sosu tarifi icin tiklayin). Rendelenmis kasar peynirinin yarisini sosa ekleyin. Ispanaklarin uzerine hazirladiginiz besamel sosu yayin. Uzerine artan kasar peynirini serpin. Onceden isitilmis 200 derecelik firinda uzeri iyice kizarana dek pisirin (30-40 dakika).
Ispanakli Hindi’yi sicak servis yapin.

Cabbage with Ground Meat (Kapuska)

½ head of white cabbage, chopped
150-200 gr ground meat
1 onion, chopped
1 tsp tomato paste
1 tomato, diced
2 tbsp oil
1- 1½ cup hot water
Red pepper flakes

In a pot, sauté the ground meat and oil, till the color of the meat changes to brown. Then stir in onion and sauté for 2-3 minutes over medium heat. Stir in tomato paste and tomatoes.
Add chopped cabbage and stir occasionally till the volume of cabbage decreases and changes in color. And then, stir in hot water and salt. Make sure the water does not cover the cabbage (adjust the water amount as you like).
Simmer over low heat for about 18-20 minutes till the cabbage is cooked.
Serve Cabbage with Ground Meat with some red pepper flakes on top.

Bir tencerede kiyma ile sivi yagi orta ateste kavurun. Kiymanin rengi kahverengiye donunce sogani ilave edin ve 2-3 dakika daha kavurun. Sonra domates salcasi ve domatesleri ilave edin, biraz cevirin.
Dogranmis lahanayi ilave edin ve ara sira karistirarak kavurun. Lahanin hacmi azalip, rengi degisince tuz ve sicak suyu ilave edin. (Su oranini isteginize gore ayarlayin, ama su lahananin uzerine cikmasa iyi olur).
Dusuk ateste yaklasik 18-20 dakika boyunca, lahana pisene dek pisirin.
Kapuskayi uzerine kirmizi pul biber serperek servis yapabilirsiniz.

Asparagus&Potato Salad (Kuskonmaz&Patates Salatasi)

4-5 small potatoes, cut in halves or fours
½ lb asparagus, cut 1 inch
1 cup peas
1 red bell pepper, cut into strips
¼ cup onion, minced
1-2 cloves of garlic, minced
½ lemon’s juice
2-3 pairs of fresh dill/parsley
½ cup mayonnaise
¼ tsp black pepper
½ cup yogurt
¼ tsp salt to taste
Lettuce leaves

In boiling salted water, cook potatoes for 15 minutes or just until tender; drain. Place in large bowl. In boiling water, cook asparagus, peas, and peppers 4 minutes, or until just tender; drain. Add to bowl containing potatoes and cover.
In a medium saucepan, combine mayonnaise, onion, lemon juice, garlic, salt, and freshly ground pepper. Cook, stirring until it begins to boil. Stir in parsley/dill. Let it cool and stir in yogurt. Pour sauce over vegetables; toss well to coat evenly. Arrange lettuce on platter, and top with potato salad.
Serve warm or at room temperature.

Marul/kivircik yapragi

Bir tencerede patatesleri tuzlu suda 15 dakika kaynatin ve suzun. Buyuk bir kaseye bosaltin. Sonra kuskonmaz, bezelye ve biberleri 4 dakika kadar haslayin ve suzun. Patateslerin bulundugu kaseye ilave edin ve uzerini ortun.
Orta boy bir tavada; mayonez, limon suyu, sogan, sarimsak ve karabiberi kaynamaya baslayana dek pisirin. Maydanoz/dere otunu ilave edin ve karistirin. Biraz sogumasini bekleyin ve soguyunca yogurdu ilave edin. Sebzelerin uzerine dokup guzelce harmanlayin.

Tomato Pilaf (Domatesli Pilav)

1 cup rice, washed and drained
1 tomato, crushed or petite diced (1/2-2/3 cup)
2 tbsp butter/olive oil
1 tsp salt to taste
½ tsp sugar
1 ½ -2 cups hot water (preferably chicken stock or chicken bouillon)
Fresh parsley for garnish

Wash the rice several times with warm water and drain. Cover the rice with warm water and leave it for 15-20 minutes and drain. If you do not have time for this, just wash the rice and then drain.
In a medium saucepan, sauté butter/olive oil and tomatoes for about 4-5 minutes over medium heat. Then stir in rice and sauté for 2-3 minutes. Add hot water (chicken stock/chicken bouillon), salt and sugar (If you leave the rice in water before cooking, use 1 ½ cup hot water otherwise use 2 cups).
Stir well and turn heat low when it boils. Close the lid and simmer till the rice absorbs all the water. Do not stir while cooking.
Let it cool for a while with the lid on. Before serving, stir well with a wooden spoon. Then place to a serving plate and garnish with fresh parsley.

Suslemek icin taze maydanoz

Pirinci temiz su cikana dek yikayip suzun. Uzerini ilik su ile kaplayin ve 15-20 dakika dinlenmeye birakin. Sonra suzun. Eger buna zamaniniz yoksa, pirinci sadece yikayip, suzun.
Orta boy bir tencerede tereyagi/zeytinyagi ile domatesi orta ateste 4-5 dakika boyunca sote edin. Pirinci ilave edin ve 2-3 dakika daha karistirarak kavurun. Sicak su, tuz ve sekeri ilave edin ve guzelce karistirin (Eger pisirmeden once pirinci suda beklettiyseniz, 1 ½ su bardagi sicak su, eger bekletmediyseniz 2 su bardagi kullanin).
Kaynamaya baslayinca kisik atese alin kapagini kapatip, suyunu tamamen cekene dek pisirin. Mumkunse pilav piserken karistirmayin.
Pilavin kapagini acmadan biraz ilinmasini bekleyin ve tahta kasikla guzelce karistirip servis tabagina alin. Taze maydanoz ile susleyerek servis yapin.

Creamy Mushroom Soup (Kremali Mantar Corbasi)

½ lb (125 gr) mushroom (any kind), brushed and sliced thinly
3 tbsp butter
3 tbsp flour
4 cups of chicken stock/water and chicken bouillon
1 ½ -2 cups milk
1 tbsp salt to taste
Fresh dill or black pepper

In a skillet, melt 1 tbsp of butter and sauté mushrooms over medium heat for about 5-7 minutes. In a pot, melt 2 tbsp of butter and stir in flour. If the flour does not wet enough to be creamy, add some oil. Saute till flour turns to a light golden brown color.
And then, add chicken stock/water and chicken bouillon. Stir well to dissolve flour in water. To obtain a smooth creamy soup, use a blender. Stir in mushrooms and salt. When it starts boiling stir in milk and simmer over low heat for about 15-20 minutes (stir occasionally).
Sprinkle some fresh dill or black pepper on top of Creamy Mushroom Soup and serve warm.

1 yemek kasigi tereyagi ile mantarlari bir tavada sote edin (yaklasik 5-7 dakika). Bir tencerede 2 yemek kasigi tereyag ile unu kavurun. Eger un islanmazsa 1 kasik sivi yag ilave edin. Un hafif kahverengilesmeye baslayinca tavuk suyu/su ve tavuk bulyonu ilave edin.
Unun su icinde cozunmesi icin guzelce karistirin. Eger puruzsuz bir kivam elde edemediyseniz blendir kullanin. Sonra mantarlari ve tuzu ilave edin. Kaynamaya baslayinca sutu ilave edin ve kaynayinca kisik ateste yaklasik 15-20 dakika ara sira karistirarak pisirin.
Servis yapmadan once Kremali Mantar Corbasi’nin uzerine dere otu ya da karabiber serpin.

Turkish Bread (Turk Ekmegi)

1 ½ cups lukewarm water
2 tsp dry yeast/17 gr fresh yeast
3 ¾ cups bread flour/all purpose flour
1 ½ tsp salt
1 tsp sugar
Glaze:1 tbsp yogurt
1 tbsp water
Nigella seeds or sesame seeds

Place the lukewarm water, sugar and the yeast into a bowl. Stir well to dissolve the sugar and the yeast. Add the salt and flour; knead for 10 minutes, till dough becomes elastic. The more you knead the better your bread will be. Cover the dough with a plastic wrap or a clean cloth (see the picture) and let it rest for 2 hours in a warm place, till it rises up to double its volume (see the picture).Place dough on the counter and punch to release air. Cut the dough into two pieces, then make a loaf shape with each of them. Grease a square Pyrex or baking dish and place both of the dough pieces. Or you can use a loaf pan to bake two loaves of bread. Cover it with a clean cloth and leave it for ½-1 hours to rise in a warm place (If you have time let it rest for 2 hours).
Mix 1 tbsp yogurt and 1 tbsp water in a small bowl, then brush the surface of the bread with this glaze. Make a scratch lengthwise through the middle. Finally, sprinkle nigella seeds or sesame seeds on top. Preheat the oven to 425F (220C). Place the bread on the middle rack. Bake for 25-30 minutes, till it becomes golden brown. After taking it out of the oven cover with a clean cloth or towel to keep the bread soft.
Turkish Bread is good to go with butter, honey-butter dip or spicy olive oil dip when warm.

P.S: Do not use metal container when kneading or resting the dough. Metal spoils the texture of dough.
P.S 2 : If you want the top to be lighter brown, then beat 1 egg yolk and 1 tbsp milk for glaze, instead of yogurt and water.

Ilik suyu ve mayayi bir kaseye alin, icine sekeri ilave edin ve sekerle maya cozunene kadar iyice karistirin. Sonra un ve tuzu ilave ederek, 10 dakika hamur elastik olana dek yogurun. Hamuru ne kadar cok yogurursaniz o kadar guzel ekmek elde edersiniz. Uzerini seffaf film ya da temiz bir bez ile ortun (resime bakiniz) ve sicak bir ortamda, hamur iki kati kadar kabarana dek, yaklasik 2 saat bekleyin (resime bakiniz). Hamuru tezgahin uzerine alin ve havasini indirmek icin uzerinden bastirin. Hamuru ikiye bolun ve her birine uzun ekmek hamuru seklini verin. Kare bir borcam ya da firin tepsisini yaglayin ve iki hamuru yan yana koyun. Ya da uzun ekmek kalibi kullanarak iki tane ayri ekmek pisirebilirsiniz. Uzerini temiz bir bez ya da seffaf film ile ortun ve hamur iki kati buyuyene kadar yaklasik ½ -1 saat bekletin (Vaktiniz varsa 2 saat bekletin).
Sonra 1 yemek kasigi yogurt ve 1 yemek kasigi suyu karistirip firca ile hamurun uzerine surun. Ortasindan keskin bir bicak ile boyuna bir kesik atin. Uzerine corek otu ya da susam serpin. Firini onceden 220 C (425F) ye isitin, ekmegi orta rafa koyun ve uzeri kizarana dek 25-30 dakika pisirin. Firindan cikarinca, tepsinin uzerini temiz bir mutfak bezi ya da havlu ile ortup hava almasini engelleyin. Boylece Turk ekmeginiz yumusacik olacaktir.
Turk Ekmegi sicakken, tereyagi, balli tereyag ya da baharatli zeytinyagi ile cok guzel olur.

Chicken with Tomato Sauce (Domates Soslu Tavuk)

This is a special dish, which my husband cooked for me on this Valentine's Day.
4 chicken thighs/drumsticks
4 potatoes, peeled and sliced circularly
1 cup tomato, crushed
½ cup water
1 tsp tomato paste
1 tbsp salt to taste
¼ tsp basil
¼ tsp black pepper
1 tbsp oil

Boil the chicken thighs in salty water, till they become soft. Then let them cool and place potatoes over a greased Pyrex or baking tray. Sprinkle 1 tsp salt and mix them.
Preheat the oven to 400 F (200 C) and bake potatoes for 20-25 minutes till they are soft. Meanwhile in a small saucepan, sauté tomato paste with oil. And then stir in crushed tomatoes, remaining salt and water. Simmer for 2-3 minutes over low heat. Sprinkle the spices and turn the heat off.
Take the potatoes from the oven and arrange the boiled chicken over them. Then pour the tomato sauce all over. Place them back to oven and bake for 15 minutes.
Serve Chicken with Tomato Sauce warm.

Tavuklari tuzlu suda haslayin. Sonra patatesleri yaglanmis borcam/firin tepsisine aktarin ve 1 tatli kasigi tuz serpip harmanlayin.
Onceden isitilmis 200 C (400 F) firinda patatesler yumusyana dek yaklasik 20-25 dakika pisirin. Bu sirada bir tencerede sivi yag ile domates salcasini kavurun. Sonra domatesi geri kalan tuzu ve suyu ilave ederek, kisik ateste 2-3 dakika pisirin. Baharatlari ilave edin ve atesten alin.
Firindan cikardiginiz patateslerin uzerine haslanmis tavuklari yerlestirin ve uzerine hazirladiginiz domates sosunu dokun. Tekrar firina koyarak 15 dakika kadar pisirin.
Sicak servis yapin.

Vegetable Cheese Canape (Sebzeli Peynirli Kanape)

6-8 slices of white/wheat bread, sliced crosswise
½ cup milk
1 cup feta/Mexican crumbling cheese, crumbled
½ cup mozzarella/parmesan/cheddar cheese, shredded
2 eggs, beaten
½ cup tomato, diced finely
½ cup green peppers, chopped finely
A pinch of salt to taste
Any kind of spice you like

Mix all the ingredients, except bread, in a bowl. Then spread the mixture evenly on the surface of crosswise cut bread slices.Preheat the oven to 350-400 F (180-200 C) and bake until the cheese melts and turns a little golden brown.Serve warm. Canapes are good to go at breakfasts and brunches.

Asparagus with Walnuts (Cevizli Kuskonmaz)

½ lb asparagus, washed and cut into 1 inch pieces
½ cup crushed walnuts
2 tbsp butter
½ tsp salt
1 tbsp lemon juice
A pinch of black pepper

Boil asparagus for 2-3 minutes, then wash under cold water and drain.
In a skillet, melt the butter and roast walnuts for about 2-3 minutes over medium heat. Then stir in broiled asparagus and add salt. Stir fry asparagus for about 3-4 minutes.
Let asparagus cool, then sprinkle black pepper and drizzle lemon juice all over.
Asparagus with walnuts is ready to serve.

Bir tutam karabiber

Kuskonmazlari 2-3 dakika haslayin. Sonra soguk suyun altina tutun ve suzun.
Teflon bir tavada tereyagini eritip cevizleri 2-3 dakika orta ateste kavurun. Sonra haslanmis kuskonmazlari ve tuzu ilave edin. Ara sira karistirarak 3-4 dakika boyunca kavurun.
Biraz soguyunca uzerine limon suyu ve karabiber serperek servis yapin.

Yogurt Soup (Yogurt Corbasi)

2/3 cup yogurt, whisked
3 tbsp flour, heaping
6-7 cups chicken stock/water and chicken bouillon
3 tbsp oil/butter
1 tbsp salt to taste
Mint/paprika/black pepper

In a pot, sauté flour and oil/butter over medium heat, till the mixture turns to a light brown color. Then add chicken stock or water and chicken bouillon. Stir continuously and before it boils, stir in yogurt and salt. Simmer over low heat for 5-8 minutes.
For the garnish in a small frying pan, melt butter or place oil over low-medium heat. When it starts spitting, stir in the paprika and turn the heat off. Pour over the soup. Also another alternative is to sprinkle dried mint or black pepper on top.
Serve Yogurt Soup warm.

Uzeri icin 1 yemek kasigi sivi yag/tereyag ile 1 cay kasigi toz kirmizi biberi tavada kizdirip, susleyebilirsiniz. Kuru nane ya da karabiber serperek de servis yapabilirsiniz.

Broccoli Cauliflower Salad (Brokoli Karnibahar Salatasi)

1 bunch of broccoli, separated into florets
½ head of cauliflower, separated into florets
1 carrot, chopped in bite sizes
3 pairs of fresh parsley, chopped (optional)
½ tsp dry basil
2 tbsp extra virgin olive oil
1 tbsp yogurt
1 tbsp lemon juice
1 tsp salt

Boil the vegetables for about 4-5 minutes in salty water. Then wash under cold water and drain. Stir in parsley and transfer the vegetables in a salad plate.
In a small bowl, mix lemon juice, yogurt, olive oil and basil. And then, pour it all over the salad. Mix and serve.

Baked Anchovy (Firinda Hamsi)

1 lb anchovy, washed and drained
1 big onion, cut in half and sliced
2 tomatoes, diced/crushed
2-3 pairs if parsley, chopped
1-2 cloves of garlic, minced (optional)
2 tbsp lemon juice
2 bay leaves, torn in quarters
3 tbsp olive oil
A pinch of black pepper
1 tsp salt to taste
½ cup water

Cut the heads off anchovy and gut them. Then wash them under cold water and drain. Sprinkle salt and drizzle half of the olive oil, then mix them all. Place the anchovy over a Pyrex dish.
Preheat the oven to 400 F (200 C) and bake for 10-12 minutes. Meanwhile in a skillet, sauté onions with the rest of the olive oil. Then stir in parsley and tomatoes. Cook for 1-2 minutes over medium heat. Finally stir in black pepper, water and garlic. Turn off the oven and stir in lemon juice.
Take the anchovy out of the oven and place the bay leaves evenly over. Then pour the tomato sauce all over the anchovy. Place it back to the oven and bake for 10-15 minutes. If you like well fried anchovy, then turn to broil for the last 3-4 minutes.
Serve Baked Anchovy with lemon wedges and Turkish Coleslaw.

Hamsilerin kafalarini kesin ve iclerini temizleyerek soguk su altinda yikayin. Tuzlayin ve zeytinyaginin yarisi ile hepsini harmanlayarak yaglayin. Firin tepsisine tek sira halinde dizin.
Onceden isitilmis 200 C (400F) firinda yaklasik 10-12 dakika pisirin. Bu arada bir tavada geri kalan zeytinyagi ile soganlari hafif kavurun ve maydanozla domatesi ilave edin. 1-2 dakika orta ateste cevirin. Son olarak sarimsak, su ve karabiberi ilave edin, ocaktan alin. Limon suyunu ilave edin ve karistirin.
Firindan cikardiginiz hamsilerin uzerine defne yapraklarini esit olarak yerlestirin ve domatesli sosu uzerine yayin. Tekrar firina koyun ve 10-15 dakika daha pisirin.
Eger daha cok kizarmasini isterseniz, son 3-4 dakika ustten kizartma yapabilirsiniz.
Firinda hamsiyi limon dilimleri ve lahana salatasi ile servis yapabilirsiniz.

Apple Cookie Rolls (Elmali Kurabiye)

This is one of my favorite cookies and with this recipe I won the cookie category of Food Science Bake Contest:)
1 cup yogurt
1 cup sugar
250 gr margarine/butter, melted
1/2-1 cup canola oil
1 egg
1 tsp baking powder
7-8 cup flour
½ cup confectioner’s sugar for garnish
Filling:
3 apples, peeled, cored and shredded
3 tbsp sugar
1 tsp cinnamon
½ cup crushed walnuts/pecans

Mix all the dough ingredients, but flour and confectioner’s sugar. Add flour slowly and form a non sticking dough. Knead for 4-5 minutes. Then, cover the dough with a clean cloth and leave for resting.
Meanwhile, cook shredded apples with sugar for about 10 minutes over low-medium heat. When they turn to brown stir in cinnamon and walnuts/pecans.
Cut the dough into 3 pieces and flatten each dough with a roller about 1/10 inch thickness. Then cut it into 8 pieces (see the picture). Put 1 tsp filling on the wide side and roll it up (see the picture). Use baking paper over the baking tray or grease it. Then place the apple cookie rolls on the tray and preheat the oven to 350F (180 C). Bake them for about 30 minutes, till they get light brown. Make sure not to over bake.
Sprinkle confectioner’s sugar on tops and serve.

Pudra sekeri ve un haric butun malzemeleri karistirin. Unu yavas yavas yedirerek elinize yapismayacak bir hamur elde edin. Yaklasik 4-5 dakika yogurun. Hamurun uzerini temiz bir bez ile ortun ve dinlenmeye birakin.
Diger yandan bir tencerede rendelenmis elma ve sekeri 10 dakika kadar orta ateste pisirin. Elmalar kahverengiye donecektir. Pisince ocaktan alin ve tarcin ile cevizi ilave edin.
Hamuru 3 parcaya ayirin. Her parcayi oklava ile ½ cm kalinliginda acin. 8 esit parcaya kesin (resime bakiniz). Genis taraflarina 1 tatli kasigi ic malzemeden koyarak rulo seklinde sarin (resime bakiniz). Kurabiyeleri yaglanmis ya da yagli kagit koydugunuz firin tepsisine aralikli olarak dizin.
Onceden isitilmis 180C (350 F) firinda kurabiyeler hafif pembelesene dek yaklasik 30 dakika pisirin. Firindan cikarinca uzerine pudra sekeri serpin ve servis yapin.

Fried Asparagus (Kuskonmaz Kizartmasi)

1 bunch of asparagus, trimmed
½ tsp salt
¼ tsp black pepper
¼ tsp paprika (optional)
2 gloves of garlic, minced
2-3 tbsp olive oil
Sweet corn for garnish

You can cut asparagus into small pieces or you can use them whole. Wash them and drain.
Sizzle oil in a pan and shallow fry asparagus till they turn to light golden brown. Then stir in salt, spices and garlic. Cook for 1-2 minutes.
Place Fried Asparagus into a serving plate and serve with tomato dip or garlic yogurt sauce. Garnish with sweet corn.
This recipe is a good side dish.

Kuskonmazlarin kesim yerlerinden biraz kesin ve isterseniz kucuk parcalara kesin ya da butun olarak kullanin. Yikayin ve kurulayin.
Tavada yagi kizdirin ve kuskonmazlari hafif kizarana dek orta ateste cevirin. Tuz ve baharatlari ilave edin ve pismeye yakin son olarak sarimsaklari ilave edin.
Servis tabagina alin ve uzerine domates sosu ya da sarimsakli yogurt dokerek servis yapin. Uzerini misir taneleri ile susleyin.
Kuskonmaz kizartmasini yemeklerin yaninda servis yapabilirsiniz.

Fried Cauliflower (Karnibahar Kizartmasi)

1 head cauliflower, separated into florets
1 cup frying oil
8 tbsp flour
1 cup milk
½ tsp salt
½ tsp baking soda
2 eggs

Boil cauliflower florets in salty water for about 5-7 minutes, do not over boil. Otherwise they will separate. If you do not like the smell of cauliflower while cooking, add a quarter lemon slice or 1 tbsp of lemon juice into boiling water. Drain the boiled cauliflowers.
Meanwhile in a bowl mix all the ingredients, but oil and prepare the batter. Sizzle oil in a frying pan and then first dip cauliflower florets into batter then fry them evenly. Place the fried cauliflowers on a paper towel.
Fried cauliflowers are good to go with garlic yogurt sauce and tomato dip.

Karnibahar parcalarini tuzlu suda yaklasik 5-7 dakika haslayin, fazla haslamaktan kacinin, yoksa sekilleri bozulur ve dagilirlar. Eger karnibahar piserken kokusunu sevmiyorsaniz suyun icine ceyrek limon atin, ya da 1 yemek kasigi limon suyu ilave edin. Haslanan karnibaharlari suzun.
Genis bir kasede kizartma yagi haric geri kalan malzemeleri karistirarak puruzsuz bir karisim elde edin. Kizartma yagini tavada kizdirin ve karnibaharlari hazirladiginiz karisima batirip kizgin yagda her iki taraflari da kizarana dek kizartin.
Kizarttiginiz karnibaharlari kagit havlu uzerine koyun.
Servis tabagina alin ve sarimsakli yogurt ya da domates sosu ile servis yapin.

Italian Dip (Italyan Sosu)

½ cup extra virgin olive oil
1 tsp Italian seasoning
A pinch of salt
Red pepper flakes (optional)

In a bowl mix all the ingredients and leave for 2-3 hours. So, olive oil will absorb the Italian seasoning flavors. This dip is good to go with fresh baked warm breads.

Spinach with Rice (Pirincli Ispanak)

2lb spinach, fresh or frozen
1/2-2/3 cup rice, washed and drained
1 onion, chopped
3 Tbsp olive oil
1 Tbsp tomato paste
1 ½-2 cup hot water
1 tsp salt to taste

In a pot sauté onions with olive oil over medium heat. Stir in tomato paste and sauté for 1-2 minutes. If you are using fresh spinach, wash and drain them then, chop . If you are using frozen spinach, just add them into pot. Over medium heat stirring occasionally, cook them till most of the water evaporates (5 minutes).
Stir in rice and add hot water, salt (I use half bulgur and half rice, since it is more nutritious that way). Close the lid and cook over low heat for 20-30 minutes, till the rice is cooked.
You can serve Spinach with Rice, with yogurt on top. Also you can sprinkle some red pepper flakes on top.

1 sogan, dogranmis
1 yemek kasigi salca
½-2/3 su bardagi pirinc, yikanmis
3 yemek kasigi zeytinyagi
1 ½-2 su bardagi sicak su
1 tatli kasigi tuz

Sogani zeytinyagi ile orta ateste kavurun. Sonra salcayi ilave edin ve biraz daha cevirip, ispanaklari ilave edin. Eger taze ispanak kullaniyorsaniz once guzelce yikayin. Suyunu suzup dograyin. Dondurulmus ispanak kullaniyorsaniz direk tencereye ilave edin. Yaklasik 5 dakika orta ateste suyu azalana dek kavurun.
Yikanmis ve suyu suzulmus pirinci ilave edin (Daha besleyici oldugu icin ben yari bulgur yari pirinc kullaniyorum). Sonra sicak suyu ve tuzunu ilave edin. Kapagini kapatip kisik ateste yaklasik 20-30 dakika pirincler pisene dek pisirin.
Pirincli Ispanagi yaninda veya uzerinde yogurt ile servis yapabilirsiniz. Uzerine pul biber serpebilirsiniz.

Potato Cake (Patatesli Kek)

2 eggs
1 cup yogurt
3 potatoes, finely diced
8 tbsp (125 gr) butter/margarine, melted
2 cups flour
1/3 cup dill/parsley, finely chopped
1 tsp salt
½ tsp baking powder
½ tsp black pepper
1/3 tbsp paprika
1 tsp sesame seeds for top

In a bowl beat the eggs with a mixer for 2-3 minutes. Then add yogurt, butter/margarine, salt and spices. Combine baking powder and flour, then add them to the mixture. Mix them all evenly. Stir in parsley/dill and potatoes with a wooden spoon.
Transfer the cake mixture in a greased rectangular or square Pyrex dish and sprinkle sesame seeds on top.
Preheat the oven to 350 F(180 C) and bake for 40-50 minutes, till it turns golden brown.
Potato Cake is good to go at breakfasts and brunches.

Yumurtalari bir kasede mikser ile 2-3 dakika cirpin. Sonra terayagi/margarine, yogurt, tuz ve baharatlari ilave edin. Un ve kabartma tozunu harmanlayip karisima yavas yavas ekleyin.
Maydanoz/dereotu ve patatesleri de ilave edip, tahta kasikla karistirin. Yaglanmis bir dikdortgen ya da kare borcam tepsiye dokun ve uzerine susam serpin.
180 C (350F) isitilmis firinda yaklasik 40-50 dakika pisirin.
Patatesli kek ozellikle kahvalti ve cay saatleri icin cok guzel bir tariftir.

Chicken Stew with Onions (Soganli Tavuk Yahnisi)

2 chicken thighs, boneless and skinless, chopped
2 onions, chopped
½ cup tomatoes, crushed or diced
1 tsp tomato paste
2 tbsp oil
1 tbsp salt to taste
2 tbsp flour
3 cups hot/warm water
¼ tsp black pepper
¼ tsp cumin

Cook chopped chicken till the juice evaporates. Then add oil and sauté for 1-2 minutes and stir in onions. Over medium heat sauté for 2-3 minutes and stir in flour. Saute for about 2 minutes, then add tomato paste and tomatoes and cook all for 1-2 minutes. Add water and salt.
Close the lid and simmer over low heat till chicken become soft (for about 20 minutes). Sprinkle cumin and black pepper before serving.

Yaklasik 2 dakika daha un ile kavurun ve salca ile domatesi ilave edin. 1-2 dakika daha kavurduktan sonra sicak suyu ve tuzu ilave edin.
Tencerenin kapagini kapatip, kisik ateste etler pisene dek pisirin (yaklasik 20 dakika). Servis yapmadan once kimyon ve karabiber serpin.

Creamy Biscuit Cake (Kremali Biskuvi Pastasi)

This delicious and easy cake recipe is from my mother and sister.

1 lb Petit Beurre or Social thin tea biscuits
16 oz (~460 gr) Whipped Topping, thawed
½ -1 cup any kind of sauce (syrup) you like (preferably strawberry or chocolate)
Crushed or ground pistachios/hazelnuts/almonds or any other nuts

Crumble the biscuits into the whipped cream and mix them to obtain an even mixture. You can use any shape of Pyrex dish or tray (square, rectangle or circular,…) you like. Place plastic wrap over the bottom of the tray and put the cake mixture in. Gently press over the mixture to fit the tray. Leave it in the fridge at least 3-4 hours, preferably 12 hours.
Take the cake out of fridge and turn it upside down over a serving plate. Pour the sauce (syrup) all over (I’ve used blackberry sauce). Then garnish the surface with any kind of nuts.

Bu pasta annemle kardesimin yaptigi harika ve pratik bir tarif.

~450 gr Petit Beurre ya da cay biskuvisi
~460 gr krem santi/2 paket hazirlanmis krem santi, oda sicakliginda
½-1 su bardagi istediginiz tur pasta sosu (tercihen cilek ya da cikolata)
Ufalanmis ya da ogutulmus antep fistigi/findik/badem ya da diger kuruyemisler

Biskuvileri krem santinin icine kiriklayin ve guzelce karistirin.Pastanizin hangi sekilde olmasini isterseniz (yuvarlak, kare, dikdortgen,…) ona gore bir tepsi ya da kalip secin ve dibine plastik strec film serin. Uzerine tatlinizi koyun ve uzerinden hafifce bastirarak kalibin seklini almasini saglayin. En az 3-4 saat, tercihen 12 saat buzdolabinda bekletin.
Buzdolabindan cikarinca, pastanizi servis tabagina ters cevirin. Uzerine kullacaginiz sosu dokun (ben bogurtlen sosu kullandim). Sonra uzerini istediginiz sekilde ve istediginiz malzemeyle susleyin.

Tortilla Borek

MAIN
5-7 Flour Tortilla, large (Mexican Burrito)
2 eggs
¼ tsp salt to taste
1/2 cup milk
1/3 cup oil (preferably canola/olive oil)
1 tsp nigella seeds (optional)

Filling with Feta cheese
150 gr crumbled feta cheese or Mexican crumbling cheese
½ bunch of parsley or dill chopped (1 cup)

In a bowl, whisk eggs, oil and milk. You will use this mixture between every layer of tortillas and on top of borek. In another bowl combine filling ingredients. Also you can use other fillings for borek. Grease a 3 L (13*9*2 inch) Pyrex dish or smaller. Fill a large bowl with water and soak each tortilla in it to make them softer. Then place one tortilla and if it does not fit your dish, you can trim the edges or tear in half. And then use these pieces to make a layer. Spread 3-4 tbsp of the mixture over each layer and put some of the filling you are using and spread it evenly. Continue layering in the same way; first the liquid mixture and then the filling.
Cover the top with the last tortilla and cut the borek into slices.
Pour the remaining liquid mixture on top and sprinkle nigella seeds (see the picture). Preheat the oven to 375 F (190 C) and cook for about 30-35 minutes, until it turns golden brown. Serve Tortilla Borek warm and it is good to go with Turkish Tea.

Beyaz Peynirli Borek icin Ic
200 gr ufalanmis beyaz peynir
½ demet maydanoz/dereotu , dogranmis

Bir kasede sut, yumurta ve sivi yagini karistirin. Bu karisimi her tortilla arasinda ve boregin ustu icin kullanacaksiniz.
Baska bir kasede ic malzemeleri karistirin. Borek icin farkli ic malzemeler de kullanabilirsiniz.
Buyuk bir kaseyi sui le doldurun ve her tortillayi suyun icine batirip, islatarak yumusatin. Dibini yagladiginiz tepsiye yayin. Eger tortilla tepsinize uymuyorsa, kenarlarindan ya da ordana yirtarak istediginiz sekilde ayarlayip tepsiye yerlestirin. Uzerine 3 yemek kasigi sut karisimindan yayin ve kullandiginiz icten bir miktar alip esit sekilde yayin. Son tortillayi boregin uzeri icin ayirin ve geri kalanlari icin ayni islemi uygulayin.
Son tortillayi boregin uzerine koyunca, boregi dilimleyin ve geri kalan sutlu karisimi uzerine esit olarak yayin (resime bakiniz). Corek otu serpin ve onceden isitilmis 190 C (375 F) firinda, uzeri kizarana dek, yaklasik 30-35 dakika pisirin. Sicak servis yapin.
Tortilla Borek cay ile cok guzel olur.

Cheesy Mushroom Egg Casserole (Mantar ve Peynirli Yumurta)

½ lb mushrooms, brushed and sliced
2 tbsp butter/olive oil
1-2 pairs of green onions, chopped (optional)
3 eggs, beaten
1 cup milk
½ tbsp starch
½ cup crumbled feta/ Mexican cheese
½ tsp any kind of seasoning
½ tsp salt to taste

In a skillet, sauté mushrooms with butter over medium heat, till all the water evaporates. Then stir in green onions and sauté over low medium for 1-2 minutes.
Meanwhile dissolve starch in milk and add salt, eggs and seasoning. Mix them all.
Preheat the oven to 350-375F (180-190 C) and place mushrooms in a Pyrex or baking dish and sprinkle feta/Mexican Cheese over them. Finally pour egg-milk mixture and stir gently with a fork to distribute mushrooms and cheese evenly in egg mixture.
Bake for 25-30 minutes, till the surface turns light brown.
Serve Cheesy Mushroom Egg Casserole warm.

1-2 tane yesil sogan, dogranmis (istege bagli)
3 yumurta, cirpilmis
1 su bardagi sut
1 cay kasigi nisasta
½ su bardagi ufalanmis beyaz peynir/ lor
1 cay kasigi herhangi bir sevdiginiz baharat karisimi
1 cay kasigi tuz

Mantarlari tereyagi ile bir tavada mantarlar suyunu cekene dek orta ateste kavurun. Ardindan yesil soganlari ilave edin ve kisik ateste 1-2 dakika cevirin.
Bu sirada bir kasede sut ile nisastayi karistirin ve icine yumurta, tuz ve baharatlari ilave edip, karistirin.
Firini 180-190 C(350-375F) isitin. Borcam tepsiye once mantarlari, sonra ufalanmis peyniri koyun ve son olarak yumurtali sut karisimini uzerine dokun. Hafifce karistirin. Uzeri kizarana dek yaklasik 25-30 dakika pisirin.
Mantar ve Peynirli Yumurtayi sicak servis yapin.

Garlic Yogurt Sauce (Sarimsakli Yogurt)

1 cup yogurt
2 cloves of garlic, minced
¼ tsp salt to taste
1 tsp olive oil
Black olives and green onion/leek pieces for garnish

Mix yogurt, salt and garlic. Drizzle olive oil on top and garnish with black olives, leek or green onions.
Garlic Yogurt Sauce is good to go over fried vegetables and meats, pastas, with patties and meat dishes.

Yogurt, tuz ve sarimsaklari karistirin. Uzerine zeytinyagi dokun ve pirasa sapi ya da yesil sogan sapi ile susleyin.
Sarimsakli yogurt; kizartmalarin ve makarnalarin uzerinde, mucver ve et yemekleri ile cok guzel olur.

Leeks with Chicken Liver (Tavuk Cigerli Pirasa)

2 pairs of leek (~1 lb), washed
1-½ lb chicken liver, washed, drained and chopped
1 tomato, diced/ ½ cup crushed tomato
3 tbsp oil (preferably canola)
½ cup hot water
1 tsp salt to taste
½ tsp paprika
A pinch of black pepper (optional)

Place chicken livers in a pot and cook them over medium heat, till all the water evaporates. Meanwhile cut leaks in 4 lengthwise and chop. Add oil to livers and sauté for 2-3 minutes. Then stir in leeks and sauté for 3 minutes, stirring occasionally.
Stir in tomatoes, salt, paprika and hot water. Close the lid and cook over low heat till the leeks are cooked (for about 10 minutes). You can sprinkle some black pepper on top before serving.
Leeks with Chicken Liver is good to go with yogurt, cacik and pickles.

Bir tutam karabiber (istege bagli)

Tencereye cigerleri koyun ve orta ateste suyunu cekene dek kavurun (3-4 dakika). Bu sirada yikanmis pirasalari uzunlamasina dorde kesip, dograyin. Cigerler suyunu cekince siviyagi ilave edin ve 2 dakika kadar daha kavurun. Ardindan dogranmis pirasalari ilave edin ve yine orta ateste pirasalar kavrulana dek karistirarak pisirin (3 dakika).
Domates, tuz, toz kirmizi biber ve sicak suyunu ilave edin. Tencerenin kapagini kapatin ve kisik ateste pirasalar pisene dek yaklasik 10 dakika pisirin. Servis yapmadan once uzerine karabiber serpebilirsiniz.
Cigerli Pirasayi yogurt, cacik ya da tursu ile servis yapabilirsiniz.

Basil Salmon (Feslegenli Somon Baligi)

1 lb salmon fillets or steak
1 /3 cup fresh basil or ½ tsp dried basil
2 tbsp extra virgin olive oil
½-1tsp lemon juice
¼ tsp black pepper
1 tsp salt to taste
1/4 cup parmesan cheese (optional)

Rub fish with salt and mix all the other ingredients, but cheese in a bowl. Dip fish into this mixture. If you have time you can leave fish in the mixture for 1-2 hours in the fridge.
Preheat the oven to 400 F (200 C) and place the fish into a Pyrex dish. Bake for 20-25 minutes. After baking, you can also broil at low heat for 2-3 minutes for golden brown fish. Then sprinkle Parmesan cheese over the Basil Salmon and bake for 2-3 minutes (optional).

You can serve Basil Salmon with lemon wedges, vegetables and potato salad.

Once tuzu elinizle ovalayarak baliklara yedirin. Peynir haric geri kalan malzemeyi bir kasede karistirin ve baliklarin her yerine bu karisimdan surun. Eger zamaniniz varsa baliklari bu malzemenin icine yatirin ve buzdolabinda 1-2 saat bekletin.
Sonra borcam tepsiye baliklari dizin ve onceden isitilmis 200 C (400F) firinda 20-25 dakika, baliklarin uzeri kizarana dek pisirin. Firindan cikarip uzerine rendelenmis peyniri serpin ve 2-3 dakika daha pisirin (istege bagli).
Feslegenli Somon Baligi'ni limon dilimleri, sebze ya da patates salatasi ile servis yapabilirsiniz.
