Mushroom Soup with Chicken (Tavuklu Mantar Corbasi)

½ chicken breast
2 cups milk
1 carrot, chopped
½ lb ( 4-5 ) button mushroom, sliced
½ stick butter (50-65 gr)
2 Tbsp flour, heaping
1 Tbsp salt (for soup)
1 tsp salt (for boiling chicken)
½ bunch of fresh dill, thinly chopped or 1 tsp of dried dill (optional)
2 Tbsp cooking oil

Boil the chicken breast with the chopped carrots until they are both soft and tender with adding 1 tsp salt. When it’s done, pour the remained water in a bowl for using it as the chicken stock in the soup.
After the cooked chicken breast cools a little, cut it into small pieces.
Meanwhile, in a skillet place the butter and sliced mushrooms. You can sprinkle a pinch of salt on them. Saute them on a low-medium heat, till they get soft and tender, for about 8-10 minutes.
In a large pot, add the oil and flour and stir continuously while cooking on low- medium heat, for about 2-3 minutes. When the flour and oil mixture starts to change in color, add milk, salt and the chicken stock when you set apart before. Stir well in order to obtain a smooth creamy soup.
Finally add the chicken pieces, carrots and cooked mushrooms into the soup. Then cook for about 8- 10 minutes stirring occasionally (optional). When it’s done sprinkle with dill on top before serving.
Serve it while still hot or warm.

Tavuk gogsunu havuclarla birlikte 2 cay kasigi tuz ilave ederek haslayin. Tavuk ve havuclar yumusayinca kalan suyu bir kaseye alip, corbada kullanmak icin ayirin.
Haslanmis tavuk biraz soguyunca, kup kup dograyin.
Bu sirada, tereyagini bir tavaya alin ve dogranmis mantarlari, bir tutam tuz ilave ederek kisik ateste, yumusayana dek, 8-10 dakika pisirin.
Buyuk bir tencereye, 1 yemek kasigi sivi yag ve unu koyup, dusuk ateste 2-3 dakika kavurun. Un-yag karisimi sararmaya basladigi zaman; sutu, tuzu ve tavugun haslama suyunu ilave edin. Puruzsuz bir corba elde etmek icin guzelce karistirin.
Son olarak ; tavuk parcaciklarini, havuclari ve mantarlari ilave edin. Ara sira karistirarak, 8-10 dakika kisik ateste pisirin. Corbaniz hazir oldugu zaman uzerine dereotunu ilave edin (istege bagli), karistirin ve servis yapin.

Sauerkraut with Mushrooms (Mantarli Lahana Tursusu)

2 cups sauerkraut, drained
1 medium onion, chopped
1 lb (~450 gr) mushroom, quartered
2-3 Tbsp of butter
A pinch of sea salt (optional)
A pinch of ground black pepper (optional)

Melt the butter in a skillet and saute onions for about 3 minutes over medium heat. Stir in the chopped mushrooms and saute 2 minutes. Then, add the sauerkraut and cook for about 15-20 minutes stirring occasionally. Sprinkle with salt and pepper (optional) and serve warm/hot.
Serves 6

Tereyagini genis bir tavada eritin. Soganlari ilave edin ve orta ateste yaklasik 3 dakika soteleyin. Dogranmis mantarlari ilave edip 2 dakika daha kavurun. Sonra, salamura lahanayi ilave edin ve yaklasik 15-20 dakika kadar ara sira karistirarak pisirin. Istege bagli olarak tuz ve karabiber ilave edin ve sicak/ilik servis edin.

Asparagus with Olive Oil (Zeytinyagli Kuskonmaz)

1 bunch asparagus (1 lb)
2 medium carrots, julienne cut
1 onion, julienne cut
3 cloves of garlic, finely sliced
5-6 mushrooms, sliced/quartered
2-3 tomatoes, crushed
1 tsp salt to taste
½ tsp sugar
½ tsp fresh black pepper
4-5 Tbsp olive oil
½ cup hot water
Dill for garnish
 
Chop the onions and garlic. Cover the bottom of the pot with them. Place a layer of asparagus cut into ~1 inch length. Then, cover them with julienne cut carrots and sliced mushrooms. Finally, spread crushed tomatoes all over. Sprinkle with salt and sugar. Drizzle with olive oil and add hot water. Add some fresh black pepper. Close the lid and cook over low heat until the carrots are cooked (for about 30-35).
Serve either hot or cold with fresh dill on top if desired.

Son olarak rendelenmis domatesi butun tencerenin uzerinde gezdirin. Tuz ve sekeri serpin. Zeytinyagini da her yere esit yayilacak sekilde gezdirin ve sicak suyu ilave edin. Taze ogutulmus karabiber ilave edin. Kapagi kapali olacak sekilde kisik ateste havuclar pisene dek yaklasik 30-35 dakika pisirin.
Arzuya gore sicak veya soguk olarak uzerine dere otu koyarak servis yapin.

White Asparagus Mushroom Stir Fry (Mantarli Beyaz Kuskonmaz)

½ lb portabella mushroom, sliced
½ lb white asparagus, trimmed and chopped
2-3 cloves of garlic, minced
1-2 Tbsp olive oil
½ tsp paprika
A pinch of rosemary
½ cup artichoke, cooked
 
Cut asparagus in 1 inch length and either steam or boil. Then, sauté mushrooms with olive oil over medium heat and add asparagus. Saute 2-3 minutes and add artichokes, paprika, salt and rosemary. Give a final stir.
Serve either with yogurt or garlic yogurt on top.

Kuskonmazi 2.5 cm uzunlugunda kesin ve ister haslayin isterseniz buharda pisirin. Sonra, mantarlari orta ateste zeytinyaginda kavurun ve kuskonmazi ilave edin. Yaklasik 2-3 dakika sote edin ve enginarlari, kirmizi toz biber ve tuzu ekleyin. Hepsini karistirin.
Uzerinde yogurt ya da sarimsakli yogurt ile servis yapabilirsiniz.

Mushroom Frittata (Mantarli Italyan Omleti)

8-10 mushrooms, sliced
4-5 eggs, whisked
1/3 cup mozzarella cheese, shredded
2-3 Tbsp parmesan cheese, shredded
¼ cup milk
1 Tbsp olive oil
½ tsp salt to taste
½ tsp thyme
Black pepper to taste

Saute mushrooms with olive oil over medium heat for 3-4 minutes. Then, in a bowl, combine whisked eggs, milk, salt, thyme and cheese. Mix well.
Preheat oven to 400 F (200 C) and grease a round pyrex. Transfer the mushrooms and then add the egg-milk mixture. Gently give a toss for an even frittata. Sprinkle some black pepper on top. Bake for about 5 minutes and then broil for 3-4 minutes or until the egg settles.
Slice and serve hot.

Zeytinyaginda mantarlari 3-4 dakika sote edin. Cirpilmis yumurtaya sut, tuz, kekik ve rendelenmis peynirleri ilave edin. Harmanlayin.
Firini onceden 200 C (400 F)’ye isitin. Borcam tepsiyi yaglayin ve mantarlari dibine yayin. Uzerine cirpilmis yumurta karisimini ilave edin. Hafifce karistirarak mantarlari esit olarak yaymaya calisin. Uzerine karabiber serpin ve firina verin. 5 dakika kadar pisirin ve sonra sadece ustten kizartma yaparak 3-4 dakika ya da yumurta sertlesip iyice pisene dek firinda birakin.
Dilimleyin ve sicak servis edin.

Bok Choy with Mushroom (Mantarli Cin Lahanasi)

½ lb bok choy
3 Tbsp olive oil
1 Tbsp soy sauce
½-1 red pepper, chopped
2-3 cloves garlic, minced
5-6 mushrooms, sliced
½ cup walnuts
½ tsp salt to taste

Chop the stalks and leaves of bok choy any size you wish. Take olive oil over a sauté pan and sauté peppers until they get soft. Then, add stalks of bok choy first, sauté for 3-4 minutes and add leaves, garlic, mushrooms, salt and soy sauce. Sauté for 2 more minutes. Toss with walnuts and serve.

Cin lahanasinin yesil ve beyaz kisimlarini istediginiz buyuklukte dograyin. Tavaya zeytinyagini alin ve kirmizi biberleri yumusayana dek pisirin. Sonra, cin lahanasinin sap kisimlarini ilave edin ve 3-4 dakika soteleyin. Yaprak kisimlarini, sarimsak, mantar, tuz ve soya sosunu ilave edin. Yaklasik iki dakika daha sote edin. Atesten alin cevizi ilave edin ve harmanlayin.

Asparagus Mushroom Stir Fry (Mantarli Kuskonmaz)

1 cup red bell pepper, julienne cut
1 cup mushroom, chopped
1 cup asparagus, cut in 2 inches
1 carrot, cut in round
2-3 Tbsp olive oil
1Tbsp soy sauce (optional)
A pinch of salt to taste

Peel the carrot and chop in rounds. Clean asparagus and cut into two inches long. Then, boil them in salty water for about 3 minutes. Rinse under cold water and let them drain.
Meanwhile, take olive oil in a wide skillet and add peppers. Saute over medium heat until they become soft. And then, stir in mushrooms and cook for 2 more minutes. Add boiled carrots and asparagus. Add salt and soy sauce if desired. Continue cooking over medium heat until they reach your desired softness (for about 3-4 minutes).

Havucun disini kaziyin ve yuvarlak dograyin. Kuskonmazi temizleyin ve 3 cm uzunlugunda dograyin. Her ikisini birden hafif tuzlu kaynar suda yaklasik 3 dakika haslayin. Soguk su altina tutun ve durulayin. Suyunun suzulmesini bekleyin.
Bu sirada genisce bir tavaya zeytinyagini ve biberleri alin. Orta ateste biberler yumusayana dek ara sira karistirarak kavurun. Sonra, mantarlari ilave edin 2 dakika kadar daha kavurduktan sonra haslanmis havuc ve kuskonmazi ilave edin. Tuz ve istege gore soya sosunu ilave edin ve sebzeler arzu ettiginiz yumusakliga gelene kadar orta ateste pisirin (yaklasik 3-4 dakika).

Eggplant Mousaka with Mushrooms (Mantarli Patlican Musakka)

2 eggplants, peeled and cut into chunks
1 big onion, chopped
½ lb (200 gr) ground beef
½ lb mushrooms, cut in quarters
2 tomatoes, diced
1 cup oil for frying the eggplant
1 green pepper, chopped
1 tsp salt
½ tsp black pepper
2 cloves of garlic, sliced thin (optional)
½ cup hot or warm water

Peel the whole eggplant and chop in chunks. Then, place them in a bowl and cover the eggplants with water. Let them stand for 30 minutes in water. Then, drain and wipe the eggplants with a paper towel. In a large skillet place the oil and lightly fry the eggplants until they change in color. Do not over fry. Place the fried eggplant pieces in a Pyrex dish and sprinkle salt on them.
Place the ground beef and 1 tbsp oil and cook until the meat changes in color. You can use the same skillet or a smaller one. Then, add chopped onions and sauté for 2 minutes. Add chopped peppers, garlic (optional) and mushrooms. Cook for 2-3 minutes. Stir in tomatoes and salt to taste. Sauté for 5 minutes. Finally add black pepper and give a stir. Spread this mixture evenly on the fried eggplants and add the hot water.
Preheat the oven to 375 F (190 C) and cook for about 20-25 minutes.
You can serve this dish with pilaf and yogurt.

200 gr kiyma
250 gr mantar, dorde bolunmus
2 domates, dogranmis
1 su bardagi sivi yag( patlicanlari kizartmak icin)
1 yesil biber, dogranmis
2 cay kasigi tuz
1 cay kasigi karabiber
2 dis sarimsak, dogranmis (istege bagli)
½ su bardagi sicak su

Patlicanlari yikayip, soyun. Buyuk buyuk dograyin ve buyuk bir kaseye koyup uzerine cikana dek su doldurun. Patlicanin acimsi tadinin suya gecmesi icin yaklasik 30 dakika suda bekletin.
Sonra patlicanlari suzup, kurulayin. Genis bir tavaya yagi koyup patlicanlari renk degistirene dek kizartin. Fazla kizartirsaniz, patlicanlarin sekli bozulur. Kizarmis patlicanlari borcam bir tepsiye alin ve uzerine tuz serpin.
Ayni tavada bir yemek kasigi sivi yagi ve kiymayi renk degistirene dek kavurun. Sonra soganlari ilave edip 1-2 dakika sote edin. Biberleri, sarimsak ve mantari ilave edin. Yaklasik 3 dakika kavurun. Sonra, tuz ve domatesi ekleyin, 5 dakika kisik ateste pisirin. Son olarak karabiberi ilave edin. Kiymali karisimi kizarmis patlicanlarin uzerine esit olarak yayin ve sicak suyu ilave edin.
Onceden isitilmis 190 C (375) firinda yaklasik 30 dakika pisirin.
Yaninda pilav ve yogurt ile servis edebilirsiniz.

Scallops with Mushroom (Mantarli Deniz Taragi)

1 lb scallops
2 green onions, chopped
3 Tbsp butter
½ lb button/portabella mushrooms, sliced
1/2 tsp salt to taste
1 pinch of black pepper
1 Tbsp lemon juice

Heat butter in a skillet. Add green onions and salt.
Stir and saute 1 minute. Add mushrooms and continue sautéing for 2-3 minutes over medium heat. Stir in scallops and sauté for about 4-5 minutes, until scallops are opaque. Sprinkle with black pepper, add lemon juice and heat through.
You may serve scallops with mushrooms with tomato pilaf.

Tereyagini tavada eritin. Yesil sogan ve tuzu ilave edin. Karistirin ve bir dakika kadar sote edin. Mantarlari ilave edin ve 2-3 dakika kadar orta ateste sote etmeye devam edin. Deniz taraklarini ilave edin ve 4-5 dakika soteleyin. Karabiber serpin ve limon suyunu ilave edin.
Domatesli pilav ile servis yapabilirsiniz.

Creamy Mushroom&Tofu Soup (Kremali Mantarli Tofu Corbasi)

½ cup small type pasta
½ lb mushroom, sliced
½ lb firm tofu, cut in cubes
½ cup red bell pepper, chopped
2 cups milk
2-3 cups water
2 Tbsp flour
3 Tbsp canola oil
1 Tbsp soy sauce
1 tsp salt to taste

Take canola oil and flour in a large pot and saute over medium heat until the flour changes color. Add water and stir well to dissolve flour particles inside. Bring to a boil and stir in the pasta. Cook for about 5-6 minutes. And then, stir in mushrooms, tofu, soy sauce, peppers, milk and salt to taste. When it starts boiling, turn the heat low and simmer for about 10-15 minutes.
If desired serve with chives or parsley on top.

1 yemek kasigi soya sosu
1 tatli kasigi tuz

Buyuk bir tencerede kanola yagi ile unu renk degistirene kadar kavurun. Suyu ilave edin ve surekli karistirarak puruzsuz bir kivama getirin. Su kaynamaya baslayinca makarnalari ilave edin. Yaklasik 5-6 dakika pistikten sonra; mantar, tofu, biber, soya sosu, sut ve tuzu ilave edin. Corba kaynamaya baslayinca hafife alin ve yaklasik 10-15 dakika daha pisirin.
Servis tabagina alin ve arzuya gore uzerini maydanoz ya da yesil sogan ile susleyerek sicak servis yapin.

Mediterranean Homemade Pizza (Akdeniz Usulu Pizza)

½ cup mushroom, sliced
½ cup corn
1/3 cup onion rings
1 Tbsp olive, sliced
2 Tbsp pepper strips
4-5 tomato slices
½ cup mozzarella, shredded
2/3 cup feta cheese, crumbled

For the dough:
2 cups flour
1 package instant yeast (7 gr)
2 Tbsp olive oil
2 tsp salt to taste
½ cup lukewarm water

Dissolve the yeast in lukewarm water. Add all the dough ingredients in a mixing bowl and knead for about ten minutes. The dough should be soft. Then cover with a plastic wrap or towel and let it rest in a warm place for about 1-1 ½ hours.
Then, punch the dough and release air. Dust the counter with flour and flatten the dough as thin as you can get using a roller. Place it over an oven tray with baking paper. Pierce a couple of places with a fork. Cover and let it rise for ½ hour. Bake for 10 minutes at 400 F (200 C) oven.
Take it out, spread the basil pesto, and put the vegetables all over. Finally sprinkle with Mozzarella and feta cheese. Bake for an additional 15 minutes or until the top gets brown.
Serve hot/warm.

2/3 su bardagi beyaz peynir, ufalanmis

Hamur icin:
4 su bardagi un
1 paket instant maya (7 gr)
1 yemek kasigi zeytinyagi
2 tatli kasigi tuz
½ su bardagi ilik su

Mayayi ilik su icinde eritin. Una tuz, zeytinyagi ve suyu ilave edin. Kulak memesi yumusakliginda bir hamur elde edene kadar 8-10 dakika kadar yogurun. Uzerini strec film yada nemli bir havlu ile ortun. Yaklasik 1-1 ½ saat bekletin. Hamurun uzerinden bastirarak havasini indirin. Unladiginiz sert bir zemin uzerinde oklava ile acabildiginiz kadar ince acin. Yagli kagit serdiginiz firin tepsisine yerlestirin. Belirli araliklarla catal ile delikler acin. Yarim saat kadar kabarmasini bekleyin. Onceden isitilmis 200 C (400 F) firinda yaklasik 10 dakika pisirin.
Firindan cikarinca uzerine feslegenli pesto sosunu yayin. Sonra da sebzeleri yerlestirip, son olarak kasar ve beyaz peynirlerini serpistirin. Tekrar firina verin. Uzeri hafifce kizarana dek yaklasik 15 dakika daha pisirin.
Sicak servis yapin.

Fried Noodles with Vegetables (Sebzeli Cin Eristesi)

1 lb soba/Chinese/Ramen noodles
2-3 Tbsp canola oil
2-3 cloves garlic, chopped
1 onion, sliced
1-2 red chilies, seeded and shredded (optional)
1-2 carrots, thinly shredded/juvenile cut
1 cup sweet peas
1 cup button mushrooms, sliced
2-3 Tbsp soy sauce
1-2 Tbsp green onion, chopped to garnish
1 tsp salt to taste
¼ tsp ground pepper
1 ½-2 cups hot water

Heat oil in a wok or frying pan and stir fry garlic and onion for 1 minute or until opaque. Add chilies (optional) and carrots continue stirring for 2 minutes, and then add sweet peas and mushrooms with salt and pepper. Stir fry for 3-4 more minutes.
Add noodles with soy sauce, mix and toss, and then cook for 2-3 minutes. Add hot water and cook covered until the water is absorbed.
Garnish with green onions and serve warm/hot.

Kanola yagini buyuk bir tavada ya da orta boy tencerede isitin ve sarimsak ile sogani saydamlasana dek sote edin. Aci biberi ve havucu ilave edip, karistirmaya devam edin. Iki dakika sonra bezelye ve mantarlari da ilave edin. Tuz ve biber serpin. Yaklasik 3-4 dakika boyunca karistirarak pisirin. Sicak suyu ilave edin ve suyunu cekene dek kapagi kapali olarak pisirin.
Yesil sogan ile uzerini susleyerek sicak servis yapin.

Egg Noodles with Mushroom (Mantarli Eriste)

1 lb wide egg noodles
4 Tbsp butter
½ lb white mushrooms, sliced
1 shallot, finely chopped
2 Tbsp lemon juice
1 cup fresh parsley, chopped
½ cup parmesan cheese, grated
1 Tbsp salt to taste

Cook egg noodles until just tender in boiling salted water, about 7-8 minutes.
Saute sliced mushrooms and shallot in butter over medium heat until mushrooms are tender, about 4-5 minutes. Stir in lemon juice and parsley, turn the heat off.
Drain noodles and toss in with cooked mushrooms. Take over a serving plate and sprinkle with parmesan.

4 yemek kasigi tereyag
1 yesil sogan, ince dogranmis
2 yemek kasigi limon suyu
1 su bardagi maydanoz, dogranmis
½ su bardagi Parmesan peyniri, rendelenmis
1 yemek kasigi tuz

Eristeyi hafif tuzlu suda yumusayana dek yaklasik 7-8 dakika pisirin. Mantar ve yesil sogani tereyagi ile soteleyin. Mantarlar pisince ya da yaklasik 4-5 dakika sonra limon suyunu ve maydanozu ilave edin ve ocagin altini kapatin.
Ersitenin suyunu suzun ve mantarlar ile karistirin. Servis tabagina alin ve uzerine Parmesan peynirinden serpistirin.

Shrimp with Olive Oil (Zeytinyagli Karides Pilaki)

1 lb shrimp, peeled and deveined
1 onion, chopped
½ lb mushroom, washed
1 carrot, sliced
3 cloves of garlic, finely chopped
1/3 cup olive oil
2 tomatoes (1 cup), diced
1 big potato, diced
1 Tbsp salt to taste
½ tsp black pepper
½ cup hot water
Fresh parsley for garnish

Take olive oil and onion in a pot. Saute for about 3 minutes over medium heat. Stir in garlic and shrimp. Saute for 2 minutes and, add potatoes, carrots and mushrooms. Cook over medium heat for 4-5 minutes. Then, add tomatoes, salt and hot water.
Bring to a boil and turn the heat low. Simmer for about 20 minutes or until the potatoes are softened. Sprinkle with black pepper and garnish with parsley if desired.

1 sogan, dogranmis
250 gr mantar, yikanmis
1 havuc, yuvarlak dogranmis
3 dis sarimsak, kucuk dogranmis
1/3 su bardagi zeytinyagi
2 domates (1 su bardagi), dogranmis
1 buyuk boy patates, dogranmis
½ su bardagi sicak su
1 yemek kasigi tuz
1 cay kasigi karabiber
Suslemek icin taze maydanoz

Zeytinyagi ve sogani bir tencereye alin. Orta ateste 3 dakika kadar soteleyin. Sarimsak ve karidesi ilave edin. Yaklasik 2 dakika daha soteledikten sonra; patates, havuc ve mantari ilave edin. Orta ateste yaklasik 4-5 dakika cevirin ve domatesi ilave edin. Tuz ve sicak suyu da ekleyin.
Kaynamaya baslayinca altini kisin ve patatesler pisene dek yaklasik 20 dakika kadar pisirin. Uzerine karabiber serperek ve maydanoz ile susleyerek servis yapabilirsiniz.

Fried Milk-White Brittle Gill (Kizarmis Sutluce Mantari)

                           
1 lb milk-white brittle gill mushroom
½ tsp salt to taste
½ tsp paprika
½ cup flour
½ cup canola oil for frying

Wash milk-white brittle gill mushrooms and pat dry. Cut the stalks and salt them all. Sprinkle with paprika.
Take canola oil into a frying pan and let the oil get hot over high heat. Dip the mushroom caps and stalks into flour. Shake them to remove excess flour. Fry each side of caps and stalks. Take over a paper towel.
After frying them all, take over a serving plate and serve with any kind of greens you like (dill, arugula, etc.)

½ su bardagi kanola yagi, kizartmak icin

Sutluce mantarlarini yikayin ve kurulayin. Saplarini kesin ve hepsini tuzlayip uzerlerine kirmizi toz biber serpin.
Kizartma tavasina kanola yagini alin ve yuksek ateste yagin kizmasini bekleyin. Mantarlari una batirarak her yanini unlayin ve fazla unu silkeleyin. Kizgin yagin icinde mantarlari ve saplarini her taraflari kizaracak sekilde kizartin. Kagit havlu uzerine alin.
Butun mantarlar kizarinca, servis tabagina alin ve yesil yaprakli sebzeler ile (roka, dere otu gibi) susleyerek servis yapin.
