Stir Fried Ginger Shrimp in Spaghetti Bed (Spagetti Yataginda Zencefilli Karides)

 
1 lb spaghetti
¼ cup fresh parsley, chopped
1 Tbsp grated lemon zest
1 Tbsp olive oil

1 tsp fresh ginger, grated
1/3 cup celery, chopped
1 shallot, thinly sliced
1-2 garlic clove, minced
¼ tsp crushed red pepper
1 lb large shrimp, shelled and deveined

1/2 cup onion, thinly chopped
½ tsp salt
1 Tbsp sesame seeds
¼ cup low-sodium chicken broth
1/3 cup soy sauce
1 Tbsp lemon juice
 
Cook the spaghetti according to package directions. Drain; set aside. Meanwhile, combine the ½ Tbsp of the parsley, and 1 Tbsp of the zest in a small bowl; set aside.
Heat the oil in a large pan over medium heat. Add the shallot, onions, celery, garlic, and red pepper. Cook stirring until the shallots are soft, about 1 minute. Add the shrimp and the salt, and cook, over medium high heat, turning occasionally, until the shrimp are opaque, about 1-2 minutes. Stir in the broth, soy sauce, ginger and lemon juice. Bring to a boil and cook for 1 minute, then reduce the heat to medium. Stir in the remaining 3 Tbsp parsley, ½ Tbsp zest and sesame seeds, tossing to coat well; remove from the heat.  
Take spaghetti over the serving plate and top with the cooked shrimp. Or you may stir in the spaghetti to the shrimp while still over the heat. Then, transfer to a serving plate. Serve hot/warm.

Spagettiyi paketin uzerindeki tarife gore pisirin, suzun ve kenara alin. Bu sirada, ½ yemek kasigi maydanoz ve 1 yemek kasigi limon kabugu rendesini kucuk bir kapta karistirin ve kenara ayirin.
Buyuk  ve derin bir tavada zeytinyagini isitin ve sogan, kereviz sapi, sarimsak ve kirmizi pul biberi ilave edin. Yesil soganlar yumusayana dek 1 dakika kadar pisirin. Karides ve tuzu ilave edin ve orta ateste karistirarak karidesler yumusayip renk degistirene dek yaklasik 1-2 dakika pisirin. Sonra, soya sosu, zencefil, tavuk suyu ve limon suyunu ilave edin. Kaynayinca bir dakika kadar pisirin, orta atese alin. Geri kalan maydanoz, limon kabugu rendesi ve susamlari ilave edin ve iyice karistirin. Ocaktan alin. Pisen spagettiyi tabaga alin ve uzerine pisen karidesi ilave edin.  Ya da  spagettiyi karideslere ilave edin ve guzelce harmanlayin. Sonra, servis tabagina alin ve sicak/ilik servis yapin.

Italian Beef Lasagna (Italyan Usulu Kiymali Lazanya)

1 lb ground beef
1 onion, finely chopped
2 Tbsp canola oil
1 lb lasagna noodle
3 cups tomato sauce
3 cups crushed tomato
2-3 Tbsp tomato paste
1 lb ricotta cheese
½ lb mozzarella, shredded
1/3 cup Parmesan, shredded
4-5 cloves garlic, minced
1 tsp Italian spice mix
¼ cup sugar
1 Tbsp salt to taste

Cook ground beef with canola oil until the color changes and then stir in onions. Saute for 4-5 minutes over medium heat. Add tomatoes, tomato sauce and tomato paste, garlic, sugar and salt to taste. Cook for about 15 minutes over low heat until the mixture thickens. Stir in the spice and let it cool.
Boil lasagna noodles in lightly salty water according to the directions on the package. Rinse under cold water and drain. Preheat the oven to 375 F (190 C). Pour one ladle tomato mixture over a lasagna pan, spread evenly and arrange a layer of boiled lasagna noodles (usually 3 pieces side by side). Then, spread a ladle of tomato sauce over lasagna and spread some ricotta cheese to cover all over. Continue layering with the same order; lasagna, tomato sauce, ricotta cheese and lasagna until using the all lasagna. You can either leave some tomato sauce for the top or use it all in between the layers. After layering is done, use all the mozzarella and parmesan cheese to cover the top of lasagna. Cover the top with aluminum foil and bake for 35-45 minutes. You may remove the aluminum foil and broil the top at the last 5 minutes.
Let it rest for 10-15 minutes, slice in squares and serve hot/warm.

Kiymayi ve kanola yagini bir tavaya alin ve kiymanin rengi degisene dek pisirin. Sogani ilave edin ve orta ateste 4-5 dakika sote edin. Domates sosu, rendelenmis domates, domates puresi, sarimsak, seker ve tuzu ilave edin. Yaklasik 15 dakika kadar sos koyulasan dek kisik ateste pisirin. Italyan baharat karisimi ilave edin ve sogumaya birakin.
Lazanyayi ambalajin uzerindeki tarife gore hafif tuzlu suda haslayin, soguk su altina tutun ve suzun. Firini 190 C (375 F)’ye isitin. Lazanya tepsisinin dibine bir kepce domates sosundan yayin. Uzerine bir sira lazanya yayin (genelde 3 parca yanyana oluyor). Sonra, bir kepce domates sosunu uzerine yayin ve yuzeyini kaplayacak kadar lor/ricotta peyniri ile kaplayin. Ayni sira ile; lazanya, domates sosu, ricotta/lor peyniri ve lazanya olacak sekilde siralayarak geri kalan malzemeyi kullanin. Domates sosundan bir miktar uzerine koymak icin ayirabilir ya da hepsini ic malzeme olarak kullanabilirsiniz. Son olarak, rendelenmis kasar peyniri/mozzarella ve parmesan peynirini uzerine esit olarak yayin. Aluminyum folyo ile kaplayin ve yaklasik 35-45 dakika kadar pisirin. Arzu ederseniz firindan cikarmadan 5 dakika once, aluminyum folyoyu alip lazanyanin uzerini kizartabilirsiniz.
Servis etmeden once 10-15 dakika dinlendirin, dilimleyin ve sicak/ilik servis edin.

Baked Pasta with Ground Beef (Kiymali Firin Makarna)

500 gr Penne/Ziti
½ cup olive oil
2 lbs ground beef
1 large onion, chopped
1 cup tomato puree
3 Tbsp fresh parsley, chopped
2 eggs, beaten
½ tsp ground allspice
1 tsp ground cinnamon
1 cup grated Parmesan cheese
½ cup hot water
3 Tbsp breadcrumbs
1 Tbsp salt to taste
½ tsp ground black pepper to taste
½ cup unsalted butter (1 stick)

Heat olive oil in a large saute pan. Add ground beef and cook over medium heat until pink color disappears (about 5 minutes). Add onions and cook until they are translucent (about 5 minutes more).
Add tomato sauce, hot water, parsley, allspice, cinnamon, salt, and pepper. Allow sauce to simmer over low heat for 8-10 minutes. Meanwhile, boil the pasta in lightly salted water. Drain and rinse under cold water to cool them slightly. Stir in breadcrumbs to meat sauce to absorb excess liquid and remove from heat.
Melt butter in pasta pot and return cooked pasta to the pot. Stir in half of grated cheese, beaten eggs and toss gently. Use a roughly 12 x 18 x 3 inches deep pan/tray. Grease the bottom and sides of the pan with olive oil. Layer the bottom with half the pasta and press down so that they are somewhat flat. Add the meat filling in an even layer to the pasta. Top with remaining pasta and flatten top layer as best you can.
Pre-heat the oven to 350 F (180 C) while you prepare the bechamel sauce. Double up the ingredients. Click for the béchamel sauce recipe. Pour the bechamel over the pasta making sure to pour sauce down in to the corners as well. Sprinkle with remaining 1/2 cup of grated Parmesan cheese. Bake for approximately 35-45 minutes or until the top turns a nice golden color.

Zeytinyagini bir tavaya alin ve kiymayi ilave edin. Orta ateste kiyma renk degistirene dek kavurun (yaklasik 5 dakika). Soganlari ilave edin ve yaklasik 5 dakika kadar pisirmeye devam edin.
Domates sosu, sicak su, maydanoz, yenibahar, tarcin, tuz ve karabiberi ilave edin. Sosu yaklasik olarak 8-10 dakika pisirin. Bu sirada, makarnayi hafif tuzlu suda pisirin. Suyunu suzin ve soguk sudan gecirin. Kiymali domates sosuna ekmek kirintilarini ilave edin. Boylece sosun fazla suyu ekmek kirintilari tarafindan emilecektir. Atesten alin.
Tereyagini makarnayi hasladiginiz tencerede eritin ve makarnayi geri bosaltin. Rendelenmis Parmesan peynirinin yarisini ve cirpilmis yumurtayi ilave edin. Nazikce karistirin. Yaklasik olarak 7-8 cm derinliginde ve 30 x 45 cm boyutlarindaki tepsinin dibini ve kenarlarini yaglayin. Dibine makarnanin yarisini doseyin. Uzerinden hafifce bastirarak duzleyin. Kiymali domates sosu esit olarak uzerine dagitin. Geri kalan makarnayi ilave edin ve duzlestirin.
Beshamel sosu hazirlayin. Beshamel sos tarifi icin tiklayin. Hazilarken beshamel sosunu iki doz yapin. Makarnanin uzerine beshamel sosu dagitin, tepsini koselerinden dibe dogru dokmeyi ihmal etmeyin. Geri kalan Parmesan peynirini uzerine sepristirin. Onceden isitilmis 180 C (350 F) firinda yaklasik 35-45 dakika ya da uzeri hafice kizarana dek pisirin.

Eggplant & Tofu Topped Pasta (Patlican & Soya Peynirli Makarna)

1 lb any type of pasta, cooked
3 Tbsp canola oil
½ lb firm tofu, drained, cut into cubes
2 garlic cloves, minced
1 lb eggplant, peeled and cut into big cubes
1 red or green bell pepper, chopped
1/3 cup soy sauce
1 Tsp sugar
¼ cup fresh basil leaves, chopped
1 tsp salt to taste

Heat canola oil in a large nonstick frying pan over high heat, add tofu, and gently cook, turning tofu occasionally, until browned slightly, about 5 minutes. Use a slotted spoon to transfer tofu to a plate.
Add garlic to the same pan and cook. Stir in eggplant and bell pepper and cook until softened, stirring occasionally, 8 to 10 minutes. Add soy sauce, sugar, and salt to taste. Cook until heated through, another 2 minutes. Return tofu to pan and gently stir to coat. Remove from heat and stir in basil leaves.
Serve over pasta or rice if desired.

¼ su bardagi taze feslegen, dogranmis
1 tatli kasigi tuz

Kanola yagini genis bir tavaya alin. Tofuyu ilave edin ve kizarmaya baslayinca nazikce cevirin ve hafifce her yerleri kizarana dek yaklasik 5 dakika pisirin. Kizarmis tofuyu bir tabaga alin.
Ayni tavaya sarimsagi alin ve biraz pisirdikten sonra, patlican ve biberi ekleyin. Ara sira karistirarak yumusayana dek yaklasik 8-10 dakika pisirin. Soya sosunu, seker ve tuzu ilave edin. Ek olarak 2 dakika daha pisirin. Tofuyu tekrar tavaya alin ve diger malzemeler ile karistirin. Ocaktan alin ve feslegeni ekleyip karistirin.
Makarna ya da pilav uzerine koyarak servis yapin.

Fried Noodles with Vegetables (Sebzeli Cin Eristesi)

1 lb soba/Chinese/Ramen noodles
2-3 Tbsp canola oil
2-3 cloves garlic, chopped
1 onion, sliced
1-2 red chilies, seeded and shredded (optional)
1-2 carrots, thinly shredded/juvenile cut
1 cup sweet peas
1 cup button mushrooms, sliced
2-3 Tbsp soy sauce
1-2 Tbsp green onion, chopped to garnish
1 tsp salt to taste
¼ tsp ground pepper
1 ½-2 cups hot water

Heat oil in a wok or frying pan and stir fry garlic and onion for 1 minute or until opaque. Add chilies (optional) and carrots continue stirring for 2 minutes, and then add sweet peas and mushrooms with salt and pepper. Stir fry for 3-4 more minutes.
Add noodles with soy sauce, mix and toss, and then cook for 2-3 minutes. Add hot water and cook covered until the water is absorbed.
Garnish with green onions and serve warm/hot.

1 su bardagi mantar, dilimlenmis
2-3 yemek kasigi soya sosu
1-2 yemek kasigi yesil sogan, dogranmis (uzeri icin)
1 tatli kasigi tuz
½ cay kasigi karabiber
1 ½ -2 su bardagi sicak su

Kanola yagini buyuk bir tavada ya da orta boy tencerede isitin ve sarimsak ile sogani saydamlasana dek sote edin. Aci biberi ve havucu ilave edip, karistirmaya devam edin. Iki dakika sonra bezelye ve mantarlari da ilave edin. Tuz ve biber serpin. Yaklasik 3-4 dakika boyunca karistirarak pisirin. Sicak suyu ilave edin ve suyunu cekene dek kapagi kapali olarak pisirin.
Yesil sogan ile uzerini susleyerek sicak servis yapin.

Ground Beef Lasagna (Kiymali Lazanya)

12 pieces lasagna
½ lb ground beef
1 onion, chopped
2 Tbsp canola oil
2 cups tomatoes, crushed/petite diced
1 green pepper, chopped
1 tsp tomato paste
1 cup mozzarella cheese, shredded
½ cup hot water
1 Tbsp salt to taste
½ tsp black pepper

Boil the lasagna in salty water according to the instructions on the package (about 7-10 minutes). Drain.
Meanwhile, in a big skillet, take oil and ground beef, sauté over medium heat. Once the ground beef changes color, stir in onions. Saute for 3-4 minutes and add pepper and tomato paste. Cook for a few minutes. Then, add tomatoes, salt and hot water. Cook for about 5 minutes or until tomatoes are cooked. Sprinkle with black pepper and turn the heat off.
Prepare the béchamel sauce using the link. Spread 2 spoonful of tomato mixture over the lasagna tray or Pyrex. Then cover with 3 piece of lasagnas. Divide the tomato mixture in 3 equal parts and the béchamel sauce in 4 parts. Spread one part of béchamel over the first layer of lasagna, followed by the one part of tomato mixture. Then, cover with three pieces of lasagna. Do the same procedure until having 4 layers of lasagna. Spread the remaining béchamel sauce all over the top and cover with shredded mozzarella cheese.
Cover the whole tray with aluminum foil. Bake at 400 F (200 C) oven for 30 minutes. Then, take the aluminum out and continue baking uncovered for about 10-15 minutes or until it gets light brown.
Cut into pieces and serve hot/warm.

Yaklasik 3-4 dakika sote ettikten sonra, biber ve salcayi ilave edin ve pisirmeye devam edin. Son olarak tuzu, domatesi ve suyu ilave edin. Domatesler pisene dek yaklasik 5 dakika kisik ateste pisirin. Uzerine karabiber serpin ve ocaktan alin.
Besamel sosu linkteki tarife gore hazirlayin. Lazanya tepsisi ya da borcam tepsinin altina iki kasik domatesli kiymali harctan koyun ve dibine yayin. Geri kalan harci 3 esit miktara bolun. Besamel sosu 4 paya bolun. Uc parca lazanyayi tepsiye dizin, uzerine boldugunuz besamel sosun bir payini yayin. Onun da uzerine yine bir pay harci esit olarak dagitin. Tekrar 3 tane lazanya ile uzerini kapatin ve ayni sekilde besamel sos ve harctan yayarak toplam 4 kat lazanya olacak sekilde devam edin. Son lazanya tabakasini yerlestirdikten sonra geriye kalan son besamel sos payini esit olarak yuzeye yayin. Kasar peyniri esit olarak dagitin.
Aluminyum folyo ile tepsinin uzerini tamamen kapatin. 200 C (400 F) firinda 30 dakika kadar pisirin. Aluminyum folyoyu cikarin ve yaklasik 10-15 dakika uzeri acik olarak, kizarana dek pisirin.
Dilimleyin ve sicak servis yapin.

Egg Noodles with Mushroom (Mantarli Eriste)

1 lb wide egg noodles
4 Tbsp butter
½ lb white mushrooms, sliced
1 shallot, finely chopped
2 Tbsp lemon juice
1 cup fresh parsley, chopped
½ cup parmesan cheese, grated
1 Tbsp salt to taste

Cook egg noodles until just tender in boiling salted water, about 7-8 minutes.
Saute sliced mushrooms and shallot in butter over medium heat until mushrooms are tender, about 4-5 minutes. Stir in lemon juice and parsley, turn the heat off.
Drain noodles and toss in with cooked mushrooms. Take over a serving plate and sprinkle with parmesan.

Eristeyi hafif tuzlu suda yumusayana dek yaklasik 7-8 dakika pisirin. Mantar ve yesil sogani tereyagi ile soteleyin. Mantarlar pisince ya da yaklasik 4-5 dakika sonra limon suyunu ve maydanozu ilave edin ve ocagin altini kapatin.
Ersitenin suyunu suzun ve mantarlar ile karistirin. Servis tabagina alin ve uzerine Parmesan peynirinden serpistirin.

Baked Cheese Penne (Firinda Peynirli Kalem Makarna)

1 package Penne ~1lb
3 eggs
1 cup ricotta/ feta cheese
1 cup mozzarella, shredded
1 cup milk
½ tsp black pepper
½ tsp thyme
½ tsp crushed red pepper (optional)
½ cup fresh parsley, finely chopped (optional)
1 tsp salt to taste

Cook Penne in salty water according to the instructions on the package (for about 8-10 minutes). Wash under cold water and drain.
Beat eggs in a large bowl. Leave ½ cup of shredded mozzarella for top and mix the rest of the ingredients with the eggs. Gently stir this mixture in cooked Penne. Take it over a greased Pyrex or oven tray. Sprinkle with the remaining shredded mozzarella. Preheat the oven to 400 F (200 C) and bake for about 30-40 minutes or until it turns lightly brown.
Serve hot/warm.

Kalem makarnayi paketin uzerindeki talimatlara gore tuzlu suda yaklasik 8-10 dakika haslayin. Suyunu suzun ve soguk su altindan gecirin.
Genis bir kasede yumurtalari cirpin. Kasar peynirin yarisini ( ½ su bardagi) en sonunda uzerine koymak uzere ayirin. Geri kalan butun malzemeleri cirptiginiz yumurta ile karistirin. Bu karisimi haslanmis makarnaya ilave edin. Nazikce harmanlayin ve yaglanmis borcam ya da firin tepsisine bosaltin. Ayirdiginiz kasar peyniri uzerine serpin. Onceden isitilmis 200 C (400 F) firinda uzeri kizarana dek yaklasik 30-40 dakika pisirin.
Sicak servis yapin.

Turkish Style Pasta Salad (Turk Usulu Makarna Salatasi)

½ lb elbow pasta
¾ cup carrot, diced
¾ cup sweet peas
¾ cup corn
½ cup pickles, diced
1 Tbsp canola oil
3-4 Tbsp mayonnaise
3 Tbsp yogurt

Cook the elbow pasta with 1 Tbsp canola oil in salty water as directed in the package. Rinse and drain.
Meanwhile boil carrots and sweet peas for about 3-4 minutes. Immediately rinse under cold water and drain.
Mix yogurt and mayonnaise in a bowl and stir in carrots, sweet peas, corns and pickles. Mix them all. Combine with drained pasta.
Garnish with fresh parsley if desired.
Serve immediately, otherwise it dries out.

Couscous Salad (Kuskus Salatasi)

1 lb couscous
2-3 Tbsp extra virgin olive oil
2 medium carrots, cut into cubes
½ cup sweet peas
½ cup sweet corn
¼ cup parsley, finely chopped
1 Tbsp fresh mint, finely chopped (optional)

Cook couscous according to the directions over the package in salty water. Drain and stir in extra virgin olive oil.
Meanwhile, boil carrots and sweet peas in lightly salty water for about 2-3 minutes. Rinse under cold water and set aside to drain. Add the vegetables, parsley and mint into the couscous and mix. Serve either cold or warm.

Drape Pilaf (Perde Pilavi)

2 cups rice, washed and drained
~1 lb boneless chicken
1 cup almonds
1/3 cup pine nuts
2-3 Tbsp butter
1 Tbsp salt to taste
3 cups hot chicken broth

For the dough:
½ cup yogurt
½ cup oil
50 gr butter
1 egg
1 tsp baking powder
1-2 cups flour
A pinch of salt

Mix the dough ingredients and knead until it gets soft. Cover it to make airproof and set aside.
Boil the chicken and let it cool. Then, cut into small pieces. Keep the chicken broth to use later.
Rinse the rice and drain. Take rice and 2 Tbsp of butter to a pot. Saute over medium heat for about 3-4 minutes. Stir in 3 cups of chicken broth that you kept before. Add salt and cook over low-medium heat until rice becomes lightly undercooked.
Boil almonds for 2-3 minutes and peel the skins off. Grease the pot, Pyrex or cake pan with butter (whichever you’ll use to bake the drape pilaf). Leave it in the fridge for about 5-8 minutes, and then stick some of the almonds inside the container you’re using.
Divide the dough into one small and one big piece. Flatten the big one with a roller as big as to cover the container. Lay it out inside the container. Meanwhile, sauté pine nuts and remaining almonds with ½-1 Tbsp of butter, until they get light brown. Stir them and chicken into the cooked rice. Add black pepper and mix them all. Transfer them over the container covered with the dough. Flatten the small piece of dough as well and cover the top of the pilaf with this (like a lid). Grease the top with butter and bake in the preheated 400 F (200 C) oven till it gets lightly brown.
Let it rest for 5-10 minutes and turn the container upside down.
Serve warm/hot.

Hamur malzemelerini karistirin ve guzelce yogurarak yumusak bir hamur elde edin. Uzerini hava almayacak sekilde ortun ve dinlenmeye birakin.
Tavuk etini haslayin ve soguduktan sonra kucuk parcalara bolun. Suyunu pilavi pisirmek icin ayirin. Pirinci yikayip suyunu suzun. Tencereye tereyag ve pirinci alin. Orta ateste 3-4 dakika kavurun ve tavugu hasladiginiz sudan 3 su bardagi tavuk suyu ilave edin. Tuzunu ilave edin ve pirincler hafif diri kalacak sekilde pisirin.
Bademleri 10 dakika haslayin ve kabuklarini soyun. Pilavi yapacaginiz celik tencere, borcam ya da kek kalibini tereyagi ile yaglayin ve dolaba koyarak yagin donmasini saglayin. Sonra,
bademlerin bir kismini istediginiz sekilde kaba yapistirin.
Hamuru, biri kucuk biri buyuk olmak uzere iki parcaya bolun. Buyuk parcayi kullanacaginiz kabi kaplayacak ve yanlardan sarkacak sekilde acin. Yapistirilan bademlerin uzerine serin. Fistiklari ve kalan bademleri tereyaginda hafifce kizarana dek kavurun. Etleri ve kavrulmus bademleri pilava ilave edin. Karabiberi ekleyin ve hepsini guzelce harmanlayin. Yaydiginiz hamurun icine dokun. Kucuk hamur parcasini da acarak pilavin uzerine kapak gibi serin. Uzerini tereyagi ile yaglayin ve onceden isitilmis 200 C (400 F) firinda uzeri kizarana dek pisirin. Bir sure dinlendirin. Kabi ters cevirin ve sicak servis yapin.

Couscous with Vegetables (Sebzeli Kuskus)

1 lb couscous
3-4 tbsp olive oil
1 onion, chopped
1 green pepper, chopped
1 cup tomatoes, diced
½ cup sweet peas
1-2 cloves of garlic, finely chopped
1 tbsp parsley, chopped
1 tbsp salt to taste
4-5 cups chicken broth
Black pepper to taste

Take olive oil and onions in a saucepan and sauté over medium heat for about 3 minutes. Stir in pepper and sauté for 2 additional minutes. Add couscous and sauté 5 minutes or until they turn lightly pink. Stir in tomatoes, hot chicken broth and sweet peas. Cover and simmer over low heat for about 15 minutes. Finally, stir in salt, parsley, garlic and black pepper. Cook for 2-3 minutes and turn the heat off. Set aside for a while and serve warm.

Tomato Shrimp Scampi with Pasta (Domates Soslu Karidesli Makarna)

1 lb any kind of pasta
2 tbsp olive oil
4-5 garlic, minced
2 cups tomato, crushed
1/3 cup fresh parsley, finely chopped
1 lb shrimp, peeled and deveined
1 scallion, finely chopped (optional)
2 tbsp lemon juice
2 tbsp parmesan, grated (optional)
½ tsp sugar
1 tsp salt to taste

Cook pasta in salty water according to the instructions on the package. Drain and set aside.
Saute garlic with olive oil about 2 minutes over medium heat. Add tomato and cook for 5 minutes over low medium heat. Stir in lemon juice and sugar. Simmer for 3-4 minutes.
Stir in shrimp and scallions. Add salt to taste. Cook for about 4-5 minutes until shrimp turn pink and cooked through. Finally stir in parsley and parmesan cheese.
Take pasta over serving plates and pour the Tomato Shrimp Scampi over. Serve warm or hot.

Pasta Carbonara with Sujuk (Sucuklu Makarna Karbonara)

1 lb any kind pasta
2 tbsp extra-virgin olive oil
½-1 cup sujuk, cubed or sliced into small strips
4 garlic cloves, finely chopped
2 large eggs
1 cup freshly grated Parmesan cheese + more for serving
½ tsp ground black pepper
1/3 cup fresh parsley, chopped (optional)

Prepare the sauce while the pasta is cooking to ensure that the spaghetti will be hot and ready when the sauce is finished. It is very important that the pasta is hot when adding the egg mixture, so that the heat of the pasta cooks the raw eggs in the sauce.
Cook the pasta in salty boiling water for 8 to 10 minutes or until tender yet firm. Drain the pasta and reserve 1/2 cup of the starchy cooking water to use in the sauce if you wish.
Meanwhile, heat the olive oil in a deep skillet over medium heat. Add the sujuk and saute for about 3 minutes, until is crisp and the fat is rendered. Stir in the garlic and saute for less than 1 minute to soften.
Mix the hot pasta and the sujuk over the heat to keep hot. Beat the eggs and Parmesan together in a mixing bowl, stirring well to prevent lumps. Pour the egg/cheese mixture into the pasta, whisking quickly until the eggs thicken, but do not scramble (this is done off the heat to ensure this does not happen.) Thin out the sauce with a bit of the reserved pasta water, until it reaches desired consistency. Season the carbonara with ground black pepper and taste for salt. Take into warm serving plates and garnish with fresh parsley. Sprinkle with more cheese if desired.

Makarnayi tuzlu suda yaklasik 8-10 dakika haslayin. Bu sirada sosu hazirlayin ve makarna sicakken sosun hazir olmasi gerektigini unutmayin. Yumurtali sosu makarnaya ilave ederken, makarnanin sicak olmasi cok onemli, cunku cig yumurtali sos sicak makarna ile pisecektir.
Bir tavada, zeytinyaginda sucuklari orta ateste sote edin (yaklasik 3 dakika). Sarimsagi ilave edin ve bir dakika dolmadan atesten alin.
Haslanmis makarnayi suzun ve yaklasik ½ su bardagi pisirme suyunu daha sonra sosta kullanmak icin ayirin.
Makarna ve sucugu atesin ustunde guzelce karistirin. Yumurta ve parmesan peynirini bir kapta guzelce cirpin. Atesin altini kapatin ve sosu makarnaya hizlica karistirarak ilave edin. Yumurtali sos koyulasana dek iyice karistirin. Arzu ederseniz sosu biraz sulandirmak icin onceden ayirdiginiz makarna haslama suyunu ilave edin. Karabiber ve tuz oranini istediginiz gibi ayarlayin. Karbonarayi servis tabaklarina alin ve arzuya gore maydanoz ile susleyin. Uzerine Parmesan serpebilirsiniz.

Quinoa Pilaf (Kinoa Pilavi)

1 cup quinoa, rinsed
1 small onion, chopped
1 banana/green pepper, chopped
2 carrots, chopped
1 tbsp vegetable oil
2 cups hot vegetable/chicken broth
¼ cup fresh parsley, chopped (optional)
3-4 cherry tomatoes for garnish (optional)
1 tsp salt to taste

Heat oil in a saucepan over medium-high heat. Saute onions for about 5 minutes or until translucent. Stir in carrot and pepper, cook for 3 minutes more. Add quinoa and vegetable/chicken broth and salt to taste. Bring to a boil.
Reduce to simmer, cover and cook 15 to 20 minutes, or until the quinoa is tender and fluffy. Toss with parsley and garnish with cherry tomatoes if desired.
Serve hot or at room temperature.

Creamy Spinach&Mushroom Pasta (Kremali Ispanak&Mantarli Makarna)

300 gr any kind of pasta
2 tbsp olive oil
250 gr white mushrooms, sliced
6 tbsp cream cheese
1 cup frozen/fresh spinach leaves
1 ¼ cups vegetable or chicken stock
1 tbsp lemon juice
1 tsp dried oregano
Salt and pepper to taste

Cook pasta according to the instructions on the package. Drain and reserve ¾ cup of the cooking liquid.
Heat oil in a skillet, add mushroom, stir frequently and cook for 8 minutes. Stir in oregano, stock and lemon juice. Cook for 10-12 minutes until the sauce is reduced by half.
Stir in cream cheese, spinach. Cook over medium low heat for 3-5 minutes. Add reserved liquid, and cooked pasta. Stir well, season with salt and pepper.
Serve warm.

Zeytinyagini tavada isitin, mantarlari ilave edin ve sik sik karistirarak yaklasik 8 dakika pisirin. Mercankosk, sebze/tavuk suyu ve limon suyunu ilave edin. Sosun miktari yariya kadar azalana dek 10-12 dakika pisirin.
Krem peynir ve ispanagi ilave edin. Kisik ateste 3-5 dakika kadar pisirin. Onceden ayirdiginiz makarna suyunu ve pismis makarnayi ilave edin. Guzelce karistirin ve tuz, karabiber serperek sicak servis yapin.

Browned Couscous (Kavrulmus Kuskus)

1 lb couscous
5-6 cups hot water
3-4 tbsp margarine/butter/oil
1 tbsp salt to taste

Place butter/margarine/oil and couscous in a pot/saucepan and sauté over low-medium heat till they get lightly browned. Then, add hot water carefully and salt to taste. Bring to a boil and close the lid. Simmer in low heat till the couscous absorbs all the water.
Serve warm.

Pasta with Basil Pesto (Feslegenli Pesto Soslu Makarna)

1 lb any kind of pasta
~1 lt chicken stock/ chicken bouillon
1 tbsp salt to taste
½-2/3 cup Basil Pesto

Cook pasta according to the instructions on the package with one table spoon of salt. Use chicken stock instead of water or use a chicken bouillon. Drain and combine with Basil Pesto. If desired serve out the plates first and then just spread the basil pesto on top.
Serve Pasta with Basil Pesto warm.

Uzbek Pilaf (Ozbek Pilavi)

2 cups rice, washed and drained
½ lb beef, in chunks
2-3 tbsp canola oil
3 big carrots, julienne cut
1 onion, chopped
3 cups beef stock
1 tbsp salt to taste
¼ tsp cumin
¼ tsp black pepper

Cook beef chunks in 3-4 cups of water. Once they are about to get soft add 1 tsp of salt and continue cooking over medium heat (for about 20 minutes). Drain and leave aside the beef broth for using later.
In a large saucepan, take canola oil and onions. Saute over medium heat and stir in julienne cut carrots. Saute for more 2-3 minutes. Stir in cooked beef chunks, rice and spices. Cook for about 3-4 minutes.
Add 3 cups of beef stock, you leave aside before. Stir in the remaining salt and once it gets bubbling, close the lid. Cook over low heat till rice is cooked and absorbs all the water (for about 30 minutes).
Once it is cooked, rest for at least 15 minutes without opening the lid. Stir well before serving and serve Uzbek Pilaf warm.

Bir tencereye kusbasi dogranmis etleri alin ve 3-4 su bardagi suda pisirin. Etler yumusamaya baslayinca 1 tatli kasigi tuz ilave edin ve kisik ateste pisirmeye devam edin (yaklasik 20 dakika). Etin suyunu daha sonra kullanmak uzere ayirin.
Diger bir tencerede sogani kanola yagi ile orta ateste kavurun. Sonra julyen (kibrit copu seklinde) kesilmis havuclari ilave edip, 2-3 dakika daha kavurmaya devam edin. Pirinc, et ve baharatlarida ilave edip 3-4 dakika kavurun.
Ayirmis oldugunuz et suyundan 3 su bardagi et suyu ve geri kalan tuzu ilave edin. Hepsini guzelce karistirin ve kaynamaya baslayinca altini kisin. Kapagi kapali olarak pirincler pisip suyunu tamamen cekene dek pisirin (yaklasik 30 dakika).
Pistikten sonra en az 15 dakika boyunca kapagi kapali olarak dinlendirin. Servis yapmadan once guzelce karistirin ve sicak servis yapin.

European Style Couscous (Avrupa Usulu Kuskus)

1 lb couscous
1 tbsp salt to taste
3 tbsp butter
½ tsp paprika
1 cup crumbled feta cheese

Cook couscous according to the directions on the package. Preferably add 1-2 tbsp oil and 1 tbsp salt to the boiling water. Then, cook for about 10-13 minutes. Drain and set aside.
Meanwhile, melt butter in a small pan and once it sizzles stir in paprika and turn the heat off. Transfer couscous into serving plates and pour the butter mixture over. Sprinkle with feta cheese and serve warm.
