Panera's Broccoli Cheese Soup (Panera Brokoli Corbasi)

3 Tbsp butter
½ medium onion, chopped
¼ cup flour
2 cups milk
2 cups chicken stock
½ lb fresh broccoli, chopped
1 cup carrot, shredded
¼ tsp nutmeg
1-2 cups cheddar cheese, grated
 ½ cup corn starch
Salt and pepper

Sauté onion in butter over medium heat. Stir in flour and cook for 3-5 minutes. Stir constantly and add chicken stock and milk. Add broccoli and carrots. Simmer for 20-25 minutes. Add salt and pepper. Dissolve starch in water and add into the soup. Stir frequently until the soup thickens. If desired, can be puréed in a blender. Return to heat and add cheese. Stir in nutmeg.
Serve hot with bread.

Tereyagini tencerede eritin ve sogani orta ateste pembelesene kadar soteleyin. Unu ilave edin ve 3-5 dakika pisirin. Surekli karistirarak tavuk suyu ve sutu ilave edin. Brokoli ve havuclari ilave edin. Yaklasik 20-25 dakika kisik ateste pisirin. Tuz ve karabiber ilave edin. Bir miktar su icinde nisastayi cozun ve corbaya yavasca ilave edin. Corba koyulasana kadar surekli karistirin. Arzu ederseniz blendir ile pure haline getirin. Ocaga alin ve cedar peynirini ilave edin. Son olarak muskati ilave edin ve ocaktan alin. Yaninda ekmek ile sicak servis edin.

Rustic Broccoli Soup (Koy Usulu Brokoli Corbasi)

3 cups broccoli, cut in chunks
1 potato, cut in cubes
2 carrots, chopped
1 cup celery, chopped
3-4 Tbsp butter
2 Tbsp floor
2 cups milk
½ tsp black pepper to taste
1 Tbsp salt to taste
1 chicken bouillon (optional)

First place all the vegetables in a pot and cover with hot water (about 2-3 cups). Bring to a boil; add salt and boil for 8-10 minutes or until the vegetables are soft.
Meanwhile, melt the butter in a saucepan and stir in flour. Saute until the flour turns yellow. Slowly add milk, stirring constantly. Once thickens, stir it into the vegetable pot. If desired add chicken bouillon. Cook on low heat for about 5-7 minutes. Add black pepper. Serve either warm or hot.

Bu sirada bir tencereye tereyagini alin ve eritin. Unu ilave edin ve un sararana dek kavurun. Sonra, yavasca sutu ilave edin ve surekli karistirarak topaklanmasini engelleyin. Koyulasinca, atesten alin ve haslanmis sebzelerin uzerine karistirarak ilave edin. Arzuya gore tavuk bulyonu ilave edin. Dusuk ateste yaklasik 5-7 dakika pisirin. Karabiberi ilave edin. Sicak ya da ilik servis yapin.

Chicken Broccoli Soup (Tavuklu Brokoli Corbasi)

1 onion, finely chopped
2-3 tbsp canola oil
3 tbsp flour
1 lb broccoli
4 cups chicken broth
½ lb boneless chicken, cooked and cut into cubes
1 cup milk
1 tbsp salt to taste
½ tsp black pepper
1 cup cheddar cheese

Saute onions with canola oil over medium heat for 2 minutes. Stir in flour and cook stirring constantly for 2-3 minutes. Then, add chicken broth and milk. Bring to a boil.
Meanwhile wash broccoli and cut into small florets. Add into the chicken broth. Simmer for about 3 minutes. Add salt and pepper to taste. Stir in chicken and simmer for 2-3 additional minutes. Stir in cheddar cheese and serve hot.

Cedar peynirini koyun , karistirin ve sicak servis yapin.

Broccoli Casserole (Brokoli Guveci)

1 lb broccoli, chopped
1 can/cup cream of mushroom soup
1 onion, chopped
2 tbsp canola oil
1 cup cheddar cheese, shredded
¼ cup butter, melted
½ tsp black pepper
½ cup bread/cracker crumbs
1 tsp salt to taste

First cook the broccoli for 5-6 minutes in salty water. Saute onions with canola oil over medium heat. Drain cooked broccoli and stir them in. Saute for 4-5 minutes.
Transfer them into a Pyrex dish and add cream of mushroom soup, cheddar cheese and black pepper. Mix them all. Drizzle melted butter over bread/cracker crumbs and strew them all over the casserole.
Bake in the preheated 350 F (180 C) oven for 30 minutes or till the surface gets lightly brown.

½ su bardagi ekmek/kraker, kiriklanmis
1 tatli kasigi tuz


Once brokoliyi tuzlu suda 5-6 dakika kaynatin ve suyunu suzun. Soganlari kanola yaginda kavurun. Brokoliyi ilave edin ve 4-5 dakika orta ateste kavurun.
Brokoliyi borcam/firin tepsisine bosaltin. Uzerine mantar corbasi, cedar peyniri ve karabiberi ilave edin. Hepsini guzelce karistirin. Tereyagini kiriklanmis ekmek/krakerlerin uzerinde gezdirin ve tepsinin uzerine esit olarak serpistirin.
Onceden isitilmis 180 C (350 F) firinda uzeri kizarana dek yaklasik 30 dakika pisirin.

Broccoli Cheese Soup (Peynirli Brokoli Corbasi)

2 cups chicken stock
2 cups milk
½ cup flour
1 head broccoli (5-6 cups), chopped
3-4 tbsp butter
¼ tsp black pepper
2/3 tbsp salt to taste
300 gr processed cheese/mozzarella, shredded
2 cups cheddar cheese, in cubes or shredded

Melt the butter in a large pot over medium heat, and mix in the flour. Reduce heat to low, and cook, stirring constantly, about 2 minutes. Mix in the chicken stock and milk. Season with salt and pepper. Bring to a boil, reduce heat to low, and simmer about 10 minutes.
In another pot broil broccoli florets in lightly salted water. Cook 3-4 minutes, or until just tender. Remove from heat, drain, and set aside.
Gradually mix the processed cheese/mozzarella and cheddar cheese into the large pot until melted. Mix in the broccoli. Continue cooking about 5 minutes.
Serve Broccoli Cheese Soup warm.

300 gr beyaz peynir/kasar peyniri, rendelenmis
2 su bardagi Cheddar peyniri/kasar peyniri, rendelenmis

Buyuk bir tencerede tereyagini eritin ve orta ateste unu kavurun (2 dakika). Sonra tavuk suyunu ve sutu ilave edin. Surekli karistirarak unun sivi icinde esit olarak dagilmasini saglayin. Tuz ve karabiberi ilave edin. Kaynayinca hafif atese alin ve yaklasik 20 dakika kadar pisirin.
Bu sirada baska bir tencere az tuzlu suda brokoliyi yumusayana dek haslayin (yaklasik 3-4 dakika). Suyunu suzun ve biraz sogumasini bekleyin.
Peynirlerin hepsini corba karisimina ilave edin ve karistirarak erimesini saglayin. Sonra haslanmis brokoliyi ilave edin. Hafif ateste yaklasik 5 dakika daha pisirin.
Peynirli Brokoli Corbasi’ni sicak servis yapin.

Stir Fried Vegetables (Sebze Kokteyli)

1 zucchini/yellow squash, washed and chopped
1 cup broccoli florets
4-5 pieces of asparagus, cut in 3 pieces
1 cup carrots, chopped
1 red/yellow bell pepper, cut in strips
1 cup green beans, chopped
½ cup noodles (optional)
2 tbsp olive oil
2 tbsp soy sauce
¼ tsp ginger
¼ tsp black pepper
1/3 cup hot water
1 tsp salt to taste

Place all the ingredients, but the hot water and soy sauce in a wide skillet and sauté over medium heat for about 10-12 minutes. And then, stir in hot water and soy sauce. Cook over low heat till the noodles and vegetables are cooked.
Stir Fried Vegetables are very healthy and this is a very good alternative for vegetable lovers.

Sicak su ve soya sosu haric butun malzemeleri genis bir tavada orta ateste yaklasik 10-12 dakika kavurun. Sonra sicak su ve soya sosunu ilave edin ve kisik ateste sebzeler ve tel sehriye pisene dek pisirin.
Sebze kavurmasi, cok saglikli ve sebze severler icin cok lezzetli bir tariftir.

Broccoli Cauliflower Salad (Brokoli Karnibahar Salatasi)

1 bunch of broccoli, separated into florets
½ head of cauliflower, separated into florets
1 carrot, chopped in bite sizes
3 pairs of fresh parsley, chopped (optional)
½ tsp dry basil
2 tbsp extra virgin olive oil
1 tbsp yogurt
1 tbsp lemon juice
1 tsp salt

Boil the vegetables for about 4-5 minutes in salty water. Then wash under cold water and drain. Stir in parsley and transfer the vegetables in a salad plate.
In a small bowl, mix lemon juice, yogurt, olive oil and basil. And then, pour it all over the salad. Mix and serve.

Veggie Omelet (Sebzeli Omlet)

3 eggs, beaten
3-4 tbsp milk
3 tbsp butter
2/3 cup broccoli florets, cut into bite sizes
½ tomato, diced
2-3 button mushrooms, sliced
1 small onion, chopped finely
1 tsp salt to taste
¼ tsp black pepper



Place half of the butter and onions in a skillet and sauté over medium heat. Then stir in mushrooms and broccoli. Sauté till they become soft, then stir in tomatoes, half of the salt and cook for 1 minute. Transfer cooked vegetables in a bowl.
Meanwhile, beat the eggs and milk adding the rest of the salt. Melt the remaining butter in the skillet and pour the beaten egg-milk mixture. Over medium heat cook till the eggs are cooked. Then turn the omelet upside down and cook the other side.
Transfer the omelet in a serving plate and place the vegetables over. Sprinkle some black pepper. You can serve this way or you can fold the omelet over vegetables.

Tavaya tereyagin yarisini koyun ve once soganlari pembelesene dek orta ateste kavurun. Sonra mantarlari ve brokolileri ilave edip, yumusayana dek 3-4 dakika pisirin. Son olarak domatesi ilave edin ve tuzun yarisini serpip, biraz daha pisirin.Pisen sebzeleri bir kaseye alin.
Bir kasede yumurta geri kalan tuz ve sutu cirpin. Kalan tereyagini tavaya koyun ve cirpilmis yumurta-sut karisimini ilave edin. Orta ateste yumurta pisene dek pisirin ve alt ust ederek diger tarafini da pisirin.
Omleti servis tabagina alin ve sebzeleri uzerine dokun. Isterseniz karabiber serpebilirsiniz. Isterseniz boyle ya da omletin kenarindan kaldirip, ice dogru bukup sebzelerin uzerine kapatarak servis yapabilirsiniz.

Italian Broccoli with Tomatoes (Italyan Domatesli Brokoli)

3 cups of broccoli florets
2 tomatoes, cut in bite sizes
1 small onion, cut in circular shapes (optional)
½ cup mozzarella cheese, shredded
½ tsp salt to taste
1 tbsp extra virgin olive oil
½ tsp dried Italian seasoning
¼ tsp dried parsley flakes
½ cup water
1/8 tsp black pepper

Place broccoli and water in 2-quart microwavable casserole; cover. Microwave on High, about 5 to 8 minutes or until crisp-tender; drain. You can also cook them in the oven.
Stir in tomatoes, Italian seasoning, parsley, extra virgin olive oil, onions, salt and pepper. Microwave, uncovered, on High 2 to 4 minutes or until tomatoes are hot. Sprinkle cheese on top and microwave 1 minute or until cheese melts.

Mikrodalga icin uygun bir borcam kase ya da tepsiye brokoli ve suyu koyun. Uzerine kapak kapatarak, yuksek derecede 6-8 dakika boyunca, brokoliler yumusayana dek pisirin. Ayni islemi firinda da yapabilirsiniz.
Sonra suyu suzun ve domatesleri, sogani, baharatlari, zeytinyagi ve tuzu ilave edip, uzeri acik olarak yuksek derecede mikrodalgada 2-4 dakika daha pisirin.
Son olarak kasar peyniri uzerine serpin ve yine ayni derecede 1-2 dakika daha kasar eriyene dek pisirin.

Creamy Broccoli Soup (Kremali Brokoli Corbasi)

1 bunch of broccoli (250-300gr), washed and chopped
1 onion, chopped
1 potato, diced
1 cup water
3 cups milk
2 tbsp oil
1 tbsp salt
½ tsp black pepper
Shredded mozzarella/cheddar/parmesan for garnish

In a pot, sauté onions with oil over medium heat and then add chopped broccoli and potatoes. Saute them for 3-4 minutes.
Add one cup of water and boil. Simmer for 6-8 minutes over low heat till broccoli and potatoes are tender. Then stir in milk, salt and simmer for additional 10 minutes. After that, puree the soup with a blender until it is smooth (if you prefer to have bulk pieces of broccoli in the soup, do not use blender).
Sprinkle black pepper and shredded mozzarella/cheddar/parmesan on top and serve warm.

Sonra sut ve tuzu ilave edip yaklasik 10 dakika kadar daha kaynatin. Pisince blendir ile pure haline getirin (eger corbayi taneli seviyorsaniz blendir kullanmayin). Karabiberi ilave edin ve karistirin.
Kremali Brokoli Corbasini uzerine kasar peyniri rendesi serperek sicak servis yapin.

Broccoli Potato Salad (Patatesli Brokoli Salatasi)

½ bunch of broccoli
2-3 potatoes
1 carrot
1 egg, hard boiled
¼ cup mozzarella/cheddar/parmesan, shredded
1 tsp vinegar
½ tsp salt
2 tbsp extra virgin olive oil
1 tbsp lemon juice (optional)

Boil potatoes, carrot and broccoli until they are soft and tender with salt. Do not boil more than 6-8 minutes, otherwise they will disperse. Then place the boiled vegetables into cold water and let them cool. Cut the potatoes in cubes, carrots in circular shapes and trim the broccoli in florets. Place them in a salad plate with salt, vinegar, extra virgin olive oil and lemon juice (optional) and mix them all. Spread the cheese on top. Then slice the hardboiled egg into circular shapes or any shape you like. Place egg slices on the sides and serve.

Broccoli Salad (Brokoli Salatasi)

1 bunch of broccoli, washed, cut into bite sizes
1 clove of garlic, smashed or grated
2 tbsp extra virgin olive oil
1 tbsp lemon juice
½ tsp salt
1 tbsp mayonnaise (optional)
½ tsp sumac (optional)

In a small bowl mix the smashed/grated garlic, lemon juice, olive oil, salt and mayonnaise (optional). Place the broccoli in a salad plate and pour the mixture on it and mix. You can sprinkle some sumac on top (optional).
Try to consume broccoli without cooking. Cooking or boiling destroys the vitamins and minerals in it.

Broccoli Salad with Yogurt (Yogurtlu Brokoli Salatasi)

A bunch of broccoli
1 cup of yogurt
1 tbsp olive oil (optional)
1 tsp salt
1 clove garlic

Place the broccoli in a large pot and fill with water till the broccoli is covered. (you can add 2 tbsp of lemon juice to get rid of the smell of broccoli.)
Add ½ tsp salt and boil the broccoli for 3-4 minutes. Do not over boil, because the broccoli would fall apart.
Meanwhile , smash or grate the garlic.
Put the yogurt, garlic and ½ tsp of salt in a bowl and mix. If you like you can add 1 tbsp of olive oil.
When the broccoli is done, drain and let it cool. If the pieces of broccoli are large, you can cut them in smaller pieces.
Place them in a serving plate and cover it with the yogurt mixture.
