Okra Stew with Olive Oil (Zeytinyagli Bamya)

1 lb okra, fresh or frozen
1 cup tomato, diced/crushed
1 onion, sliced in strips
2 tbsp olive oil
½ cup hot water
1 tsp salt to taste
1 tsp lemon juice
½ tsp sugar
Black pepper

In a pot, sauté onions with olive oil over medium heat. Stir in tomato and sauté for 2 minutes. Then, add okra and cook for about 3-4 minutes or until okra changes color. Stir in hot water and bring to a boil. Add salt, sugar and lemon juice.
Close the lid and cook over low heat until the okra gets soft (about 15-20 minutes). Do not over cook, otherwise okra will come apart.
Sprinkle black pepper on top and serve Okra Stew with Olive Oil warm or cool.

1 sogan, piyazlik dogranmis
2 yemek kasigi zeytinyagi
½ su bardagi sicak su
1 tatli kasigi limon suyu
1 tatli kasigi tuz
1 cay kasigi seker
Karabiber

Bir tencerede, zeytinyagi ile sogani orta ateste kavurun. Sonra domatesi ilave edin ve 2 dakika kadar kavurun. Bamyayi ilave edin ve 3-4 dakika ya da rengi degisene dek kavurun. Sonra sicak suyu ilave edin ve kaynamaya baslayinca tuz, limon suyu ve sekeri ilave edin.
Kapagini kapatin ve kisik ateste bamyalar yumusayana dek pisirin (yaklasik 15-20 dakika). Fazla pisirip bamyalarin parcalanmasina izin vermeyin.
Servis yapmadan once uzerine karabiber serperek servis yapin.

Fava

1 lb fresh/frozen/dry fava beans, peeled
1 onion, chopped
1 carrot, chopped
½ tsp sugar
2 tbsp olive oil
1 tsp salt to taste

Garnish:
3-4 tbsp extra virgin olive oil
½ lemon’s juice
1/3 cup fresh dill, chopped

If you are using dry fava beans soak them in water and leave overnight. Place all the ingredients in a pot and bring to a boil. Then simmer until fava beans get soft (15-20 minutes for frozen/fresh fava beans and 60-80 minutes for dry fava beans).
Drain and mix with a blender until forming a smooth paste like mixture. Adjust the salt amount as you like. Transfer to a 1-2 inch deep serving dish or bowl. Flatten the surface. Then cover and leave it in the fridge for 1 hour to cool. Then cut into square or diamond shapes. Drizzle with olive oil and lemon juice and put the dill all over.

Uzerine:
3-4 yemek kasigi sizma zeytinyagi
½ limon suyu
1/3 su bardagi dereotu, dogranmis


Kuru bakla ici kullaniyorsaniz bir gece onceden suda islatin ve gece boyunca bekletin. Butun malzemeleri bir tencerede kaynatin ve kaynayinca hafif atese alip, baklalar yumusayana dek pisirin (kuru bakla icin 60-80 dakika, taze ve dondurulmus bakla icin 15-20 dakika).
Suyunu suzun ve blendir ile pure haline getirin. Tuz miktarini isteginize gore ayarlayin. 4-5 cm derinliginde bir servis tepsisine ya da kasesine aktarin uzerini duzlestirin ve buzdolabinda 1 saat kadar sogutun. Sonra kare ya da baklava dilimi seklinde dilimleyin. Uzerine sizma zeytinyagi ve limon suyu dokun. Son olarak dere otunu yayin ve servis yapin.

White Cabbage with Rice (Lahana Dible)

½ head medium white cabbage, chopped
1 onion, chopped
½ cup rice, washed and drained
1 ½ cup hot water
2-3 tbsp butter/olive oil
1 tsp salt to taste
½ tsp paprika (optional)

Saute the onions with butter/olive oil over medium heat. Then, stir in the chopped white cabbage. Stir occasionally till the cabbage decreases in volume.
Stir in the rice, salt, paprika (optional) and hot water. Cover the lid and cook over low heat till the rice is cooked (for about 15-20 minutes). Stir occasionally.
Let the White Cabbage with Rice cool for a while and serve warm with yogurt.

½ su bardagi pirinc, yikanip suzulmus
1 ½ su bardagi sicak su
2-3 yemek kasigi tereyag/zeytinyagi
1 tatli kasigi tuz
1 cay kasigi toz kirmizi biber (istege bagli)

Once tereyag/zeytinyagi ile sogani bir tencerede orta ateste kavurun. Daha sonra dogramis oldugunuz lahanayi ilave edin ve ara sira karistirarak lahananin hacimce azalmasini bekleyin.
Pirinci ilave edip bir kac defa daha karistirin. Tuz, kirimizi toz biber (istege bagli) ve sicak suyu ilave edin karistirip, kapagini kapatin. Kisik ateste pirincler pisene dek ara sira karistirarak yaklasik 15-20 dakika pisirin.
Biraz iliklasmasi icin bekleyin, yaninda yogurt ile servis yapabilirsiniz.

Butter Beans (Kuru Fasulye)

White Beans is a very traditional and common dish in Turkey, especially when it is served with pilaf and pickles. Turkish people just love this dish.

2 cups white/butter beans
2 onions, chopped
2 tbsp oil
1 tbsp tomato paste
1 dried red pepper/green pepper, chopped
½ tsp baking soda (optional)
¼ tsp chili red pepper flakes (optional)
1 tsp salt to taste

Wash white beans, place them in a pot and cover with water (approximately 1 inch above the beans). Leave them in water overnight or for at least 12 hours. The next day, cook them with the same water till beans get soft over low heat. You could add baking soda to have softer beans quicker. When they are soft, add 1 tsp of salt.
In another pot, sauté onions with oil for 2-3 minutes over medium heat. Stir in peppers and tomato paste. Saute for 2-3 minutes and add chili red pepper flakes (optional). Transfer the cooked white beans over them. Simmer for 10-15 minutes over low heat.
Serve White Beans, with pilaf or over pilaf. Also cacik and pickled vegetables are good to go with this recipe.

P.S: You can also use 2 cans of white beans and skip the instructions given in the first paragraph, but it may not be as delicious as the one with dried beans. Also, you can use or mix kidney beans, black beans or pinto beans for this recipe.

Kuru fasulye Turkiye’ nin geleneksel yemeklerinden biridir. Ozellikle pilav ve tursu ile servis yapildiginda genelde butun Turklerin sevdigi bir yemektir.

2 su bardagi kuru fasulye
2 sogan, dogranmis
2 yemek kasigi sivi yag
1 yemek kasigi domates salcasi
1 kurutulmus kirmizi biber/yesil biber, dogranmis
1 cay kasigi karbonat (istege bagli)
½ cay kasigi kirmizi pul biber (istege bagli)
1 tatli kasigi tuz

Aksamdan kuru fasulyeyi yikayin ve bir tencereye koyup uzerini 2-3 parmak kaplayacak kadar su ile doldurun. En az 12 saat bekletin. Sonra ayni su ile kuru fasulyeler yumusayana dek pisirin. Isterseniz 1 cay kasigi karbonat ilave edip fasulyelerin daha kisa surede yumusamasini saglayabilirsiniz. Pismeye yakin 1 tatli kasigi tuz ilave edin.
Diger bir tencerede yag ile sogani kavurun. Sonra salcayi ve biberleri ilave edip 2 dakika daha kavurun. Kirmizi pul biberi ilave edin (istege bagli).
Sonra pisirdiginiz kuru fasulyeleri soganlarin bulundugu tencereye transfer edin. Hafif ateste 10-15 dakika kadar pisirin.
Kuru Fasulyeyi pilav ile ya da pilav ustu servis yapin. Yaninda cacik ya da tursu ile guzel olur.

Broccoli Potato Salad (Patatesli Brokoli Salatasi)

½ bunch of broccoli
2-3 potatoes
1 carrot
1 egg, hard boiled
¼ cup mozzarella/cheddar/parmesan, shredded
1 tsp vinegar
½ tsp salt
2 tbsp extra virgin olive oil
1 tbsp lemon juice (optional)

Boil potatoes, carrot and broccoli until they are soft and tender with salt. Do not boil more than 6-8 minutes, otherwise they will disperse. Then place the boiled vegetables into cold water and let them cool. Cut the potatoes in cubes, carrots in circular shapes and trim the broccoli in florets. Place them in a salad plate with salt, vinegar, extra virgin olive oil and lemon juice (optional) and mix them all. Spread the cheese on top. Then slice the hardboiled egg into circular shapes or any shape you like. Place egg slices on the sides and serve.

1 havuc
1 yumurta, sert haslanmis
½ cay bardagi kasar peyniri, rendelenmis
1 tatli kasigi sirke
1 cay kasigi tuz
2 yemek kasigi sizma zeytinyagi
1 yemek kasigi limon suyu


Patates, havuc ve brokoliyi tuzlu suda haslayin. En fazla 6-8 dakika haslayin, cok haslarsaniz sebzelerin sekilleri bozulur. Sonra haslanan sebzeleri soguk suya koyun ve sogutun. Patatesleri kup seklinde, havuclari yuvarlak kesin ve brokoliyi dalalrindan kucuk parcalara ayirin.
Salata tabagina alin, tuz, sirke, sizma zeytinyagi ve limon suyunu (istege bagli) ilave edip hepsini harmanlayin. Uzerine rendelenmis kasari serpin. Haslanmis yumurtalari yuvarlak ya da istediginiz sekilde dilimleyin ve tabagin yanlarina dizerek servis yapin.
