Home Made Yogurt (Evde Yogurt Yapimi)

4 cups milk
1-2 tbsp plain yogurt

Please keep in mind that the most important points in making yogurt are adding sample yogurt to the milk at the right temperature and keeping it warm for a while. The exact temperature for fermentation is between 42-45 C.
Place the milk in a pot and heat it until the boiling point. If you like creamy yogurt, simmer the milk a few more minutes to let the water evaporate more. Take the milk from the stove and wait about 10-12 minutes. Occasionally, dip your finger into the milk and try to count till 7. If you can bear the heat till 7, it means the milk is ready for fermentation. Don’t let the milk cool more than that since if the milk is not hot enough, fermentation won’t take place.
In a small bowl, mix 1 tbsp of yogurt with lukewarm milk by using a wooden spoon (don’t use metal spoons). Add this mixture to the milk and stir with the wooden spoon. Then, pour the milk to the containers and close their lids. (see the picture) The best container for making yogurt is glass. To keep the milk warm, cover the container completely with a cloth and then cover again with a blanket or something similar. Make sure to cover tightly to keep the milk warm for a while. (see the picture) Generally, it takes 5-6 and 7-8 hours for fermentation in summer and winter, respectively. After fermentation, take yogurt out of its cover without shaking. Store in the fridge for at least 3-4 hourr before serving.
I often make yogurt in the evenings and it stays covered all night. I remove the covers in the morning.

Kucuk bir kasede bir yemek kasigi yogurdu bir miktar ilik sut ile iyice karistirirak hazirlamis oldugunuz bir litre ilik sute ilave edin ve tahta kasik ile karistirin. Sutu mayalamak icin kullanacaginiz kaba dokup, kapagini kapatin. (resime bakin) Sut mayalamak icin en ideal cam kaplardir. Sutun sicakligini muhafaza etmek icin, etrafini kalin bir ortu ile sarin, bir sofra bezine sarip uzerini de bir battaniye ile sikica ortebilirsiniz. (resime bakin)Yazin mayalanma suresi; 5-6 saat iken, kisin 7-8 olabilir. Mayalanma islemi gerceklestikten sonra yogurdu fazla sarsmadan ortuden cikarin ve buzdolabinda en az 3-4 saat bekletin.
Ben genelde yogurdu aksamlari mayaliyorum, gece boyunca mayalaniyor ve sabah aciyorum.

Creamy -Strained Yogurt (Suzme Yogurt)
To make a creamy yogurt, you can just strain it.Place a paper towel or coffee filter over a strainer then, place the strainer inside a bowl. Place some yogurt on paper towel and fold the edges of the paper towel over the yogurt.

Leave in the fridge at least 5-6 hours. You'll see the juice in the bottom of the bowl and creamy yogurt over the paper towel.

Suzme yogurt yapmak icin sadece bir tel suzgec ve kagit havlu/kahve filtresi ya da tulbente ihtiyaciniz var.

Once tel suzgecin uzerine tulbent/kagit havlu/kahve filtresi koyun. Sonra tel suzgeci bir kasenin icine koyun. Suzgecin uzerine yogurdu koyun ve en az 5-6 saat boyunca buzdolabinda bekletin. Yogurdun suyu kasenin dibinde toplanacak ve suzgecin uzerinde suzme yogurdunuz hazir olacak.

Cheese Stuffed Canape (Peynirli Kanape)

5 slices of white/wheat bread
1/3 cup milk
½ cup shredded mozzarella/parmesan/cheddar cheese
½ cup crumbled feta cheese (optional)
1 egg, beaten
2 tbsp oil
¼ tsp paprika
1/4 tsp basil
A pinch of salt

Mix all the ingredients, except bread, in a bowl. Cut the bread slices in four pieces. Then spread the mixture evenly on the surface of small bread slices.
Preheat the oven to 390-400 F (190-200 C) and bake until the cheese melts and turns a little golden brown.
Serve warm. Canapes are good to go at breakfasts and brunches.

Ekmek haric butun malzemeleri bir kasede karistirin. Ekmek dilimlerini dort parcaya kesin ve uzerlerine karisimdan esit olarak yayin.
Onceden 180-200 C (350-400 F) ye isittiginiz firinda peynir eriyip kanapelerin uzeri hafif kizarana dek pisirin.
Sicak servis yapin. Kanepeler kahvalti ve cay saatinde cok guzel olur.

Cocoa Milk (Kakaolu Sut)

1 cup milk, hot
1 tsp cocoa and 1 tbsp sugar / 2 tbsp hot chocolate

Heat the milk and in a mug or glass place the cocoa and sugar and mix them well. If you are using hot chocolate mix, just put it in the mug/glass. Then add the hot milk and stir well in order to make a homogeny drink.

Cocoa milk is a very easy and fun way to make your kids drink milk.

Sutu isitin ve bir bardaga kakao ve sekeri koyup karistirin. Sicak cikolata tozu kullaniyorsaniz bardaga koyun. Sonra uzerine sicak sutu ilave edin ve homojen bir icecek elde etmek icin guzelce karistirin.

Turkish Coffee With Milk (Sutlu Turk Kahvesi)

1 tsp Turkish Coffee
1 tsp sugar
1 Turkish coffee cup of milk (see the picture)

Put the coffee and sugar in the coffeepot (cezve: see the picture) and stir. Fill the Turkish coffee cup with milk, leaving some room at the top and add the milk to the cezve.
Put it on high heat and stir with a spoon to let the sugar dissolve and coffee to mix with the water. When it starts being foamy on the surface, take some of the foam with a spoon and put into the coffee cup. (It is for a foamy Turkish coffee) When bubbles form on top and starts rising, take the cezve off the stove and pour the coffee into the cup.
There would be grinds at the bottom of the cup, do not drink this part.
You can serve the Turkish coffee with a glass of water and a piece of chocolate.

Turkish Coffee has been an important part of Turkish Culture. There is an old saying about it. “Bir fincan kahvenin kirk yil hatiri vardir”(A cup of Turkish coffee will be remembered for forty years.”) It means that the person who offers the coffee is to be respected and remembered for a long time for the sake of his offering. For many people, the most enjoyable side of Turkish coffee is when another person reads the coffee grains, which is a kind of fortune telling.

Seker ve kahveyi cezveye koyup, karistirin. Kahve fincani ile suyu olcup cezveye ilave edin. Yuksek ateste, sekerin erimesi ve kave ile sutun butunlesmesi icin biraz karistirin. Cezvenin uzerine kopuklenmeye basladigi zaman, kasik yardimiyla biraz kopuk alip, kahve fincanlarina paylastirin. (Kahvenin bol kopuklu olmasi icin)
Yuzeyi kaynamaya ve kabarmaya basladigi zaman, cezveyi ocaktan alin ve kahve fincanlarina paylastirin.
Fincanin dibinde kahvenin telvesi birikecektir, bu kisim icilmez.
Turk kahvesini bir bardak su ve bir parca cikolata ile servis edebilirsiniz.

Balcan Style Cabbage (Balkan Lahana Asi)

½ medium cabbage, chopped
1 onion, chopped
½ cup whole grain bulgur
2 cups whole milk
1 tbsp salt
3 tbsp oil
Garnish:
3 tbsp butter
1 tsp red pepper
A pinch of salt

In a large pot, place the oil and chopped onions. Sauté for 4 minutes over low-medium heat. Then add the chopped cabbage. Cook for 5 minutes over high medium heat stirring occasionally.
Then add the milk and salt. When the bubbles come out on the surface, add the bulgur and stir. Over low heat, cook for about 25 minutes, till the bulgur is soft.
For garnish, place the butter in a small frying pan and melt over the low-medium heat. When it starts spitting, stir in the red pepper and salt. Pour on the cabbage.
It is a very healthy dish. Cabbage contains so much fiber and whole grain bulgur is very nutritious.

Bir tutam tuz

Buyuk bir tencereye sivi yagi ve dogranmis soganlari koyun. Dusuk ateste 4 dakika boyunca soganlari kavurun. Sonra dogranmis lahanayi ilave edin. Orta ateste ara sira karistirarak 5 dakika boyunca pisirin.
Sonra tuzu ve sutu ilave edin. Yuzeyde baloncuklar olusmaya baslayinca; bulguru ilave edin ve karistirin. Kisik ateste yaklasik 25 dakika boyunca, bulgur pisene dek pisirin.
Kucuk bir kizartma tavasinda tereyagini dusuk ateste eritin. Cizirdamaya baslayinca, kirmizi biberi ve tuzu karistirarak ilave edin. Lahana asinin uzerine dokun.
Lahana asi cok sagliklidir. Lahana lif acisindan cok zengindir ve bulgur besleyici bir gidadir.

Turkish Rice Pudding (Sutlac)

1/2 cup rice (short or whole grained), washed, drained
1 cup water
2 cups whole milk
8 tbsp sugar
1 egg yolk, whisked
1 tbsp corn starch, heaping
½ tsp vanilla extract
Cinnamon
Pomegranate pieces

In a pot place the water and, washed and drained rice. Put them over high-medium heat. After the bubbles come out, close the lid and turn on low-medium heat. Stir occasionally with a wooden spoon. Simmer till small amount of water remains.
Add the milk, whisked egg yolk and sugar and stir. Meanwhile, dissolve the starch in 3 tbsp of milk and add it to the rice pudding. Stir constantly. When you see the bubbles on the surface, add the vanilla extract and cook for 2-3 minutes over low heat.
This recipe makes 4 bowls of Turkish rice pudding. But you can make it 6 servings by using smaller bowls.
With a ladle, pour the Turkish rice pudding into small glass or porcelain bowls. Let them cool in the fridge for 1-2 hours.
Before serving sprinkle some cinnamon or pomegranate pieces on top.
NOTE: Do not sprinkle cinnamon right after you pour the rice pudding to the bowls. This would let the microorganisms grow fast at the contact surface of cinnamon and the hot surface of the rice pudding which may lead to foodborne diseases. Make sure you sprinkle the cinnamon just before serving the cooled rice pudding.

Orta boy bir tencereye suyu ve yikanmis suzulmus pirinci koyup yuksek ateste kaynamasini bekleyin. Kaynadiktan sonra kapagini kapatip dusuk atese alalim. Tahta kasik ile ara sira karistirin. Tencerenin dibinde biraz su kalana dek kaynatin.
Sutu, cirpilmis yumurta sarisini ve sekeri ilave edin ve karistirin. Bu arada nisastayi 3 yemek kasigi sut ile cozundurun.Sutlacin icine ilave edin.Surekli karistirin ve yuzeyde baloncuklar olusmaya baslayinca vanilya esansini ilave edin ve kisik ateste 2-3 dakika pisirin.
Bu tariften 4 kase sutlac cikar. Ama daha kucuk kaseler kullanarak 6 porsiyon yapabilirsiniz.
Bir kepce yardimiyla sutlaci kucuk cam veya porselen kaselere bosaltin. Buzdolabinda 1-2 saat sogutun.
Servis yapmadan once sutlaclarin uzerine bir miktar tarcin ya da nar tanesi serpistirebilirsiniz.
NOT: Tarcini sutlaci kaselere doker dokmez koymayin. Cunku bu sayede mikroorganizmalar tarcin ve sicak sutlacin temasiyla; yuzeyde hizla ureyecektir ve bu da gida zehirlenmesine yol acabilir. Tarcini koyarken sutlacin soguduguna ve servisten hemen once olmasina dikkat edin.

Turkish Pancakes (Krep)

1 ½ cup all purpose flour
2 cups milk
2-3 eggs
1 tsp salt
¼ tsp baking soda
1 cup oil (for cooking)

In a bowl mix all the ingredients (except oil) with a mixer until the mixture becomes smooth and even. Leave the mixture in the fridge for 2 hours for a better taste.
Use a large Tefal pan to cook the pancakes. Put the pan on a high-medium heat and let it become hot for 2-3 minutes. Then put approximately 1tsp of oil (shallow fry) and pour the mixture with a ladle. You can adjust the amount as you like (see the picture).
When you see the bubbles on the sides you can turn the pancake upside down. You will see it will change to golden brown color. Then, when you cook both sides, it’s done. Continue adding 1 tsp oil and cooking all the pancakes.
You can use cream cheese, jams or jellies, tomato paste, olive paste, honey or whatever you like to spread on the pancakes. Then roll them up and serve warm (see the picture).
Turkish pancakes are good to go at breakfasts.

Genis bir kasede sivi yag haric butun malzemeleri bir mikser ile putursuz bir kivam elde edene dek karistirin. Daha lezzetli krepler elde etmek icin karisimi 2 saat bozdolabinda bekletin.
Krepleri pisirmek icin genis bir Tefal tava kullanin. Tavayi yuksek ateste 2-3 dakika kizdirin. Az yagda (1 tatli kasigi sivi yag) bir kepce krep karisimini pisirin. Krep hamurunun miktarini isteginize gore ayarlayin (resime bakiniz). Her iki tarafini da kizarana dek pisirdiginiz zaman, krebiniz hazirdir.
Krebin kenarlarinda baloncuklar olusmaya baslayinca, krebin alt ust edebilirsiniz. Kizararak renk degistirdigini goreceksiniz. Tavaya 1 tatli kasigi sivi yag ilave ederek krepleri pisirmeye devam edin.
Kreplerin icine surmek icin; krem peynir, degisik cesitte recel, marmelat, bal, pekmez, zeytin ezmesi, salca veya ne isterseniz kullanabilirsiniz (resime bakiniz). Surdukten sonra dolayip sicak servis yapin.
Krepler kahvaltida cok guzel olur.

Bechamel Sauce (Besamel Sos)

2 cups milk
2 tbsp flour
5-6 tbsp butter/margarine
1-2 eggs, beaten
½ tsp salt to taste
A pinch of black pepper (optional)

Place the butter in a pot and melt. Add the flour and sauté over low heat till its color change to yellow. Then, add milk and stir continuously to make Béchamel sauce smooth and even. If flour particles do not dissolve use a blender. Add salt and cook for 3 minutes. Finally stir in the egg and sprinkle some black pepper if you like.
You can adjust the amount of béchamel sauce according to the recipe you cook.

Bir tencerede margarini eritin ve unu ilave edip kisik ateste un sararana kadar kavurun. Sonra sutu ve tuzu ilave ederek, surekli karistirin. Eger un parcalari sutun icinde dagilmazsa blendir ile krema kivamina getirin. Kisik ateste 3 dakika kadar pisirin. Son olarak, cirpilmis yumurtayi ilave edin ve guzelce karistirin. Isterseniz biraz karabiber serpebilirsiniz.
Hazirladiginiz besamel sosunun miktarini, kullanacaginiz yemek tarifine gore azaltip cogaltabilirsiniz.
