Chicken with Tomato Sauce (Domates Soslu Tavuk)

This is a special dish, which my husband cooked for me on this Valentine's Day.
4 chicken thighs/drumsticks
4 potatoes, peeled and sliced circularly
1 cup tomato, crushed
½ cup water
1 tsp tomato paste
1 tbsp salt to taste
¼ tsp basil
¼ tsp black pepper
1 tbsp oil

Boil the chicken thighs in salty water, till they become soft. Then let them cool and place potatoes over a greased Pyrex or baking tray. Sprinkle 1 tsp salt and mix them.
Preheat the oven to 400 F (200 C) and bake potatoes for 20-25 minutes till they are soft. Meanwhile in a small saucepan, sauté tomato paste with oil. And then stir in crushed tomatoes, remaining salt and water. Simmer for 2-3 minutes over low heat. Sprinkle the spices and turn the heat off.
Take the potatoes from the oven and arrange the boiled chicken over them. Then pour the tomato sauce all over. Place them back to oven and bake for 15 minutes.
Serve Chicken with Tomato Sauce warm.

Bu tarifi esim Sevgililer Gunu'nde benim icin yapti ve cok da guzel oldu.
4 tavuk sarma/but/incik
4 patates, soyulup yuvarlak dogranmis
1 su bardagi domates, rendelenmis/pure
½ su bardagi su
1 tatli kasigi domates salcasi
1 yemek kasigi tuz
½ cay kasigi kuru feslegen
½ cay kasigi karabiber
1 yemek kasigi sivi yag

Tavuklari tuzlu suda haslayin. Sonra patatesleri yaglanmis borcam/firin tepsisine aktarin ve 1 tatli kasigi tuz serpip harmanlayin.
Onceden isitilmis 200 C (400 F) firinda patatesler yumusyana dek yaklasik 20-25 dakika pisirin. Bu sirada bir tencerede sivi yag ile domates salcasini kavurun. Sonra domatesi geri kalan tuzu ve suyu ilave ederek, kisik ateste 2-3 dakika pisirin. Baharatlari ilave edin ve atesten alin.
Firindan cikardiginiz patateslerin uzerine haslanmis tavuklari yerlestirin ve uzerine hazirladiginiz domates sosunu dokun. Tekrar firina koyarak 15 dakika kadar pisirin.
Sicak servis yapin.

Vegetable Cheese Canape (Sebzeli Peynirli Kanape)

6-8 slices of white/wheat bread, sliced crosswise
½ cup milk
1 cup feta/Mexican crumbling cheese, crumbled
½ cup mozzarella/parmesan/cheddar cheese, shredded
2 eggs, beaten
½ cup tomato, diced finely
½ cup green peppers, chopped finely
A pinch of salt to taste
Any kind of spice you like

Mix all the ingredients, except bread, in a bowl. Then spread the mixture evenly on the surface of crosswise cut bread slices.Preheat the oven to 350-400 F (180-200 C) and bake until the cheese melts and turns a little golden brown.Serve warm. Canapes are good to go at breakfasts and brunches.

Istediginiz cesitte baharat

Ekmek haric butun malzemeleri bir kasede karistirin. Capraz kesilmis ekmek dilimlerinin uzerine karisimdan esit olarak yayin.
Onceden 180-200 C (350-400 F) ye isittiginiz firinda peynir eriyip, kanapelerin uzeri hafif kizarana dek pisirin.Sicak servis yapin.
Kanepeler kahvaltilarda ve cay saatinde cok guzel olur.

Asparagus with Walnuts (Cevizli Kuskonmaz)

½ lb asparagus, washed and cut into 1 inch pieces
½ cup crushed walnuts
2 tbsp butter
½ tsp salt
1 tbsp lemon juice
A pinch of black pepper

Boil asparagus for 2-3 minutes, then wash under cold water and drain.
In a skillet, melt the butter and roast walnuts for about 2-3 minutes over medium heat. Then stir in broiled asparagus and add salt. Stir fry asparagus for about 3-4 minutes.
Let asparagus cool, then sprinkle black pepper and drizzle lemon juice all over.
Asparagus with walnuts is ready to serve.

¼ kg kuskonmaz, yikanmis ve 2,5 cm uzunlugunda kesilmis
½ su bardagi ufalanmis ceviz
2 yemek kasigi tereyag
1 cay kasigi tuz
1 yemek kasigi limon suyu
Bir tutam karabiber

Kuskonmazlari 2-3 dakika haslayin. Sonra soguk suyun altina tutun ve suzun.
Teflon bir tavada tereyagini eritip cevizleri 2-3 dakika orta ateste kavurun. Sonra haslanmis kuskonmazlari ve tuzu ilave edin. Ara sira karistirarak 3-4 dakika boyunca kavurun.
Biraz soguyunca uzerine limon suyu ve karabiber serperek servis yapin.

Yogurt Soup (Yogurt Corbasi)

2/3 cup yogurt, whisked
3 tbsp flour, heaping
6-7 cups chicken stock/water and chicken bouillon
3 tbsp oil/butter
1 tbsp salt to taste
Mint/paprika/black pepper

In a pot, sauté flour and oil/butter over medium heat, till the mixture turns to a light brown color. Then add chicken stock or water and chicken bouillon. Stir continuously and before it boils, stir in yogurt and salt. Simmer over low heat for 5-8 minutes.
For the garnish in a small frying pan, melt butter or place oil over low-medium heat. When it starts spitting, stir in the paprika and turn the heat off. Pour over the soup. Also another alternative is to sprinkle dried mint or black pepper on top.
Serve Yogurt Soup warm.

Bir tencerede un ve yagi/tereyagi orta ateste un kahverengimsi olana dek kavurun. Sonra tavuk suyu ya da su ve tavuk bulyonu ilave edin ve surekli karistirin. Kaynamadan once yogurdu ve tuzu ilave edin. Kaynayana dek surekli karistirin. Kaynadiktan sonra hafif ateste 5-8 dakika pisirin.
Uzeri icin 1 yemek kasigi sivi yag/tereyag ile 1 cay kasigi toz kirmizi biberi tavada kizdirip, susleyebilirsiniz. Kuru nane ya da karabiber serperek de servis yapabilirsiniz.

Broccoli Cauliflower Salad (Brokoli Karnibahar Salatasi)

1 bunch of broccoli, separated into florets
½ head of cauliflower, separated into florets
1 carrot, chopped in bite sizes
3 pairs of fresh parsley, chopped (optional)
½ tsp dry basil
2 tbsp extra virgin olive oil
1 tbsp yogurt
1 tbsp lemon juice
1 tsp salt

Boil the vegetables for about 4-5 minutes in salty water. Then wash under cold water and drain. Stir in parsley and transfer the vegetables in a salad plate.
In a small bowl, mix lemon juice, yogurt, olive oil and basil. And then, pour it all over the salad. Mix and serve.

Butun sebzeleri yaklasik 4-5 dakika tuzlu suda haslayin. Soguk suyun altina tutun ve suzun. Sonra maydanozu ilave edin ve salata tabagina alin.
Kucuk bir kasede limon suyu, zeytinyagi, feslegen ve yogurdu karistirin. Salatanin uzerine dokun ve harmanlayip servis yapin.

Baked Anchovy (Firinda Hamsi)

1 lb anchovy, washed and drained
1 big onion, cut in half and sliced
2 tomatoes, diced/crushed
2-3 pairs if parsley, chopped
1-2 cloves of garlic, minced (optional)
2 tbsp lemon juice
2 bay leaves, torn in quarters
3 tbsp olive oil
A pinch of black pepper
1 tsp salt to taste
½ cup water

Cut the heads off anchovy and gut them. Then wash them under cold water and drain. Sprinkle salt and drizzle half of the olive oil, then mix them all. Place the anchovy over a Pyrex dish.
Preheat the oven to 400 F (200 C) and bake for 10-12 minutes. Meanwhile in a skillet, sauté onions with the rest of the olive oil. Then stir in parsley and tomatoes. Cook for 1-2 minutes over medium heat. Finally stir in black pepper, water and garlic. Turn off the oven and stir in lemon juice.
Take the anchovy out of the oven and place the bay leaves evenly over. Then pour the tomato sauce all over the anchovy. Place it back to the oven and bake for 10-15 minutes. If you like well fried anchovy, then turn to broil for the last 3-4 minutes.
Serve Baked Anchovy with lemon wedges and Turkish Coleslaw.

2 defne yapragi, dorde bolunmus
3 yemek kasigi zeytinyagi
Bir tutam karabiber
1 tatli kasigi tuz
1 cay bardagi su

Hamsilerin kafalarini kesin ve iclerini temizleyerek soguk su altinda yikayin. Tuzlayin ve zeytinyaginin yarisi ile hepsini harmanlayarak yaglayin. Firin tepsisine tek sira halinde dizin.
Onceden isitilmis 200 C (400F) firinda yaklasik 10-12 dakika pisirin. Bu arada bir tavada geri kalan zeytinyagi ile soganlari hafif kavurun ve maydanozla domatesi ilave edin. 1-2 dakika orta ateste cevirin. Son olarak sarimsak, su ve karabiberi ilave edin, ocaktan alin. Limon suyunu ilave edin ve karistirin.
Firindan cikardiginiz hamsilerin uzerine defne yapraklarini esit olarak yerlestirin ve domatesli sosu uzerine yayin. Tekrar firina koyun ve 10-15 dakika daha pisirin.
Eger daha cok kizarmasini isterseniz, son 3-4 dakika ustten kizartma yapabilirsiniz.
Firinda hamsiyi limon dilimleri ve lahana salatasi ile servis yapabilirsiniz.

Apple Cookie Rolls (Elmali Kurabiye)

This is one of my favorite cookies and with this recipe I won the cookie category of Food Science Bake Contest:)
1 cup yogurt
1 cup sugar
250 gr margarine/butter, melted
1/2-1 cup canola oil
1 egg
1 tsp baking powder
7-8 cup flour
½ cup confectioner’s sugar for garnish
Filling:
3 apples, peeled, cored and shredded
3 tbsp sugar
1 tsp cinnamon
½ cup crushed walnuts/pecans

Mix all the dough ingredients, but flour and confectioner’s sugar. Add flour slowly and form a non sticking dough. Knead for 4-5 minutes. Then, cover the dough with a clean cloth and leave for resting.
Meanwhile, cook shredded apples with sugar for about 10 minutes over low-medium heat. When they turn to brown stir in cinnamon and walnuts/pecans.
Cut the dough into 3 pieces and flatten each dough with a roller about 1/10 inch thickness. Then cut it into 8 pieces (see the picture). Put 1 tsp filling on the wide side and roll it up (see the picture). Use baking paper over the baking tray or grease it. Then place the apple cookie rolls on the tray and preheat the oven to 350F (180 C). Bake them for about 30 minutes, till they get light brown. Make sure not to over bake.
Sprinkle confectioner’s sugar on tops and serve.

1 su bardagi yogurt
1 su bardagi seker
250 gr margarin/tereyag, eritilmis
1/2-1 su bardagi sivi yag
1 yumurta
1 tatli kasigi kabartma tozu/1 paket kabartma tozu
7-8 su bardagi un
1 cay bardagi pudra sekeri
Ic Malzeme:
3 elma, soyulmus, ici temizlenmis ve rendelenmis
3 yemek kasigi seker
1 tatli kasigi tarcin
1 cay bardagi ufalanmis ceviz

Pudra sekeri ve un haric butun malzemeleri karistirin. Unu yavas yavas yedirerek elinize yapismayacak bir hamur elde edin. Yaklasik 4-5 dakika yogurun. Hamurun uzerini temiz bir bez ile ortun ve dinlenmeye birakin.
Diger yandan bir tencerede rendelenmis elma ve sekeri 10 dakika kadar orta ateste pisirin. Elmalar kahverengiye donecektir. Pisince ocaktan alin ve tarcin ile cevizi ilave edin.
Hamuru 3 parcaya ayirin. Her parcayi oklava ile ½ cm kalinliginda acin. 8 esit parcaya kesin (resime bakiniz). Genis taraflarina 1 tatli kasigi ic malzemeden koyarak rulo seklinde sarin (resime bakiniz). Kurabiyeleri yaglanmis ya da yagli kagit koydugunuz firin tepsisine aralikli olarak dizin.
Onceden isitilmis 180C (350 F) firinda kurabiyeler hafif pembelesene dek yaklasik 30 dakika pisirin. Firindan cikarinca uzerine pudra sekeri serpin ve servis yapin.
