Olive Pogaca (Zeytinli Pogaca)

Special thanks to my dear sister for this nice recipe!

3 Tbsp butter/margarine
9 Tbsp plain yogurt
6 Tbsp canola oil
1 ½ tsp baking soda
1 ½ tsp salt
1 egg white (yolk goes for top)
2-3 cups flour
Nigella/poppy seeds for top

Filling:
1 ½ cup sliced black olives

Place all of the dough ingredients in a wide and deep bowl. Mix them all and knead with your hands till the dough gets elastic, non sticky and smooth. Grab egg size pieces of dough and flatten with your palms. Place one tea spoonful of black olives in the middle. Give it an oval shape close it up on top as you see in the picture. Stick the edges pressing with your fingers.
Place the pogacas over a greased oven tray and glaze with egg yolk. Sprinkle with nigella/poppy seeds and bake at preheated 350 F (180 C) oven till they get light brown.

Corek otu/ hashas tohumu
2-3 su bardagi un

Ic malzeme:
1½ su bardagi dilimlenmis siyah zeytin

Genis ve derince bir kaba butun hamur malzemelerini alin. Elastik ve kulak memesi yumusakliginda, puruzsuz bir hamur elde edene dek yogurun.
Hamurdan yumurta buyuyklugunde parcalar koparin elinizle acarak oval sekil verin. Ortasina bir tatli kasigi zeytin koyun ve uzunlamasina kenarlarini yukarida birlestirerek sekildeki gibi parmaklarinizla sikistirarak kapatin.
Pogacalari yaglanmis firin tepsisine aralikli olarak dizin ve uzerlerine ayrimis oldugunuz yumurta sarisini surun. Corek out/hashas tohumu serpin ve onceden isitilmis 180C (350F) firinda uzerleri kizarana dek pisirin.

Minestrone Soup (Sebzeli Italyan Corbasi)

1 onion, chopped
2 carrots, roundly sliced
1 zucchini, chopped
3-4 Tbsp olive oil
1 green/banana pepper, chopped
2 cups tomatoes, crushed
1 ½ cup beans (any kind), cooked
½ cup green beans, cut into bite sizes
1 cup small shaped pasta
½ cup celery stalks, chopped
4 cups hot water (chicken broth)
1/3 cup parsley, chopped (optional)
½ tsp dried basil
1 Tbsp salt to taste
Black pepper to taste

Saute onions and garlic with olive oil for about 3-4 minutes. Stir in carrots, zucchini, celery stalks, peppers and green beans. Cook for 8-10 minutes. Add hot water/chicken broth, beans, tomatoes, pasta, and basil. Add salt and pepper to taste. Bring to a boil.
Reduce heat; simmer, uncovered, for 15 minutes. Stir in parsley. Cook 5 minutes longer or until past is tender. Serve hot.

Karabiber

Soganlari zeytinyaginda yaklasik 3-4 dakika boyunca sote edin. Sonra, havuc, kabak, kereviz saplarini, biberleri ve yesil fasulyeleri ilave edin. Yaklasik 8-10 dakika boyunca ara sira karistirarak pisirin. Tavuk suyu/sicak suyu ilave edin. Kuru fasulye, domates, makarna ve feslegeni ekleyin. Tuz ve karabiberi atin, kaynamaya birakin.
Kisik ateste uzerini kapatmadan 15 dakika kadar pisirin. Maydanozu ilave edin ve 5 dakika ya da makarnalar pisene dek pisirin. Sicak servis yapin.

Poached Eggs in Yogurt (Cilbir)

1 cup plain Turkish yogurt at room temperature
1-2 cloves garlic, minced
2 eggs
2-3 cups water
1 Tbsp vinegar
1 tsp salt to taste
For top:
1 Tbsp butter
1 tsp paprika/cayenne pepper

Add garlic and half of the salt into yogurt and whisk. Take over a serving plate.
Meanwhile, take water, vinegar and the remaining salt in a small pot. Bring to a boil. Then, reduce heat to medium and gently crack the eggs into water side by side. Close the lid and cook for about 3-4 minutes. Take the poached eggs out and place over the yogurt on the serving plate.
In a small frying pan, melt the butter and stir in paprika/cayenne pepper. Once it gets spitting, turn the heat off and pour all over the eggs.
Serve hot/warm.

Yogurda sarimsagi ve tuzun yarisini ilave edin. Cirpin ve servis tabagina alin.
Kucuk bir tencerede suyu geri kalan tuz ve sirke ile kaynatin. Kaynadiktan sonra orta atese alin. Dikkatlice yumurtalari yan yana kaynar suyun icine kirin. Kapagini kapatin ve yaklasik 3-4 dakika boyunca pisirin. Pisen yumurtalari tencereden alin ve servis tabagindaki yogurdun icine alin.
Kucuk bir tavada tereyagini kizdirin. Kirmizi toz/aci biberi ilave edin. Kopurmeye baslayinca ocaktan alin ve yumurtalarin uzerinde gezdirin.
Sicak servis edin.

Zucchini and Spinach Soup (Ispanakli Kabak Corbasi)

3 Tbsp olive oil
2 cloves garlic, chopped
1 onion, roughly chopped
1 big potato, cut into cubes
3 zucchinis, chopped
4 cups hot water/vegetable stock
3-4 cups fresh spinach leaves
½-1 lemon’s juice
1 Tbsp salt
Yogurt, olive oil & mint for top

Saute onion and garlic with olive oil over medium heat for about 3-4 minutes. Stir in potatoes and zucchinis. Cook for about 3-4 minutes stirring occasionally. Add salt and hot water/vegetable stock. Simmer for about 15 minutes or until the potatoes get softer.
Add spinach and cook for 2-3 minutes. Then, blend it smooth with a hand blender. Add lemon juice and take to the serving plates. Pour a dollop of yogurt, drizzle some olive oil and add a pinch of mint if desired.
Serve hot/warm.

Uzeri icin yogurt, zeytinyagi & nane

Sogan ve sarimsagi zeytinyaginda yaklasik 3-4 dakika orta ateste kavurun. Kabak ve patatesleri ilave edin. Yaklasik 3-4 dakika daha kavurduktan sonra, tuz ve sicak suyu ilave edin. Yaklasik 15 dakika kadar patatesler pisene dek kisik ateste pisirin.
Ispanagi ilave edin ve 2-3 dakika sonra, blendir ile guzelce cirpin. Limon suyunu ilave edin. Karistirin ve servis tabaklarina alin. Uzerine cirpilmis yogurt, zeytinyagi ve nane koyarak sicak servis yapin.

Mediterranean Homemade Pizza (Akdeniz Usulu Pizza)

½ cup mushroom, sliced
½ cup corn
1/3 cup onion rings
1 Tbsp olive, sliced
2 Tbsp pepper strips
4-5 tomato slices
½ cup mozzarella, shredded
2/3 cup feta cheese, crumbled

For the dough:
2 cups flour
1 package instant yeast (7 gr)
2 Tbsp olive oil
2 tsp salt to taste
½ cup lukewarm water

Dissolve the yeast in lukewarm water. Add all the dough ingredients in a mixing bowl and knead for about ten minutes. The dough should be soft. Then cover with a plastic wrap or towel and let it rest in a warm place for about 1-1 ½ hours.
Then, punch the dough and release air. Dust the counter with flour and flatten the dough as thin as you can get using a roller. Place it over an oven tray with baking paper. Pierce a couple of places with a fork. Cover and let it rise for ½ hour. Bake for 10 minutes at 400 F (200 C) oven.
Take it out, spread the basil pesto, and put the vegetables all over. Finally sprinkle with Mozzarella and feta cheese. Bake for an additional 15 minutes or until the top gets brown.
Serve hot/warm.

1/3 su bardagi sogan halkasi

2 yemek kasigi biber, dogranmis
4-5 dilim domates
½ su bardagi kasar peyniri, rendelenmis
2/3 su bardagi beyaz peynir, ufalanmis

Hamur icin:
4 su bardagi un
1 paket instant maya (7 gr)
1 yemek kasigi zeytinyagi
2 tatli kasigi tuz
½ su bardagi ilik su

Mayayi ilik su icinde eritin. Una tuz, zeytinyagi ve suyu ilave edin. Kulak memesi yumusakliginda bir hamur elde edene kadar 8-10 dakika kadar yogurun. Uzerini strec film yada nemli bir havlu ile ortun. Yaklasik 1-1 ½ saat bekletin. Hamurun uzerinden bastirarak havasini indirin. Unladiginiz sert bir zemin uzerinde oklava ile acabildiginiz kadar ince acin. Yagli kagit serdiginiz firin tepsisine yerlestirin. Belirli araliklarla catal ile delikler acin. Yarim saat kadar kabarmasini bekleyin. Onceden isitilmis 200 C (400 F) firinda yaklasik 10 dakika pisirin.
Firindan cikarinca uzerine feslegenli pesto sosunu yayin. Sonra da sebzeleri yerlestirip, son olarak kasar ve beyaz peynirlerini serpistirin. Tekrar firina verin. Uzeri hafifce kizarana dek yaklasik 15 dakika daha pisirin.
Sicak servis yapin.

Savoy Cabbage with Rice (Pirincli Kivircik Lahana)

1 savoy cabbage, chopped
1 onion, chopped
2 carrots, shredded
2/3 cup rice
2½ cup milk
2 Tbsp olive oil
1 Tbsp salt to taste

For garnish:
1 Tbsp butter
½ tsp paprika
A pinch of salt

Saute onion with olive oil in a pot. Stir in shredded carrots and sauté for additional 2-3 minutes. Add chopped savoy cabbage and cook for about 5 minutes until it shrinks. Add rice and salt. Give a stir. Finally, add milk and bring to a boil. Then, close the lid and simmer over low heat until rice and cabbage is cooked (for about 30-40 minutes).
For the garnish, melt and heat the butter in a small frying pan. Stir in paprika and salt. Turn the heat off.
Serve with the paprika-butter sauce drizzled on top.

1 cay kasigi kirmizi toz biber
Bir tutam tuz

Sogani tencereye alin ve zeytinyaginda soteleyin. Ardindan rendelenmis havuclari ilave edin ve 2-3 dakika daha kavurun. Sonra, dogranmis lahanayi ilave edin. Ara sira karistirarak lahanalarin hacmi azalana dek 5 dakika kadar pisirin. Tuz ve pirinci ilave edin. Son olarak, sutu ekleyin ve kaynamasini bekleyin. Kaynamaya baslayinca altini kisin. Kapagi kapali olarak pirinc ve lahana pisene dek 30-40 dakika kisik ateste pisirin.
Kucuk bir kizartma tavasinda tereyagini eritin ve cizirdamaya baslayinca kirmizi toz biber ve tuzu ilave edin. Karistirip altini kapatin.
Servis tabagina aldiginiz yemegin uzerinde tereyagli sosu gezdirin.
