Leeks with Chicken Liver (Tavuk Cigerli Pirasa)

2 pairs of leek (~1 lb), washed
1-½ lb chicken liver, washed, drained and chopped
1 tomato, diced/ ½ cup crushed tomato
3 tbsp oil (preferably canola)
½ cup hot water
1 tsp salt to taste
½ tsp paprika
A pinch of black pepper (optional)

Place chicken livers in a pot and cook them over medium heat, till all the water evaporates. Meanwhile cut leaks in 4 lengthwise and chop. Add oil to livers and sauté for 2-3 minutes. Then stir in leeks and sauté for 3 minutes, stirring occasionally.
Stir in tomatoes, salt, paprika and hot water. Close the lid and cook over low heat till the leeks are cooked (for about 10 minutes). You can sprinkle some black pepper on top before serving.
Leeks with Chicken Liver is good to go with yogurt, cacik and pickles.

Bir tutam karabiber (istege bagli)

Tencereye cigerleri koyun ve orta ateste suyunu cekene dek kavurun (3-4 dakika). Bu sirada yikanmis pirasalari uzunlamasina dorde kesip, dograyin. Cigerler suyunu cekince siviyagi ilave edin ve 2 dakika kadar daha kavurun. Ardindan dogranmis pirasalari ilave edin ve yine orta ateste pirasalar kavrulana dek karistirarak pisirin (3 dakika).
Domates, tuz, toz kirmizi biber ve sicak suyunu ilave edin. Tencerenin kapagini kapatin ve kisik ateste pirasalar pisene dek yaklasik 10 dakika pisirin. Servis yapmadan once uzerine karabiber serpebilirsiniz.
Cigerli Pirasayi yogurt, cacik ya da tursu ile servis yapabilirsiniz.

Chicken Macaroni in the Oven (Firinda Tavuklu Makarna)

1 package of any type macaroni
1 chicken breast
1 cup mozzarella/cheddar, shredded
1-2 cups cream of chicken soup
1 cup milk
2 cups water
1 egg, beaten
1 tbsp salt to taste
½ tsp black pepper

Wash chicken breast under cold water and boil with 2 cups of water. Then chop the boiled chicken breast in bite sizes and leave the chicken stock to use later.
Cook the macaroni 2-3 minutes less than the minutes given by the directions on the package for an al dante texture. Drain the macaroni and transfer into a wide Pyrex. Mix with chopped chicken.
Meanwhile in a pot, cook milk and cream of  chicken soup. Simmer until the mixture thickens. Adjust the thickness by adding water. Stir in beaten egg and black pepper. Then pour the mixture over the macaroni and mix them all. Spread shredded mozzarella/cheddar over.
Preheat the oven to 400F (200 C) and bake for about 20-30 minutes till the surface turns light golden brown.
Serve Chicken Macaroni in the Oven warm.

Tavuk gosgusunu yikayin ve 2 su bardagi su ile haslayin. Sonra pismis tavuk gogsunu kucuk lokmalar halinda dograyin. Suyunu corbayi pisirimek icin ayirin.
Makarnayi paketin uzerindeki talimatlara gore haslayin, fakat biraz diri kalmasi icin 2-3 dakika daha az pisirin. Sonra makarnanin suyunu suzup genis bir borcam tepsiye aktarin. Dogranmis tavugu ilave edip, harmanlayin.
Bu arada bir bardak sut ve tavugu hasladiginiz su ile kremali tavuk corbasini pisirin. Atesten almadan once yumurtayi ve karabiberi ilave edin ve karistirin. Koyu kivamli bir karisim elde edeceksiniz. Eger kutu/konserve tavuk corbasi kullaniyorsaniz ve koyu kivam olusmadiysa, bir tatli kasigi nisasta ilave edip kivamini ayarlayabilirsiniz. Bu karisimi makarnanin uzerine dokun ve esit olarak dagitmak icin karistirin. Uzerine kasar peyniri serpin.
Onceden isitilmis 200 C (400 F) firinda uzeri kizarana dek pisirin (20-30 dakika).
Firinda Tavuklu Makarnayi sicak olarak servis yapin.

Chicken Soup with Vermicelli (Sehriyeli Tavuk Corbasi)


1 whole chicken leg or ½ lb chicken breast
1/2 cup vermicelli
1 medium carrot, grated
3 gloves of garlic, sliced
1 tbsp salt
½ tsp black pepper
Sauce:
1 egg, beaten
2 tbsp lemon juice

Place the chicken in a pot and add 6-8 cups of water. Add 1 tsp salt and boil until the chicken is cooked. Then, cool the chicken and cut into small bite sizes.
Add carrot, garlic, 1 tsp salt to the chicken broth you got before and cook over medium heat. When it boils, add vermicelli and chicken pieces. Simmer for 8-10 minutes. Let it cool for a while. Mix the beaten egg and lemon juice in a bowl and slowly stir in to the Chicken Soup with Vermicelli. Finally sprinkle black pepper on top and serve warm.

Tavugu ve 6-8 su bardagini bir tencereye koyun. 1 tatli kasigi tuzuda ekleyip pisene dek kaynatin. Tavugu sogutun ve kucuk parcalar halinde dograyin.
Tavuk suyuna havuclari, sarimsagi ve 1 tatli kasigi tuzu ilave edin ve orta ateste kaynatin. Kaynamaya baslayinca tel sehriyeyi ve tavuk parcalarini ekleyin ve 8-10 dakika pisirin. Ocagi kapattiktan sonra 10-15 dakika biraz sogumasini bekleyin.
Cirpilmis yumurta ile limon suyunu karistirin ve yavasca karistirirak Sehriyeli Tavuk Corbasina ilave edin. Son olarak karabiberi serpin ve sicak servis yapin.

Maklube (Pilaf with Layered Chicken/Meat and Potatoes)

2 ½ cups rice
2 lbs chicken breast
5 large potatoes, peeled and sliced in ½” thick circular shapes
1-2 carrots, peeled and sliced
½ cup oil for frying
2 onions, sliced in circular shapes
1½ tbsp salt
1 tbsp oil
3½ cups chicken stock
A pinch of black pepper
Garnish:
Yogurt and any kind of finely chopped green salad

In a pot, place the chicken and add some salt. Boil, till the chicken is cooked. Then remove the bones (if any) and cut the chicken in bite sizes. Leave the chicken stock for later use.
In a large skillet, fry the potatoes and carrots until they turn to light golden brown. Do not over fry. Sprinkle some salt on them.
In a bowl, wash the rice and cover with warm water. Leave for 15-20 minutes and drain.
In a large pot, spread the oil and place the onion slices evenly, without leaving any space at the bottom. Then place some of the chicken on them to make a layer. Then form a thin layer of the rice on them. Repeat forming layers with potatoes, chicken, carrots and rice in between till you use all the ingredients.
Add 1 ½ tbsp salt into the chicken stock that you have. Take 3 ½ cups of chicken stock and add to the pot. If you don’t have enough chicken stock you can use hot water instead. Close the lid and cook over low-medium heat until the rice is soft and the water evaporates (about 30-45 minutes).
When the Maklube is cooked, reverse the pot in the middle of a large circular tray. Hit the sides and top of the pot with a wooden spoon. Remove the pot slowly. Then place yogurt and salad in sequence around the Maklube. Generally shepherd salad is used but you can also use any other salad you wish. You can also add fried eggplant, peas and or any other vegetables you like. You can sprinkle some black pepper on top before serving.

1½ yemek kasigi tuz
1 yemek kasigi sivi yag
3½ su bardagi tavuk suyu
Bir tutam karabiber
Sus icin:
Yogurt ve istediginiz cesit, kucuk dogranmis yesil salata (genelde coban salatasi)

Tavugu tencerede bir miktar tuz ekleyerek pisine dek haslayin. Eger kemikli ise soguduktan sonra etlerini ayirin ve kucuk kucuk dograyin. Tavugun suyunu maklubeyi pisirmek icin kullanacagiz.
Patatesleri ve havuclari genis bir tavada hafif kizarana dek kizartin ve uzerlerine tuz serpin. Pirinci yikayip, 15-20 dakika ilik suda dinlendirin ve suzun.
Buyuk bir tencerenin dibine bir yemek kasigi sivi yag koyup dilimlediginiz soganlari hic bosluk kalmayacak sekilde yayin. Tavugun bir kismini soganlarin uzerine tabaka halinde koyun. Uzerine bir miktar pirinc yayin. Daha sonra bir sira patates koyun. Yine pirinc yayip, bu sefer havuclari tabaka halinde koyun. Bu islemi pirinc, patates, tavuk ve havuclar bitene kadar tabakalar halinde tekrarlayin.
Tavugu hasladigimiz suyun icine 1 ½ yemek kasigi tuz ilave edip, karistirin ve buradan 3 ½ su bardagi su tencerenin uzerine ilave edin.
Tencerenin kapagini kapatin ve pirincler suyunu cekip pisene dek kisik ateste pisirin.
Pisen maklube tenceresini, buyuk bir tepsinin ortasina gelecek sekilde ters cevirin.Sonra, maklubeyi tencereden duzgun cikarmak icin tahta kasik ile tencerenin ustune ve kenarlarina vurun.Yavasca tencereyi kaldirin. Tepsinin kenarlarina sira ile salata ve yogurt koyarak ikram edin. Salata olarak genelde coban salatasi tercih edilir ama istediginiz salatayi ikram edebilirsiniz. Ayrica istege gore bezelye, kizarmis patlican yada baska sebzeler de eklenebilir
Isterseniz maklubenin uzerine karabiber serpebilirsiniz.

Shallow Fried Chicken Gizzards (Kavrulmus Tavuk Tasligi)

1 lb (450-500 gr) chicken gizzards
1 tsp salt
½ tsp paprika
¼ black pepper
2 tbsp oil/ butter

Wash the gizzards under cold water and drain. Place them in a saucepan or pot with enough water to cover by 1 inch. Add the salt and bring to a boil over medium heat, cover the lid and cook for 20-30 minutes until they become soft. Drain and let them cool. Then chop into bite size pieces.
Place the oil/ butter in a large skillet over medium heat. Shallow fry gizzards in butter/ oil for about 10- 12 minutes. Add the paprika and black pepper. You can adjust the amount of salt.

~500 gr tavuk tasligi (kati)
1 tatli kasigi tuz
1 cay kasigi toz kirmizi biber
½ cay kasigi karabiber
2 yemek kasigi sivi yag/ tereyagi

Tasliklari soguk su altinda yikayip, suzun. Bir tencereye uzerine cikacak kadar su ve tuzu koyup, kaynamasini bekleyin. Kapagini kapatip, orta ateste yumusayana dek 20-30 dakika pisirin. Sonra suyunu suzup, sogumaya birakin. Soguduktan sonra istediginiz buyuklukte dograyin.
Bir tavada sivi yag/ tereyagi ile tasliklari orta ateste yaklasik 10-12 dakika kavurun. Kirmizi toz biber ve karabiberi ilave edin ve karistirin. Tuz miktarini isteginize gore ayarlayabilirsiniz.

Mushroom Kebab with Chicken (Tavuklu Mantar Kebabi)

2 chicken tights, chopped
1 onion, chopped
1 tbsp oil
½ lb (200-250 gr) mushroom, sliced
¾ cup tomatoes, diced
½ cup green pepper, chopped
½ cup mozzarella/cheddar/parmesan, shredded
¼ tsp oregano
¼ tsp basil
½ tsp ginger
½ paprika
1 tbsp salt

In a pot, place the oil, onion and green peppers and sauté for 2-3 minutes. Then add the chopped chicken, cook for 5 minutes on medium heat, stirring occasionally. Then, add the mushrooms and cook for 3 minutes until they become soft.
Add the tomatoes and salt. Over medium heat, cook until the chicken and mushrooms are cooked. Add the spices, mix and transfer to a Pyrex dish.
Finally, spread the shredded mozzarella/cheddar/parmesan on the surface and cook for 5-6 minutes in a preheated 350 F (175 C) oven.

1 cay kasigi kirmizi toz biber
1 yemek kasigi tuz

Bir tencerede oncelikle sogan ve biberler sivi yag ile kavrulur. Tavuk ilave edilir ve orta ateste 5 dakika, karistirarak pisirilir. Sonra mantarlar ilave edilir ve biraz yumusayana dek ,3 dakika kadar pisirilir.
Domates ve tuz ilave edilir. Orta ateste mantar ve tavuk pisene dek pisirilir. Baharatlar ilave edilir, karistirilip, borcam tepsiye aktarilir.
Uzerine kasar yayilir ve onceden isitilmis 175 C (350 F) firinda kasar eriyene dek, 5-6 dakika pisirilir.

Chicken/Meat Casserole (Balkan Guveci)

1 big onion, chopped
1 cup rice, washed
2 chicken legs with the thighs or ½ lb (250 gr) beef/lamp cut in cubes
3 tbsp oil
1 tbsp salt to taste
3-4 bay leaves
2 cups hot water
½ tsp black pepper
2/3 tsp paprika

You can cut the drumsticks off and make two pieces from one leg. Also you can use it as a whole leg.
Place the chicken legs or meat cubes and oil in a large skillet and stir occasionally for 2-3 minutes, until the meat changes in color.
Add the chopped onions and sauté. Then stir in washed rice and continue stirring for 2-3 minutes. Add salt, black pepper and paprika.
Finally place this mixture to a casserole or Pyrex dish and add hot water. Stir the mixture well and place the bay leaves evenly in the mixture.
Preheat the oven to 400 F (200 C) Cook for about 30-40 min. until the surface turns brownish and rice is cooked.

2/3 tatli kasigi kirmizi toz biber

Butlari eklem yerinden kesip iki parcaya ayirabilirsiniz ya da butun olarak da pisirebilirsiniz. Tavuklari ya da et kullaniyorsaniz etleri yag ile birlikte bir tavaya alin ve orta ateste 2-3 dakika boyunca karistirin. Etler renk degistirince soganlari ilave edin ve 2-3 dakika daha karistirmaya devam edin.
Sonra yikanmis pirinci ilave edin ve 2-3 dakika karistirin. Tuz, kirmizi biber ve karabiber ekleyin. Son olarak bu karisimi borcam ya da normal bir tepsiye aktaralim ve uzerine sicak suyu ilave edelim.
Defne yapraklarini ister parcalayip. Ister butun olarak tepsiye esit araliklarla yerlestirin.
Onceden isitilmis 200 C (400 F) firinda yaklasik 30-40 dakika pisirin.

Baked Whole Chicken (Firinda Kizarmis Butun Tavuk)

1 whole chicken
4 potatoes, chopped or sliced
1 carrot, sliced or 6 baby carrots
½ tsp salt (for potatoes and carrots)
1 tsp salt (for chicken)
½ lemon juice
2 tbsp yoghurt
1 tsp paprika
½ tsp cumin
½ tsp thyme
1 tbsp oil

Place the chopped or sliced potatoes and carrots in a Pyrex dish, spread the salt and mix them. You might take the chicken’s skin off if you wish. I have taken the skin out. Then, spread salt all over the chicken with your hands. Then, mix the lemon juice, yoghurt, paprika, cumin, thyme and oil. Apply it all over the chicken with a brush.
Preheat the oven to 400 F (200C) and cook for about 60 minutes until it is golden brown.

Dogranmis patates ve havuclari borcam tepsiye koyun, uzerlerine tuz serpip, karistirin. Tavugun derisini alabilirsiniz ya da derisi ile pisirebilirsiniz. (Ben derisini alarak yaptim) Tavugun her yerini ellerinizle guzelce tuzlayin, ovalayin. Sonra limon suyu, yogurt, kirmizi biber, kimyon, kekik ve siviyagi karistirin. Bir firca yardimiyla tavugun her yerine bu karisimi surun.
Onceden isitilmis 200 C (400 F) firinda, tavugun uzeri kizarana dek 60 dakika pisirin. Firinda kizarmis tavugunuz hazir.
