Cheese Lasagna (Peynirli Lazanya)

12 pieces lasagna noodles
2 cups ricotta cheese
2 cups cheddar/mozzarella, shredded
½ cup Parmesan Cheese, grated (optional)
4 cups spaghetti/Italian/tomato sauce
2 eggs, beaten
1/3 cup hot water
1 tsp salt to taste
Basil/thyme/black pepper (optional)

Preheat oven to 350 F (180 C). Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 10-12 minutes or until al dente; drain.
In a bowl combine egg, ricotta and other cheese and seasonings (optional). Spoon ½ cup of the sauce in the bottom of a 9x13 baking dish. Place a layer of 3 cooked noodles over the sauce, and spread one third of cheese mixture on top, cover with 3 noodles. Repeat twice with 1 ½ cup sauce, cheese mixture and noodles. Finish with the remaining sauce and cheese mixture. Pour 1/3 cup hot water.
Cover with foil and bake for 30 minutes. Then remove foil and bake for 20 minutes more. Let stand for 5-10 minutes before serving.

Firini onceden 180 C (350 F)’ye isitin. Lazanyalari buyuk bir tencerede hafif tuzlu suda 10-12 dakika yumusayana dek haslayin. Suzun.
Bir kasede, yumurta, peynir cesitleri ve baharatlari (istege bagli) karistirin. Yarim su bardagi sosu 23x33 cm buyuklugundeki firin tepsisinin dibine yayin. 3 tane lazanyayi uzerine koyun ve peynirli karisimin 1/3’unu uzerine yayin. Uzerine 3 tane lazanya yerlestirin. Bu islemi; 1 ½ sos, peynir karisimi ve lazanya olarak 2 defa tekrarlayin. En uzerine kalan peyniri yayin ve sosu dokun. 1/3 su bardagi sicak suyu tepsinin kenarindan dibine dogru dokun.
Uzerini aluminyum folyo ila kaplayin ve yaklasik 30 dakika pisirin. Sonra folyoyu kaldirin ve 20 dakika daha uzeri acik olarak pisirin. Firindan cikardiktan sonra 5-10 dakika bekletin ve sonra servis yapin.

Pilaf with Vegetables (Sebzeli Pilav)

1 ½ cup rice, washed and drained
1 carrot, chopped
1 potato, chopped finely
1 cup peas, frozen or fresh
½ cup corn kernels (optional)
2-3 tbsp butter
3 tbsp canola oil
2 ½-3 cups chicken stock/broth
¼ tsp sugar
1 tbsp salt to taste

Chop carrot into cubes or round; chop the potato in small cubes as well. Heat the oil in a large skillet and cook first potatoes, then carrots until they become soft.
Boil the peas about 3-5 minutes and drain. Set the vegetables aside.
Melt the butter in a pot and stir in rice. Cook for about 2-3 minutes over medium heat. Add hot chicken stock, salt and sugar into pot. Stir and bring to a boil. Then reduce the heat, close the lid.
When the pilaf is about to absorb the water (when a little water remains), stir in gently the peas, carrots, potatoes and corn kernels (optional). Close the lid and cook till all the water is absorbed. Open the lid cover the pot with a paper towel and close the lid over paper towel. Leave for a rest 10 minutes.
Sprinkle black pepper over if desired.

Havucu kup seklinde ya da halka halka dograyin. Patatesi de kup seklinde kucuk kucuk dograyin. Bir tavada sivi yagda once patatesleri sonra havuclari yumusayana dek kavurun. Bezelyeleri 3-5 dakika haslayin ve suyunu suzun.
Tencereye tereyagini alin ve pirincleri ilave edin. Pirincler tane tane olup ayrilmaya baslayana dek yaklasik 2-3 dakika orta ateste cevirin. Sicak olan tavuk suyu, tuz ve sekeri ilave edin karistirin ve kaynamaya baslayinca kapagini kapatin, hafif ates alin.
Pilav suyunu cekmeye yakin havuc, patates, bezelye ve misiri (istege bagli) ilave edin karistirin ve kapagini kapatip, iyice suyunu cekene kadar pisirin. Pistikten sonra tencerinin agzini kagit havlu ile ortup uzerine kapagini kapatin. Yaklasik 10 dakika kadar dinlendirin.
Uzerine karabiber serperek servis yapabilirsiniz.

Chicken Pilaf (Tavuklu Pilav)

2 chicken thighs/1 breast
2 cup whole grain rice, washed and drained
4 cups chicken stock
1 tbsp salt to taste
2-3 tbsp butter
Black pepper

In a pot, boil chicken with the half of the salt. Leave aside 4 cups of the boiling water for using later. Let the chicken cool for a while. And then, remove the skin and bones. Cut the chicken into small pieces and set aside.
In another pot, melt the butter and stir in rice. Cook rice stirring occasionally for 2-3 minutes. Then add 4 cups of boiling water of the chicken. Add the remaining salt and bring to a boil. Close the lid and cook over low heat till the rice absorbs all the water. Then leave for a rest for 10 minutes. Add the chicken and mix them all. Another serving suggestion is: put some chicken into a bowl and fill the rest with pilaf. Gently press the surface and turn upside down to a serving plate.
Sprinkle black pepper on top and serve Chicken Pilaf warm with ayran.

Tuzun yarisini kullanarak tavugu haslayin. Haslama suyundan 4 su bardagi sonra kullanmak uzere ayirin. Tavuk biraz soguyunca derisini ve kemiklerini ayirip atin. Etlerini kucuk kucuk dograyin ve bir kenara ayirin.
Bir tencerede tereyagini eritin ve pirinci ilave ederek bir kac dakika kavurun. Pirinclerin rengi degismeye baslayinca ayridiginiz 4 su bardagi tavuk suyunu ilave edin. Geri kalan tuzu da ilave edin ve kaynayana dek bekleyin. Kaynayinca dusuk ateste kapagi kapali olarak pirincler suyu cekene dek pisirin. Pistikten sonra 10 dakika kadar dinlendirin. Etleri ilave edip hepsini karistirip servis yapin. Degisik bir sunum icin, bir kasenin dibine bir miktar tavuk eti koyun uzerini pilav ile doldurup haifce bastirin ve servis tabagina ters olarak yerlestirin.
Tavuklu Pilavi uzerine karabiber serperek ayran ile servis yapin.

Pilaf with Carrots (Havuclu Pilav)

1 cup rice, washed and drained
2 carrots, shredded/diced
1 small onion, chopped (optional)
2 tbsp butter
1 tbsp canola oil
2 cups hot chicken stock/water and chicken bouillon
1 tbsp salt to taste
¼ tsp black pepper
Fresh parsley to garnish

Wash the rice several times with warm water and drain. Cover the rice with warm water and leave it for 15-20 minutes and drain. If you do not have time for this, just wash the rice and then drain.
In a pot or saucepan, sauté onions and carrots with oil and butter. When carrots become soft stir in rice and cook over medium heat for 2-3 minutes. Stir occasionally.
Then add salt and chicken stock/water and chicken bouillon. Close the lid and cook over low heat till rice absorbs all the water. Let it cool for 10-15 minutes.
Sprinkle some black pepper and garnish with parsley before serving.

Bir tencerede havuc, sogan, tereyag ve siviyagi sote edin. Havuclar yumusayinca pirinci ilave edin. Ara sira karistirarak orta ateste 2-3 dakika cevirin.
Sonra tuz ve sicak tavuk suyu/su ve tavuk bulyonu ilave edin. Kapagi kapali olarak dusuk ateste suyunu cekene dek pisirin. 10-15 dakika iliklasmasi icin bekleyin.
Uzerine karabiber serpip, maydanoz ile susleyerek servis yapin.

Bulgur Pilaf (Bulgur Pilavi)

1 cup bulgur wheat, whole grain large, washed and drained
1 onion, chopped
1 tomato, diced
1 tsp tomato paste (optional)
1 banana/green pepper, chopped
2 tbsp butter/oil
2 cups hot chicken stock/2 cups hot water and chicken bouillon
1 tsp salt to taste (1/2 tsp if using chicken bouillon)

In a medium saucepan, sauté butter/olive oil and onions for about 2-3 minutes over medium heat. Then stir in tomato paste and tomatoes, sauté for about 2 minutes. And then stir in peppers. After a while add bulgur and sauté for 2-3 minutes.
Add hot chicken stock/ hot water and chicken bouillon, and salt.Stir well and turn heat low when it boils. Close the lid and simmer till the bulgur absorbs all the water. Do not stir while cooking.Let it cool for a while with the lid on. Before serving, stir well with a wooden spoon. Then place to a serving plate and garnish with fresh parsley.

Orta boy bir tencerede tereyagi/sivi yag ile sogani orta ateste 2-3 dakika boyunca kavurun. Sonra domates salcasi ve domatesi ilave edin ve 2 dakika daha kavurup biberleir ila edin. Bir sure sonra bulguru ilave edin ve 2-3 dakika daha karistirarak kavurun.
Sicak tavuk suyu/sicak su ve tavuk bulyonu ve tuz ilave edin. Kaynamaya baslayinca kisik atese alin kapagini kapatip, suyunu tamamen cekene dek pisirin. Mumkunse pilav piserken karistirmayin.Pilavin kapagini acmadan biraz ilinmasini bekleyin ve tahta kasikla guzelce karistirip servis tabagina alin. Taze maydanoz ile susleyerek servis yapin.

Shrimp Fettucine with Pesto (Pesto Soslu Karidesli Makarna)

1 lb Fettucine
~1 lt chicken stock/ chicken bouillon
½ lb shrimp, cooked, peeled and deveined
½-1 cup Basil Pesto

Cook Fettucine according to the instructions on the package. But use chicken stock instead of water or use a chicken bouillon. Drain and stir in cooked shrimps and combine with Basil Pesto.
Serve Shrimp Fettucine with Pesto warm.

Tomato Pilaf (Domatesli Pilav)

1 cup rice, washed and drained
1 tomato, crushed or petite diced (1/2-2/3 cup)
2 tbsp butter/olive oil
1 tsp salt to taste
½ tsp sugar
1 ½ -2 cups hot water (preferably chicken stock or chicken bouillon)
Fresh parsley for garnish

Wash the rice several times with warm water and drain. Cover the rice with warm water and leave it for 15-20 minutes and drain. If you do not have time for this, just wash the rice and then drain.
In a medium saucepan, sauté butter/olive oil and tomatoes for about 4-5 minutes over medium heat. Then stir in rice and sauté for 2-3 minutes. Add hot water (chicken stock/chicken bouillon), salt and sugar (If you leave the rice in water before cooking, use 1 ½ cup hot water otherwise use 2 cups).
Stir well and turn heat low when it boils. Close the lid and simmer till the rice absorbs all the water. Do not stir while cooking.
Let it cool for a while with the lid on. Before serving, stir well with a wooden spoon. Then place to a serving plate and garnish with fresh parsley.

Veggie Pasta (Sebzeli Makarna)

1 package pasta (preferably 3 color bow-tie)
½ cup sweet corn, boiled/can
½ cup sweet peas, boiled/can
½ cup carrot, chopped and boiled/can
½ cup green beans, chopped and boiled/can (optional)
2 tbsp butter/margarine
1/3 cup black olives, pitted and sliced
Parmesan cheese for top (optional)
Any kind of pasta sauce (optional)

Boil the pasta with salty water according to the the instructions on the label. and then drain. Stir and melt in butter/margarine. Place pasta on a serving plate and add the sauce you like (optional). I used garlic yogurt as the sauce.
Then add vegetables, you can either mix them all or just leave on top. Garnish with black olive slices and sprinkle Parmesan Cheese (optional).

Makarnayi paketteki pisirme talimatina gore tuzlu suda pisirin ve suyunu suzun. Terayagi ya da margarini icine atip, eritin. Sonra servis tabagina alin ve istediginiz herhangi bir makarna sosunu ilave edin (istege bagli). Ben sarimsakli yogurt kullandim.
Uzerine kullanacaginiz sebzeleri ilave edin, karistirin veya oylece ustunde birakin . Siyah zeytin ile susleyin ve arzu ederseniz uzerine Parmesan/kasar peyniri rendesi serpin.

Chicken Macaroni in the Oven (Firinda Tavuklu Makarna)

1 package of any type macaroni
1 chicken breast
1 cup mozzarella/cheddar, shredded
1-2 cups cream of chicken soup
1 cup milk
2 cups water
1 egg, beaten
1 tbsp salt to taste
½ tsp black pepper

Wash chicken breast under cold water and boil with 2 cups of water. Then chop the boiled chicken breast in bite sizes and leave the chicken stock to use later.
Cook the macaroni 2-3 minutes less than the minutes given by the directions on the package for an al dante texture. Drain the macaroni and transfer into a wide Pyrex. Mix with chopped chicken.
Meanwhile in a pot, cook milk and cream of  chicken soup. Simmer until the mixture thickens. Adjust the thickness by adding water. Stir in beaten egg and black pepper. Then pour the mixture over the macaroni and mix them all. Spread shredded mozzarella/cheddar over.
Preheat the oven to 400F (200 C) and bake for about 20-30 minutes till the surface turns light golden brown.
Serve Chicken Macaroni in the Oven warm.

1 yemek kasigi tuz
1 cay kasigi karabiber

Tavuk gosgusunu yikayin ve 2 su bardagi su ile haslayin. Sonra pismis tavuk gogsunu kucuk lokmalar halinda dograyin. Suyunu corbayi pisirimek icin ayirin.
Makarnayi paketin uzerindeki talimatlara gore haslayin, fakat biraz diri kalmasi icin 2-3 dakika daha az pisirin. Sonra makarnanin suyunu suzup genis bir borcam tepsiye aktarin. Dogranmis tavugu ilave edip, harmanlayin.
Bu arada bir bardak sut ve tavugu hasladiginiz su ile kremali tavuk corbasini pisirin. Atesten almadan once yumurtayi ve karabiberi ilave edin ve karistirin. Koyu kivamli bir karisim elde edeceksiniz. Eger kutu/konserve tavuk corbasi kullaniyorsaniz ve koyu kivam olusmadiysa, bir tatli kasigi nisasta ilave edip kivamini ayarlayabilirsiniz. Bu karisimi makarnanin uzerine dokun ve esit olarak dagitmak icin karistirin. Uzerine kasar peyniri serpin.
Onceden isitilmis 200 C (400 F) firinda uzeri kizarana dek pisirin (20-30 dakika).
Firinda Tavuklu Makarnayi sicak olarak servis yapin.

Rice Pilaf with Chick Peas (Nohutlu Pilav)

1 cup long-grain rice
2 tbsp orzo
1 ½ chicken stock, hot
½ cup chick peas in a can
1 tsp salt
2 tbsp butter

Wash the rice several times with warm water and drain. Cover the rice with warm water and leave it for 15-20 minutes and drain. If you do not have time for this, just wash the rice and then drain. Place the butter in a saucepan or pot and add the orzo. Over low-heat, fry until their color starts changing to golden brown. Do not over fry, take the pot from the stove as soon as you see the golden brown color and add the rice. Then, again place the pot on the stove and stir for 3-4 minutes over medium heat. Finally, add the hot chicken stock (If you leave the rice in water before cooking, use 1 ½ cup hot water otherwise use 2 cups). Add the salt and close the lid and cook over low heat, until the rice absorbs all the water. Meanwhile you can stir once or twice. Finally add the chick peas and stir. Let the pilaf stand for about 5-10 minutes before serving.
Pilaf goes well with any kind of dish and yogurt. I like it with plain yogurt.

P.S: You can also add 1 tsp of lemon juice with the water, to make the pilaf shine.

Pirinci temiz su cikana dek yikayip suzun. Uzerini ilik su ile kaplayin ve 15-20 dakika dinlenmeye birakin. Sonra suzun. Eger buna zamaniniz yoksa, pirinci sadece yikayip, suzun. Tereyagini bir tava ya da tencereye alin ve arpa sehriyeleri ilave edin. Dusuk ateste sehriyeler kizarmaya baslayana dek cevirin. Ates uzerinde fazla birakmayin, kizarmaya baslar baslamaz ocaktan alin ve pirincleri ilave edin. Orta ateste 3-4 dakika pirincleri kavurun. Son olarak, sicak tavuk suyunu ve karistirin (Eger pisirmeden once pirinci suda beklettiyseniz, 1 ½ su bardagi sicak su, eger bekletmediyseniz 2 su bardagi kullanin). Tuzu da ilave edip kapagini kapatin. Pilav suyunu cekene dek, dusuk ateste pisirin. Pisme esnasinda 1-2 defa karistirabilirsiniz. Son olarak nohutlari ilave edin ve karistirin. Servis yapmadan once 15-20 dakika dinlendirin.
Pilav butun yemek cesitleriyle ve yogurt ile guzel gider. Ben pilavi yogurt ile severim.

Maklube (Pilaf with Layered Chicken/Meat and Potatoes)

2 ½ cups rice
2 lbs chicken breast
5 large potatoes, peeled and sliced in ½” thick circular shapes
1-2 carrots, peeled and sliced
½ cup oil for frying
2 onions, sliced in circular shapes
1½ tbsp salt
1 tbsp oil
3½ cups chicken stock
A pinch of black pepper
Garnish:
Yogurt and any kind of finely chopped green salad

In a pot, place the chicken and add some salt. Boil, till the chicken is cooked. Then remove the bones (if any) and cut the chicken in bite sizes. Leave the chicken stock for later use.
In a large skillet, fry the potatoes and carrots until they turn to light golden brown. Do not over fry. Sprinkle some salt on them.
In a bowl, wash the rice and cover with warm water. Leave for 15-20 minutes and drain.
In a large pot, spread the oil and place the onion slices evenly, without leaving any space at the bottom. Then place some of the chicken on them to make a layer. Then form a thin layer of the rice on them. Repeat forming layers with potatoes, chicken, carrots and rice in between till you use all the ingredients.
Add 1 ½ tbsp salt into the chicken stock that you have. Take 3 ½ cups of chicken stock and add to the pot. If you don’t have enough chicken stock you can use hot water instead. Close the lid and cook over low-medium heat until the rice is soft and the water evaporates (about 30-45 minutes).
When the Maklube is cooked, reverse the pot in the middle of a large circular tray. Hit the sides and top of the pot with a wooden spoon. Remove the pot slowly. Then place yogurt and salad in sequence around the Maklube. Generally shepherd salad is used but you can also use any other salad you wish. You can also add fried eggplant, peas and or any other vegetables you like. You can sprinkle some black pepper on top before serving.

Sus icin:
Yogurt ve istediginiz cesit, kucuk dogranmis yesil salata (genelde coban salatasi)

Tavugu tencerede bir miktar tuz ekleyerek pisine dek haslayin. Eger kemikli ise soguduktan sonra etlerini ayirin ve kucuk kucuk dograyin. Tavugun suyunu maklubeyi pisirmek icin kullanacagiz.
Patatesleri ve havuclari genis bir tavada hafif kizarana dek kizartin ve uzerlerine tuz serpin. Pirinci yikayip, 15-20 dakika ilik suda dinlendirin ve suzun.
Buyuk bir tencerenin dibine bir yemek kasigi sivi yag koyup dilimlediginiz soganlari hic bosluk kalmayacak sekilde yayin. Tavugun bir kismini soganlarin uzerine tabaka halinde koyun. Uzerine bir miktar pirinc yayin. Daha sonra bir sira patates koyun. Yine pirinc yayip, bu sefer havuclari tabaka halinde koyun. Bu islemi pirinc, patates, tavuk ve havuclar bitene kadar tabakalar halinde tekrarlayin.
Tavugu hasladigimiz suyun icine 1 ½ yemek kasigi tuz ilave edip, karistirin ve buradan 3 ½ su bardagi su tencerenin uzerine ilave edin.
Tencerenin kapagini kapatin ve pirincler suyunu cekip pisene dek kisik ateste pisirin.
Pisen maklube tenceresini, buyuk bir tepsinin ortasina gelecek sekilde ters cevirin.Sonra, maklubeyi tencereden duzgun cikarmak icin tahta kasik ile tencerenin ustune ve kenarlarina vurun.Yavasca tencereyi kaldirin. Tepsinin kenarlarina sira ile salata ve yogurt koyarak ikram edin. Salata olarak genelde coban salatasi tercih edilir ama istediginiz salatayi ikram edebilirsiniz. Ayrica istege gore bezelye, kizarmis patlican yada baska sebzeler de eklenebilir
Isterseniz maklubenin uzerine karabiber serpebilirsiniz.

Turkish Pilaf With Vermicelli (Sehriyeli Pilav)

1 cup long grain rice
1 tbsp butter
1 tbsp oil
2 tbsp vermicelli/ orzo
1 ½ or 2 cups of hot water/ chicken stock (explained below)
Also you can add 1 cube of chicken bouillon to hot water
1 tsp salt

Wash the rice several times with warm water and drain. Cover the rice with warm water and leave it for 15-20 minutes and drain. If you do not have time for this, just wash the rice and then drain.
Place the butter and oil in a saucepan or pot and add the vermicelli or orzo. Over low-heat, fry until their color starts changing to golden brown. Do not over fry, take the pot from the stove as soon as you see the golden brown color and add the rice. Then, again place the pot on the stove and stir for 3-4 minutes over medium heat. Finally, add the hot chicken stock / water (If you leave the rice in water before cooking, use 1 ½ cup hot water otherwise use 2 cups). Add the salt and close the lid and cook over low heat, until the rice absorbs all the water. Meanwhile you can stir once or twice. Let the pilaf stand for about 5-10 minutes before serving.
Pilaf goes well with any kind of dish and yogurt. I like it with plain yogurt.

P.S: You can also add 1 tsp of lemon juice with the water, to make the pilaf shine.

Ayrica 1 kup tavuk bulyonu da kullanabilirsiniz
1 tatli kasigi tuz

Pirinci temiz su cikana dek yikayip suzun. Uzerini ilik su ile kaplayin ve 15-20 dakika dinlenmeye birakin. Sonra suzun. Eger buna zamaniniz yoksa, pirinci sadece yikayip, suzun.
Tereyagi ve siviyagini bir tava ya da tencereye alin ve sehriyeleri ilave edin. Dusuk ateste sehriyeler kizarmaya baslayana dek cevirin. Ates uzerinde fazla birakmayin, kizarmaya baslar baslamaz ocaktan alin ve pirincleri ilave edin. Orta ateste 3-4 dakika pirincleri kavurun. Son olarak, sicak tavuk suyunu/suyu ilave edin ve karistirin (Eger pisirmeden once pirinci suda beklettiyseniz, 1 ½ su bardagi sicak su, eger bekletmediyseniz 2 su bardagi kullanin). Tuzu da ilave edip kapagini kapatin. Pilav suyunu cekene dek, dusuk ateste pisirin. Pisme esnasinda 1-2 defa karistirabilirsiniz. Servis yapmadan once 15-20 dakika dinlendirin.

Pilav butun yemek cesitleriyle ve yogurt ile guzel gider. Ben pilavi yogurt ile severim.

Spaghetti With Tomato Sauce (Domates Soslu Spagetti)

1 package of spaghetti
2 cups of tomatoes, grated or smashed
½ tsp salt
3 tbsp oil
½ tsp basil (optional)
½ cup feta cheese, crumbled

Boil the pasta with salty water according to the instructions on its package.
In a pan, place the oil and tomatoes. Cook until the water evaporates over medium heat. Then, add the salt and cook for a few more minutes. Add the basil (optional).
Drain the pasta and place to the serving plate; pour the tomato sauce on it. Finally, add the crumbled feta cheese on top.

Makarnayi suzup, serviz tabagina alin ve uzerine domates sosunu dokun. Son olarak ufalanmis beyaz peyniri koyun ve servis yapin.

Pasta with Ground Beef (Kiymali Makarna)

1 package of any kind of pasta
200 gr (1/2 lb) medium ground beef
1 onion, thinly sliced
½ tsp salt (for beef)
½ tbsp tomato paste or 1 tbsp smashed tomatoes
4 mushrooms, sliced (optional)
1 tbsp oil
½ tsp cumin
½ tsp black pepper

Boil the pasta with salty water, as the instructions on the package say.
Meanwhile, place the ground beef and oil in a medium skillet and cook until the color changes to brown. Add the onions and add the salt. Saute for 2-3 minutes over a low-medium heat.Then add the tomato paste or tomatoes and mushrooms(optional). Continue to sauté for about 5-6 minutes and add the cumin and black pepper.
Drain the pasta and place on a service plate. Pour the beef- mushroom mixture on top.
You can serve the pasta with yogurt.
