Menemen (Scrambled Eggs with Vegetables)

2 cups green pepper, chopped
1 cup diced tomato
1 small onion, finely chopped
2 eggs, beaten
3 tbsp oil
½ tsp salt
1 pinch of black pepper (optional)

Place the oil and onions in a pan and sauté the onions for 2-3 minutes over low-medium heat. Then, add peppers and salt. Close the lid and cook until the peppers become soft by stirring occasionally. Add the tomatoes, stir and cook for 5-6 minutes with the lid closed. Finally, add the beaten eggs and stir. It’s done when the eggs are cooked. You can sprinkle some black pepper on top if you like.
Menemen is a very good and famous dish for breakfasts.
Serve it with bread while still warm.

Bir tutam karabiber (istege bagli)

Bir tavaya yagi ve soganlari koyun, 2-3 dakika orta ateste kavurun. Sonra biberleri ve tuzu ilave edin. Kapagini kapatin ve biberler yumusayana dek ara sira karistirarak pisirin. Sonra domatesleri ilave edin, yine ara sira karistirarak kapagi kapali olarak 5-6 dakika pisirin.
Son olarak cirpilmis yumurtalari ilave edin ve karistirin.Yumurtalar pisince ocaktan alin. Uzerine karabiber serpebilirsiniz (istege bagli).
Menemen kahvalti icin guzel bir alternatiftir.

Ricotta Pie (Firinda Omlet)

3 eggs, beaten
1 tsp corn starch
1 tomato, cut into slices
½ cup ricotta cheese
½ cup mozzarella or cheddar cheese, shredded
1 cup milk
3 tbsp oil
½ tsp salt
½ tsp dried basil

In a bowl beat the eggs. Add ricotta cheese and shredded mozzarella/cheddar cheese, oil, salt and half of the milk. With the other half of the milk mix the starch in a mug, stir well in order to solve the starch completely in the milk.
Then add the starch-milk mixture in the bowl. Place the mixture in a 8 inches round or a rectangular Pyrex. Place the tomato slices evenly on the surface and sprinkle the basil on top.
Preheat the oven to 395-400F (200 C) and bake until the surface color is red, for about 12-15 minutes.
Serve warm. Ricotta pie is good to go at breakfasts.

1 cay kasigi tuz
1 cay kasigi kuru feslegen

Bir kasede yumurtalari cirpin ve lor peyniri, rendelenmis kasar peyniri, siviyag, tuz ve sutun yarisini ilave edin. Sutun diger yarisini ayri bir yerde nisasta ile karistirin.
Nisasta sutun icinde cozuldugu zaman, karisimi kaseye ilave edin. Guzelce karistin ve karisimi yuvarlak 20 cm capinda ya da dikdortgen borcam tepsiye bosaltin. Domates dilimlerini esit bir sekilde uzerine yerlestirin ve kuru feslegeni yuzeyine serpin.
Onceden isitilmis 200 C (395-400 F) firinda, uzeri kizarana dek, yaklasik 12-15 dakika pisirin.
Sicak servis yapin. Firinda omlet kahvaltilar icin guzel bir alternatiftir.

Radish Salad With Carrot (Havuclu Turp Salatasi)

1 carrot, washed and peeled
5-6 radishes, stems cut and washed
¼ tsp salt
2 tbsp olive oil
2 tbsp lemon juice
½ tsp sumac (optional)
Black olives and fresh parsley for garnish

Wash carrot, peel and grate. Also cut the stems of the radishes and wash them. Cut the radishes in half moon shapes, forming 4-6 slices from a radish. Place the carrot and radish to a plate. In a bowl, mix the olive oil, salt and lemon juice. Then pour it on the salad and stir the salad. You can sprinkle sumac on top (optional).
Garnish with the parsley and black olives.

5-6 kucuk kirmizi turp, saplari kesilip, yikanmis

Suslemek icin siyah zeytin ve taze maydanoz

Havucu yikayip, soyun ve rendeleyin. Turplarin saplarini kesin ve yikayin. Bir turptan 4-6 dilim elde edecek sekilde dilimleyin. Havuc ve turplari bir salata tabagina alin ve karistirin. Bir kasede limon suyu, tuz, zeytinyagini karistirin ve salatanin uzerine dokup karistirin. Arzu ederseniz uzerine sumak serpebilirsiniz.
Maydanoz ve siyah zeytin ile susleyebilirsiniz.

Mediterranean Salad (Akdeniz Salatasi)

4 leaves romaine lettuce, washed, drained, cut into bite sizes
1 tomato, chopped in bite sizes
1 cucumber, sliced and cut in halves or whole
2 green onions or ½ red/white onion, sliced
5 small radish, sliced into circular shapes

Dressing:
3 tbsp yoghurt
2 tbsp extra virgin olive oil
½ tsp vinegar
1 tsp lemon juice
½ tsp dried mint or 1 tbsp fresh mint, chopped
1 tsp salt

Mix all the dressing ingredients in a bowl. In a salad plate or bowl place all the salad ingredients and pour the dressing on top. Then, stir all to flavor the salad.
This Mediterranean Salad goes well with all meat dishes.
ENJOY!
NOTE: Make sure you prepare your salad maximum 30 minutes before serving. Because chopped vegetables starts losing the vitamins, especially Vitamin C, when they contact with air after 30 minutes.

Sos malzemelerinin hepsini bir kasede karistirin. Salata malzemelerini bir salata tabagina alin ve sosu uzerine dokup karistirin.
Akdeniz salatasi butun et yemekleri ile servis edilebilir.

NOT: Salatanizi servisten en fazla yarim saat once dograyin. Dogranan sebzeler, hava ile temas ettikten 30 dakika sonra en basta C vitamin olmak uzere vitamin kaybina ugrarlar.

Cacik (Seasoned and Diluted Yogurt)

1 cucumber, shredded
1-2 cloves of garlic, smashed or grated
½ tsp salt
1tbsp extra virgin olive oil (optional)
1 cup yogurt
½ cup purified water (optional)
½ tsp dried mint (optional)

In a bowl place the grated cucumber( You can peel the skin before shredding , I have shredded without peeling, because it is healthier that way), smashed garlic, salt and yogurt. Stir them well until the yogurt becomes smooth and even.
Then add the water and continue stirring till the yogurt completely dissolves in the water. If you like it thick, skip adding the water. Before serving you can add some dried mint and olive oil on top (optional)
You can serve cacik both with the meat and vegetable dishes.
You can also make cacik without garlic.

1-2 dis sarimsak, dovulmus ya da rendelenmis

1 cay kasigi nane (istege bagli)

Bir kaseye rendelenmis salataligi (rendelemeden once salataligin kabugunu soyabilirsiniz, bend aha saglikli oldugu icin kabugunu soymadim), dovulmus sarimsagi, tuz ve yogurdu koyun. Yogurt putursuz olana dek karistirin.
Sonra suyu ilave edin ve yogurt su ile iyice karisana dek karistirin. Arzu ederseniz su koymadan da yapabilirsiniz. Servis yapmadan once kuru nane ve zeytinyagi ilave edebilirsiniz(istege bagli)
Cacigi et ve sebze yemeklerinin yaninda servis edebilirsiniz.
Ayni zamanda cacigi sarimsaksiz da yapabilirsiniz.

Pastry with Vinegar (Sirkeli Pogaca)

1 egg (its yolk will be used for eggwash)
2/3 cup oil
60-75 gr butter, melted
3 tbsp yogurt
1 tbsp vinegar
1 tsp salt
1 cup crumbled feta cheese or grated mozzarella cheese
1 tbsp baking powder
2 ½ cups flour (white, all purpose, sifted)
1 tsp sesame seeds

Put all the ingredients, except egg yolk and cheese, in a deep bowl and mix well with your hands. Add the crumbled feta or grated mozzarella cheese. Knead the dough for 3-5 minutes.
Take a piece of dough about the size of a shelled walnut and give it the shape of a ball by using the palm of your hands (you can adjust the size as you like).
Place the pieces on a greased baking tray. You can use baking paper if you want. Then brush each piece with beaten egg yolk for glazing. Spread the sesame seeds on the tops.
Pre-heat the oven to 400 F (200 C). Bake for 18-20 minutes.
This recipe will make about 20-22 pieces. Serve warm.

2/3 su bardagi siviyag
60-75 gr tereyagi/margarin, erimis
3 yemek kasigi yogurt
1 yemek kasigi sirke

1 su bardagi ufalanmis beyaz peynir ya da rendelenmis kasar peyniri
1 yemek kasigi kabartma tozu
2 ½ su bardagi un(beyaz, cok amacli,elenmis)
2 cay kasigi susam

Yumurta sarisi ve peynir haric, butun malzemeleri bir kaseye koyup guzelce karistirin. Kasar peynir/ beyaz peyniri ilave edip, 3-5 dakika boyunca hamuru yogurun
Ceviz buyuklugunde bir hamur parcasi alin ve avuc icinizi kullanarak yuvarlak sekil verin.( Buyuklugunu istediginiz gibi ayarlayabilirsiniz.)
Yaptiginiz pogacalari onceden yaglanmis tepsiye dizin ya da yagli kagit kullanabilirsiniz. Sonra her pogacaya firca yardimiyla cirpilmis yumurta surun. Uzerlerine susam serpin.
Firini onceden 200 C (400 F) ye isitin. 18-20 dakika boyunca uzerleri kizarana dek pisirin.
Bu tariften 20-22 pogaca cikar. Sicak servis yapin.

Spinach with Eggs (Yumurtali Ispanak)

2-3 eggs
1 lb (500 gr) spinach or 1 can spinach
1 medium onion, sliced
1 tbsp olive oil
2 tbsp smashed tomato in a can or 1 tbsp tomato paste
½ tsp salt
A pinch of red pepper and black pepper ( optional)

Put the oil in a large skillet. Sauté the onion with oil and smashed tomatoes/ tomato paste for 2-3 minutes at low-medium heat. Then, add the spinach and salt, cook for 5-6 minutes by stirring occasionally. Finally, make holes for eggs in the middle of the spinach mixture. Break the eggs into these holes, sprinkle some salt. If you wish, you could sprinkle some red and black pepper on top. Close the lid of the skillet and cook until the egg whites are cooked.

500 gr (1/2 kg) ispanak ya da 1 kutu konserve ispanak
1 orta boy sogan, dogranmis
1 yemek kasigi zeytinyagi
2 yemek kasigi domates puresi ya da 1 yemek kasigi domates salcasi
1 cay kasigi tuz
Bir tutam kirmizi biber ve karabiber (optional)

Genis bir tavaya yagi ve soganlari koyup, orta ateste sogani kavurun.Domates salcasini/ puresini ilave edip 2-3 dakika sote edin. Sonra ispanagi ve tuzu ilave edip, ara sira karistirarak 5-6 dakika pisirin.
Son olarak ispanaklarin ortasinda yumurtalar icin cukurlar acin ve bu cukurlarin icine yumurtalari kirin. Yumurtalarin uzerine biraz tuz serpin. Eger arzu ederseniz uzerine karabiber ve kirmizi biber de ilave edebilirsiniz. Tavanin kapagini kapatin ve yumurta aklari pisene dek pisirin.
