Turkish Coffee With Milk (Sutlu Turk Kahvesi)

1 tsp Turkish Coffee
1 tsp sugar
1 Turkish coffee cup of milk (see the picture)

Put the coffee and sugar in the coffeepot (cezve: see the picture) and stir. Fill the Turkish coffee cup with milk, leaving some room at the top and add the milk to the cezve.
Put it on high heat and stir with a spoon to let the sugar dissolve and coffee to mix with the water. When it starts being foamy on the surface, take some of the foam with a spoon and put into the coffee cup. (It is for a foamy Turkish coffee) When bubbles form on top and starts rising, take the cezve off the stove and pour the coffee into the cup.
There would be grinds at the bottom of the cup, do not drink this part.
You can serve the Turkish coffee with a glass of water and a piece of chocolate.

There is an old saying about it. “Bir fincan kahvenin kirk yil hatiri vardir”(A cup of Turkish coffee will be remembered for forty years.”) It means that the person who offers the coffee is to be respected and remembered for a long time for the sake of his offering. For many people, the most enjoyable side of Turkish coffee is when another person reads the coffee grains, which is a kind of fortune telling.

Eggplant with Ground Beef (Patlican Musakka/Oturtma)

2 eggplants, peeled and cut into ½ inch thick slices
1 big onion, chopped
½ lb (200 gr) ground beef
2 tomatoes, diced / 1 cup tomato in a can/ 1 tbsp tomato paste
1 cup oil for frying the eggplant
1 green pepper, chopped
1 tsp salt
½ tsp cumin
½ tsp black pepper
2 cloves of garlic, sliced thin (optional)
½ cup hot or warm water

Peel the whole eggplant or you can peel striped. Slice them in ½ inch wide and then place them in a bowl and cover the eggplants with water. Let them stand for 30 minutes in water. Then, drain the eggplants and wipe with a piece of cloth. In a large skillet place the oil and fry the eggplants until they change in color. Do not over fry for not to damage the pieces. Place the fried eggplant pieces in a Pyrex dish and sprinkle salt on them.
You can use the same skillet or a smaller one. Place the ground beef and 1 tbsp oil and cook until the meat changes in color. Then add the chopped onions and sauté for 1-2 minutes. Add the chopped peppers, garlic (optional) tomatoes or tomato paste and ½ tbsp salt. Sauté for 5 minutes. Finally add the cumin and black pepper. Spread this mixture evenly on the fried eggplants and add the hot water.
Preheat the oven to 375 F (190 C) and cook for about 30 minutes.
You can serve this dish with pilaf and yogurt.

Patlicanlari yikayip, butun patlicanlari soyabilirsiniz ya da seritli sekilde de soyabilirsiniz. Yaklasik 1 ½ cm kalinliginda dilimleyin ve dilimlenmis patlicanlari buyuk bir kaseye koyup uzerine cikana dek su doldurun. Patlicanin acimsi tadinin suya gecmesi icin yaklasik 30 dakika suda bekletin.
Sonra patlicanlari suzup, kurulayin. Genis bir tavaya yagi koyup patlicanlari renk degistirene dek kizartin. Fazla kizartirsaniz, patlicanlarin sekli bozulur. Kizarmis patlicanlari borcam bir tepsiye alin ve uzerine tuz serpin.
Ayni tavada ya da baska birinde 1 yemek kasigi sivi yagi ve kiymayi renk degistirene dek kavurun. Sonra soganlari ilave edip 1-2 dakika sote edin. Biberleri, sarimsak, tuz ve domatesi/domates salcasi ilave edin. 5 dakika ksik ateste pisirin.Son olarak kimyon ve karabiberi ilave edin. Kiymali karisimi kizarmis patlicanlarin uzerine esit olarak yayin ve sicak suyu ilave edin.
Onceden isitilmis 190 C (375 ) firinda yaklasik 30 dakika pisirin.
Patlican musakka/oturtmayi pilav ve yogurt ile servis edebilirsiniz.

Red Lentil Soup (Kirmizi Mercimek Corbasi)

1 medium onion, chopped
1 large potato, chopped
1 carrot, chopped
2 tbsp oil
1 tbsp tomato paste
1 cup red lentil, washed and drained
6-7 cups hot water ( you can add 1 cube of beef bouillon)
1 tbsp salt
A pinch of dry mint(optional)

Garnish:
2 tbsp butter
1 tbsp red pepper
A pinch of salt
You can use hot red pepper if you like.

In a medium sized pot place the oil and chopped onion. At medium heat, sauté them and add the tomato paste, chopped carrots and potatoes and sauté them for about extra 2-3 minutes. Add the washed and drained red lentils, salt and hot water. Stir well.
Cook until the carrots and potatoes are soft. (Approximately 10-15 minutes in medium-low heat) With a blender mix the soup thoroughly (see the picture). If it is too thick, you can add some more water and adjust according to your sense of taste.
For the garnish in a small frying pan, place the butter and melt over low-medium heat. When it starts spitting, stir in the red pepper and salt. Then, pour the melted butter and pepper mixture over the soup. You can add some dry mint on top if you like mint.
Serve the red lentil soup while still hot, and also add a few drops of lemon juice for a better taste.

Istege gore aci pul biber kullanilabilir.

Orta boy bir tencereye sivi yag ve sogani koyup, orta ateste sogani kavurun. Domates salcasini, havuclari, patatesi ilave ederek 2-3 dakika sote edin. Yikanmis kirmizi mercimegi, tuz ve sicak suyu ilave edin, guzelce karistirin.
Patates ve havuclar yumusayana dek pisirin. (Yaklasik 10-15 dakika, kisik ateste) Sonra, blendir yardimiyla corbayi guzelce karistirin (resime bakin). Kivami koyu olduysa, biraz daha su ilave ederek zevkinize gore ayarlayin.
Kucuk bir kizartma tavasinda tereyagini dusuk ateste eritin. Cizirdamaya baslayinca, kirmizi biberi ve tuzu karistirarak ilave edin. Yag karisimini corbanin uzerine dokun. Isterseniz biraz kuru nane de ilave edebilirsiniz.
Kirmizi mercimek corbasini sicak servis yapin, ve daha lezzetli olmasi icin bir kac damla limon suyu ilave edin.

Chicken/Meat Casserole (Balkan Guveci)

1 big onion, chopped
1 cup rice, washed
2 chicken legs with the thighs or ½ lb (250 gr) beef/lamp cut in cubes
3 tbsp oil
1 tbsp salt to taste
3-4 bay leaves
2 cups hot water
½ tsp black pepper
2/3 tsp paprika

You can cut the drumsticks off and make two pieces from one leg. Also you can use it as a whole leg.
Place the chicken legs or meat cubes and oil in a large skillet and stir occasionally for 2-3 minutes, until the meat changes in color.
Add the chopped onions and sauté. Then stir in washed rice and continue stirring for 2-3 minutes. Add salt, black pepper and paprika.
Finally place this mixture to a casserole or Pyrex dish and add hot water. Stir the mixture well and place the bay leaves evenly in the mixture.
Preheat the oven to 400 F (200 C) Cook for about 30-40 min. until the surface turns brownish and rice is cooked.

Butlari eklem yerinden kesip iki parcaya ayirabilirsiniz ya da butun olarak da pisirebilirsiniz. Tavuklari ya da et kullaniyorsaniz etleri yag ile birlikte bir tavaya alin ve orta ateste 2-3 dakika boyunca karistirin. Etler renk degistirince soganlari ilave edin ve 2-3 dakika daha karistirmaya devam edin.
Sonra yikanmis pirinci ilave edin ve 2-3 dakika karistirin. Tuz, kirmizi biber ve karabiber ekleyin. Son olarak bu karisimi borcam ya da normal bir tepsiye aktaralim ve uzerine sicak suyu ilave edelim.
Defne yapraklarini ister parcalayip. Ister butun olarak tepsiye esit araliklarla yerlestirin.
Onceden isitilmis 200 C (400 F) firinda yaklasik 30-40 dakika pisirin.

Strawberry Yogurt (Cilekli Yogurt)

½ lb( 250 gr) strawberry , washed and sliced or smashed
1 or ½ cup yogurt
2 tbsp sugar

In a bowl place the yogurt and sugar. Stir and let the sugar dissolve in yogurt for 2-3 minutes. Meanwhile slice or smash the strawberry and add to the yogurt. Stir the mixture and serve cool.
It is a very easy, light and healthy dessert.
Strawberry contains a protein which effects the serotonin hormone and this hormones make feel happy.
Also it lessens the stress and appetite.

Cilekli yogurt, yapimi kolay, hafif ve saglikli bir tatlidir.
Cilekte bulunan bir cesit protein, serotonin hormonuna etki eder ve bu hormon mutluluk hissini arttirir. Ayni zamanda stresi ve istahi azaltir.

Menemen (Scrambled Eggs with Vegetables)

2 cups green pepper, chopped
1 cup diced tomato
1 small onion, finely chopped
2 eggs, beaten
3 tbsp oil
½ tsp salt
1 pinch of black pepper (optional)

Place the oil and onions in a pan and sauté the onions for 2-3 minutes over low-medium heat. Then, add peppers and salt. Close the lid and cook until the peppers become soft by stirring occasionally. Add the tomatoes, stir and cook for 5-6 minutes with the lid closed. Finally, add the beaten eggs and stir. It’s done when the eggs are cooked. You can sprinkle some black pepper on top if you like.
Menemen is a very good and famous dish for breakfasts.
Serve it with bread while still warm.

Son olarak cirpilmis yumurtalari ilave edin ve karistirin.Yumurtalar pisince ocaktan alin. Uzerine karabiber serpebilirsiniz (istege bagli).
Menemen kahvalti icin guzel bir alternatiftir.

Ricotta Pie (Firinda Omlet)

3 eggs, beaten
1 tsp corn starch
1 tomato, cut into slices
½ cup ricotta cheese
½ cup mozzarella or cheddar cheese, shredded
1 cup milk
3 tbsp oil
½ tsp salt
½ tsp dried basil

In a bowl beat the eggs. Add ricotta cheese and shredded mozzarella/cheddar cheese, oil, salt and half of the milk. With the other half of the milk mix the starch in a mug, stir well in order to solve the starch completely in the milk.
Then add the starch-milk mixture in the bowl. Place the mixture in a 8 inches round or a rectangular Pyrex. Place the tomato slices evenly on the surface and sprinkle the basil on top.
Preheat the oven to 395-400F (200 C) and bake until the surface color is red, for about 12-15 minutes.
Serve warm. Ricotta pie is good to go at breakfasts.

Bir kasede yumurtalari cirpin ve lor peyniri, rendelenmis kasar peyniri, siviyag, tuz ve sutun yarisini ilave edin. Sutun diger yarisini ayri bir yerde nisasta ile karistirin.
Nisasta sutun icinde cozuldugu zaman, karisimi kaseye ilave edin. Guzelce karistin ve karisimi yuvarlak 20 cm capinda ya da dikdortgen borcam tepsiye bosaltin. Domates dilimlerini esit bir sekilde uzerine yerlestirin ve kuru feslegeni yuzeyine serpin.
Onceden isitilmis 200 C (395-400 F) firinda, uzeri kizarana dek, yaklasik 12-15 dakika pisirin.
Sicak servis yapin. Firinda omlet kahvaltilar icin guzel bir alternatiftir.

Radish Salad With Carrot (Havuclu Turp Salatasi)

1 carrot, washed and peeled
5-6 radishes, stems cut and washed
¼ tsp salt
2 tbsp olive oil
2 tbsp lemon juice
½ tsp sumac (optional)
Black olives and fresh parsley for garnish

Wash carrot, peel and grate. Also cut the stems of the radishes and wash them. Cut the radishes in half moon shapes, forming 4-6 slices from a radish. Place the carrot and radish to a plate. In a bowl, mix the olive oil, salt and lemon juice. Then pour it on the salad and stir the salad. You can sprinkle sumac on top (optional).
Garnish with the parsley and black olives.

Havucu yikayip, soyun ve rendeleyin. Turplarin saplarini kesin ve yikayin. Bir turptan 4-6 dilim elde edecek sekilde dilimleyin. Havuc ve turplari bir salata tabagina alin ve karistirin. Bir kasede limon suyu, tuz, zeytinyagini karistirin ve salatanin uzerine dokup karistirin. Arzu ederseniz uzerine sumak serpebilirsiniz.
Maydanoz ve siyah zeytin ile susleyebilirsiniz.

Mediterranean Salad (Akdeniz Salatasi)

4 leaves romaine lettuce, washed, drained, cut into bite sizes
1 tomato, chopped in bite sizes
1 cucumber, sliced and cut in halves or whole
2 green onions or ½ red/white onion, sliced
5 small radish, sliced into circular shapes

Dressing:
3 tbsp yoghurt
2 tbsp extra virgin olive oil
½ tsp vinegar
1 tsp lemon juice
½ tsp dried mint or 1 tbsp fresh mint, chopped
1 tsp salt

Mix all the dressing ingredients in a bowl. In a salad plate or bowl place all the salad ingredients and pour the dressing on top. Then, stir all to flavor the salad.
This Mediterranean Salad goes well with all meat dishes.

NOTE: Make sure you prepare your salad maximum 30 minutes before serving. Because chopped vegetables starts losing the vitamins, especially Vitamin C, when they contact with air after 30 minutes.

NOT: Salatanizi servisten en fazla yarim saat once dograyin. Dogranan sebzeler, hava ile temas ettikten 30 dakika sonra en basta C vitamin olmak uzere vitamin kaybina ugrarlar.

Cacik (Seasoned and Diluted Yogurt)

1 cucumber, shredded
1-2 cloves of garlic, smashed or grated
½ tsp salt
1tbsp extra virgin olive oil (optional)
1 cup yogurt
½ cup purified water (optional)
½ tsp dried mint (optional)

In a bowl place the grated cucumber( You can peel the skin before shredding , I have shredded without peeling, because it is healthier that way), smashed garlic, salt and yogurt. Stir them well until the yogurt becomes smooth and even.
Then add the water and continue stirring till the yogurt completely dissolves in the water. If you like it thick, skip adding the water. Before serving you can add some dried mint and olive oil on top (optional)
You can serve cacik both with the meat and vegetable dishes.
You can also make cacik without garlic.

Bir kaseye rendelenmis salataligi (rendelemeden once salataligin kabugunu soyabilirsiniz, bend aha saglikli oldugu icin kabugunu soymadim), dovulmus sarimsagi, tuz ve yogurdu koyun. Yogurt putursuz olana dek karistirin.
Sonra suyu ilave edin ve yogurt su ile iyice karisana dek karistirin. Arzu ederseniz su koymadan da yapabilirsiniz. Servis yapmadan once kuru nane ve zeytinyagi ilave edebilirsiniz(istege bagli)
Cacigi et ve sebze yemeklerinin yaninda servis edebilirsiniz.
Ayni zamanda cacigi sarimsaksiz da yapabilirsiniz.

Pastry with Vinegar (Sirkeli Pogaca)

1 egg (its yolk will be used for eggwash)
2/3 cup oil
60-75 gr butter, melted
3 tbsp yogurt
1 tbsp vinegar
1 tsp salt
1 cup crumbled feta cheese or grated mozzarella cheese
1 tbsp baking powder
2 ½ cups flour (white, all purpose, sifted)
1 tsp sesame seeds

Put all the ingredients, except egg yolk and cheese, in a deep bowl and mix well with your hands. Add the crumbled feta or grated mozzarella cheese. Knead the dough for 3-5 minutes.
Take a piece of dough about the size of a shelled walnut and give it the shape of a ball by using the palm of your hands (you can adjust the size as you like).
Place the pieces on a greased baking tray. You can use baking paper if you want. Then brush each piece with beaten egg yolk for glazing. Spread the sesame seeds on the tops.
Pre-heat the oven to 400 F (200 C). Bake for 18-20 minutes.
This recipe will make about 20-22 pieces. Serve warm.

1 yemek kasigi sirke

1 su bardagi ufalanmis beyaz peynir ya da rendelenmis kasar peyniri
1 yemek kasigi kabartma tozu
2 ½ su bardagi un(beyaz, cok amacli,elenmis)
2 cay kasigi susam

Yumurta sarisi ve peynir haric, butun malzemeleri bir kaseye koyup guzelce karistirin. Kasar peynir/ beyaz peyniri ilave edip, 3-5 dakika boyunca hamuru yogurun
Ceviz buyuklugunde bir hamur parcasi alin ve avuc icinizi kullanarak yuvarlak sekil verin.( Buyuklugunu istediginiz gibi ayarlayabilirsiniz.)
Yaptiginiz pogacalari onceden yaglanmis tepsiye dizin ya da yagli kagit kullanabilirsiniz. Sonra her pogacaya firca yardimiyla cirpilmis yumurta surun. Uzerlerine susam serpin.
Firini onceden 200 C (400 F) ye isitin. 18-20 dakika boyunca uzerleri kizarana dek pisirin.
Bu tariften 20-22 pogaca cikar. Sicak servis yapin.
