Spinach Salad (Ispanak Salatasi)

½ lb baby spinach, washed and drained
½ cup canned corn
1/3 cup raisins
10 black olives, pitted (optional)
¼ cup cracked nuts (preferably walnuts)
¼ cup cheddar cheese, shredded
½ lemon’s juice
3 tbsp olive oil
1 tsp sumac
2 green onions, chopped (optional)
1 tsp salt to taste

Use spinach leaves whole or tear into pieces with your hands. Place into a wide salad bowl. Then, add raisins, corn, black olives and green onions. Sprinkle lemon juice, olive oil, sumac and salt. Toss them all.
Finally, add shredded cheddar and cracked nuts on top. Serve immediately.

Ispanaklarin suyu suzulunce, ister butun olarak isterseniz elinizle parcalayip salata kasesine alin. Sonra, misir, kuru uzum, zeytin ve sogani ilave edin. Limon suyu, zeytinyagi, sumak ve tuzu serpin. Guzelce harmanlayin.
Son olarak uzerine kasar peyniri ve cevizi serpin. Bekletmeden servis yapin.

Roasted Eggplant with Yogurt (Yogurtlu Kozlenmis Patlican)

1 lb eggplant
1-1½ cup yogurt
2-3 tbsp olive oil
2-3 gloves of garlic, mashed/grated
½ tsp salt to taste

Pick some parts of eggplants with a knife and roast them over a grill or in the oven till they get soft. Then, remove the skins and cut them into small pieces.
Place olive oil and roasted eggplants in a pan. Cook them for about 4-5 minutes stirring occasionally, over medium heat. Then, stir in salt and garlic. Cook for 2 minutes and turn the heat off. Let it cool.
Add the yogurt and mix them all. Transfer to a serving plate and garnish with parsley, black olives or tomatoes.

Patlicanlarin bazi yerlerini bicak ile delin. Izgarada ya da firinda yumusayip, kabuklari ayrilmaya baslayana dek kozleyin. Sonra kabuklarini soyun ve kucuk kucuk dograyin.
Tavaya zeytinyagini ve kozlenmis patlicanlari alin. Orta ateste 4-5 dakika kadar cevirin. Sarimsak ve tuzu ilave edin. Bir kac dakika daha cevirdikten sonra atesten alin ve sogumaya birakin.
Soguduktan sonra yogurdu ilave edin ve hepsini guzelce karistirin.
Servis tabagina alin ve uzerini maydanoz, domates ya da siyah zeytin ile susleyin.

Purslane Salad (Semizotu Salatasi)

½ lb fresh purslane, washed and drained
1 medium white/red onion, sliced round
1 cup cherry tomatoes/ small tomatoes sliced round
2-3 tbsp lemon juice/1 tbsp vinegar
3-4 tbsp extra virgin olive oil
½ tsp salt to taste

Chop the purslane in 1 inch pieces or tear them off with your hands. Discard the thick parts of stalks. Place tomatoes, onions and chopped purslane over a serving plate.
Meanwhile, mix lemon juice/vinegar, olive oil and salt in a small bowl. Pour all over the salad and mix them all.
Serve Purslane Salad with any kinds of meat, chicken, fish or vegetable dish.

Kucuk bir kasede limon suyu/sirke, zeytinyagi ve tuzu guzelce karistirin. Salata malzemesinin uzerine dokun. Hepsini guzelce harmanlayin ve servis yapin.
Semizotu Salatasi’ni her turlu et, balik, tavuk ve sebze yemeginin yaninda servis edebilirsiniz.

Artichoke-Mushroom Salad (Mantarli Enginar Salatasi)

4 artichokes (½ lb)
½ lb button mushroom, brushed
3-4 tbsp lemon juice
4-5 tbsp extra virgin olive oil
4-5 cloves garlic, minced/grated
½ + ½ tsp salt to taste
2 tbsp fresh dill, chopped finely (optional)

Chop artichokes in bite sizes and cut mushrooms in two or four pieces. Then, boil them with ½ tsp salt till they become tender. Drain and let them cool.
In a small bowl, mix olive oil, lemon juice, garlic, dill (optional) and remaining salt. Pour this sauce all over the mushrooms and artichokes. Mix them all.
Transfer Artichoke-Mushroom Salad into a serving plate and garnish with fresh dill.

Kucuk bir kasede zeytinyagi, limon suyu, sarimsak, dereotu (istege bagli) ve geri kalan tuzu karistirin. Haslanmis enginar ve mantarlarin uzerine hazirlamis oldugunuz sosu dokun ve karistirin.
Mantarli Enginar Salatasi’ni servis tabagina alin ve uzerini dereotu ile susleyerek servis yapin.

Potato Salad with Yogurt (Yogurtlu Patates Salatasi)

4-6 potatoes, boiled
2-3 carrots, shredded
5 tbsp olive oil/melted butter
1 ½ cups yogurt
2 cloves of garlic, minced
4-5 pairs of fresh parsley/dill, chopped
½ lemon’s juice
1 tbsp salt to taste

Peel the boiled potatoes and mash with a fork or blender. Stir in lemon juice, half of the salt and 3 tbsp olive oil/butter. Spread the mashed potatoes on the bottom of a medium size Pyrex dish.
Meanwhile, in a skillet sauté carrots with ½ tsp salt and the rest of the olive oil/butter over medium heat (5-6 minutes). And then, place the carrots over potatoes evenly (see the picture).
In a bowl; mix yogurt, minced garlic and the remaining salt. Spread it all over the carrots and garnish with chopped parsley/dill.
Also you can place the potato salad to serving plates and then pour the yogurt sauce.

Haslanmis patateslerin kabuklarini soyun ve blendir ya da catal ile ezin. Tuzun yarisini, limon suyu ve 3 yemek kasigi zeytinyagi/tereyagi ilave edip, guzelce karistirin. Orta boy bir borcam tepsinin dibine patates karisimini yayin.
Bu sirada bir tavada 2 yemek kasigi zeytinyagi/tereyagi, 1 cay kasigi tuz ile rendelenmis havuclari orta ateste 5-6 dakika sote edin. Sonra, havuclari patatesin uzerine yayin (resime bakiniz).
Yogurt, geri kalan tuz ve sarimsagi bir kasede karistirin ve havuclarin ustune esit olarak yayin. Son olarak uzerine maydanoz/dere otu serpin.
Isterseniz yogurtlu sosu ve maydanozu servis tabagina aldiktan sonra dokebilirsiniz.

Green Onion Crab Salad (Yesil Soganli Yengec Salatasi)

½ lb crab/imitation crab meat, chunks
1 cup iceberg/lettuce, shredded
2 pairs of green onions, chopped
1 cup yogurt
1 tbsp mayonnaise/mustard
¼ tsp Italian seasoning/any kind you like
¼ tsp salt to taste

In a bowl, mix yogurt, mayonnaise/mustard, salt and spices. Then stir in the other ingredients and mix them all. Transfer to a serving plate and garnish with green onion pieces.
Keep Green Onion Crab Salad in the fridge.

Crab Salad with Corn (Misirli Yengec Salatasi)

½ lb crab meat/imitation crab meat, chunk
½ cup mayonnaise
½-2/3 cup yogurt
¼ cup mustard (optional)
½ cup pickle slices, cut into small pieces
½ cup sweet corn
¼ tsp black pepper
¼ tsp salt to taste
¼ tsp thyme
2 pairs of fresh parsley, chopped (optional)

Mix all the ingredients but the drab meat in a bowl. Then stir in crab meat and combine all of them. Transfer into a salad plate and serve.

Greek Salad (Yunan Salatasi)

2 ripe tomatoes, chopped bite sizes
1 cucumber, chopped in bite sizes
1 onion, sliced circularly (preferably red)
1banana/green pepper, sliced
2-3 pairs of fresh parsley, chopped (optional)
½ cup feta cheese, crumbled or diced
6-8 black olives/kalamata olives
3 tbsp extra virgin olive oil
1 tbsp vinegar
1 tsp salt to taste

Place the tomatoes, cucumber, parsley, pepper and onions in a salad plate. Drizzle vinegar and extra virgin olive oil and sprinkle salt. Then, toss with black/kalamata olives and feta cheese.
Greek Salad is good to go with any kind of meat and vegetable dish.

Asparagus&Potato Salad (Kuskonmaz&Patates Salatasi)

4-5 small potatoes, cut in halves or fours
½ lb asparagus, cut 1 inch
1 cup peas
1 red bell pepper, cut into strips
¼ cup onion, minced
1-2 cloves of garlic, minced
½ lemon’s juice
2-3 pairs of fresh dill/parsley
½ cup mayonnaise
¼ tsp black pepper
½ cup yogurt
¼ tsp salt to taste
Lettuce leaves

In boiling salted water, cook potatoes for 15 minutes or just until tender; drain. Place in large bowl. In boiling water, cook asparagus, peas, and peppers 4 minutes, or until just tender; drain. Add to bowl containing potatoes and cover.
In a medium saucepan, combine mayonnaise, onion, lemon juice, garlic, salt, and freshly ground pepper. Cook, stirring until it begins to boil. Stir in parsley/dill. Let it cool and stir in yogurt. Pour sauce over vegetables; toss well to coat evenly. Arrange lettuce on platter, and top with potato salad.
Serve warm or at room temperature.

250 gr kuskonmaz, yaklasik 2.5 cm kesilmis

1 kirmizi biber, ince seritler halinde kesilmis

1-2 dis sarimsak, dovulmus
½ limon suyu
2-3 dal taze dere otu/maydanoz
1 cay bardagi mayonez
1 cay bardagi yogurt
½ cay kasigi karabiber
½ cay kasigi tuz
Marul/kivircik yapragi

Bir tencerede patatesleri tuzlu suda 15 dakika kaynatin ve suzun. Buyuk bir kaseye bosaltin. Sonra kuskonmaz, bezelye ve biberleri 4 dakika kadar haslayin ve suzun. Patateslerin bulundugu kaseye ilave edin ve uzerini ortun.
Orta boy bir tavada; mayonez, limon suyu, sogan, sarimsak ve karabiberi kaynamaya baslayana dek pisirin. Maydanoz/dere otunu ilave edin ve karistirin. Biraz sogumasini bekleyin ve soguyunca yogurdu ilave edin. Sebzelerin uzerine dokup guzelce harmanlayin.

Salata tabagina marul/kivircik yapraklarini yayin ve uzerine Kuskonmaz&Patates Salata’sini koyun.

Asparagus with Walnuts (Cevizli Kuskonmaz)

½ lb asparagus, washed and cut into 1 inch pieces
½ cup crushed walnuts
2 tbsp butter
½ tsp salt
1 tbsp lemon juice
A pinch of black pepper

Boil asparagus for 2-3 minutes, then wash under cold water and drain.
In a skillet, melt the butter and roast walnuts for about 2-3 minutes over medium heat. Then stir in broiled asparagus and add salt. Stir fry asparagus for about 3-4 minutes.
Let asparagus cool, then sprinkle black pepper and drizzle lemon juice all over.
Asparagus with walnuts is ready to serve.

½ su bardagi ufalanmis ceviz

Bir tutam karabiber

Kuskonmazlari 2-3 dakika haslayin. Sonra soguk suyun altina tutun ve suzun.
Teflon bir tavada tereyagini eritip cevizleri 2-3 dakika orta ateste kavurun. Sonra haslanmis kuskonmazlari ve tuzu ilave edin. Ara sira karistirarak 3-4 dakika boyunca kavurun.
Biraz soguyunca uzerine limon suyu ve karabiber serperek servis yapin.

Broccoli Cauliflower Salad (Brokoli Karnibahar Salatasi)

1 bunch of broccoli, separated into florets
½ head of cauliflower, separated into florets
1 carrot, chopped in bite sizes
3 pairs of fresh parsley, chopped (optional)
½ tsp dry basil
2 tbsp extra virgin olive oil
1 tbsp yogurt
1 tbsp lemon juice
1 tsp salt

Boil the vegetables for about 4-5 minutes in salty water. Then wash under cold water and drain. Stir in parsley and transfer the vegetables in a salad plate.
In a small bowl, mix lemon juice, yogurt, olive oil and basil. And then, pour it all over the salad. Mix and serve.

Potato Salad (Patates Salatasi)

3 potatoes, boiled and peeled
2 green onions/ 1 small onion, chopped (optional)
2-3 leaves of lettuce, chopped finely
½ cup fresh dill/parsley, chopped
1 tsp salt to taste
2 tbsp extra virgin olive oil
1 tbsp vinegar
1 tsp lemon juice (optional)
Red pepper flakes (optional)
Small radish slices for garnish

Mix all the ingredients in a salad bowl. Or mix salt, lemon juice, olive oil and vinegar in another bowl, then pour over the other ingredients. You can garnish the top with radish slices.
Potato Salad is good to go with fish and seafood dishes.

Italian Broccoli with Tomatoes (Italyan Domatesli Brokoli)

3 cups of broccoli florets
2 tomatoes, cut in bite sizes
1 small onion, cut in circular shapes (optional)
½ cup mozzarella cheese, shredded
½ tsp salt to taste
1 tbsp extra virgin olive oil
½ tsp dried Italian seasoning
¼ tsp dried parsley flakes
½ cup water
1/8 tsp black pepper

Place broccoli and water in 2-quart microwavable casserole; cover. Microwave on High, about 5 to 8 minutes or until crisp-tender; drain. You can also cook them in the oven.
Stir in tomatoes, Italian seasoning, parsley, extra virgin olive oil, onions, salt and pepper. Microwave, uncovered, on High 2 to 4 minutes or until tomatoes are hot. Sprinkle cheese on top and microwave 1 minute or until cheese melts.

Mikrodalga icin uygun bir borcam kase ya da tepsiye brokoli ve suyu koyun. Uzerine kapak kapatarak, yuksek derecede 6-8 dakika boyunca, brokoliler yumusayana dek pisirin. Ayni islemi firinda da yapabilirsiniz.
Sonra suyu suzun ve domatesleri, sogani, baharatlari, zeytinyagi ve tuzu ilave edip, uzeri acik olarak yuksek derecede mikrodalgada 2-4 dakika daha pisirin.
Son olarak kasar peyniri uzerine serpin ve yine ayni derecede 1-2 dakika daha kasar eriyene dek pisirin.

Eggplant Salad/Babaghanush (Patlican Salatasi/Babaganus)

2 eggplants, roasted
4-5 cloves garlic, grated or smashed
2-3 Tbsp yogurt
1/3 cup tahini
Juice of ½ lemon
3-4 Tbsp extra virgin olive oil
1 tsp salt to taste
½ cup crushed walnuts for top
Fresh mint/parsley/dill for garnish

Roast eggplants in the oven (at 400F) or over the grill till they are soft, turning upside down occasionally. Remove the skins of roasted eggplants and mash them in a food processor. In a skillet, sauté them with extra virgin olive oil over medium heat (4-5 minutes). Let it cool for a while.
Then stir in yogurt, tahini, lemon juice, garlic and salt. Place to a salad plate and sprinkle crushed walnuts on top. You can garnish with fresh mint/dill/parsley.
You can serve Eggplant Salad/Babaghanush with pita bread and any kind of meat dish.

Patlicanlari firinda (200 C de) ya da izgarada her tarafi yumusayana dek, ara sira cevirerek kozleyin. Soguduktan sonra kabuklarini soyun ve rondo ya da blendir ile pure haline getirin. Bir tavaya sizma zeytinyagini ve patlicani koyun. 4-5 dakika orta ateste kavurun. Ocaktan alin ve biraz sogumaya birakin. Sonra yogurt, tahin, sarimsak, tuz ve limon suyunu ilave ederek karistirin. Salata tabagina alin ve uzerine ceviz serpin. Isterseniz maydanoz/nane/dereotu ile susleyebilirsiniz.
Patlican Salatasini/Babaganus pide ile ve her turlu et yemeginin yaninda servis yapabilirsiniz.

Russian Salad (Rus Salatasi)

2 potatoes, boiled
1-2 medium carrot, boiled
½-1 cup sweet peas, boiled or steamed
½ cup sweet corn in a can (optional)
1/3 cup finely sliced pickles (optional)
½ tsp salt
4 tbsp mayonnaise
3-4 tbsp yogurt
Lemon juice/ vinegar to taste
Green olive pickles,red radish and dill for garnish

Chop boiled potatoes and carrots finely. Then in a bowl, mix the mayonnaise and yogurt. Place all the ingredients in a plate and mix. You can adjust the amount of lemon juice or vinegar to your taste. You can garnish Russian Salad with green olive pickle slices and dill on top.
Russian Salad goes well with any kind of meat dish.

Crab Salad with Greens (Yengecli Yesil Salata)

4 oz(100 gr) Cooked Crab Meat/Imitation Crab, chunked
2-3 leaves of lettuce or iceberg lettuce, finely chopped
1-2 pieces of fresh dill/parsley, chopped
1-2 green onions, chopped (optional)
2 tbsp mayonnaise
1 tbsp lemon juice
½ tsp celery seed (optional)
¼ tsp black pepper
1 tbsp olive oil
½ tsp vinegar (optional)
Salt to taste
Black Olives for garnish

Place the chopped lettuce/iceberg, green onions, dill/parsley, salt, vinegar and olive oil in a salad plate and mix them all. In a plate mix the mayonnaise with cooked crab meat/ imitation crab chunks, lemon juice, black pepper and celery seeds.
Finally spread this mixture on the greens, garnish with black olives and serve.

Kivircik/marul/atom salata, yesil sogan ve dereotu/maydanozu tuz, sirke ve zeytinyagi ile karistirin. Salata tabagina alin. Baska bir yerde pismis yengec/ imitasyon yengec etlerini mayonez, limon suyu, karabiber ve kereviz tohumu ile karistirin.
Son olarak mayonezli yengec karisimini yesil salatanin uzerine yayin. Siyah zetin ile susleyerek servis yapin.

Broccoli Potato Salad (Patatesli Brokoli Salatasi)

½ bunch of broccoli
2-3 potatoes
1 carrot
1 egg, hard boiled
¼ cup mozzarella/cheddar/parmesan, shredded
1 tsp vinegar
½ tsp salt
2 tbsp extra virgin olive oil
1 tbsp lemon juice (optional)

Boil potatoes, carrot and broccoli until they are soft and tender with salt. Do not boil more than 6-8 minutes, otherwise they will disperse. Then place the boiled vegetables into cold water and let them cool. Cut the potatoes in cubes, carrots in circular shapes and trim the broccoli in florets. Place them in a salad plate with salt, vinegar, extra virgin olive oil and lemon juice (optional) and mix them all. Spread the cheese on top. Then slice the hardboiled egg into circular shapes or any shape you like. Place egg slices on the sides and serve.

Patates, havuc ve brokoliyi tuzlu suda haslayin. En fazla 6-8 dakika haslayin, cok haslarsaniz sebzelerin sekilleri bozulur. Sonra haslanan sebzeleri soguk suya koyun ve sogutun. Patatesleri kup seklinde, havuclari yuvarlak kesin ve brokoliyi dalalrindan kucuk parcalara ayirin.
Salata tabagina alin, tuz, sirke, sizma zeytinyagi ve limon suyunu (istege bagli) ilave edip hepsini harmanlayin. Uzerine rendelenmis kasari serpin. Haslanmis yumurtalari yuvarlak ya da istediginiz sekilde dilimleyin ve tabagin yanlarina dizerek servis yapin.

Onion Salad (Sogan Salatasi)

1 onion, sliced finely in half moon shapes
½ tsp salt
½ tsp sumac
For garnish:
Fresh parsley/dill
Lemon wedges

Rub the finely sliced onions with salt and wash under cold water. Then drain and place to a salad plate. Spread sumac on top and mix. Garnish with parsley/dill and lemon wedges.
Onion Salad is good to go with kebabs, lahmacun and meet dishes.

Carrots with Yogurt (Yogurtlu Havuc Salatasi)

3 medium carrots, grated
2 tbsp olive oil
½ tsp salt
½-1 cup yogurt
1 tbsp mayonnaise (optional)
1-2 clove garlic, grated (optional)
1 tbsp fresh dill, finely chopped (optional)

Place the olive oil, grated carrots and salt in a medium skillet. Sauté till carrots change their color. Then place them in a serving plate. Add the yogurt, garlic, dill and mayonnaise (optional) and then mix.
You can serve Carrots with Yogurt with both meat and vegetable dishes.
