A version of this was done in my friends' home by their housekeeper. She gave me a lesson with a green beans variation. Her method used sugar. Would you leave that out if cooking peas because they're so sweet?

Susan,
Sure, you can leave sugar out. You won't need sugar while cooking with peas.
