Roasted Eggplant Salad (Kozlenmis Patlican Salatasi)

1-2 bell peppers (green/red/yellow)
1 tomato
1-2 cloves of garlic, minced
¼ cup olive oil
½ lemon’s juice
2-3 sprigs parsley, chopped
1 tsp salt to taste
To prepare the sauce, place lemon juice, olive oil and minced garlic in a wide bowl. Mix them all.
Roast the eggplants and bell peppers over the stove or in the oven till they get soft. If desired roast the tomato too. Then, remove the skins. Cut them all in cubes. If you do not roast the tomato, also cut it into cubes. Place them into the sauce and add parsley. Sprinkle salt over and with a wooden spoon stir slowly making sure not to crush the vegetables.
Take them over a serving plate and if desired serve with lettuce, arugula or other greens.

Uzerine tuz serpin ve tahta kasikla ezmeden karistirin.

Roasted Eggplant-Pepper Salad with Tomatoes (Domatesli Kozlenmis Patlican-Biber Salatasi)
1-2 cloves of garlic, minced
2 tomatoes, diced
2-3 green peppers, chopped
2 roasted red peppers (optional)
¼ cup olive oil
A pinch of red pepper flakes (optional)
1 tsp salt to taste
2/3 cup yogurt
1 clove of garlic, minced
A pinch of salt to taste
1 tbsp butter
¼ tsp paprika
2 tbsp fresh parsley, chopped
Roast eggplants and red pepper over the grill or in the oven. Skin them and cut into bite sizes. Stir them in tomatoes. Add salt and red paper flakes, cook for 10-15 minutes over low heat, stirring occasionally. Once it’s cooked let it cool. Transfer it to a serving plate and serve it either plain or with yogurt sauce on top.
For the sauce, mix yogurt, garlic and salt in a bowl. Meanwhile, in a small frying pan sizzle the butter and stir in paprika and turn the heat off. Let it cool for a while. Pour the yogurt sauce all over the salad and drizzle butter mixture on top. Garnish with parsley and serve.

2/3 su bardagi yogurt

½ cay kasigi kirmizi toz biber
2 yemek kasigi maydanoz, dogranmis
Zeytinyagini bir tavaya alin ve biberleri yumusayana dek orta ateste soteleyin. Sonra sarimsagi ilave edin ve 1-2 dakika daha cevirin. Domatesleri ilave edin ve kisik ateste suyunu cekene dek pisirin.
Ocakta ya da firinda patlican ve biberleri kozleyin. Kabuklarini soyun ve istediginiz buyuklukte dograyin. Sonra, domatesli karisima ilave edin. Tuz ve pul biberi de ekleyin ve ara sira karistirarak 10-15 dakika boyunca kisik ateste pisirin. Pistikten sonra sogumasini bekleyin. Servis tabagina alin ve isterseniz sade olarak ya da uzerine yogurtlu sos dokerek servis yapin.
Sos icin bir kasede; sarimsak, yogurt ve tuzu guzelce karistirin. Kucuk bir kizartma tavasinda tereyagini eritin ve kizinca icine kirmizi toz biberi ilave edin. Karistirip atesten indirin ve biraz sogumasini bekleyin. Salatanin uzerine yogurt sosunu dokun ve en ustune tereyagini gezdirin. Maydanoz ile susleyin ve servis yapin.

Fried Vegetables (Karisik Kizartma)

3 potatoes, peeled
4-5 banana/green peppers, washed
2 cups canola oil for frying
Salt to taste
For the Tomato Sauce:
3 tomatoes, grated/crushed
1 tbsp oil
1/4 tsp salt to taste
A pinch of sugar
Garlic Yogurt Sauce
Peel the eggplants totally or in strip shapes. Then slice them lengthwise or round, 1/3 inch thick as you like (see the picture). Salt them and leave aside for 15-20 minutes.
Peel the potatoes and slice them thin just like the French fries. And then chop peppers in bite sizes (see the picture).
Place the frying oil in a frying pan or pot, turn the heat high and wait till the oil sizzles. And then, first place the eggplant slices and fry both sides. Then take them out and place over a paper towel to soak the excess oil. Fry the potatoes and the peppers the same way and place them over the paper towel. Sprinkle salt all over.
Meanwhile prepare the tomato sauce. Place the tomatoes in a pan and cook with a tbsp of oil, ¼ tsp salt and a pinch of sugar over low-medium heat. Cook till the sauce thickens for about 15 minutes.
Mix all the fried vegetables or serve them separately as you desire. Pour the tomato sauce or garlic yogurt sauce on top. Serve warm.

Sarimsakli Yogurt
Patlicanlari yollu ya da tam olarak soyun. Sonra 1 cm kalinliginda yuvarlak ya da uzun olarak dilimleyin (resime bakiniz). Tuzlayin ve 15-20 dakika kadar bekletin.
Patatesleri soyun ve ince uzun dilimleyin. Sonra biberleri buyuk lokmalar halinde kesin (resime bakiniz).
Kizartma yagini tavaya ya da tencereye alin ve yuksek ateste kizdirin. Kizgin yagda patlicanlarin her tarafini kizartin. Kizarttiginiz patlicanlari kagit havlu uzerine alin. Sonra patates ve biberleri de ayni sekilde kizartin ve kagit havlu uzerine alin. Uzerlerine tuz serpin.
Bu sirada domates sosunu hazirlamak icin sos malzemelerini bir tavaya alin. Orta ateste sosun kivami koyulasana dek yaklasik 15 dakika pisirin.
Kizartmalari ayri ya da hepsini harmanlayarak servis tabaklarina alin. Uzerine domates ya da sarimsakli yogurt dokerek servis yapin.

Shallow Fried Roasted Peppers (Kozlenmis Biber Kizartmasi)

1/3 cup olive oil/canola oil for frying
½ tsp salt to taste
1/3 cup flour
Meanwhile, heat oil in a frying pan over high heat. And then, dip peppers into flour and shallow fry their both sides.
Place Shallow Fried Roasted Peppers over a serving plate and serve with garlic yogurt or tomato sauce.

Breakfast Casserole (Kahvaltilik Kaserol)
3 slices of bread, cut into cubes
1 tomato, chopped
1 green onion, chopped
4 eggs, beaten
1 cup cheddar cheese, grated
1 cup milk
½ cup red/green/yellow pepper, cut in stripes
1 tsp salt to taste
¼ tsp thyme/mint (optional)
Preheat oven to 350°F (180 C). Beat the eggs in a large bowl. Then, mix in the milk and cheese. Add the bread cubes and carefully stir until all pieces of bread are moistened (don't over mix or the bread may disintegrate). Add all the remaining ingredients. Grease a 13 x 9 inch casserole dish. Pour mix into casserole dish.
Bake in oven for 40-45 minutes, until the top is browned and the center springs back when touched. Remove from oven and let cool for 10 minutes before serving.

Firini 180 C (350 F)’a isitin. Buyuk bir kasede yumurtalari cirpin ve sutle peyniri ilave edin. Sonra, ekmek parcalarini ilave edin ve islanana kadar karistirin, fakat fazla karistirip ekmek parcalarini dagitmayin. Geri kalan malzemeleri de ilave edip karistirin. 30x22 cm buyuklugunde bir borcam tepsiyi yaglayin ve karisimi dokun.
Firinda yaklasik 40-45 dakika pisirin. Uzeri kahverengiye donunce ve ortasina dokununca eski seklini aliyorsa pismis demektir. Firindan cikarin ve 10 dakika kadar sogumasini bekleyin ve servis yapin.

Stir Fried Vegetables (Sebze Kokteyli)
1 cup broccoli florets
4-5 pieces of asparagus, cut in 3 pieces
1 cup carrots, chopped
1 red/yellow bell pepper, cut in strips
1 cup green beans, chopped
½ cup noodles (optional)
2 tbsp olive oil
2 tbsp soy sauce
¼ tsp ginger
¼ tsp black pepper
1/3 cup hot water
1 tsp salt to taste
Place all the ingredients, but the hot water and soy sauce in a wide skillet and sauté over medium heat for about 10-12 minutes. And then, stir in hot water and soy sauce. Cook over low heat till the noodles and vegetables are cooked.
Stir Fried Vegetables are very healthy and this is a very good alternative for vegetable lovers.

Mushroom Saute (Mantar Sote)
1 onion, chopped
1-2 cloves of garlic, minced
2 tbsp olive oil
1 tomato, diced/1 cup crushed tomatoes
2 peppers, cut in strips
1 tsp salt to taste
¼ tsp black pepper
1/3 cup hot water
In a pan, sauté onions with olive oil over medium heat. Then stir in peppers and sauté for a while. Stir in mushrooms and sauté for 2-3 minutes. And then, add salt, tomatoes, garlic and hot water.
Cook over low heat till the mushrooms are soft, for about 15-18 minutes. Sprinkle some black pepper prior to serving.
You can serve Mushroom Saute with any kinds of pilaf.

Kisik ateste mantarlar pisene dek yaklasik 15-18 dakika kadar pisirin. Servis yapmadan once karabiber serpebilirsiniz.
Mantar Sote’yi her cesit pilav ile servis yapabilirsiniz.

Bulgur Pilaf (Bulgur Pilavi)
1 onion, chopped
1 tomato, diced
1 tsp tomato paste (optional)
1 banana/green pepper, chopped
2 tbsp butter/oil
2 cups hot chicken stock/2 cups hot water and chicken bouillon
1 tsp salt to taste (1/2 tsp if using chicken bouillon)
In a medium saucepan, sauté butter/olive oil and onions for about 2-3 minutes over medium heat. Then stir in tomato paste and tomatoes, sauté for about 2 minutes. And then stir in peppers. After a while add bulgur and sauté for 2-3 minutes.

Vegetable Cheese Canape (Sebzeli Peynirli Kanape)
½ cup milk
1 cup feta/Mexican crumbling cheese, crumbled
½ cup mozzarella/parmesan/cheddar cheese, shredded
2 eggs, beaten
½ cup tomato, diced finely
½ cup green peppers, chopped finely
A pinch of salt to taste
Any kind of spice you like
Mix all the ingredients, except bread, in a bowl. Then spread the mixture evenly on the surface of crosswise cut bread slices.Preheat the oven to 350-400 F (180-200 C) and bake until the cheese melts and turns a little golden brown.Serve warm. Canapes are good to go at breakfasts and brunches.

Peppers with Tomato Sauce (Domates Soslu Biber)
2 tbsp olive oil
2 tomatoes, crushed/6-7 tbsp crushed tomato in a can
2-3 cloves of garlic, minced
½ tsp salt to taste
In a skillet shallow fry peppers with olive oil. Sprinkle half of the salt. When peppers become soft and light brown, place them in a plate. Then place crushed tomatoes, minced garlic and remaining salt in same skillet. The remaining oil in the skillet will be enough for tomatoes. Cook tomatoes over low heat for 3-4 minutes.
Finally pour the tomato sauce on shallow fried peppers. You can garnish with sweet corn pieces.
You can serve Peppers with Tomato Sauce cold or warm with any kind of meat and poultry dishes.

Rice Stuffed Bell Peppers (Zeytinyagli Biber Dolmasi)
1 cup rice, washed and drained
2 onions, finely chopped
1 tomato, diced
1 tsp tomato paste
½ cup olive oil
1 cup hot water
1 tbsp dried/fresh mint
½ tsp allspice
¼ tsp cinnamon
½ tsp sugar
1 tbsp salt
½ tomato, sliced in 4 pieces for caps
Cut tops off peppers, remove seeds and wash. In a saucepan, place the olive oil and finely chopped onions. Sauté lightly. Add chopped tomatoes and tomato paste, sauté for 3 more minutes.Add the rice and braise for 5 minutes. Then add salt, sugar, allspice, cinnamon, dried mint and1 cup hot water. Stir and simmer until all liquid is evaporated.Let it cool.With a spoon fill the peppers with the mixture. Place one slice of tomato as a cap on top of each pepper. In a large saucepan or pot, place the rice stuffed bell peppers in the bottom. Add warm water, enough to almost cover half height of the peppers.
Close the lid and cook on low-medium heat, until the peppers get soft, for about 15-20 minutes. Cool before serving.

Biberlerin tepesini duzgunce kesin, cekirdeklerini temizleyin ve yikayin. Bir tavada, zeytinyagi ile soganlari kavurun. Domates ve salcayi ilave edip 3 dakika daha kavurun.
Yikanmis pirinci ilave edin ve 5 dakika boyunca kavurun. Sonra, tuz, seker, nane, tarcin, yenibahar ve 1 su bardagi sicak suyu ilave edin. Karistirin ve suyunu cekene dek pisirin. Harcin sogumasi icin biraz dinlendirin.
Bir kasik yardimiyla biberlerin icini harc ile doldurun. Her biberin uzerine dilimlediginiz domatesten bir parca koyun. Genis bir tava ya da tencere dibine doldurdugunuz biberleri yerlestirin. Biberlerin yuksekliginin yarisina cikacak kadar ilik su ilave edin.
Kapagini kapatip, kisik ateste biberler pisene dek yaklasik 15-20 dakika pisirin. Sogumasini bekleyin ve servis yapin.

Menemen (Scrambled Eggs with Vegetables)
1 cup diced tomato
1 small onion, finely chopped
2 eggs, beaten
3 tbsp oil
½ tsp salt
1 pinch of black pepper (optional)
Place the oil and onions in a pan and sauté the onions for 2-3 minutes over low-medium heat. Then, add peppers and salt. Close the lid and cook until the peppers become soft by stirring occasionally. Add the tomatoes, stir and cook for 5-6 minutes with the lid closed. Finally, add the beaten eggs and stir. It’s done when the eggs are cooked. You can sprinkle some black pepper on top if you like.
Menemen is a very good and famous dish for breakfasts.
Serve it with bread while still warm.
