Yogurt Soup (Yogurt Corbasi)

2/3 cup yogurt, whisked
3 tbsp flour, heaping
6-7 cups chicken stock/water and chicken bouillon
3 tbsp oil/butter
1 tbsp salt to taste
Mint/paprika/black pepper

In a pot, sauté flour and oil/butter over medium heat, till the mixture turns to a light brown color. Then add chicken stock or water and chicken bouillon. Stir continuously and before it boils, stir in yogurt and salt. Simmer over low heat for 5-8 minutes.
For the garnish in a small frying pan, melt butter or place oil over low-medium heat. When it starts spitting, stir in the paprika and turn the heat off. Pour over the soup. Also another alternative is to sprinkle dried mint or black pepper on top.
Serve Yogurt Soup warm.

Garlic Yogurt Sauce (Sarimsakli Yogurt)

1 cup yogurt
2 cloves of garlic, minced
¼ tsp salt to taste
1 tsp olive oil
Black olives and green onion/leek pieces for garnish

Mix yogurt, salt and garlic. Drizzle olive oil on top and garnish with black olives, leek or green onions.
Garlic Yogurt Sauce is good to go over fried vegetables and meats, pastas, with patties and meat dishes.

Green Onion Yogurt Dip (Yesil Soganli Yogurt)

2-3 green onions, chopped
2 tbsp olive oil
¼ tsp paprika
1 cup yogurt
Salt to taste

In a small skillet, sauté green onions with olive oil over low heat for 1-2 minutes. Then stir in paprika, salt and combine with yogurt.

Carrots with Yogurt (Yogurtlu Havuc Salatasi)

3 medium carrots, grated
2 tbsp olive oil
½ tsp salt
½-1 cup yogurt
1 tbsp mayonnaise (optional)
1-2 clove garlic, grated (optional)
1 tbsp fresh dill, finely chopped (optional)

Place the olive oil, grated carrots and salt in a medium skillet. Sauté till carrots change their color. Then place them in a serving plate. Add the yogurt, garlic, dill and mayonnaise (optional) and then mix.
You can serve Carrots with Yogurt with both meat and vegetable dishes.

Home Made Yogurt (Evde Yogurt Yapimi)

4 cups milk
1-2 tbsp plain yogurt

Please keep in mind that the most important points in making yogurt are adding sample yogurt to the milk at the right temperature and keeping it warm for a while. The exact temperature for fermentation is between 42-45 C.
Place the milk in a pot and heat it until the boiling point. If you like creamy yogurt, simmer the milk a few more minutes to let the water evaporate more. Take the milk from the stove and wait about 10-12 minutes. Occasionally, dip your finger into the milk and try to count till 7. If you can bear the heat till 7, it means the milk is ready for fermentation. Don’t let the milk cool more than that since if the milk is not hot enough, fermentation won’t take place.
In a small bowl, mix 1 tbsp of yogurt with lukewarm milk by using a wooden spoon (don’t use metal spoons). Add this mixture to the milk and stir with the wooden spoon. Then, pour the milk to the containers and close their lids. (see the picture) The best container for making yogurt is glass. To keep the milk warm, cover the container completely with a cloth and then cover again with a blanket or something similar. Make sure to cover tightly to keep the milk warm for a while. (see the picture) Generally, it takes 5-6 and 7-8 hours for fermentation in summer and winter, respectively. After fermentation, take yogurt out of its cover without shaking. Store in the fridge for at least 3-4 hourr before serving.
I often make yogurt in the evenings and it stays covered all night. I remove the covers in the morning.

Yogurt yapilisindaki onemli nokta sutun sicakligidir. Eger isi olceriniz varsa; sutun mayalama sicakligi 42-45 C arasinda olmalidir.
Sutu bir tencereye koyun ve kaynama sicakligina kadar isitin. Yediye kadar eliniz sicakliga dayaniyorsa, sutunuz mayalamaya hazir demektir. Sutun cok ilik olmasi yogurdun mayalanmasini engeller.
Kucuk bir kasede bir yemek kasigi yogurdu bir miktar ilik sut ile iyice karistirirak hazirlamis oldugunuz bir litre ilik sute ilave edin ve tahta kasik ile karistirin. Sutu mayalamak icin kullanacaginiz kaba dokup, kapagini kapatin. (resime bakin) Sut mayalamak icin en ideal cam kaplardir. Sutun sicakligini muhafaza etmek icin, etrafini kalin bir ortu ile sarin, bir sofra bezine sarip uzerini de bir battaniye ile sikica ortebilirsiniz. (resime bakin)Yazin mayalanma suresi; 5-6 saat iken, kisin 7-8 olabilir. Mayalanma islemi gerceklestikten sonra yogurdu fazla sarsmadan ortuden cikarin ve buzdolabinda en az 3-4 saat bekletin.
Ben genelde yogurdu aksamlari mayaliyorum, gece boyunca mayalaniyor ve sabah aciyorum.

Creamy -Strained Yogurt (Suzme Yogurt)
To make a creamy yogurt, you can just strain it.Place a paper towel or coffee filter over a strainer then, place the strainer inside a bowl. Place some yogurt on paper towel and fold the edges of the paper towel over the yogurt.

Leave in the fridge at least 5-6 hours. You'll see the juice in the bottom of the bowl and creamy yogurt over the paper towel.

Suzme yogurt yapmak icin sadece bir tel suzgec ve kagit havlu/kahve filtresi ya da tulbente ihtiyaciniz var.

Once tel suzgecin uzerine tulbent/kagit havlu/kahve filtresi koyun. Sonra tel suzgeci bir kasenin icine koyun. Suzgecin uzerine yogurdu koyun ve en az 5-6 saat boyunca buzdolabinda bekletin. Yogurdun suyu kasenin dibinde toplanacak ve suzgecin uzerinde suzme yogurdunuz hazir olacak.

Radish With Yogurt (Turplu Yogurt)

1 white radish, grated
1 cup yogurt
½ tsp salt
2 tbsp olive oil
Black olives and small red radish slices for garnish

Wash and peel the radish. Then grate it. Place the yogurt, grated radish and salt in a plate, mix them all. Add the olive oil on top and garnish with black olives and small red radish slices.

Haydari with Dill (Dereotlu Haydari)

1 cup yogurt
2 tbsp dill, finely chopped
1-2 cloves garlic, smashed/ grated
¼ tsp salt
1 tbsp extra virgin olive oil
For garnish: Radish / black olives

Mix the salt, garlic, yogurt and chopped dill in a bowl. Place on a serving plate and add the olive oil on top.
You can garnish with radish slices and black olives.

Yogurt Dessert (Yogurt Tatlisi)

3 eggs
½ cup sugar
1 ½ cup yogurt
2 tbsp butter, melted
1½ cup flour
1 ½ cup semolina / flour
½ tsp baking powder
½ tsp vanilla extract
Syrup
2½-3 cup sugar
3-4 cup water
1 tsp lemon juice

Garnish: nut/coconut pieces

In a pot place the water and sugar. Leave it to simmer for 4-5 minutes, make sure the sugar dissolves. Add the lemon juice in it and leave it to cool.
In a bowl mix all the main ingredients with a mixer for 3-4 minutes.
Grease the Pyrex dish and pour the mixture in it.
Preheat the oven to 360-370 F (170-180 C) and bake for 35-40 minutes, until it turns golden brown.
When you take the cake out of the oven pour the cooled syrup immediately on it. Make sure the cake should be hot, and the syrup should be cool. Then let the cake absorb the syrup. When the yogurt dessert cools, you can serve it.

2½-3 su bardagi seker
3-4 su bardagi su
1 tatli kasigi limon suyu

Suslemek icin: ceviz/hindistan cevizi/antep fistigi parcaciklari

Bir tencereye su ve sekeri koyun. Sekerin erimsei icin karistirin ve 4-5 dakika surubu kaynatin. 1 tatli kasigi limon suyunu ilave edin. Sogumaya birakin.
Derin bir kasede butun ana malzemeleri bir mikser ile 4-5 dakika cirpin.
Borcam ya da herhangi bir tepsiyi yaglayin ve karisimi uzerine dokun.
Onceden isitilmis 170-180 C (360-370 F) firinda 35-40 dakika, uzeri kizarana dek pisirin.
Tepsiyi firindan cikarir cikarmaz soguk surubu uzerine dokun. Yogurt tatlisinin keki sicak surub ise soguk olmalidir. Sonra kekin surubu absorbe etmesi icin bekleyin ve tatliniz soguyunca servis yapin.

Fruit Yogurt (Meyveli Yogurt)

1 ½ cups plain yogurt
2 tbsp sugar

With winter fruits
1 apple, sliced
1 orange, sliced
¼ can diced pineapple
1 banana, sliced
Pomegranate pieces for garnish

With Summer Fruits
1 cup strawberry, sliced
1 banana, sliced
½ cup grapes
¼ can diced pineapple
¼ cup cranberries or blueberries
½ cup peaches, sliced

Mix the yogurt and sugar. Let the sugar dissolve in yogurt for 2 minutes. Place the fruits in a plate and mix them all. Pour the yogurt and mix.
You can garnish with pomegranate pieces.

Strawberry Yogurt (Cilekli Yogurt)

½ lb( 250 gr) strawberry , washed and sliced or smashed
1 or ½ cup yogurt
2 tbsp sugar

In a bowl place the yogurt and sugar. Stir and let the sugar dissolve in yogurt for 2-3 minutes. Meanwhile slice or smash the strawberry and add to the yogurt. Stir the mixture and serve cool.
It is a very easy, light and healthy dessert.
Strawberry contains a protein which effects the serotonin hormone and this hormones make feel happy.
Also it lessens the stress and appetite.

Bir kaseye yogurdu ve sekeri koyun. Karistirip, sekerin yogurdun icinde cozulmesi icin 2-3 dakika bekleyin. Bu arada cilekleri minik minik dograyin ya da rondoda parcalayin ve sekerli yogurda ilave edin.Karistirin ve soguk servis yapin.
Cilekli yogurt, yapimi kolay, hafif ve saglikli bir tatlidir.
Cilekte bulunan bir cesit protein, serotonin hormonuna etki eder ve bu hormon mutluluk hissini arttirir. Ayni zamanda stresi ve istahi azaltir.

Cacik (Seasoned and Diluted Yogurt)

1 cucumber, shredded
1-2 cloves of garlic, smashed or grated
½ tsp salt
1tbsp extra virgin olive oil (optional)
1 cup yogurt
½ cup purified water (optional)
½ tsp dried mint (optional)

In a bowl place the grated cucumber( You can peel the skin before shredding , I have shredded without peeling, because it is healthier that way), smashed garlic, salt and yogurt. Stir them well until the yogurt becomes smooth and even.
Then add the water and continue stirring till the yogurt completely dissolves in the water. If you like it thick, skip adding the water. Before serving you can add some dried mint and olive oil on top (optional)
You can serve cacik both with the meat and vegetable dishes.
You can also make cacik without garlic.

Cacigi et ve sebze yemeklerinin yaninda servis edebilirsiniz.
Ayni zamanda cacigi sarimsaksiz da yapabilirsiniz.

Ayran

2 cups of plain yogurt
½ or 1 cup purified water
1 tsp salt (optional)

Place the yogurt in a bowl and whisk it by hand or with mixer until it is smooth. Then add water and salt (optional). If you see the bubbles after whisking, that means you have done your best to make the ayran. Then pour the ayran to the glasses.
Drink ayran as quick as possible after you prepare since after a while yogurt would descend at the bottom.
Ayran goes well with chicken, meat or vegetable dishes.

Broccoli Salad with Yogurt (Yogurtlu Brokoli Salatasi)

A bunch of broccoli
1 cup of yogurt
1 tbsp olive oil (optional)
1 tsp salt
1 clove garlic

Place the broccoli in a large pot and fill with water till the broccoli is covered. (you can add 2 tbsp of lemon juice to get rid of the smell of broccoli.)
Add ½ tsp salt and boil the broccoli for 3-4 minutes. Do not over boil, because the broccoli would fall apart.
Meanwhile , smash or grate the garlic.
Put the yogurt, garlic and ½ tsp of salt in a bowl and mix. If you like you can add 1 tbsp of olive oil.
When the broccoli is done, drain and let it cool. If the pieces of broccoli are large, you can cut them in smaller pieces.
Place them in a serving plate and cover it with the yogurt mixture.

Yikanmis brokolileri buyuk bir tencereye koyup, uzerini gecene kadar su koyun. (brokoli kokusunu onlemek icin suya 2 yemek kasigi limon suyu ilave edebilirsiniz.)
1 cay kasigi tuz ilave edin ve Brokolileri 3-4 dakika boyunca kaynatin. Cok fazla kaynatmaktan kacinin, cunku brokolilerin sekilleri bozulup, dagilacaktir.
Bu arada sarimsagi ezin ya da rendeleyin.
Yogurt, sarimsak ve 1 cay kasigi tuzu bir kaseye koyup karistirin. Eger isterseniz 1 yemek kasigi zeytinyagi ilave edebilirsiniz.
Brokoliler hazir oldugu zaman; suzup sogumaya birakin.Eger brokoli parcalari buyuk ise, daha kucuk parcalara ayirabilirsiniz.
Brokoli parcalarini servis tabagina alin ve uzerin yogurt karisimi ile kaplayin.
