Baked Cod with Breadcrumbs (Firinda Galeta Unlu Morina Baligi)

4 cod fillets, boneless and skinless
4 tbsp butter, melted
2 cups fresh breadcrumbs
1/4 cup fresh mixed herbs, finely chopped
3 tbsp Parmesan, grated
Salt and pepper to taste

Preheat oven to 400 F (200 C). In a bowl, combine breadcrumbs, herbs, Parmesan, and melted butter to make the breadcrumbs stick together. Season with salt and pepper.
Cover each fillet with ¼ of the breadcrumb mixture, and pat down firmly on fillet. Place fillets in a greased baking dish. Bake for 20-30 minutes or until the fish is milky white and flaky. Serve immediately.

Lemon Garlic Tilapia (Limon ve Sarimsakli Tilapi)

4 tilapia fillets
3 tbsp lemon juice
1 tbsp butter, melted
1 clove garlic, finely chopped
1 tsp dried parsley flakes
1 tsp salt to taste
Black pepper

Rinse Tilapia fillets under cold water and pat dry with paper towels.
Rub the fillets with salt and pepper. Grease a baking dish and place fillets in. Pour lemon juice all over, then drizzle butter on top.
Sprinkle with garlic and parsley. Preheat the oven to 375 F (190 C) and bake until the fillets get white and gets flaky when pulled apart with a fork (about 30 minutes).

Italian Style Baked Orange Roughy (Italyan Usulu Pasifik Baligi/Hoplostethus atlanticus)

1 lb orange roughy fillets
1/4 cup Italian seasoned bread crumbs
3-4 tbsp grated Parmesan cheese
2 cloves of garlic, minced
½ tsp salt to taste
¼ cup butter, melted
1 tbsp fresh parsley, chopped (optional)

Preheat oven to 400 F (200 C). Grease a medium baking dish. In a shallow bowl, mix bread crumbs, Parmesan cheese, garlic, and salt.
Brush both sides of orange roughy fillets with butter, and dredge in the bread crumb mixture. Arrange fillets in a single layer in the prepared baking dish, and sprinkle with parsley (optional).
Bake in preheated oven 10 to 15 minutes or until the fish flakes easily with a fork.
If desired serve with brussels sprouts.

Erimis tereyagini balik filetolarinin her iki tarafina da firca ile surun. Sonra galeta unu karisimina daldirin ve her tarafini guzelce kaplayin. Yaglanmis olan tepsiye yerlestirin ve arzu ederseniz uzerlerine maydanoz serpistirin.
Balik filetolari catal ile kolayca ayrilina dek, yaklasik 10-15 dakika pisirin. Arzuya gore yaninda bruksel lahanasi ile servis yapabilirsiniz.

Pan Seared Trout (Alabalik Tava)

1 lb trout fillets
½ tsp salt to taste
½ tsp black pepper/paprika
2 tbsp lemon juice
2-3 tbsp canola oil

Rinse trout fillets under cold water and pat dry with paper towel. Rub with salt and sprinkle black pepper/paprika. Drizzle with lemon juice.
Heat canola oil in a skillet and sear both sides of trout fillets till they get fluffy and tender over medium heat. Do not over cook.
Serve with green salad and radishes if desired.

Pan Seared Snapper (Levrek Tava)

3-4 snapper or firm white fish fillets
2 tbsp olive oil
Lime wedges
1 tsp salt to taste
¼ tsp black pepper

Sauce:
1 tbsp parsley/cilantro, finely chopped
1 ½ tbsp butter, softened
½ tbsp green onion, finely chopped
½ tsp lime rind, grated
¼ tsp ground ginger

Mix all the sauce ingredients and cover. Leave in the refrigerator for at least one hour.
Heat up olive oil in a frying pan. Rub Snapper or other white fish you have with salt and sprinkle black pepper to taste. Shallow fry them turning both sides till they get lightly brown and fluffy.
Spread the sauce you were keeping in the fridge over the cooked fillets and serve hot with lemon wedges.
Garnish with radishes if desired.

Kizartma tavasinda zeytinyagini kizdirin . Levrek ya da beyaz balik filetolarini tuz ile ovun ve karabiber serpin. Kizgin yagda her iki taraflari da kizarana dek pisirin.
Buzdolabinda bekletilen sosu baliklarin uzerine surunve limon dilimleriyle sicak servis yapin.
Arzu ederseniz kucuk kirmizi turplar ile susleyebilirsiniz.

Salmon with Sesames (Susamli Somon Baligi)

1 lb salmon fillets
2 tbsp soy sauce
2 tbsp balsamic vinegar
2 tbsp green onions, chopped
2 tbsp brown sugar
1-2 cloves of garlic, minced
1 ½ tsp ground ginger
1 tsp crushed red pepper flakes (optional)
1 tbsp sesame seeds, heaping
½ tsp salt to taste

Rinse salmon fillets under cold water and pat dry with paper towels. Sprinkle with salt and rub with your hands. Then, mix all the ingredients, but sesames in a bowl. Dip the fillets in this mixture or pour the mixture all over the fillets evenly. Preferably marinade in the fridge for about 1-2 hours.
Place aluminum foil over a Pyrex dish and place salmon fillets. Sprinkle with sesames and cover with aluminum foil. Seal well through the edges. Bake in 375 F (190 C) oven for 30 minutes and take the aluminum cover and broil for minutes or till it gets lightly brown.

Somon filetolarini soguk suyun altinda yikayin ve kagit havlu ile kurulayin. Uzerlerine tuz serpin ve elinizle ovalayarak yedirin. Sonra, susam haric butun malzemeleri bir kasede karistirin. Filetolari bu karisima batirip her yerini bulayin ya da karisimi filetolarin uzerinde esit olarak gezdirin. Tercihen buzdolabinda 1-2 saat bekletin.
Bir borcam tepsinin dibine aluminyum folyo yayin ve uzerine filetolari dizin. Uzerlerine susam serpin ve aluminyum folyo ile uzerini kapatip kenarlarindan hava girmeyecek sekilde sikica kapatin. Onceden isitilmis 190 C (375 F) firinda yaklasik 30 dakika pisirin. Sonra uzerindeki aluminyum folyoyu alin ve ustten kizartma ayarinda yaklasik 5-7 dakika ya da uzeri kizarana dek pisirin.

Mediterranean Cod (Akdeniz Usulu Morina Baligi)

4 (200 gr) fresh cod fillets
3 tbsp olive oil
¼ red onion, thinly sliced (optional)
1 cup cherry tomatoes, cut in half
¼ cup black and/or green olives, sliced (optional)
1 tsp dried basil, crushed
Pinch dried thyme, crushed
1 tsp salt to taste
Black pepper to taste

Rinse fish and pat dry with paper towels. Season with salt and pepper. In a large skillet heat 3 tbsp of olive oil over medium-high heat. Add fish and (if desired) onion.
Cook for about 5 minutes, turning once. Top fish with tomatoes, olives, basil and, thyme. Reduce heat, cover and cook for 8-10 minutes more or until fish flakes easily with a fork.
Serve warm.

Pan Fried Sardines (Sardalya Tava)

1 lb sardines,
½ cup canola oil
½ cup flour
1 tsp salt to taste
Lemon wedges, onion and lettuce for garnish

Cut the heads off (optional, heads absorb too much oil). Gut the sardines and wash with cold water, drain. Put them in a bowl, sprinkle the salt and blend.Pour the oil into a large skillet and heat it up over high-medium heat. Place the flour in a plate and dip the sardines by holding from their tail. To remove the excess flour, shake the fish off. Fry till they turn to a red fried color, approximately for 4-5 minutes. Turn halfway through. When they are done, place the fried sardines on a plate with paper towel to absorb the excess oil. Serve with lemon wedges, onion and lettuce.

Pan Fried Haddock Fillets (Mezgit Tava)

1 lb haddock fillets
½ cup flour/bread crumbs
½ cup canola oil for frying
1 tsp salt to taste
Black pepper to taste (optional)
Lemon wedges

Wash and drain haddock fillets. Sprinkle salt all over and mix. If desired, sprinkle black pepper.
Place flour/bread crumbs over a wide plate. Dip haddock fillets in and shake to get rid of the excess flour/bread crumbs. Sizzle oil in a frying pan. Over high-medium heat, fry both sides of haddock fillets, till they turn to golden brown. Place them over a paper towel to soak the excess oil. And then, transfer them over a serving plate and serve warm.
Pan Fried Haddock Fillets are good to with lemon wedges and greens.

Baked Tuna Steaks (Firinda Ton Baligi)

1 lb tuna steaks
2 tbsp olive oil
1 potato, sliced round
½ tsp basil
½ tsp paprika
1 tsp garlic powder/2 gloves of garlic, minced
1 tsp salt to taste
Peas for garnish

Preheat oven to 425 F (220 C).
Skin the tuna steaks. Sprinkle with salt, spices and garlic. Rub with your hands. Place foil over a Pyrex Dish and grease with some of the olive oil. Place the Tuna steaks and pour the remaining olive oil over. Arrange potato slices. Then cover with foil. Bake for 30-40 minutes and then remove the cover and broil on low for 5-10 minutes or until they become lightly brown.
Serve Baked Tuna Steaks with peas.

Suslemek icin bezelye

Tonbaliginin derisini ayirin. Elinizle ovarak tuz, sarismak ve baharatlari yedirin.
Borcam bir tepsiye aluminyum folyo serin ve uzerine biraz zeytinyagi dokun ve dibini yaglayin. Balik dilimlerini yerlestirin ve geri kalan zeytinyagini baliklarin uzerine dokun. Patates dilimlerini aralara ya da uzerlerine yerlestirin. Uzerini tekrar aluminyum folyo ile kapatin.
Onceden isitilmis 220 C (425 F) firinda 30-40 dakika pisirin. Sonra uzerini acin ve acik olarak sadece ust kizartma ayarinda yaklasik 5-10 dakika daha uzeri kizarana dek pisirin.
Servis tabaklarina bezelye koyarak servis yapin.

Oven Roasted Perch (Firinda Tatlisu Levregi)

1 lb Perch, whole or fillets
1 onion, sliced round
½ lemon’s juice
3 tbsp olive oil
1 tsp salt to taste
½ tsp black pepper
Fresh parsley/dill, chopped

Wash perch under cold water and drain. Then rub them with salt inside out. In a small bowl, mix olive oil and lemon juice. Brush the perch with this mixture. Arrange them on an oven tray, sprinkle black pepper all over. Place onion slices over them.
Preheat the oven to 400 F (200 C) and cook till perch gets a light golden brown color (about 35-45 minutes).
Place them on a serving plate and garnish with parsley/dill.

Broiled Swordfish (Kilic Baligi Izgara)

1 pound swordfish steaks, about 1 inch thick
1/2 tsp salt
1/4 tsp ground black pepper
1/4 tsp sweet paprika
2 tbsp melted butter
Fresh parsley, chopped (optional)
Lemon wedges

Sprinkle salt, pepper, and paprika on swordfish steaks and gently rub into the fish. Brush swordfish steaks with melted butter. Preheat a greased broiler rack. Place swordfish steaks on the greased broiler rack about 2 to 3 inches away from heat source. Broil for about 4-5 minutes till they turn to light golden brown.
Turn swordfish steaks upside down and brush with more melted butter. Broil for 5-6 minutes longer. Fish should be lightly browned and will flake easily with a fork. Sprinkle swordfish steaks lightly with chopped fresh parsley, if desired.
Serve with lemon wedges and any kind of salad you like.

Kilic baligi dilimlerine tuz, karabiber ve kirmizi toz biberi serpin. Elinizle hafifce ovalayarak baliga yedirin. Baligi kizartacaginiz izgarayi onceden yaglayip, isitin. Baliklari yaglanmis izgaraya yerlestirin ve uzerlerine erimis tereyagi surun. Eger firinda kizartacaksaniz izgarayi firinin ust isiticisinin yaklasik 5-8 cm asagisina yerlestirin. Uzerleri kizrana dek yaklasik 4-5 dakika pisirin.
Kilic Baligi dilimlerini ters cevirin ve geri kalan tereyagi ile yaglayin. Yaklasik 6-7 dakika daha pisirin. Baliklar hafif kahverengiye donunce ve catal ile kolayca ayrilinca pismis demektir. Isterseniz kilic baliklarinin uzerine hafifce maydanoz serpebilirsiniz.
Kizarmis Kilic Baligi’ni limon dilimleriyle ve istediginiz cesit salata ile servis edebilirsiniz.

Fried Perch Fillets (Kizarmis Levrek)

1 lb Perch Fillets
2 tbsp lemon juice
½ tsp black pepper
1 tsp salt to taste
1/3 cup canola oil for frying

Rub Perch Fillets with salt. Then sprinkle black pepper and lemon juice. Rub to make Perch absorb the flavor. Leave them in the fridge at least 30 minutes.
In a frying pan sizzle oil and shallow fry both sides of Perch Fillets till they turn to golden brown.
Serve warm with lemon edges.

Baked Anchovy (Firinda Hamsi)

1 lb anchovy, washed and drained
1 big onion, cut in half and sliced
2 tomatoes, diced/crushed
2-3 pairs if parsley, chopped
1-2 cloves of garlic, minced (optional)
2 tbsp lemon juice
2 bay leaves, torn in quarters
3 tbsp olive oil
A pinch of black pepper
1 tsp salt to taste
½ cup water

Cut the heads off anchovy and gut them. Then wash them under cold water and drain. Sprinkle salt and drizzle half of the olive oil, then mix them all. Place the anchovy over a Pyrex dish.
Preheat the oven to 400 F (200 C) and bake for 10-12 minutes. Meanwhile in a skillet, sauté onions with the rest of the olive oil. Then stir in parsley and tomatoes. Cook for 1-2 minutes over medium heat. Finally stir in black pepper, water and garlic. Turn off the oven and stir in lemon juice.
Take the anchovy out of the oven and place the bay leaves evenly over. Then pour the tomato sauce all over the anchovy. Place it back to the oven and bake for 10-15 minutes. If you like well fried anchovy, then turn to broil for the last 3-4 minutes.
Serve Baked Anchovy with lemon wedges and Turkish Coleslaw.

Bir tutam karabiber
1 tatli kasigi tuz
1 cay bardagi su

Hamsilerin kafalarini kesin ve iclerini temizleyerek soguk su altinda yikayin. Tuzlayin ve zeytinyaginin yarisi ile hepsini harmanlayarak yaglayin. Firin tepsisine tek sira halinde dizin.
Onceden isitilmis 200 C (400F) firinda yaklasik 10-12 dakika pisirin. Bu arada bir tavada geri kalan zeytinyagi ile soganlari hafif kavurun ve maydanozla domatesi ilave edin. 1-2 dakika orta ateste cevirin. Son olarak sarimsak, su ve karabiberi ilave edin, ocaktan alin. Limon suyunu ilave edin ve karistirin.
Firindan cikardiginiz hamsilerin uzerine defne yapraklarini esit olarak yerlestirin ve domatesli sosu uzerine yayin. Tekrar firina koyun ve 10-15 dakika daha pisirin.
Eger daha cok kizarmasini isterseniz, son 3-4 dakika ustten kizartma yapabilirsiniz.
Firinda hamsiyi limon dilimleri ve lahana salatasi ile servis yapabilirsiniz.

Basil Salmon (Feslegenli Somon Baligi)

1 lb salmon fillets or steak
1 /3 cup fresh basil or ½ tsp dried basil
2 tbsp extra virgin olive oil
½-1tsp lemon juice
¼ tsp black pepper
1 tsp salt to taste
1/4 cup parmesan cheese (optional)

Rub fish with salt and mix all the other ingredients, but cheese in a bowl. Dip fish into this mixture. If you have time you can leave fish in the mixture for 1-2 hours in the fridge.
Preheat the oven to 400 F (200 C) and place the fish into a Pyrex dish. Bake for 20-25 minutes. After baking, you can also broil at low heat for 2-3 minutes for golden brown fish. Then sprinkle Parmesan cheese over the Basil Salmon and bake for 2-3 minutes (optional).

You can serve Basil Salmon with lemon wedges, vegetables and potato salad.

Once tuzu elinizle ovalayarak baliklara yedirin. Peynir haric geri kalan malzemeyi bir kasede karistirin ve baliklarin her yerine bu karisimdan surun. Eger zamaniniz varsa baliklari bu malzemenin icine yatirin ve buzdolabinda 1-2 saat bekletin.
Sonra borcam tepsiye baliklari dizin ve onceden isitilmis 200 C (400F) firinda 20-25 dakika, baliklarin uzeri kizarana dek pisirin. Firindan cikarip uzerine rendelenmis peyniri serpin ve 2-3 dakika daha pisirin (istege bagli).
Feslegenli Somon Baligi'ni limon dilimleri, sebze ya da patates salatasi ile servis yapabilirsiniz.

Grilled Mackerel (Uskumru Izgara)

2 whole mackerels
1 tsp salt
½ lemon or lime
1 onion, sliced in the shape of rings
Carrots or other vegetables for garnish
Electric grill or barbecue

First, thaw the mackerels if they are frozen. Then gut the mackerels. You can cut the heads off if you wish. Wash and drain the mackerels. Spread the salt all over the mackerels (inside also).
Let them stay for about 10-15 minutes with salt. Salt the onion rings and other vegetables. Then cook them and mackerels on an electric grill or on a barbecue on medium heat till they are golden brown.
Serve them with lemon or lime wedges. Also potato salad or smashed potatoes goes well with this dish.
NOTE: While thawing the frozen fish, first leave it in the fridge (40F) for 12 hours, then thaw it at room temperature for 4-5 hours and cook immediately. Make sure you do not leave the frozen fish at the room temperature. This would cause the pathogenic organisms to grow and spread all over the fish quickly.

Oncelikle, dondurulmus uskumru kullanacaksaniz, cozundurun. Iclerini yarip, temizleyin. Isteginize gore kafalarini kesebilirsiniz. Yikayip suzulmesini saglayin. Uskumrularin hem icini hem disini guzelce tuzlayin.
Tuzun absorbe olmasi icin 10-15 dakika bekletin. Sogan halkalarini ve diger sebzeleri tuzlayin. Uskumru ve sebzeleri elektirikli izgara ya da mangalda orta ateste, kizarana dek pisirin.
Limon dilimleri ile servis yapin. Ayrica patates salatasi ve patates puresi ile de servis yapilabilir.
NOT: Dondurulmus balik cozundururken; once dolapta (4C) 12 saat boyunca bekletin. Sonra oda sicakliginda 4-5 saat boyunca cozundurun ve hemen pisirin. Dondurulmus baligi direk oda sicakliginda cozundurmemeye dikkat edin. Cunku bu, hastalik yapici organizmalarin hemen gelismesine ve baligin uzerinde yayilmasina sebep olacaktir.

Benefits of Fish

Most fish are low in fat and cholesterol and a good source of protein, which makes them a good choice for a healthy diet.
